This group is doing amazing things, and raising a great deal of money for the Celina schools. If you are able, please try to attend the Brunch and Fashion Show…it’s for a wonderful cause! We also implore you to consider any ways that you can plug in with the Measured by Character organization…what they are teaching our students is a wonderful lesson, and one that will benefit them into adulthood. UIL ELEMENTARY ACADEMIC COMPETITION Celina ISD is once again participating in the UIL Academic Competitions for students in grades 2 through 8. A few years ago, we were a part of a district that did not compete in UIL academic competitions except on the high school level. Having not competed these last 2 years would have put many at a disadvantage, but I am thrilled to share that our students rose to the occasion and represented their campuses and our district with outstanding performances and sportsmanship. The Elementary UIL Academic competition was held on December 5th at Hilltop Elementary in Argyle, Texas for students in grades 2-5. The district came in second overall and many students were awarded medals and ribbons for their outstanding performances. Listed below are the results from the UIL Elementary Academic Competition. Local Ball Team for Special Needs Players Starts 6th Season

C

Children with physical, mental and/or developmental challenges and are in 1st grade thru 12th grade are invited to join the 2015 AllStar League. This team is designed specifically for those special needs players that are unable to participate on regular teams due to their physical/mental challenges. We play at Old Celina Park from 6:00 7:30 each Tuesday evening beginning March 17 thru May 26 on Practice field #8. There is no fee to play on this team. We rely on sponsors from our community. In years past, Prosper Marketing Group has provided the team t-shirts for the players and the Celina City Council and Mr. VanZant, who is the Celina City Attorney, provided trophies for the players. To celebrate the end of the season, Jimbo’s Pizza donated pizzas and Brookshires provided a gift card to cover the cost of cupcakes and drinks. There are NO outs. Each child will be able to hit the ball, run the bases and make a home run. We divide the players

into two groups and rotate infield and outfield. For those players that need buddies, volunteers will be available to help them hit, run, catch or just stand close. We have a t-ball stand for those that need it or the coach can pitch the ball. We will accommodate any player to help them participate to the best of their ability. And for the parents, this will be a relaxing opportunity to meet other parents of local special needs children that face the same day-to-day challenges that you do and exchange ideas etc. You will finally be able to sit on the sidelines and watch YOUR special needs child play ball. Please sign up no later than March 1st so that we will be sure to have a team shirt for your child. WE ALSO NEED VOLUNTEERS. This is a great opportunity for students who need volunteer credit hours or just

want to help out. No age limit required, and we love our retired folks who help out too! We would also like to extend our appreciation to Cody Webb with Celina Parks and Rec. He ensures that our field is prepared every Tuesday before our games. He draws lines on the field, brings in bleachers for the parents, and keeps the field as dry and clean as possible. There were two facts about Papa Gallo’s that I already liked before even setting foot inside the doors. First, they’re located on an endearingly adorable town square. Secondly, they serve Mexican food. A queso lover from birth, I’m that girl who could absolutely eat Mexican food for every single meal, and I’m always excited to explore and find new favorites. I love to discover dishes and vibes that make me want to return again and again for more. In case you’re wondering, “Papa Gallo” translates to “Father rooster” -just a short Spanish lesson there before going further and leaving you wondering. The best news is that it’s not just average Mexican food like you find on every corner in DFW. This small town Celina restaurant is doing it right. Since opening and becoming instantly popular, they now serve an expanded menu and the food is now better than ever. It all began in December of 2010, when owner Eddie Bell fulfilled both his dream and Celina’s need for a Mexican restaurant by opening Papa Gallo’s on Pecan Street. Exposed brick walls, a large wooden door, faux cowhide tablecloths and industrial floors set this scene for authentic Mexican fare. Service is quick and the servers are always friendly and genuinely seem to enjoy being there. You can choose to sit inside or outside, the patio is covered, climate-controlled and has its own cozy bar, complete with a view of Celina’s picturesque town square. My all-time favorite item on Papa Gallo’s menu is the Mexican pizza: a perfectly crisp fried tortilla topped with refried beans, gooey melted cheese, spicy chorizo, and avocado slices. Dollop with sour cream and enjoy. It’s on their appetizer menu and is definitely enough to share, or enjoy as an entrée. This dish keeps me returning week after week to enjoy.

bean soup in additional to the complimentary chips and homemade salsa. The regular lunch menu is served Monday thru Saturday from 11am-2:30pm. There are also featured Monday –Friday lunch specials ranging from $5.99-$9.99 and includes items like enchiladas, tacos, chimichangas, and carne asada. With these specials you can choose to add a 12 ounce margarita for only $2 more. Papa Gallo’s house margarita is blue. Yes, blue. First timers are often confused when a waitress asks “yellow or blue margarita?” The house margarita is bright blue thanks to the addition of Curacao to the recipe. Happy hour is Monday-Friday from 4pm-7pm. The beef fajita and ribeye are tender, quality meats lots of locals rave about. Cheese enchiladas are also fantastic; top yours with queso if you’re a die-hard cheese lover, or change it up by adding green chile stew for something a bit different with a slightly spicy kick. Another favorite menu item is the pulled pork stuffed chile relleno – simply delicious! Top with queso (noticing a theme?) for an indulgent treat. For those of you with a sweet tooth, dessert offerings like traditional sopapillas, xangos (fried cheesecake in a thin flour tortilla and topped with cinnamon and sugar), homemade flan, and crispy fried ice cream have got your sugary cravings satisfied. Eddie Bell definitely did his research and has put together a great concept in his very first restaurant. Congratulations so Papa Gallo’s on a great first 4 years, and cheers to many more successful years on Celina’s square. Founded in 1992, the Celina Association for Renaissance Excellence (C.A.R.E.) Foundation seeks to inspire and reward academic achievement throughout Celina Independent School District. Beginning with the pre-kindergarten class and culminating with the senior class, C.A.R.E. supports the academic endeavors of all Celina students. The Annual Ladies Brunch and Auction is schedule for March 21st at Celina High School from 9:00am – 12:00pm. This event is our largest fundraiser of the year. Celina’s Sweet heart s Celebrating 25+ Years of Marriage Jim and Peggy Bowers Ralph & Thresa O’Dell They have been married 71 1/2 years (72 years in June). They were interviewed for their 70th anniversary and said “We’ve always settled arguments peacefully. We’ve always had a good home and good kids. We’ve been fortunate.” As their granddaughter, the thing I admire most, is their commitment to each other through whatever comes their way. Jim & Peggy Bowers My husband and I celebrated our 49th wedding anniversary a few weeks ago. We were married on January 9, 1966. Our advice to newlyweds is “Marriage is forever, that’s what makes it so challenging and yet so rewarding.” Robert & Carolyn Harvey Who would ever believe it would last….it amazes me today….Three dates to a Solider Boy has equaled to 56 years of marriage. The years have been good to Bob & I and we are grateful for what we have been able to do and accomplish in our life. We had a lot to live up to in the Harvey Family… divorce was not an option …everyday you can find love in something and you built on that just as they have done for generations. The advice is simple, just say keep love in your heart each day and Bob always has said life is in the order of, “GOD, LOVE, FAMILY & MUSIC” you can’t go wrong.

The Tree

H

ow do you know when the holiday season is over? There are two markers. One is when the Super Bowl is within a day or two, and the other is when it’s time to take down the Christmas tree. Remember the joy of getting the tree out of the shed or garage? Chasing down all the boxes with the bulbs and lights? Sitting on the hearth with a string of lights, replacing bulbs, one at a time, till the whole string lit up? Well that’s good because all that is gone and it’s time to put all that stuff away until next year. Taking down the tree, for me, is not as much fun as fighting to get the string of lights to work. There is a real rush of success when you have finally solved the problem, and the joy of seeing the lights all come on with the warm glow of the season. The hassle of stringing the outside lights and trim to celebrate the season is all erased when it’s lighted and you and others can enjoy your efforts. I have often considered leaving the tree and all the lights up for the whole year. It really feels warm and friendly sitting and watching a football game with the tree lit up and a fire in the fireplace. For that reason I usually leave the tree up until at least the playoff games are

done, but mostly I leave the tree up till after the Super Bowl. Since that happens in early February now, for some reason it seems like a little much, so now the playoffs are the end of the road for the tree and I guess even the Christmas season. A few years ago I bought a nine foot, lighted, four sections Christmas tree. The thing weighs about seventy pounds. It came in a two foot square by six foot long box. The first challenge was getting it put together and working. That was the easy part compared to taking it down and trying to cram it back into the box. The latter little item turned out to be all but impossible. I don’t know why they don’t send the little Chinaman who put the tree into the box the first time, with the box, so he can do it again. Over the years of wresting the tree around, I have never been able to come even close to stuffing that thing back into the box! I have been able to get a rope around it to keep it all together, and that is my best effort. I’m thinking of getting another tree. Smaller this time. For sure lighter, and maybe shorter. The mounted lights on our present tree don’t all work so we just put our own lights on the tree this year, so a self-lighted tree is out for the new one. Sometimes I envy those who

put up a table top tree, self-lighted and stands about a foot tall. Somehow though, that just doesn’t capture the spirit of Christmas for me. Big and bold is the way to go for decorating and honoring the birth of our Lord and Savior, Jesus Christ. The little tree and lots of other things going on now seem to let us forget why we have Christmas anyway. All that said, it’s the bigger and bolder tree for me next year. I’m glad all the major holidays come reasonably close together. Halloween, Thanksgiving, Christmas, and New Year’s buzz thru the last two months of the year in a flash of good, no, great food, merriment, family and friend associations, and spending lots of money. The last part is the only problem. The memories of the great times will wane as the credit card charges keep coming in over the next few months. No matter, it’s ten or so months till we do it all again, and surely by then I can get them all cleared up for another round. Oh yeah, I just noticed, I still have two motorized Reindeer in the front yard I need to take down and put away. What the heck, the Super Bowl is still two weeks away, it’s cold and what difference will it make anyway. Merry Christmas and a Happy New Year to all.

3 tablespoons miniature chocolate chips 1 tablespoon butter 2 tablespoons packed brown sugar 2 tablespoons flour 1 egg yolk 1 teaspoon milk 3/4 teaspoon McCormick Raspberry Extract Microwave chocolate chips and butter in microwavable coffee mug on high 30 seconds or until melted. Stir. Add remaining ingredients; mix well. Microwave on high 45 seconds to 1 minute or until center looks almost set. Let stand 5 minutes before serving. Note: For a Fudgy Peppermint Mug Brownie, replace Raspberry Extract with 1 teaspoon McCormick Pure Vanilla Extract and 1/4 teaspoon McCormick Pure Peppermint Extract. Caution: Mug may be hot. Use pot holders when removing from microwave.
