BIG HEARTS small cattle

BY MELISSA CROMWELL

When you think of a Longhorn cattle in Texas you probably think of a very large animal with huge horns. What Dave and Althea Sullivan think of is a smaller version that they can raise as pets, breed for other ranchers, or for lean beef. Back in 2005, Dave and Althea moved from Plano to Celina with a dream. They dreamt of raising and breeding miniature Longhorn cattle. They said they wanted to have some fun, and fun is the word that they used throughout the 2 hours that I spent with them on their ranch one Saturday morning in April. As I stood among their herd of Longhorn I couldn’t help but notice how beautiful their colors were. I wasn’t scared as they walked by me, curious about the 4-wheeler that Dave had rode up on. Dave explained that they are very docile and intelligent animals and that their color is everything. He said “You never know what you are going to get when you breed Longhorns. They are like a box of chocolates, you could breed a red paneled with a black spotted one and the baby could come out Brindle, which is black and brown.” He said they have a waiting list to sell their miniature Longhorns and I can see why. They are beautiful in color and they take special care as to the sizes of body and horn that they breed together. Dave explained that no two look alike and they are were very choosy

14

CELINA Magazine

when they started breeding…they only wanted the best and the smallest. They traveled all over the country in the beginning to make sure that this happened. As Althea talked about the arrival of the new calves she pointed out Eddie and Murphy, 2 donkeys in the pasture with the Longhorns, which are supposed to protect the herd from predators. Although she said they really don’t need the protection because when a threat arises, some of the females circle up with horns out, calves in the middle, and the others chase the predator. She said it is really awesome to watch. You can see right away that Chile Pepper is one of their favorites. Yes, they name each and every Longhorn that they have. The Longhorns are their family. The Sullivan’s have 11 ½ acres of their own, but also lease 30 other adjoining acres for their Longhorns to roam. They eat anything in the field which makes them very efficient animals. They eat less and waste less than a normal Longhorn so less acreage is required to raise them. They are the only breeders in the United States that have 2 AI (Artificial Insemination) TLBAA certified bulls. They are the largest TLBAA Registered Miniature Longhorn breeders in the country. Their quality of Longhorns is outstanding and they work hard to ensure that they have the finest.

As Dave explained each color combination to me he also told me the history of the Longhorn and how they used to run wild. I could see and hear the passion in his face and in his voice. Their goal is to have 40 head of Longhorn cattle and he said if they put one of theirs on the market tomorrow, it would sell within 6 hours. They invited me back to their ranch and wanted me to bring my children. They said they would bring Chile Pepper into the barn and the kids could get on her back. Amazing that these long horned “scary” looking animals could be so kind and stunning. I am looking forward to my next visit with them. For more information about Dave and Althea Sullivan’s Longhorn Ranch, check out their website, www.minilonghorn.com. The Sullivan’s also own and operate Seasons Lawn and Landscape, which they relocated to Celina from Plano a few years after moving here. They service the Celina, Prosper and other Collin County areas. Please visit www. SeasonsLandscape.com for more details.

Give Outdoor Fare a Kick of Heat 18

CELINA Magazine

June 2015

Gathering around the grill never gets old, but standard burgers and bland sides do. Throwing in an unexpected mix of sweet and heat is the key to transforming traditional foods into mouth-watering masterpieces. To kick things up a notch this summer, bring flavor and spice to your outdoor fare with simple recipes using extraordinary sauces. Aged cayenne pepper, red chili peppers and garlic are savory additions that can easily elevate the flavor of any item on or off the grill, especially in burgers and dips.

A great summer burger is all about the toppings. Revolutionize a basic bacon burger into a Spicy Crunchy Burger with Frank’s RedHot Original Cayenne Pepper Sauce, which is made with a premium blend of aged cayenne peppers that adds a kick of heat and a whole lot of flavor. While you wait for the grill to heat up, score extra points with your hungry guests by offering a quick and creamy dip. Again, the secret is in the sauce – in this case, Frank’s RedHot Sweet Chili Sauce, a slightly sweet, pulpy and zesty sauce made with fresh chilies. Just combine and serve with crackers, chips or vegetables for a snack that has just the right amount of sweet and heat to make taste buds come alive. For more grilling and summer recipes, visit www.FranksRedHot.com. In His Presence

Hope Springs Eternal By Pastor Jack Graham

The field stretches out in emerald perfection, the scent of the freshly mown grass sweet as a stroll in the country. The groundskeepers roll the baselines straight and true, capturing in that broad sweep of green the season’s endless possibilities. For fans of the great game of baseball, nothing matches the hope of spring, when no one languishes in last place and everybody can dream of the World Series. On opening day, the vendors seem friendlier, the hot dogs hotter, the popcorn extra crunchy. No matter what the weather—already summer-like in Arlington or Phoenix and still winter in Cleveland and Boston—the anticipation leading up to that first game makes every fan a school kid again. But baseball is a lot like life, filled with ups and downs, victories and defeats. And in the relentless heat of summer, springtime hopes for a World Series seem as likely as a sudden cold snap. The world has a way of trampling our hopes, sweeping them away like a walk-off homer in the bottom of the ninth. One moment we’re up, confident, counting down to the final strike. And then a hanging curveball, the sharp crack of the bat and a ball that soars deep into the nighttime sky, carrying our hopes with it. No wonder the Bible speaks of building on the solid rock foundation of faith in Jesus Christ. The world might tug at us as we follow the narrow road to salvation, but faith in God sustains far more than any human hope could. Wouldn’t it be great if Christians could borrow a page from the book of baseball and savor the hopeful joy that fans find this time of year, that they could share the Good News of Jesus casually around the water cooler or with friends and family and look forward with a fan’s fervor to the great day of salvation? Just think of it—all of God’s children gathered together, swept up in eternal joy, carrying their gloves, wearing their caps, all heading toward that celestial stadium shining gold and silver in the heavenly light. When that game is over, we’ll talk about the next one, and the one after that, savoring an endless season when everyone’s a winner. Because heaven is a place filled with all of God’s greatest creations. And with all those wonderful things, well, you know there has to be baseball. Dr. Jack Graham is pastor of Prestonwood Baptist Church, which has campuses in Prosper, Plano and Dallas.

CHS 2015 Graduates

Valedictorian’s Graduation Speech:

Good evening faculty, family, friends and fellow graduates. I would like to begin by thanking God, my parents, my family, and friends for allowing me to have this opportunity. I am humbled to be standing here tonight. Tonight, the class of 2015 will graduate from Celina High School. And as we embark on our separate journeys in life and gain more responsibilities and experience, it is important to remember, as Thomas Edison once said, “If we did all the things we are capable of, we would astound ourselves.” Class of 2015, we are a talented and capable class and we have much for which to be thankful. As we each climbed through our high school years, we began to find our niche, what made us tick, what we are passionate about. For some, it was the Arts. Competing in a superior level band, hosting generous choir fundraisers, or making a piece of paper come to life with only pencils and color. Some fell in love with the spotlight and were able to “lose themselves” into another character on stage. For others, it was agriculture. Learning the ins and outs of livestock judging and competing in state events. Still, others became passionate to athletics. Being uncommon and striving for excellence. Some loved supporting the athletes through spirit organizations like cheer, drill team, and Bobcat Brigade. These spirit teams made it “Friday night lights” rather than just a football game, and brought spirit and bobcat pride to other events as well. And yet others excelled in academics. Competing in UIL event and making exceptional grades. But in a way, we all fell in love with learning. New music, new plays,

22

CELINA Magazine

new dances, new material. High school never stopped presenting us with new ideas and as we journey forward, life won’t either. So let’s continue to learn, and as we do, let us not forget the foundation that was laid for us, here at Celina High School, where we were encouraged to discover our talents. Let us not forget those who have paved the way for us to be able to stand

Heidi Raymond 2015 Valedictorian here tonight and our gratitude for them. So thank you. Thank you to all of the faculty at Celina High School for giving us the tools needed to discover our strengths. Thank you to Coach Hutson for teaching us using not

only statements, but also artifacts and visuals. To Ms. Acosta and Mrs. Orr for always being a friendly face in the hall ways. To Mrs. Baker, Mr. LeMaire, and Mr. Rutherford for directing the extremely talented and impressive preformances. To Mr. Doug Pevehouse for welcoming us, as little freshman, into high school. To all the coaches for teaching us perseverance and discipline. To Ms. Ewing for always keeping us in compliance with the school handbook. And to Mrs. Carey for cheering us through the seemingly impossible tests and organizing this wonderful graduation ceremony. We, the Class of 2015, are also thankful for our community. Thank you for supporting us in all that we do. Thank you for participating in fundraisers, even though we all know you didn’t need another coupon book, and for all the little things, like snack bags on long trips. Thank you to every organization that was able to give generous scholarships to help each of us achieve our future academic goals. And, finally, thank you to all of the senior parents for raising, encouraging, and helping shape us into the young adults we are today. We wouldn’t be here tonight if it wasn’t for the loving support you have provided for each of one of us over the past years. I am excited and optimistic about what each of us will achieve as we begin to discover new talents and use them in our journeys. So tonight, let us not cry sorrowfully for the final goodbyes to come and the end of this chapter of life, let us be thankful for as the wise Winnie the Pooh once said, “Just think how lucky we are to have something, that makes saying goodbye so hard.” Thank you. VISION: It is our vision to bring a Farmer’s market to Celina called Friday Night Market on Celina's Historic Square. Our aim in holding the market on a Friday night is to create a destination spot in our historic downtown square where community, local farmers, producers and artisans can come together. We envision a strong presence of quality local farmers, producers, and artisans with a diversity of offerings. The Market will offer fresh, seasonal fruits and vegetables raised by local farmers as well as specialties such as breads, honey, jams, herbs, and cut flowers. We also envision support from local businesses and musicians.

MISSION: The mission of Friday Night Market on Celina's Historic Square is to provide locally grown, fresh, and high quality produce and products while giving local farmers, producers, and artisans an economic outlet within Celina. The market will also promote foot traffic to the Historic Downtown Square as a Friday night destination giving local merchants opportunity to strengthen their businesses and preserve the connection between producer, consumer, and community.

Texas BBQ with Louisiana Flair BY DELIA RAMSEY

Chefs on Scene has created quite a name for themselves over the past couple of years by serving their esteemed BBQ, catfish, and sides out of their trailer beside the Eagle’s Nest Texaco on Preston Road. A popular spot for commuters to pick up dinner on their way home, the business has now planted its roots firmly in the Town of Prosper. The restaurant opened in its new, permanent brick-and-mortar location on Tuesday, March 10th, much to the delight of the residents in Prosper and neighboring communities. Dinnertime on opening day was bustling with locals ready to sample the fare from the newest restaurant in Prosper Town Center. The line filled the restaurant from the counter to the door, and everyone was cheerful, chatting excitedly about the menu while meeting new friends and neighbors.

tomed to picking up their meals to-go from the previous location, Chefs on Scene fans have been excited to dine in and BYOB while enjoying the tried-and-true recipes and flavors they’ve come to know and love. There are plenty of tables in the center of the restaurant to enjoy your meal with family and friends while dining in, as well as cozy booths along the side. For those in a hurry, though, not to worry… customers can still pick up their favorite BBQ to go. BBQ by the pound ranges from $13-$15. Choic-

es include sausage, pork, ribs, brisket, turkey, and baby backs. Put them on a bun to create a delicious BBQ sandwich, or enjoy the mouth-watering flavors on their own. The brisket is moist, smoky, and fork-tender, and the catfish is flaky and buttery, pairing well with the zippy dipping sauce served alongside it. Not to be missed, they’re cranking out some mean ribs at COS – perfectly seasoned and juicy to the bite. While the meat may be the star of the show at

The casual “BBQ with a Cajun twist” concept features all of the meaty mainstays you would expect, while melding the tradition of Texas barbecue with the creativity of Creole cooking. Crowd favorites include catfish (choose blackened or fried), ribs, brisket, Cajun macaroni balls, etouffee, and homemade peach cobbler for dessert. Salads are also available, prepared in adorable Mason jar fashion, and can be topped with smoked turkey or blackened shrimp. Though the regulars may have grown accus-

ProsperFarm@aol.com www.ProsperingFarm.com Chefs on Scene, it would be wrong not to mention the gooey macaroni and cheese that compliments the BBQ so well. You can choose from a host of other sides to enhance your dining experience, such as baked beans, coleslaw, fried green beans, potato salad, and onion rings. Some of the more unexpected options include a massive turkey leg, Cajun hot dog, Po’ Boys, and soft tacos with your choice of meat. The fish tacos in particular are a popular choice. They also serve etouffee and jambalaya, along with varying Louisiana-influenced daily specials. The crawfish etouffee is stellar – perhaps my favorite menu item – bursting with a surprising depth of flavor and spice. For dessert, Chefs on Scene serves bread pudding, root beer floats, and cake to satisfy your sugary cravings. Don’t skip the homemade peach cobbler even if you have to take it home – it’s one of the best around. Cheers to you, Chefs on Scene, for bringing a new and different type of cuisine to the fast-growing Prosper dining scene. May you continue to grow and thrive in your new home. F FAMILY FEATURES

or many families, some of the most anticipated summertime activities happen around the pool. But before you dive into the fun, be sure you and your family know the many ways to practice pool safety.

Sun safety

Sunburns can cause a lot more than just an embarrassing red appearance on the skin; they can be the source of severe pain, fever and even dehydration. In fact, just one sunburn during childhood can increase the risk of developing skin cancer. According to the American Academy of Dermatology, multiple events of extreme sunburn for individuals age 18 and younger can contribute to the development of melanoma. The sun’s harsh rays can also affect your appearance later in life, causing premature aging and wrinkling of the skin. For babies 6 months of age or younger, keep their sensitive skin out of sunlight completely. For all other ages, here are the do’s and don’ts for playing in the sun:

Do dress your baby in protective clothing n

Do dress your baby in protective clothing • Always cover baby’s arms and legs in airy, light-colored garments. Dark colors absorb heat, while lighter hues reflect it, keeping baby cooler. • Look for shirts and swimwear made from sun-protective fabrics. These garments are especially great if your kids spend a lot of time outdoors in the summer. • Choose a wide-brimmed hat or ball cap and sunglasses to protect your baby’s eyes. Don’t forget the sunscreen! • The Food & Drug Administration (FDA) recommends that you avoid applying sunscreen on infants younger than 6 months. • Individuals with sensitive skin should seek a hypoallergenic, chemical-free formula with zinc oxide or titanium oxide with an SPF of 15 or higher. If you use a chemical-based sunscreen, always test on a patch of skin first. • Apply sunscreen at least every 2 hours and pay attention to the product’s expiration date as the active ingredients can lose their effectiveness over time. Water safety Once your skin is properly protected, it’s almost time to jump in. But before you do, make sure the water is clean and ready. Do test the water daily • Whether your pool uses traditional chlorine or is equipped with a salt chlorine generator, make testing it a top priority, especially when your pool is used frequently. • Make sure to read and follow the product label instructions closely when dealing with pool chemicals. Proper dosing of pool chemicals is important for swimmer comfort. • Always test the water and make sure the free chlorine level never falls below 1 parts per million (ppm). Chlorine is the main sanitizer of your pool (and drinking water), and the more people in your pool, the more chlorine you may need.

Don’t assume “salt water” pools are better or easier • What people call “salt water” pools are still chlorine pools; the salt chlorine generator just makes chlorine on-site. • Both traditional chlorine and “salt water” pools contain chlorine. • Some people believe pools with salt chlorine generators are maintenance free — but this is untrue, and neglecting things can lead to pool problems. • No matter what kind of pool you have, it needs to be tested every day. Tips for keeping water balanced • If your eyes are irritated and the pool water is cloudy or looks green — the balance is probably off. • Here’s how to test: - Use strips that show chlorine, alkalinity, pH and cyanuric acid levels. - Follow instructions on the package for how to submerge the strip. - Compare color readings on the strip to the range on the product bottle. - Ideal water balance ranges: Chlorine: 1–4 ppm Alkalinity: 80–120 ppm pH: 7.2–7.6 Cyanuric Acid: 20–50 ppm Practice swim safety this summer Swimming is a lot of fun, but drowning is a real danger. In fact, the Centers for Disease Control and Prevention (CDC) reveals that drowning is the second most common cause of accidental deaths among kids. As an advocate for swim safety, Olympic gold medal winner and mom, Janet Evans, offers these tips to keep kids safe this summer:

Don’t allow children to swim alone. Drowning is silent, and it happens quickly. Always have a responsible adult watching while children are either in or out of the pool. Keep pool areas tidy. Cleaning up pool toys after play can help lessen the temptation of children to enter the pool area unsupervised. For more information on Janet Evans, visit www.janetevans. com. 3 facts about “salt water” pools While there are plenty of options available for pool owners, there are many opinions about pools equipped with salt chlorine generators and traditional chlorine pools. Check out these facts to learn more, and to decide which best fits your family’s needs: • In a “salt water” pool, chlorine is produced by a salt chlorine generator rather than adding chlorine to the pool directly. A “salt water” pool is still being sanitized by chlorine. So, a “salt water” pool is a chlorine pool. • The same amount of chlorine is required to maintain a “salt water” pool as a traditional chlorine pool. • “Salt water” pools require the same maintenance functions and still must be checked and balanced regularly, just like a traditional chlorine pool. To learn more, visit www.SaltorChlorine.org.

Enroll in swimming lessons. Many people lack basic swimming skills, and enrolling children in swimming lessons at a young age will help reduce the risk of accidents and drowning.
