From the Desk of Donny O’Dell, Superintendent of Schools Celina Independent School District The month of November reminds me to always be thankful for the blessings that have been bestowed upon our school district. As I visit each campus, it never ceases to amaze me at the level of enthusiasm that I see in the faces of our teachers and our students. My heart swells with pride as I witness campuses that provide our students with not only academic tools, but fill their hearts with compassion and encouragement for others. I give thanks each and everyday and below are just a few of the reasons why….
G – Generous and unselfish spirit of our students, faculty and staff that go out of their way to provide assistance to those in need. I – Inspiring stories of present and former students who are making a difference in the lives of others through organizations like Habitat for Humanity or Grace Bridge. V – Volunteers that give of their time to support our schools. From those that spend countless hours listening to students read or to our dedicated PTA members working book fairs or providing meals for our teachers. The support of our volunteers is immeasurable. E – Embracing tools like technology that will propel our students into the 21st century with the skills needed to be successful. T – Tireless effort put forth everyday by our maintenance, custodial and transportation

departments that ensure our students are getting to schools that are in pristine condition and ready for students and staff to begin their day. H – Historic programs, both academic and athletic that foster an atmosphere of teamwork and the importance of being a team player. A – Administrative teams that spend countless hours attending workshops, researching the latest innovative ideas, and sharing their knowledge to bring the best practices to their campuses. N – Non-profit organizations that cover crucial needs of our students and their families by providing the basics of food, clothing and shelter. Other organizations like C.A.R.E. that provide much needed funds for our campuses and scholarships for our students that will be attending universities
and colleges around the nation. K – Knocking down barriers to provide learning opportunities to English language learners through our Adult ESL and GED classes. S – School Board members that constantly strive to provide our district with an arsenal of tools that help our students reach their goals. Each and every day, I give thanks to those in our district that give everything they have to make a difference in a child’s day. The small act of a hug to providing school supplies or running food drives for the less fortunate is a reflection that positive role models abound in our district creating a rippling effect throughout our campuses and into our community. I encourage us all to get up everyday with the enthusiasm and unwavering spirit that I call Celina ISD.

Do you aspire to run a marathon, enjoy shopping at local boutiques, or need a few “statement” pieces of jewelry to add to your collection? Well, you can achieve all three by participating in the upcoming C.A.R.E. fundraisers held during the months of November and December. Celina Association of Renaissance Excellence, or C.A.R.E. for short, pays homage to the Renaissance Age where patrons were encouraged and supported in their pursuit of knowledge. C.A.R.E. is a non-profit organization that helps all of our CISD campuses with yearly donations that are used towards incentives that reflect academic improvement and performance. C.A.R.E. is also responsible for many of our Celina High School students pursing higher education goals after graduation through their annual scholarship application. C.A.R.E. host fundraisers throughout the year that will help raise muchneeded funds for our campuses and graduating seniors. The Sparkle with C.A.R.E fundraiser will be held on Thursday, November 19th at CTOWN from 3:00-6:00pm. Attendees will view items offered by Premier Jewelry. The 2nd fundraiser and highly popular “Christmas Gift Tour,” will be held on Saturday, December 5th from 9:003:00pm. Ticket holders will shop at local participating merchants who have prizes for those on the gift tour. It is a wonderful day to spend with family and friends shopping for unique gifts and all for the low price of $25.00 per person. When these tickets go on sale in November, don’t delay because they sell out FAST! If running is more your game, The Jingle Jog is celebrating its third year and will kick off on Saturday, December 12, 2015 at Celina High School. The event will include a 10K race beginning at 9:00am, and a 5K starting at 9:15am. C.A.R.E. has made registration easy by allowing online registration through the C.A.R.E. website, at celinacares.com. There will be a small registration fee for dogs, but strollers are welcome making this event a family affair! Let’s show C.A.R.E. how much we CARE by lending our support to raise funds that will go directly to recognizing the outstanding effort and hard work of our Celina students. Our combined efforts will help realize that reaching their academic goals is no longer just a dream but a reality!

In Good Taste Turkey Day Tips The sight of a beautifully cooked, golden brown bird being brought to the table is one of the most memorable moments of any Thanksgiving gathering. Follow these tips to prepare the perfect centerpiece for your holiday meal: Thawing Your Turkey • For every 5 pounds in weight, thaw in original wrapper for 24 hours in the refrigerator. Thaw faster by covering with cold water in the sink and soaking approximately 30 minutes per pound. • Refrigerate as soon as thawed or cook immediately. For best quality, do not refreeze uncooked turkey.

Crust: 1 cup graham cracker crumbs 1/2 cup old-fashioned oats 1/4 cup brown sugar 1/4 cup butter, melted 2 tablespoons low-fat milk cooking spray Filling: 2 2 3/4 3/4 1/2 1 1 1/4

Topping: 2 tablespoons sugar 1 teaspoon cinnamon 1 cup plain nonfat yogurt Heat oven to 350 F. In large bowl, mix together graham cracker crumbs, oats, brown sugar, butter and milk. Press into thin layer in a 9-by-13inch pan greased with cooking spray. Bake for 10 minutes. While crust is baking, in another bowl, beat together pumpkin through salt. Pour over crust and bake for 40 minutes or until set. Sprinkle pecans over filling and bake another 10-15 minutes or until center is set. Cool slightly in pan. Mix together sugar and cinnamon. Mix in yogurt. Top each square with 1 tablespoon yogurt topping.
Roasting the Bird • Baste with extra virgin olive oil. • Place breast-side-up on rack in shallow roasting pan. Cook in 325 F oven. • For an unstuffed turkey, place a stalk or two of celery, seasonings, a cut-up onion and a handful of parsley in the cavity to keep it moist. • Lay “tent” of foil loosely over turkey to prevent over-browning. • Turkey is done when meat thermometer is 180 F or when the red stem on the pop-up thermometer rises. • For easier carving, let turkey stand at room temperature for at least 20 minutes. More Ways to Make the Perfect Centerpiece • Grilled: Grill 15-18 minutes per pound. Air in grill must be between 225-300 F. • Deep Fat Fried: Cook 3-5 minutes per pound in 350 F oil. • Smoked: Cook 20-30 minutes per pound. Air in smoker must be between 225-300 F. • Microwaved: Cook 9-10 minutes per pound on medium power. Rotate during cooking.
Sorghum Pecan Praline Cheesecake
Recipe developed by Brenda Watts, Gaffney, South Carolina Cheesecake: 6 tablespoons unsalted butter, melted 1 1/8 cups sorghum syrup, divided 1 3/4 cups graham cracker crumbs 4 packages (8 ounces each) cream cheese, softened 1/2 cup sour cream 1/3 cup packed light brown sugar 2 tablespoons all-purpose flour 1 cup sorghum syrup 1 1/2 teaspoons vanilla extract 4 large eggs Topping: 1 package (6 ounces) pecan halves 2 tablespoons packed light brown sugar 4 tablespoons sorghum syrup, divided 6 tablespoons unsalted butter 1/2 cup packed light brown sugar 3 tablespoons heavy cream 1 teaspoon vanilla extract 1/8 teaspoon kosher salt
Heat oven to 325 F. Lightly spray bottom and sides of 9-inch non-stick springform pan with removable rim. Place pan over center of 3 18-inch sheets heavy-duty foil and securely wrap foil around outside bottom and sides of pan. For cheesecake, in small bowl, combine butter and 2 tablespoons sorghum syrup. In medium bowl, toss graham cracker crumbs and sorghum butter mixture together until crumbs are moistened. Press crumb mixture evenly into bottom of prepared pan. Bake 8 minutes to form crust; remove from oven and cool 10 minutes over wire rack. In large bowl use electric mixer on medium speed to beat cream cheese, sour cream, brown sugar and flour, 3 minutes, or until well blended and smooth. Gradually add 1 cup sorghum syrup, vanilla and eggs (one egg at a time) and continue beating 3 minutes longer from low speed increasing to medium speed, or until mixture is well blended and creamy. Pour filling evenly over crust in pan. Place pan in center of large baking pan (e.g., roasting pan) and pour 1-inch of hot water in large baking pan, around filled prepared pan. Bake 1 hour and 15 minutes or until center is almost set but slightly jiggles. Remove from oven, remove cheesecake from baking pan and gently remove wrapped foil from cheesecake. Place cheesecake onto wire rack to cool 15 minutes. Run thin, sharp knife around edge of pan to loosen edges; cool in pan 2-3 hours in refrigerator. Meanwhile, prepare pecans. Increase oven temperature to 350 F. Line baking sheet with large sheet of parchment
paper. In bowl, sprinkle brown sugar and drizzle 1 tablespoon sorghum syrup over pecans. Using large spoon, toss to evenly coat and spread pecans flat over parchment paper-lined pan. Bake pecans 8 minutes or until lightly browned and glazed. Place pan over wire cooling rack, use large spoon to separate and evenly coat pecans; let cool 10 minutes. In heavy duty 1-quart non-stick saucepan, melt butter over medium heat. Add brown sugar and 3 tablespoons sorghum syrup into melted butter and cook 2 to 3 minutes or until blended and heated through, stirring constantly. Stir heavy cream, vanilla and salt into mixture; continue stirring constantly until praline mixture comes to a boil. Simmer until slightly thickened, about 3 minutes. Stir occasionally. Remove from heat and let cool.

To serve, remove rim of pan from cheesecake. Place cheesecake on large round serving plate. Place glazed pecans flat on top of cheesecake, starting at outer edges and ending in center. Spoon or pour praline topping evenly over top of cheesecake.

Family, kids, spouse, boyfriend/girlfriend, extended family, job, money, bills – this list goes on and on. What is it exactly for you? Maybe it’s unbalanced living. Everywhere you go in our culture, everything indicates speed. Think about it… -You want to mail something you go to Federal Express. -You may have the phone service called Sprint. -You may wash your clothes in Dash. -Anyone who is daring enough (or insane enough) might swim in what we know as a Speedo. (that’s actually intended to be humorous.) Louie Giglio said it this way: “Whenever you say YES to anything, there is less of you for something else. Make sure your YES is worth the less.” I would say it like this, “Your life moves to a better place when you live at a sustainable pace.” The best thing I’ve discovered in reprioritizing my life is evaluating the important things in life. The Bible tells me pretty explicitly in Mark 8:36 “How do you benefit in life if you gain the whole world but lose your own soul in the process?” Determine quickly what’s most important in your life. Life is too short if you don’t! God never intended His most precious creation (mankind) to live life at full throttle! Jeremiah 29:11 says that, His plans for us are for good not disaster, to give us a future full of hope! The correct priorities in life deal with relationships, and you know what’s most interesting? That’s exactly why you and I were created, for a relationship with God. Start here in your reprioritizing!
Does Life Seem......... ...........Out of Control? I must admit that I feel somewhat inadequate with this particular subject. When I began writing this article I kept asking myself, “How can I even attempt to write about something that I struggle so deeply with myself?” So, I believe that I must start this article off with a confession: “Hi! My name is Brad. And I’m an ‘Out of Control’ Life-Aholic!” What about you? Do you take life too seriously sometimes? I came across some pretty funny things the other day for those who take life too seriously to think upon… -The early bird may get the worm, but the second mouse gets the cheese. -When everything’s coming your way, you’re in the wrong lane and going the wrong way. -A conclusion is the place where you got tired of thinking. -If you don’t think anybody cares about you, try missing a couple credit card payments. -The sooner you fall behind the more time you’ll have to catch up. -If at first you don’t succeed, then skydiving is not for you. When it comes to life, have you ever found yourself saying,”Why do I always say, yes?” The first question one must ask about priorities in their life is – “What’s the problem with my schedule?” Usually if you look close enough you’ll discover that you have too many commitments!
