With spring, comes the multitude of state and national testing mandates for which our faculty and staff members have been preparing their students for since the moment they walked through their door last August. By the time this is published, some of our students will have already taken a few of these state tests and will be getting ready for more during the months of April and May. Every testing situation can produce some degree of stress or anxiety to the test taker. Rose F. Kennedy said, “Neither comprehension nor learning can take place in an atmosphere of anxiety.” Below, I have listed a few ideas that can help reduce the level of anxiety that some of our students may feel as these state assessments draw near. 1. Open Communication Between Teacher and Parent - Preparing your child for these upcoming exams may be more difficult than you think. Many a parent has heard the words, “Mrs. Smith doesn’t do it that way.” Teachers cover many different test-taking strategies with their students to give them every advantage before the test is given. Discuss any problems and/or concerns you might be facing with your child’s teacher. The teacher may be able to recommend activities to help you and your child understand these strategies, which will build consistency between home and school.

2. Be Realistic – Always strive to be realistic about your child’s abilities in all areas of study. Children were not created to be successful in everything they encounter, which is why every child is unique. You may have had an amazing ability to compose essays off the top of your head, but your child may find this area of the curriculum overwhelming. Understand their differences and share your successes and failures with your children.
Living in the State of Texas, we are all well aware that our children will be faced with state assessments throughout their academic years. As Norman Vincent Peale once said, “Believe in Yourself! Have Faith in Your Abilities!” Our administrators, faculty and staff members have worked diligently to help our students believe in themselves and their abilities in order to achieve the highest levels of success.
3. Confidence Building – Always focus on the positive with your child. Much data have been derived from students who appeared to have low self-esteem and/or confidence and scored poorly in certain subject areas. When these same students were praised for their gains, no matter how small, studies found as their confidence levels increased, test scores improved in areas that were once overwhelming. 4. Don’t Forget About The Basics – In order for any of us to function at our best, we must maintain proper nutrition, restful sleep, and exercise. Many students will show up the morning of the exam with an energy type drink in hand without having had breakfast. Our brains work at their best when they are nourished with the proper nutrition and without high doses of caffeine found in many energy drinks.

This place oozes Texas. From the friendliest, most genuine servers around, to the seriously southernstyle home cooking, Lucy’s on the Square is a polite nod to the proud roots of this great state. Located just across the square from Celina’s City Hall, the building Lucy’s occupies dates back to 1900, and is adorned with lofty ceilings of beautifully detailed black tin, warm brick walls above red paneled trim, and dark industrial floors. Booths surround the dining room, with several tables for larger parties filling up the center. Texas décor abounds. Lucy’s on the Square first opened in 2004 and has been under new ownership since 2013. Since that time, the team has been striving to maintain recipes that take you back to your Grandma’s kitchen, while also expanding the menu to provide some new and different dishes to Celina’s quickly growing population (more than 25% in just two years). Adding some international flavor to their otherwise traditional American menu, Co-Owner Moises Casillas is truly excited and passionate about introducing Paella on Sundays, giving Celina a chance to experience Spain’s most famous dish. “Paella is a truly spectacular blend of saffron-scented rice and veggies, studded with seafood or a variety of meats.” In addition to a few new menu items, a full bar has been added in the back of the restaurant to provide diners with their choice of alcoholic beverage. Happy Hour runs Tuesday through Friday, from 3pm until 7pm. It’s hard to imagine Celina without this local gathering place. Lucy’s maintains a steady stream of regulars who can be seen there daily at lunchtime. As Mr. Casillas puts it, “Lucy’s is Celina. Celina is Lucy’s.” The restaurant is very family-friendly and often Parks & Recreation
plays cartoons on the TV to help entertain the youngest of eaters. Breakfast is served only on weekends, from 7am11am, with traditional morning favorites, plus a couple with Texas flair like the Breakfast Burrito and Breakfast Tacos. Lucy’s fries many things, and they fry them well. Choose from a few fried favorites like Pepperjack cheese cubes, tomatoes, jalapenos, pickles, mushrooms, or onion rings, and create your very own Fried Platter appetizer. Entrée options vary from monstrous salads, to sandwiches and burgers, to a variety of platters and daily specials. Sample a Texas staple: Chicken Fried Steak, either traditional with peppered gravy, or try it “ranch style”, topped with salsa, sour cream, and cheddar cheese. Expect that the portions will be more than generous. All desserts at Lucy’s are made in house, and they’re also in high demand. Call ahead and see if they have your favorite. The Chocolate Cream Pie is rich, fluffy, and indulgent, and the banana pudding is traditional and light. The Buttermilk Pie is rumored to be the best around. However, this diner was unable to get her hands on one at the time; they are only available for special order. Lucy’s is a treasure to downtown Celina. From the second you enter, the caring staff will make you feel right at home, something co-owner Moises Casillas takes great pride in. “Our team strives to make our customers feel at home. We believe in maintaining this pure American spirit amidst an ever-growing sea of chain restaurants.”

The Signs of Spring The signs of spring are everywhere! The long and sometimes challenging winter has come to an end and new life is blooming right before our eyes. Every spring we are reminded of the glory of our great creator, God, as He yet another year, displays His incredible glory through the changing of the seasons. Nothing displays His beauty, creativity and love for mankind like the dawning of spring. He’s a great God who has a way with reminding us at this time every single year that He has a passion for bringing dead things back to life. From the beauty of Easter lilies and pink azaleas to the white buds of a Bradford pear tree it’s hard to miss His awesome wonder. With the arrival of spring also comes the opportunity for the great residents of Prosper to get out of their winter hibernation and enjoy the incredible park facilities of our town. We are incredibly blessed to live in a town that has some of the best places to spend time with the family, throw or kick a ball, toss a Frisbee, walk the dog or just simply get out and get some much overdue exercise. Whether it’s Boyer, Eagle’s Landing, Folsom, Frontier, First Street, Hays, Main Street, Pecan Grove, Town Lake or Whitley Place Parks, the options are many. But nothing says spring like the sound of children competing with their teams on the many fields of play in our parks. From soccer to baseball, the children of our great town have the best facilities anywhere to have fun learning a game & developing their skills. What an incredible blessing Frontier Park is to the kids of our town. Last summer, my family was visiting family out of state and while there we took in a little league baseball game of one of our family members. My son, already graduated from PYSA sports leagues and now in High School, quickly noticed the vast difference in the ball fields he grew up playing on versus the one the game we were watching was on. It was in that moment that he realized that the fields he played on at Eagle’s Landing and Frontier Park were not the norm but rather the exception. Of course with the arrival of spring comes the excitement for the summer break that is just around the corner. From kids to teens the camp season will be in full gear in just a couple of months. At COC Metro, we love summer because it gives us the opportunity to invest back into the next generation with our camp season. From youth camp in Glorietta, New Mexico to pre teen camp at Camp Copass and finally Princess & Prince Warrior camp right here locally, it will be plenty busy. Some of the greatest investments that were made into my life as a kid happened within the environment of summer camp. Some of the greatest decisions I made about life and my future were made in the atmosphere of a camp setting. Take advantage, as well, of the many camps that will be offered over the summer months. It might just be the one week that could change a life. I hope that after reading this you are ready to dive into this great time of the year! Selecting the Right Summer Camp
A
ccording to the American Camping Association (ACA), more than eight million children attend camp each summer. Picking the right camp can be a daunting task. In addition to looking at the quality and variety of daily programs and activities offered by a camp, the ACA suggests parents consider the following while evaluating camps:
• What safety and medical accommodations are at the camp? • Is the ratio of counselors to campers appropriate for the child’s age? Younger children require a higher ratio of counselors than older kids. • What percentage of counselors returned from last year? Look for 40 to 60 percent returning staff. • If you’re choosing a sleep-over camp, what are the sleeping quarters, showers and bathroom facilities like at the camp? Check where they are located in relation to one another and ask about their night security procedures. • If daily meals or snacks are provided, ask who selects the menus (it should be a certified nutritionist or dietitian) and how meals are prepared and served. Food storage, preparation and dining areas should meet state health and food service codes. Ask to see sample menus and dining schedules. • How does the camp handle homesickness, adjustment issues, and behavioral problems? • Make sure the camp’s philosophy complements your parenting philosophy and your child’s personality.

• What is the camp director’s education and career background? Look for a degree and camp administration experience. • If a child has special needs, can the camp accommodate them? Ask the camp director about facilities and remember to explain all special requirements thoroughly. • If possible, ask to visit the camp before enrolling a child in a program. • Contact the parents of campers who attended in the past to get their impressions. • Compare camps and fees. CELINA HOLDS TITLE TO THE BIGGEST FISH STORY IN TEXAS!!

Can you imagine having a fish story this big to tell, not to mention that you are from Texas?!? Yes, you can believe this story is true, it has been certified by the Curator of Anthropology and Geology at The University of Texas in Austin. In 1930, a giant fossil fish was discovered on Haw Branch by Homer Fafayette Merritt of Celina, Texas. The Giant Fossil Fish is from the Cretaceous Period of Texas and measures 12 feet, 10 inches in length. This fish is the giant of the bony-fish world and was excavated from the rocks at Haw Branch Creek. The long, slender body, powerful fins and large tail show that these fish were fast and powerful swimmers. The sharp teeth indicate that the fish were able to cope with the giant aquatic reptiles of that time. The same formation, which preserved this specimen, extends to Kansas and Colorado. This Xiphactinus Audax Leidy fish is 65,000,000 (million) years old. When this fish was living, a large area of Texas was covered by warm seawater, containing many strange plants, fish, clams and reptiles. This particular fish is a relative of the Tarpon, Salmon, Herring and Trout. This 12 foot fossil fish is one of many animals that was buried in hundreds of feet of soft mud and later fossilized. When the land rose and the shallow seas retreated from the area, the land was exposed to the wind and

rain and after millions of years the skeleton of this giant fish was exposed. Most of Texas was covered by water during the Austin Chalk time. The continuous beds carrying characteristic marine fossils from Texas to Kansas prove that the sea reached from Mexico and Texas into those states. The Fossil Fish can be seen at the Texas Memorial Museum, University of Texas, Austin. The Collin County Historical Commission placed a county marker at this historic land spot in 2010. The Celina Museum has been working with The Collin County Commission Historic Asset Survey and in 2014 has added 5 historical sites that will be added to Collin County’s website. More sites will be added in 2015 by the Museum. Homer Merritt is the father of Mike Merritt and Jane Merritt Huddleston of Celina. Jane is always in vigorous pursuit for items and historical information about Celina and Celina families for the Celina Museum. With today’s technology it is easy for the museum to duplicate pictures and articles and are glad to do so. Place chicken on grill rack coated with cooking spray, and grill 6 minutes on each side or until chicken is done. Combine tomatoes, dressing and olives in skillet over medium heat; cook 2 minutes, stirring occasionally. Cut each chicken breast half into 3/4-inch slices. Top each chicken breast half with 1/4 cup tomato mixture. Sprinkle each serving with 2 tablespoons cheese and torn basil leaves, if desired.
