Greek Orthodox Folk, Dance & Choral Festival The 38th Annual Greek Orthodox Folk, Dance & Choral Festival was held in Anaheim February 13 - 16, 2014. This is a competition open to the western United States where groups from all over compete in genuine folk attire, dancing and/or singing from the same region.

This year St. Basil Greek Orthodox Church from Stockton had a group of 20 junior high - high school students attend, among those was Elliana Pappas, daughter of Andy and Jennifer Pappas of Papapavlo’s Bistro & Bar. They competed in both the dance and choral competitions and won four awards under the direction of Maria and Dimitri Karapanos (dancing) and Presvytera Angie Sotiras (choral). Father Pete Sotiras also attended. John and Paula Pappas provided live music for the dancers. The awards won were: 2nd place in Choral, Special Achievement in Choral, Instrumental Award and Founder’s Award. We are extremely proud of them as the dancing and singing (all in Greek) requires months of dedicated practice. These young adults deserve to be recognized for their achievements.

Baking the starter-based dough under high heat yields a sourdough-like flavored crust that is moist yet still crisp, explained DiArenzo, a chef for more than 14 years in the Bay Area.

he two sides of Market Tavern – full-service restaurant/bar and food market – sprang from one premise: Offer the best prepared and fresh foods at a fair price. “Everything is cooked from scratch and cooked, as much as possible, from locally sourced ingredients,” said Chef Nick DiArenzo, who coowns the restaurant with Phil Wong. “We wanted it to be a place with options for everybody.” This newest addition to the Center’s already strong lineup of restaurants features a soft-lit interior with an open floor plan that allows patrons to view the action in the kitchen and bar. Reclaimed barn wood accents provide a counterpoint to sleek surfaces, creating an ambiance that is both cozy and classic. Bar table styles range

his is the title page of one of my favorite cookbooks, The Gathering of Friends (vol. one with five additional volumes to follow). Each meal is outlined with a complete menu and shopping list, photographed with table dressings and place settings. Each recipe is simple and loved by all who sample them. It’s my go-to for something new and fresh and easy! I’ve chosen a couple of recipes to share here, including Toasted Sesame Chicken Pasta. With Podesto’s Market spilling over with local asparagus, I had to include one that featured one of my favorite veggies. The other recipe for you to try also takes advantage of how lucky we are to have fresh strawberries on every other corner, market, and little stand in and around our neighborhoods. Treat your friends and family to Chocolate Strawberry Trifle. n

News fromTHE KI TC HENSIDE Toasted Sesame Chicken Pasta 3 lbs. chicken tenders 16 oz. pkg. radiatore or bow tie pasta Sesame Ginger dressing

2 c. Candied Pecans 2 bundles of asparagus

Spray a heavy pot with cooking spray. Place frozen chicken tenders in pot, cover with lid. Cook on medium heat for 10-12 minutes. Drain and shred chicken into chunks with fork. Cover and set aside. Prepare Candied Pecans, giving time to cool. Cook pasta al dente. Rinse asparagus and snap woody ends. Blanch in boiling water for 1-2 minutes. Cut into 2-inch chunks and set aside. Prepare Sesame Ginger dressing. In a large bowl, combine chicken, pasta, and asparagus. Add Candied Pecans and toss with Sesame Ginger Dressing. Serve. Candied Pecans 1/2 c. butter melted 2 c. pecans

3/4 - 1 c. brown sugar

Preheat oven to 375. Melt butter in a pot and add brown sugar, stirring until sugar dissolves. Fold in pecans and spread on a cookie sheet. Bake for 10 minutes. Let cool and break up into little pieces. Set aside. Sesame Ginger dressing 4 tbsp. toasted sesame seeds 1 tbsp. sesame oil 3/4 c. sugar 2 tbsp. lemon juice 1 tsp. ground ginger 1/2 tsp. black pepper

1/2 c. frozen orange juice concentrate 1/4 c. vegetable oil 1 tbsp. Worcestershire sauce 2 tsp. garlic powder 1 tsp. kosher salt

In a small skillet on medium heat, toast sesame seeds for about 2 minutes or until golden brown. Set aside to cool.

Chocolate Strawberry Trifle 2 quarts fresh strawberries, sliced 1 c. heavy cream 3-4 tbsp. sugar 5 oz. box instant chocolate pudding

1 tbsp. sugar 1 tsp. vanilla 1 angel food cake 8 oz. raspberries

Slice strawberries and coat with 1 tbsp. of sugar. In a chilled bowl, whip heavy cream until stiff, fold in vanilla and sugar. Cut angel food cake into 1-inch cubes. Make pudding according to directions on box. Set aside. In a trifle bowl, start layering angel food cake, followed by a layer of strawberries, pudding and whipped cream. Continue layering, ending with strawberries. Cover with plastic wrap and chill well before serving. When ready to serve, garnish with whipped cream and raspberries. Serve. There are so many delicious recipes to choose from in the six volumes available, including great Easter brunch and dinner ideas—complete with flower arrangements and table setting suggestions! For those of you thinking ahead, it’s the perfect Mother’s Day gift too!

he Community Foundation of San Joaquin is a nonprofit community benefit organization that works to spread the Spirit of Giving throughout the region. It provides services to donors, professional advisors and nonprofit agencies. These services include investment, education, consultation and leadership related to philanthropy. Linda Philipp, CEO and President, explained “We exist to encourage donors to elevate their giving and agencies to make the most of what they have been given.” Formed in 2007, CFOSJ now manages 65 funds for donors and agencies so that grants may be provided to meet community needs. Duane Isetti has been named the chairman of its Board of Directors for 2014. Mr. Isetti, a native Stocktonian, is the retired planned giving director from the University of the Pacific and has served the community as a coach, mentor, volunteer, insurance executive, Stockton City Councilman and on boards of numerous community benefit organizations. Serving with Mr. Isetti as officers in 2014 are: Cynthia Souza (Tracy) as vice-chairman, Ted Leland (Stockton) as secretary, David Vaughn (Stockton) as treasurer, and Teresa Mandella (Stockton) as immediate past chair.

Broadening Their World-Perspectives: A Journey to Guatemala

S

tockton, through and through, is a city that practices and encourages the art of giving. Since its humble beginning, our city has provided the state, country and world, with agricultural necessities. On a more local level, this city nurtures the needy with its countless citizen-run organizations designed to make life a little easier for those dealing with tremendous strife. And like most everything in life, Stockton’s tradition of giving is most vitally imbued in its youth. Four Saint Mary’s High School students decided to broaden their world-perspectives on a journey to the impoverished regions of Guatemala in Central America. Following the example of many Stocktonians concerned with giving back, Charlie Johnson, Jack Stephens, as well as Nick and Joey Traverso embarked on a five-day trip to Guatemala in the hopes of better understanding the extreme conditions in which many people live today. Accompanied by Mrs. Susan Traverso, Mrs. Margaret Stephens and Mrs. Wendy Johnson, the four boys went to the third-world country with three goals in mind:

one, to realize the everyday struggles of the Guatemalan majority; two, to bring much needed supplies and human interaction to local school children; and three, to observe the success of humanitarian projects that began locally and expanded internationally. “We became involved in this trip because our mom had lived and worked in Guatemala earlier in her life,” said Saint Mary’s junior Nick Traverso. “Our parents decided it was time to give us the chance to reach out to a different part of the world.” Mrs. Susan Traverso and her two sons have known Wendy Johnson and her son Charlie since little league. The Traverso, Johnson and Stephens families all agreed that this trip would be a wonderful experience for their children. So, the group of seven flew into Guatemala City where they visited the notorious city dump. It is within the confines of this hazardous garbage heap that many of Guatemala City’s poor citizens make barely enough money to survive by scavenging and selling recyclables. Freshman Charlie Johnson commented on seeing the city dump for the first time, “When we toured around the dump I was really struck by the poverty prevalent in Guatemala and countries like it. I wondered what it would be like to live in an environment similar to the dump and I immediately felt the people’s need for our help.” The boys spent most of their time in the colonial city of Antigua, as well as near the villages of Lake Atitlan. It was near Antigua, in the village of Pazun, that the boys were first given the chance to directly

Within the village there is a modest school supported mostly through the private donations of Stockton families. “I went to the school to help with an art project as well as to bring sports equipment. I learned that every little thing we did and continue to do in order to help, means a lot to the Guatemalans,” said high school sophomore Joey Traverso. The fourth and final destination for the group was the beautiful Lake Atitlan. Beneath the shadow of an active, but sleeping volcano the boys witnessed the truly diverse scenery and culture that the land and people of Guatemala have to offer. While staying in one of the many villages that surrounds the lake, Jack Stephens remembers playing an impromptu game of soccer with four local boys. “After the game we went to a store and bought the locals two real soccer balls, because we had noticed theirs were plastic. They were overjoyed and extremely thankful!” explained Jack.

All in the all, the trip to Guatemala was a success. Every party gained something. The people of Guatemala gained access to necessary items for education and play. The four boys from Stockton gained a new sense of the world and its needs. Upon his return Charlie Johnson was grateful for the experience, saying “This trip has inspired me to travel to more third world countries and to do as much as I can do to help. We are so fortunate. We need to spread some of what we have been blessed with, to others in need.” Thanks to young people like these, Stockton’s passionate tradition of giving is perpetuated. n

elivering a baby is the toughest workout you’ll ever experience; your body works hard for close to a year to prepare for it. Getting your body back after baby starts during pregnancy, with a healthy diet and regular exercise. Pregnancy is not an excuse to eat poorly and quit working out.In fact your body only requires about 300 extra calories per day, and exercise usually helps battle nausea and fatigue. If you can keep yourself healthy and remain active throughout your pregnancy, recovery and getting back in shape will be much easier. After the baby is born it’s easy to fall off the wagon from your usual fitness and diet routine, considering that most of your time is occupied by your precious new baby Here are a few tips to jump start your postpartum health plan:

• Get your diet back on track, this is the most important piece of the puzzle! Start eating nutrient dense foods as soon as possible while you wait for exercise clearance from your doctor (usually 2-8 weeks postpartum). • Once you are cleared to exercise start with basic body weight exercises such as pushups, planks, and sit-ups before moving into higher intensity workouts. Strength training will help you build muscle and get back to your pre-pregnancy body. • Lastly, enjoy the time with your sweet little one as it doesn’t last long.
