Make this a summer of memories without having to travel too far! We are fortunate to live in an area where we can experience all sorts of summertime fun without venturing far from home. And, we are all about making Lincoln Center your “stay-cation” epicenter. This month’s Chronicle highlights plenty of fun activities — nearly in our own backyard: with 1,000 miles of Delta waterways to explore, farmer’s markets to visit, and fabulous new restaurants to try with fresh, locally sourced bounty. June is the month to savor all of the amazing summer delights grown and packed locally. Join us (Page 24) as we journey the farm to table experience of a cherry through the eyes of a few local farmers and packing sheds. Our featured merchants this month are Andy and Jennifer Pappas, who own Papapavlo’s Bistro & Bar. Since opening at Lincoln Center in 2006, the popular restaurant has been a merchant and shopper favorite. Read more about the Pappas family, and the exciting new lunch menu they recently released on Page 10. As summer heats up, who doesn’t love dinner and a movie? New in this edition of the Chronicle is our first summer blockbuster movie preview. We are giving you our top five favorite movies of the summer. Grab dinner at one of Lincoln Center’s fine eateries and head to a cool movie theater to enjoy a hit movie. Or stop by after for dessert or a nightcap. Make sure and mark June 15, 2018 on your calendar for the annual Lincoln Center Wine Stroll. We have selected Junior League of San Joaquin County as this year’s beneficiary. From 6-9 p.m., stroll the shops with wine in hand while enjoying great music and food —all benefitting a terrific cause. With Father’s Day just around the corner, I want to acknowledge my greatest joy—being father to my four beautiful children: Melissa, Katlyn, Zachary and Charlie, as well as being grandfather to Brayden. On Page 22, we highlight four outstanding restaurants from a few special Lincoln Center dads. Cherish your children (and your fathers) and all the beautiful experiences they bring to your life, and make a memory with “Chops and Pops” on June 17. Cheers!

lending love, support, and even help with recipe creation. “We were very close as a family,” said Andy, “we had a really special relationship.” And the idea of family is as prevalent at Papapavlos today as it was at its start. Andy, his wife Jennifer, and their four children are all heavily involved in the restaurant’s day-to-day operations, with age 15 acting as a rite of passage for their children to join the team. According to Jennifer, “Once they become 15 ½, they go on the schedule!” The familial quality of Papapavlo’s, however, is not exclusive to the Pappas family, as it can be felt by anyone who walks in the door. With 12 years inside Lincoln Center, Andy and Jennifer feel a strong connection to the community, and it is with their patrons in mind

t was nearly three decades ago that Andy Pappas opened the doors to the first Papapavlo’s restaurant, and he did so with two principles that had been instilled in him since childhood: food and family. “My mom cooked Greek food all the time and when my father came here from Greece, cooking was all he knew,” said Andy. “It’s a big part of our heritage— we always had cooking in our blood.” With the immense support of his family, Andy opened the incredible restaurant Stocktonians have come to know and love. The Gospel Center Rescue Mission helps people get back on their feet and support themselves. The Mission is proud to have New Life Program graduates employed by both Podesto's and Trader Joe's in Lincoln Center. that they have continued to give and to grow. Their incredible menu, for instance, has grown extensively over the years. What originally started as a small menu of around ten Greek items, has expanded to include over 40 entrees and specials that change daily, encompassing a wide variety of “continental cuisine”, as Andy calls it. “We wanted our menu to be inclusive and diverse, we try to appeal to everyone.” With options ranging from delicious Greek staples to fresh seafood and prime cuts of steak, there certainly is something for everyone. Most recently, Andy and Jennifer decided to create a lunch menu, with smaller portions and exclusive dishes, to keep up with the bustle of the daytime lunch rush. And as if the bar at Papapavlo’s wasn’t already a consistent hotspot, they have now added a plethora of craft beers to the shelves, sure to please any palate. The Children’s Home of Stockton Auxiliary hosted the 47th annual Valley Garden Fair on May 9 at the Berolzheimer Estate. Over 400 guests enjoyed shopping at the garden market, gourmet lunch and the fashion show where seven Lincoln Center merchants were featured were featured. How long have you been at Play it Again Sports? I have managed Play It Again Sports for what will be 10 years August. Where did you grow up? I grew up in Lodi, CA. What is the one thing you’ve learned the most in your current position? What I’ve learned most, while working with Play It Again, is that Stockton is like a box of chocolates, you never know what you’re going to get. Tell us your number one selling product or sport type. If you can believe it, it’s Fitness. From large cardio machines such as treadmills, to individual weights and resistance bands — we have it all! What do you do for fun? I really enjoy golfing — disc and ball, golf. Snow skiing is a favorite of mine too.
What is your dream vacation? To snow ski in the Austrian Alps. Can you name some of the top brands you carry? Easton, Adidas, Taylormade, Innova, HEAD, Schwinn — to name a few. Aside from reused product, can you tell us about the new product you have in-store? We carry new weights, new ellipticals/treadmills, new golf discs, new inflatable paddle boards, new life jackets, and new baseball gloves. What are your favorite things to do in Stockton? I enjoy spending most of my free time with my Delta Windjammer Disc Golf Community. I also enjoy going to Stockton StockMarket to visit all the local Merchants.

id you know the Delta is a place many people spend their summers navigating the open water hoping to drift upon a hidden restaurant only locals claim to know of? Did you know it’s a place where fishermen set out before sunrise, trolling the foggy banks, hoping to catch the largest striped bass known to man? Did you know it’s also a place where water-skiers are not only alert to nearby boaters, but
also to the 50,000-ton container ships barreling past on the main channel? The Delta is more than just a body of water, it’s a place where memories are made, paintings mimic and international trade commences. It’s an intertwining web of waterways…. an intertwining web of possibilities. Alongside memory making and fun, the Delta is an industry of its own creating revenue streams upward of 3 billion dollars between the collective efforts of the agriculture and tourism. Last year alone, our waterways were accountable for bringing in over 90% of the fertilizer used by the agricultural industry in the Central Valley. The Delta’s productive and robust opportunity was discovered in the 1800’s, when thousands migrated from near and far to Stockton in hopes of striking it rich from the Gold Rush. Many found success in gold, but there were a few who found riches another way, in farming. Little
did these agricultural entrepreneurs realize that their brilliant efforts would lead to creating one of the most productive agricultural regions in the world. These farmers saw the rich, fertile soil and began farming, in hopes of selling fruit, like the Bartlett pear, to the hard working gold miners. Over time, as the gold began to vanish and the fruit continued to grow, the Delta would become home to what is still today one of the most vibrant agriculture economies world-wide. Cargo ships traversing the deepwater channels and agricultural fields that start just off the shores are important components to the Delta, but tourism and leisure also hold a stake. The Delta is frequently visited by boaters, fishermen, bird watchers and the like. It is regarded as one of the five best bass fishing destinations in America.

The purpose of the Junior League of San Joaquin County is both educational and charitable. Affiliation allows members access to many international resources and trainings with the hope of increasing members’ ability to create a positive impact on their community. The main community issue the JLSJC focuses on is the health, welfare, and education of children women and families of San Joaquin County. Their original technique for tackling this issue was to raise money for and issue grant. Thus far they have donated over $2.5 million to local non-profits. They have now added volunteer efforts to their arsenal so that they can donate hours along with dollars. One of the biggest events the JLSJC holds each year is their rummage sale. This years was on March 3, 2018. The proceeds from

In 2008, the chapter became affiliated with the Association of Junior Leagues International (AJLI), and thus took the title Junior League of San Joaquin County (JLSJC). The AJLI is a long-standing women’s organization and boasts such notable members as Shirley Temple, Barbara & Laura Bush, Eleanor Roosevelt, Julia Child, and Katharine Hepburn.

this event benefitted children, women, and families of San Joaquin Country. They also hold a prom-like event called Festival for special needs students. Each year around 350 special needs students and their teachers and aides attend. The 2017 Festival was superhero themed to highlight the superhero efforts these students make to overcome their individual obstacles. In addition to this event, they provide equipment, vocational training, and micro-business development for special needs classes. Their most recent event was a San Francisco Giants ticket raffle on April 23rd here in the Center at Midgley’s Public House! The JLSJC has always been involved with Lincoln Center. They have participated in our annual Wine Stroll for three years running by providing phenomenal volunteers and donating their own proceeds. Last year they gave to Haven of Peace. At this year’s Wine Stroll, they will be the exclusive beneficiary! Another connection to the Center is their past president, Lynda Winter, of Great Spectacles! He suggests to cook steaks on natural fuel, such as wood or charcoal, or use a cast iron skillet, cook for 3-4 minutes on each side then let them rest, add a little more Maldon sea salt (found at Market Tavern or Podesto’s), glaze a little local olive oil and enjoy!

ith fruit stands galore, orchard-laden roads, and even a festival in Linden dedicated to them, it should come as no surprise that San Joaquin loves cherries. So much so, in fact, that San Joaquin County is actually the largest producing county for cherries in the state of California! And that’s no small feat! With over 850 growers and 22 packers throughout the state, California produces a whole lot of cherries. This year alone, there is an estimated upward of 70 million pounds of cherries being harvested between April and June. And while that’s certainly a high number, it doesn’t quite reach the staggeringly high amount that was harvested last year. In 2017, a whopping 172 million pounds of cherries distributed from California alone! Given that the industry’s 5-year average is around 6.7 million 18-lb packages a year, 2017 was truly a standout season. Rich Sambado of Prima Frutta Packaging company likes to call this short, 45-day season “controlled chaos.” The days consist of non-stop turnover to get the cherries from the trees and into the consumer’s hands—both near and far. While we reap most of the delicious benefits domestically, San Joaquin’s cherries are enjoyed internationally, with export programs that include AsiaPacific, Europe, North America, and Latin America. On average, about 40% of the California crop is exported around the world, although the distribution number can vary year by year, depending on how big the season was.
And though the process of growing a cherry seems simple enough—a bud turns into a growing fruit, and from there it is picked and shipped to the local market— there is actually so much that factors into the creation of a great cherry. For starters, weather is everything. In a grower’s mind, the cherry trees need a decent number of chilling hours throughout winter, and over the last 5-6 years, winters have been more on the warmer side. Tom Gotelli, Plant Manager of O-G Packing tells us that “this winter we didn’t achieve the optimum number of chilling hours, in addition to the deep cold spell in February and rain during the

blooms in March. With all that combined, we think that’s what made for a lesser crop.” Gotelli also went on to tell us, however, that cherries are alternate bearing fruit — meaning one year is a very big crop, while the next will be smaller. At Morada Produce, Scott Brown boasts of their environmental sustainability as a pack house. A green certified business in every line of their operations from environmental, social and financial consolidations — a great example is all of the water used in the packing shed is reused to water the walnut acres. For cherries, being the delicate fruit that they are, the handling of a cherry from tree

to package must be done with extreme care. And for cherries having such a short shelf-life, it’s also important to get the cherries to their destination, not only safely, but quickly. Because of this, the packing process has grown immensely with technology over the last few years. When a cherry comes into Prima Frutta, O-G Packing or Morada Produce for packaging, they are immediately testing for 5 attributes: the size of the cherry, the firmness, the bricks (sweetness), the temperature (whether it’s sat out in the field too long), and the stem thickness— which can determine the freshness of the cherry and, in turn, determine the shelf life for the consumer. When the cherries arrive from the growers they are assigned with a lot number. From there, cherries are put

MOST COMMON TYPES OF CHERRIES: BING: A large, dark red cherry that has a firm and juicy inside. through the cluster cutter which makes sure the stems are individualized to get ready for the optic sizer. The optic sizer is a new machine developed in 2013, taking up to 33 photos a minute of one cherry. The goal of the optic sizer is to detect the softness of the cherry at an earlier state, allowing for less labor along the process. Once the cherries have been photographed, they undergo a hydro cooling process which chills the cherries at 33 degrees before they’re placed
in the packing boxes and prepared to ship domestic and international. And that my friends, is how a cherry gets from the orchard to your table!
BROOKS: This variety was developed by the University of California and can tolerate hot climates. CHELAN: With medium to dark inside, this cherry is best picked when tart. CORAL: Similar to the Bing, Coral’s have a glossy dark flesh and full of sweet flavor
