MENU


Dear guests, I am a child of nature and firmly believe that nature is the best example of harmony. Everything is combined in nature in a perfect way: colours and forms, flavours and tastes. I follow this principle in the kitchen too where simple but really delicious FOREST dishes are made. They are always being prepared here and now taking into consideration the seasons. Nature itself creates the menu, and one only has to make clever use of the wealth it provides: fresh forest berries, bright greenery of leaves and grilled meat… As though straight from the forest. Every skilled chef has a little secret, which makes his dishes exceptional, and the creator himself becomes unrecognisable, as if one’s own. This is a present of the legendary Venetian chef Giuseppe Cipriani to countess Amalia Mocenigo. FOREST interpreted this classic Italian cuisine with due respect for the original recipe. Taste. Salads is too important part of the menu for FOREST restaurant to treat it very seriously and responsibly. The green world of taste increasingly attracts the eaters favouring light, healthy eating. Here it is – the incredible lightness of flavour! It’s secret is the right balance between vegetables, fruit, cheese, meat or fish ingredients. And of course – the lettuce leave freshness. FOREST salad smells like earth, they are firm, crisp and juicy. Like nature awakening in spring…

Mackerel and potato salad Divinely good-looking and sinfully mouth-watering – a roll of hot smoked pieces of mackerel layered with country-style potatoes, apples, green onions, and nourishing mayonnaise and mustard sauce. Served with lamb’s lettuce with a mild nut flavour, beetroot crisp, and a speckle of velvety honey-mustard sauce.

Salads with beetroot and herring Almost a traditional kind of salad: pickled beetroots, herring fillet, sunflower seeds, red onions and lettuce leaves. Yogurt and mayonnaise dressing with rocket adds a spicy taste to the dish.

Greek salad This salad is a true vitamin bomb. Crispy like ice, with strips of fresh cucumbers, cherry tomatoes, half-rings of red onions, iceberg salad, lamb’s lettuce and feta triangles coated with roasted pistachio, sesame and dried olive crumbles. Flavoured with the fresh lemon sauce.
