What a fantastic start to 2015, we are excited to welcome our new head chef Chris Lane to the team. Together Chris and the team will introduce some new ideas and provide our guests with an exceptional new menu. Together with the new menu we are excited to announce the purchase of our pizza oven and we are making our very own pizza in-house with the new pizza menu to follow. We also welcome our new gaming duty supervisors Teigan & Katrina and Sarah our bistro supervisor. As we head into 2015 we have a variety of upcoming events such as Ballo Della Repubblica, Bogan Bingo, Latrobe Valley Mixed Dart League, The Latrobe City Bocce Triples Classic and much more. For regular updates on events make sure you, your family and friends like our facebook page. Our $20 Sunday Parma day has began and has proven to be very popular, by the second Sunday our kitchen cooked 70 Parmas!

Latrobe City Bocce Triples Classic

The annual bocce tournament held at the Italian Australian Sporting Club attracts players from metropolitan, regional Victoria, New South Wales and other states. This event will showcase the talents of all states best bocce players which will then highlight the clubs first class facilities. CHEFS WINTER WARMER RECIPE At The Club

BEEF OSSO BUCCO ON GARLIC MASHED POTATO WITH A PEA AND GOATS CURD GREMOLATA

Serves 4

Ingredients 4-6 pieces beef osso bucco Plain flour (for dusting) Salt and cracked pepper 2 tbs Olive oil 1 brown onion chopped roughly 1 carrot chopped roughly 1 stick of celery chopped roughly 2 cloves of garlic finely chopped 1 litre of beef stock 80ml red wine 400gm can of chopped tomatoes 1 bunch of parsley chopped roughly 60gm of goat’s cheese Red chilli finely chopped to taste 40gm Frozen peas (mashed up) Lemon zest to taste 6

Method Heat olive oil in a heavy based pan, coat beef in flour and cook either side for a couple of minutes, until browned then take out of the pan and set aside. Put the onions, celery and carrots in the pan and cook for 5 minutes till slightly softened, then add the garlic, beef stock, red wine and chopped tomatoes. Return meat to the pan, bring to the boil, and then reduce heat to low. Braise for 1 1/2 hours, occasionally skimming any excess oil on the surface. Stir through chopped parsley and serve with mashed potato or try with creamy polenta. Goats cheese gremolata Combine goats cheese, smashed peas, lemon zest and chilli and finish off by placing on top of the osso bucco when served.

Chestnuts are only eaten cooked and have a sweet, nutty taste but a texture similar to a firm baked potato rather than the crunchy texture of other nuts. Nutritionally chestnuts are more like a wholegrain than a nut as they are low in fat, contain carbohydrate and are high in dietary fibre. They are also a source of folate and surprisingly contain vitamin C which is not found in other nuts. Before cooking it’s important to cut the shell to prevent the nut exploding while cooking. You could cut a slit across the face of the nut or a cross into the flat-end. TO BAKE Preheat oven to 200 degrees C. Place chestnuts onto a baking tray and bake for 15-20 minutes or until shell splits. TO ROAST GRILL OR BBQ Cook, turning occasionally, in a pan over medium heat for 20-30 minutes or until shell splits. TO BOIL (if using to puree): Place chestnuts into a pan of cold water, bring to the boil, cover and simmer for 15-20 minutes or until flesh is tender.

AROUND THE CLUB At The Club

A LITTLE BIT ABOUT OUR NEWEST MEMBER

Food has been my passion for as long as I can remember. I grew up watching and learning from my Grandmother. She was not only an amazing Chef who worked professionally in some fantastic venues, she also had her own restaurants in Sydney. She was and remains my inspiration and the reason I became a Chef. I gained experience and my qualifications as Pastry Chef via an apprenticeship while working for the Ramada and Stamford Hotels. Once qualified, I travelled to England and worked at The Dorchester Hotel on Park Lane. While I loved Baking and Pastry work, I realised that I wanted to expand my skills into other areas so I set about gaining my Chef qualifications while working in restaurants around London and Manchester. In 2004 I was appointed as a Head Chef for a large group of family restaurants across England.

Home called so I returned to Australia in 2007 working seasonally as a Head Chef in the NSW snowfields, Byron Bay and Canberra before moving to Melbourne in 2009. I worked for The Big Group and opened Capital Kitchen in Chadstone then the Mural Hall Ballroom in Bourke Street. In 2012 I joined The Grand on Cathies Lane in Wantirna South, a reception centre that seats up to 600 guests. In the three years that I worked there the business grew to include a 400 seat venue in Mulgrave and a 200 seat venue in Clayton. My role as head Chef included the liaison and coordination of all 3 kitchen serving up to 1200 guests a night over the 3 venues. My lovely wife Natt and I have twin teenage sons, Bailey and Connor. At the start of 2015 our family decided we wanted to leave Melbourne and find a new challenge. When I applied for the position at The Italian Australian Club in Morwell I knew I had found somewhere that was a perfect fit or me and my family. I am looking forward to working with the talented team here. Together we will be introducing some new ideas to provide our guests with an exceptional menu and excellent service.
