It´s Christmas time again! The dark winter has set in here in Scandinavia and we light lots of candles and snuggle up inside. What to do during the dark days of December with the kids? Create your own Christmas decor, of course! On the following pages, we’re including some of our favorite ideas to create while you sip glögg and eat lucia buns. The Handmade Christmas Tree: 4 Festive Ornaments to Make at Home
1) Molding Clay Trees & Letter Chain Trees: Roll molding clay (we used Fimo brand clay) to the thickness you wish. Next, press in graphic shapes and patterns using a traditional ink stamper. In our example, weâ&#x20AC;&#x2122;ve used various snowflake patterns. Using a cookie cutter, press out the tree shape. Carefully place the cut out shapes on on parchment baking paper and make a hole in the top of each tree so they can hang later. Bake in the oven at 110 C for 15-20 minutes, then let cool completely. String a ribbon or twine through the hole at the top and hang on the tree! 16

TIP: To ensure the clay does not stick to the ink stamper, rub a bit of oil on the stamperâ&#x20AC;&#x2122;s surface before pressing it into the clay.

Letter Chain: Find your favorite saying with letter ink stampers and create this funky holiday greeting chain out of modeling clay. Simply follow the directions above, but remember to poke 2 holes in the top of each piece before you bake them, so you can easily run a string through your pieces and hang on the wall or the tree.

2) Origami Xmas Boats This is a sweet little project to introduce kids to origami, the japanese paper folding technique. Begin by finding some old paper with a festive pattern or color. Construction paper or hobby paper works best, but you can also use old book pages with lovely musical notes or illustrations, or print a pattern out that youâ&#x20AC;&#x2122;ve found online. Next, follow the instructions below to create your own little Xmas Boats. Children can try and follow the picture directions to create their very own origami ornaments! See instructions on page 36. 20

3) Perler Bead Snowflakes These fantastic white snowflakes in various patterns make wonderful ornaments to hang – not only on the tree – but in windows, on doors and just about anywhere! Simply use all white Perler beads and follow our patterns here. Or you can even try creating your own unique snowflake pattern.

Plastic Fantastic Table Top Trees Remember your grandmother’s Christmas snow landscape on the dresser drawers? Well, we’ve taken that idea and pulled it into the future with these homemade 3-D neon trees with frosted glass covers. Constructed from plastic Perler beads, 2 trees fit together to form a free-standing 3-D shape. Choose your favorite color of beads and follow the pattern we’ve included. To top off your plastic trees, spray a bit of snow spray on a glass cover for an extra chilled out holiday landscape. You can also use the snow spray to coat your trees directly. 27

That’s a Wrap! Break away from the traditional red- and gold-printed Christmas paper this season and create out-of-the-box wrapping under the tree. Choosing non-traditional colors and eye-catching graphics is an easy, fun way to add a bit of extra flair to your gifts for your loved ones. At your local building market or hardware store you can often find simple brown packing paper and twine in various colors to create the base of your wrapping. Then get creative! Anything goes! In our example, we’ve wrapped our gifts with graphic printed tape, neon ribbon and built our own bows by folding colored paper.

Lucia buns Lucia buns are the traditional treats handed out during the children’s procession and are a sweet bread or ‘boller’. The literal translation is ‘Lucia cats’. This is because of the characteristic winding tail design. The buns are also decorated with raisins.

Lucia buns (Lussekatter)
50 grams of fresh yeast or 1 packet of dry yeast (note: sweet dough yeast is best to use) 150 grams butter 500mls of milk 1 gram of saffron (or half a teaspoon of turmeric) 150 grams of sugar 1/2 teaspoon of salt 2 teaspoons of cardamum about 1.3 litres of plain flour (measure in a water jug) For decoration: 1 beaten egg for glazing Raisins Instructions: Melt butter. Add milk. Crumble yeast in a mixing bowl in some of the lukewarm milk/butter mix. Then add rest of wet ingredients. (Skip this step if using dry yeast.) Mix in sugar salt cardamum and saffron. Add flour knead until a nice firm dough. (If using dry yeast add packet to flour before adding to the mix.) Cover in plastic wrap and let raise until double the size. Sprinkle some flour on a kneading area and knead dough well. Cut dough into pieces and roll them to long finger thick sausages. Shape them into the famous Lussekatter double spiral. Place on a baking sheet and cover in plastic. Allow to raise for 15 minutes. Glaze with beaten egg and decorate with raisins (usually one raisin in each eye of the swirl.) Bake at 225°C for 5-8 minutes (depending of size). Let them cool on a rack. They taste best lukewarm.

- The Night of Lights Alongside Midsummer, the Lucia celebrations represent one of the foremost cultural traditions in Scandinavia, with their clear reference to life in the peasant communities of old: darkness and light, cold and warmth. he Lucia tradition can be traced back both to St Lucia of Syracuse, a martyr who died in 304, and to the Swedish legend of Lucia as Adamâ&#x20AC;&#x2122;s first wife. It is said that she consorted with the Devil and that her children were invisible infernals. Thus the name may be associated with both lux (light) and Lucifer (Satan), and its origins are dif-

ficult to determine. The present custom appears to be a blend of traditions. In the old almanac, Lucia Night was the longest of the year. It was a dangerous night when supernatural beings were abroad and all animals could speak. By morning, the livestock needed extra feed. People, too, needed extra nourishment and

Lucia Day, December 13th The Lucia day is linked with the ‘celebration of light’, and take place In Scandinavian countries. Tradition has it that Lucia is to wear “light in her hair,” which in practice means a crown of electric candles in a wreath on her head. Each of her handmaidens carries a candle, too. The Lucia celebrations include ginger snaps and sweet, saffron-flavoured buns (lussekatter) shaped like curled-up cats and with raisin eyes. You eat them with glögg or coffee.

MATERIALS: Approx. 15 g of each of the following Isager Yarns: Highland Wool: Plaster, Lather, Fig Alpaca 2: 46, 7s, 3 og 39 2 brace clips 12 (14) buttons in different colours and sizes MEASUREMENTS: Approx. 45cm for a large pram Approx. 40cm for a small pram NEEDLES 2.5mm small circular needle. 96
Knit the I-cord first. Cast on 5 sts with 2 strands of Alpaca 2 shade 024 on circular needle 2.5 mm and knit as follows: Row 1: Slip 1 purlwise – P3 – K1. Row 2: Slip 1 purlwise – K4. Repeat these two rows twice ending with Row 1. Change to 2 strands of Highland Wool, shade Lather, and knit the I-cord itself: Knit all sts – and slide them back to the other end of the needle. From the Right side, Knit all sts again. Continue like this for *12 rows with Highland

Wool and then 6 rows with Alpaca 2 *. Repeat from * to * 6 (7) times ending with 12 rows Highland Wool and 7 rows Alpaca 2, shade 024, while knitting back and forth as at the start of the cord. Sew in loose ends except at the I-cordâ&#x20AC;&#x2122;s ends, where the brace clips will be attached. Now make 6 (7) pom poms in different colours: Cut two identical circles with a 3cm diameter in cardboard. Cut a 1 cm diameter hole in the middle of each circle. Hold the two circles together and sew with double stranded yarn through the hole and around the whole circle until the hole is completely filled with yarn.
pom. Pull the thread through the pom pom, through the middle of the first mint green section of the cord and through another button on the other side. Fasten off. Work like this until all pom poms have been sewn onto the mint green sections. Lastly, sew on the brace clips.

Now cut the yarn between the two cardboard circles all the way around, slide a piece of yarn between the circles and tie a tight knot to keep the strands in place. CARAMEL APPLES Makes 6 medium or 8 small apples 6-8 red or green organic apples 350 ml evaporated milk* 115 g butter 175 ml light corn syrup 400 g light brown sugar (muscavado) teaspoon salt Coating: 450 g chopped peanuts or pecans for coating (optional) ★ Wash and dry apples thoroughly, making sure
there are no traces of wax left on the apples (wax on the apple skin prevents the caramel from sticking). ★ Firmly push a wooden stick (or popsicle stick) into the top at the stem to create a ”handle”. Set aside. 126
★ Make the caramel. Whisk together all ingredients
in a saucepan and place over medium-high heat.
★ Stirring constantly, bring ingredients to a boil.
Reduce the heat to medium low and simmer for 15 minutes, remembering to stir regularly. Remove from heat. ★ Prepare a piece of parchment paper to place the apples on. ★ Slowly coat the apples in the warm caramel by dipping and rotating them a few times. ★ If you are rolling them in nuts, place the chopped nuts on a plate and roll the carameldipped apples in the nuts to coat completely. ★ Let the apples cool, standing upright, on the parchment paper. *You can find evaporated milk at most local veggie & fruit markets and thai markets. Banana loaf 1 loaf 285 g flour 1 teaspoon baking soda ½ teaspoon salt 115 g unsalted butter, plus extra for greasing pan 225 g sugar 2 large eggs 4 very ripe bananas, mashed 80 ml buttermilk 1 teaspoon vanilla extract ★ Preheat oven to 175 C. ★ Generously butter a loaf/bread pan
(20cm x 12cm).
★ In a large bowl, sift together the flour, baking
soda and salt.
★ In another large bowl, mix the butter and sugar
together with an electric mixer until light and fluffy.
★ Add the eggs, mashed bananas, buttermilk
and vanilla extract to the butter mixture and mix well. Fold in the flour mixture with a spoon until just combined.

★ Pour batter into loaf pan and bake for 50-55
minutes or until golden brown and a toothpick inserted in the center comes out clean. If top begins to brown quickly after 20 minutes of baking, gently cover the top of the loaf with a layer of tin foil and continue baking. This will help to retain a lovely golden brown top and edges while the center continues to bake. ★ Let cool on wire rack for 1 hour. Serve warm or at room temperature, plain or with butter. VARIATION: This sweet bread is also delicious with walnuts, pecans or orange zest. Simply add 80 g of chopped nuts or 2 tablespoons freshly grated orange zest to the dry ingredients, just before combining the dry and wet ingredients together. TIP: If you do not have buttermilk, for an easy home substitution, use 80 ml regular milk mixed with 1 ½ teaspoons lemon juice or white vinegar.
