A Message From Celina ISD Superintendent: Rick DeMasters Supporting Students After A Tragedy
to keep their children safe and secure, but also how they, as parents can support their children when events like this occur. At Celina ISD, safety is a Top Priority! We believe in the importance of preparation and continuous improvement. Our Celina ISD Police Chief is in constant contact and collaboration with CISD Administration and Staff, in regards to training sessions with faculty, and the importance of mandatory safety drills with our students. Our CISD Emergency Plan, which speaks to our safety procedures is continually updated and reflects that our district is 100% compliant with state laws governing safety protocol. Our facilities have been made even more secure through a number of improvement projects, thanks to the support of our Celina ISD School Board Trustees and seek to do more in the future. We are extremely fortunate to partner with the City of Celina Police Department, who provide a highly trained, caring, and visible presence within our school district. As much as we proactively prepare for emergencies, tragic events like the one in Florida are shocking and hard to comprehend. Children look to adults for guidance on how to react. As parents, you are the experts about what is best for your own children at home, but it can be challenging to know how to speak about the unspeakable. In times like these, parents and staff can help children feel safe by establishing a sense of normalcy and security, talking with them openly about their fears, and reassuring them that schools are very safe places and dangerous events are very rare. The National Association of School Psychologists (NASP) recommends the following strategies, detailed in the resource, “Talking to Children About Violence: Tips for Parents and Teachers:” -Reassure children that they are safe and their school is safe. -Make time to talk. -Keep your explanations developmentally appropriate. -Review safety procedures. -Observe your child’s emotional state. -Limit exposure to television and other media about these events. -Maintain a normal routine.

Celina Police Officers Put Action Behind Protect and Serve Motto By Jodie Brownd

T
he Celina Police Department is on an upward trend of growth along with the rest of the City of Celina. The number of employees continues to grow annually, along with the specialized divisions and units. With this growth, officers with the Celina Police Department saw the increased need to “Protect and Serve those that Protect and Serve the City of Celina.” The idea launched a plan to start an association that would provide the employees of the Celina Police Department with a way to support their own, while also giving back to the community. Our officers have covered their bases in the "protect" portion of the "Protects and Serve" motto police officers live by. We thank you for that. It’s the ideas put into action to "serve" our community most recently that are nothing short of impressive. This idea, that unfolded into a reality is called the Celina Police Association, a 501(c)(3) non-profit charitable organization. Since the beginning of its establishment in 2017, the Association has proudly raised more than $30,000 in contributions to their Scholarship Fund and Officer Down Fund. The Celina Police Association’s Scholarship Fund was established to provide just that to the students of Celina. The goal is to provide 3 scholarships totaling $5,000 in 2018. Information on the scholarship can be obtained through the association's Facebook page. The deadline for submission is April 1. The Officer Down Fund was established to provide relief to the families

of local law enforcement officers who have been injured or killed in the line of duty. Since the creation of the fund in late 2017, the Celina Police Association has already donated $5,000 to the family of a local hero who was recently killed in the line of duty. The members of the Celina Police Association are always looking for creative and exciting ways to foster community involvement and raise funds. In addition to selling t-shirts that boost community awareness and support, you’ll have another opportunity to Dunk a Cop for $5.00 at the 2018 Celina Park Fest and Splash and Blast events. It is a fact that for any non-profit organization to succeed, there has to be a commitment to the outcome by people willing to put their nose to the grind to make things happen. Sometimes just putting words into actions one step at a time is all you need to see a series of events unfold into something bigger than ever expected. That is exactly what happened when Detective Jeremiah Phillips, President of the Celina Police Association, asked the right people the right questions at precisely the right time. Detective Phillips headed over to Tender Smokehouse to pitch the idea of a poker night fundraiser. He spoke with co-owner and friend of the police department, Dante Ramirez, who was eager to contribute in any way. To Detective Phillips’ surprise, Dante introduced him to a man, known all too well to the Major League Baseball community, Torii Hunter. Torii, who is also a co- owner of Tender Smokehouse, learned of the plans for the poker night and began to rally his friends in the world of professional baseball to lend a hand. The event, held on January 30, 2018, was quite possibly the most “star-studded” fundraiser to ever hit our small town of Celina.

Event tickets sold out in a whopping 7 days and with big names like Torii Hunter, Michael Young, Vernon Wells, Tyler Lyons, Samuel Freeman, Matthew Kemp, Nick Castellanos, and Torii Hunter Jr, there in support, it is a surprise that it took that long. For $225, guests were able to sit next

to their baseball heroes and compete for the top hand. For $100, spectators were thrilled to catch a bird’s eye view of the action. Attendees had their dreams come true, by rubbing elbows with MLB greats. Each left with a custom deck of Celina Police Association playing cards and a baseball signed by the sports star they played alongside. The Police Association event awarded no prize of value, however the overall winner, Tod Weber, was presented with a framed “final hand” display autographed by Torii Hunter himself. When asked about the outcome, Detective Phillips credits his wife, Kristina whose tireless support and hours of work contributed greatly to the success of the event. The couple further stated, “The most exciting part of the event was watching our ten-year-old son’s passion to serve, while experiencing the excitement of the event by our side.” Let’s not forget, behind every successful man in blue is a loving family who also sacrifice daily for the good of our community. The Celina Police Association's MLB Poker Night was one for the records and a night to remember. Major League heroes worked hand in hand, literally and figuratively, with those that are the real major league heroes of our lives, our law enforcement officers.

The members of the Celina Police Association have been humbled by the outpouring of support as evidence by the association’s success over the last year. Detective Phillips closed with the truth that, "Everything we do as police officers is with the purpose of keeping people safe," and in retrospect, I guess the same can be said for baseball.

City of Celina to Go with Hands-Free Policy

will make it easier for law enforcement to spot offenders. He said people who want to follow the law will put their phones down and others you will see swerving in the roadways as they try to do things with their phones. Councilor Chad Anderson asked if it will also apply to watches that are paired to the phone and the answer was, “Yes.” Councilor Bill Webber made the point that if the device is mounted, it would be okay and Griggs agreed. Griggs said that when drivers are stopped is really the ideal situation for using their cell phone. DeBuff said that to put things in a regional context, there are approximately 45 local cities with hands-free ordinances in place.

he City of Celina will go hands-free for one year and then review the results. During Staff Reports in the city council workshop meeting last month, council members heard that the City of Celina will be hands-free beginning in April. Assistant to the City Manager Paul DeBuff explained the new program saying the intention is to try it for one year. He explained that the only way a driver can use a cell phone or similar device is if the device is stationary on the dash of the car. There will be signs at each entry point of Celina advising travelers of the new policy. Celina’s Chief of Police Tony Griggs told the Council the new ordinance
In other business, the Council hosted members of the Celina Fire Department for a presentation and heard several staff reports before moving into the regular meeting agenda. Two public hearings were tabled and set for the March 23 meeting. The first public hearing is to consider testimony regarding the proposed assessments to be levied against the assessable property within the Chalk Hill Public Improvement District. The property is approximately 95 acres and located south of Highway 102, north of Highway 105, east of Preston Road and west of Highway 132. The second public hearing will consider testimony regarding the proposed assessments to be levied against the assessable property within the Columns Public Improvement District. The property is almost 48 acres in the Joint Ragsdale Survey located south of County Road 51, north of Punk Carter Parkway, east of Dallas Parkway and west of Light Farms Way. In the presentation to the fire department, Jack Ousley, President of the Main Street Advisory Board, spoke to the Council during the workshop meeting to praise the actions of the Celina Fire Department. He brought with him a $1,000 check for the Celina Professional Firefighters Association from the Main Street Board. “You guys have always been a part of our events downtown,” Ousley said. “I know it’s part of the job, but you guys always do it with a smile.” The next Council meeting will be March 23 with the work session beginning at 5:00 p.m.

Celina Rallies for Hometown Hero Gary Don Moore By Jodie Brownd
the faces of the athletes he has coached, Gary Don has made an impact and successfully utilized his talents to the betterment of others. It was evident that he came by his wisdom and talents honestly, when I asked, “Who is your hero?” Without hesitation and with great pride, he looked me right in the eye and humbly spoke the words, “My Dad.”
T
here was an undeniable sense of comradery, with the buzzing of the crowd and building anticipation from fans of all ages as they made their presence known. You could feel the sense of pride in the air as a line of supporters made their way out of the cool night air. Another Celina football game, you may ask? No, but the love in the air that night was only a sample of the support and sense of family and togetherness, that has created generations of loyal and faithful Bobcat fans. On February 10th, students, coaches, brothers, and friends from the past 30 years gathered from near and far to show their spirit and support for one of their very own. Gary Don Moore, son of the legendary High School football coach, G.A. Moore, knows a little bit about that spirit, being raised a coach’s kid in Celina, Texas. What brought this reunion of thousands of people together, in what can only be described as a tight knit community, was a fundraiser and auction to benefit one of our own. Less than two months ago, on December 18th, Moore was diagnosed with ALS, also known as Lou Gehrig’s Disease.
G.A. spoke of “the heart of the golden triangle”, referring to Celina, Aubrey and Pilot Point. He stated, “This many people showing up for our family is proof that this has got to be the best place in the world to grow up and raise kids. We’re blessed to live where we live and be associated with the people we’ve been associated with and have friends that show up the way that you all have tonight.” Those friends included lifelong friend of G.A., Dan Smith, who spoke of their college days and how they had been a part of each other’s lives for over 50 years. Ray Love and Nic Hoover were consistent with other attendees’ description of Gary Don as an exceptional leader both on and off of the field. It doesn’t matter who you ask, it’s easy to see that this family is highly respected in their community and has made an impressive impact on the lives of so many.
Gary Don took the stage with his wife Valerie, surrounded by thousands of auction items, which included sports memorabilia from Celina High School on up to the Dallas Cowboys. The school cafeteria was a symbolic backdrop for the sea of relatives and “self proclaimed” family members…it is a little-known fact that if you grew up in Celina, you’re family by default. It was a hugely successful event, but it was so much more than that; a reunion of sorts, of the hometown hero kind. As he expressed his immense gratitude for the support he and his family have received since they learned of his diagnosis, you couldn’t help but be consumed with the fact that Gary Don Moore is on a mission. That mission was difficult to process in the beginning, as Gary Don knew little about ALS. It has been said that God gives his strongest stewards His biggest assignments. After much prayer and dependence on God to carry them through, it is with much integrity that they graciously took on their assignment and are a walking, talking reflection of what it means to stay strong in your faith during times of difficulty. His wisdom, which poured from an emotional, yet flawlessly brave part of his spirit, included that of “loving your neighbor as yourself ” and the importance of using our different talents to serve God and others. He believes wholeheartedly that God has a plan for each of us and that there are people strategically placed in our lives, that only we can influence with our wisdom and gifts. As a coach at Plano East High School, and as witnessed by the emotion on

Gary Don stated that some of the friends in attendance he hasn’t seen in 20 years but, “They’re all my brothers as far as I’m concerned.” Those brothers all felt the same way about him, too. When I asked Ryan Brooks how he knew the family, he told me the story of when he and Gary Don were in elementary school and the Moore’s moved in down the street. A young Gary Don made his way down the road to introduce himself and asked in typical childhood fashion, if he could play. “That’s where it all started, and we’ve been playing together ever since.” Gary Don’s plans are to travel to California for what his family has concluded will be the best option for his treatment. He will undergo 2 weeks of FDA-

He closed with these final thoughts, “Don’t feel sorry for me, just come hang out with me, that is all I ask.” If you grew up in a small town, you know how the people, experiences and memories become like unbreakable threads knitted together, strengthening and adding color to the tapestry of our lives. In a way, the game of football is like the game of life. In Gary Don’s case, his friends are his brothers and teammates in life. The fans are his family and the people of his hometown. The field is his mission and his faith is the ball that he will carry into the end zone. What happens when he gets there is yet to be seen, but you can rest assured that whatever happens there will be part of a divine plan, because in the game of life, God is the head coach and Gary Don Moore, is most definitely an MVP.

ou don’t have to do much research to figure out that Texas, small towns and football all go hand in hand. In all honestly, you can’t really have one without the other. It’s the stuff movies are made of, (think Friday Night Lights) and of course, music videos...” The Boys of Fall” by Kenny Chesney. Those stadium lights shine like spotlights down on hometown superstars every Friday night in the Fall. That’s right! There is so much excitement and deeprooted tradition here that it almost brings tears to my eyes just writing this. And do you know what else small towns produce? Girls. Intelligent, athletic, multi-talented young ladies with hopes and dreams that could fill the Texas sky. They create leaders, which is the exact adjective that Andrew Palileo, Head Volleyball Coach at the University of North Texas, used to describe Freshman volleyball star and Celina native, Barbara Teakell. Barbara drove out of Celina with the MVP of District 5-4A crown...and more awards and recognition from both club and high school programs than can be listed. To say that this powerhouse athlete was a top pick for many college programs would be an understatement. Ultimately, she decided to join the Mean Green program and in the Spring of 2017, she headed out west to the University of North Texas in Denton.
When I had the opportunity to sit down with Barbara, who is 6’1” and should be modeling, it was refreshing to see how this once home-schooled young lady has paved such a way for herself. She takes no credit of her own as a leader, whether on or off the court. Barbara admits that she learned many lessons during her first year away at college. When asked what she missed most about home in Celina, she spoke of family. Raised by two West Texans, her family knows a thing or two about small towns and the integrity and grit it takes to raise successful human beings. They’re raising five to be exact. Barbara’s smile when she talks about her family sparkles like a beacon that makes you wish you were a part of it. She credits the strong relationship her parents have with God, as well as each other, for the bond they share as a family. Their “overcome anything” and “trust God always” mentality has been a beneficial anchor for Barbara. And that wisdom has spilled over into the core of the young lady I proudly shared a burger with. Barbara claims her brother Barrett as her best friend. He also attends UNT and has been a significant source of support for her. She admits that her first semester away from home was a real eye opener. Her nest back home includes younger brothers Ben (15), whose name you’ll see on the Bobcats

Varsity Baseball roster, and Bryson (10) who is following closely behind with his own success and passion for the sport. Her big sister Bailey, who Barbara calls “the heart of their family” has a smile that Teakell says, “could light up the whole world.” It is her sister’s special needs, which include speech therapy, that has led Barbara down a career path to be a Speech Pathologist. The field will give her the opportunity to make an impact in the lives of people with special needs. To hear her speak of Bailey, it is obvious that Barbara is aware of the impact those she will be helping will in turn have on her. Another lesson learned was that of faith. It is great to be recognized in your hometown for your efforts, but seeing other talent at the college level has made her realize that she’d have to work harder to maintain that status. While dealing with the typical first semester transitions like being a little homesick, being in a brand new environment and being coached at a new level, she went into her first season without expectations and humbly admitted her vulnerability. After what Teakell
described as having played “average” in her first few college games, she felt she had to fully embrace the idea that she may not play as much as she had been accustomed to. “If my position on this team was to lead from the bench, because that was God’s plan, then that’s what I would do.” You see, Barbara was going to give 110% and lead by example even if that meant not playing as much as she’d hoped to. She was going to be a team player and take a back seat if that was her role. Hearing her say this left me dumbfounded, as I realized the depth of her character at such a young age and the authenticity of her relationship with God that is undeniably rock solid. No doubt it was this attitude of gratitude that gained her the respect of her coach and team as well as the position of starter as a Freshman.

Once she surrendered to the fact that she was not in control and let God guide her, the sky was the limit. It was her chance to shine. Barbara misses home and the security of the Celina community, but looks forward to her next few years in Denton. She says that the best parts of college life have been the friendly and diverse campus. Seeing students with blue hair and nose piercings was a surprise, but is also a reminder to her about the importance of individuality. “It is the spirit of the people in Denton that make it unique.” She speaks lovingly and loyally about her teammates and new best friends, stating that, “The best part of living with 6 other girls is that we share everything.” We laughed as she said the downfall was the same, “We share everything.” Ultimately, her first year in college was a success personally, scholastically and athletically. It is no surprise to anyone that God’s plan for Barbara did not have her leading from the bench as she had originally anticipated. The truth is, she broke records and made history with what she adamantly describes as teamwork and a chemistry between players that is second to none. The newly developed team under Palileo won their conference, which carved out a spot for Teakell on the Freshman AllConference team, where she won player of the year of C-USA and AVCA (American Volleyball Coaches Association) Honorable Mention. The lessons here, the ones that I learned in a trendy booth on a rainy night in Denton, Texas, are to grip fearlessly onto who you are. Exercise the muscles of faith you’ve strengthened through the years. Remember where you’ve come from so you can determine where you’re going and when God’s plan for you gives you the opportunity to shine, THEN SHINE, if even from the bench. You’ll be in good company in the spotlight with Barbara Teakell, as she knows very well who she is because of “whose” she is.

CITIBOT: America’s First Text Messaging Software System For Civic Engagement With Government The City of Celina is the third city in the country to launch Citibot, America’s first interactive text messaging and customer service software system for civic engagement with government. With Citibot, citizens of Celina can text search words to quickly access relevant city information about trash pickup times, permitting info and public meeting announcements. Citizens are also able to crowdsource city issues, including reporting potholes, broken street signs and missed trash pickups, all through an interactive chatbot that responds immediately to a citizen’s text message. When the city fixes the reported issue, Citibot will follow-up to let the citizen know their query has been resolved. Citibot, LLC is a Charleston, SC-based tech startup that was formed in 2016. Bratton Riley, Citibot’s co-founder and CEO, was inspired by the evolution of the conversational chatbot and its ability to help governments be more accessible and accountable to every citizens. “By opening up new lines of communication, Citibot also helps cities efficiently allocate resources saving them time and money and building trust within the community. We’re ecstatic that Celina has decided to adopt the technology and bring a new form of communication and accessibility to its city,” said Riley. Don’t Forget Your Lifestyle When Designing Your Landscaping!
T
he foundation to any great landscaping should always begin with a plan or design. I would strongly encourage anyone who has been contemplating taking on a yard project to have a good game plan in mind. One of the first things I try to get a good feel of on my first visit to a client’s home is their lifestyle. This is very important to consider in my job of properly designing an appropriate landscape for them. How much you end up maintaining your new landscaping will be determined right from the start. There are many different styles and types of landscaping. Some of the more popular ones are Natural, Formal, Xeriscape, Japanese, English, Tropical, Water Gardens, etc. However, let’s look at the two most popular – Natural and Formal. The Natural style of landscaping uses planted beds with curved edges. Plants are arranged in seemingly random patterns and reflects the natural way that plants grow in an area. This style has a less manicured appearance than many of the other garden styles. This design might be a good choice if you do not wish to spend a lot of time on maintenance. A Formal style of landscaping follows symmetrical patterns, straight lines and precise geometric shapes with orderly, well-pruned plants. You will often find more topiary designs in these types of landscapes. This landscaping style often requires a lot of maintenance and if not maintained regularly, can actually look neglected pretty quickly. I recently met with a retired couple that wanted some help redesigning their existing landscape. After visiting with them, it was apparent that their exercise, hobby, therapy, and real enjoyment in life was gardening. A Formal landscape seemed to fit their lifestyle. At the other end of the spectrum, I met with another couple whose lifestyle consisted of: mom works full time, dad has two jobs, they have five children of all ages with basketball practice, dance lessons, gymnastics, piano lessons, soccer practice and church activities. Obviously, a Formal type landscape would not be appropriate for this family. However, a Natural landscape design would be a perfect fit for this “on the go” household. So, as you can see, it’s important to stop and think about your own lifestyle when you start planning or designing your new or renovated landscape. If you’re not careful, you can be a slave to something you really don’t have time for. I strongly recommend that before you start your next landscaping

project, sit down for a few minutes and think about what style might fit you most appropriately…you will be glad you did! Once you have determined the style of landscaping that fits your lifestyle, the next step is to move forward with the design process. This can be accomplished in several ways, depending on the size of your project. If the area you’re working in is relatively small, you might be able to simply get by with a quick sketch. If your project includes a very large, or multiple large areas, you may want to proceed by hiring a designer to help you with a more advanced drawing or blueprints that will be exactly to scale. Also, with the age of technology we are in, you can have a computerized design made on a CD that shows you a virtual “walk-thru” of your new landscaping. However, the computerized version is very expensive. If your project is fairly small, you may want to keep design costs as low as possible and use more of your budget toward your actual project. Answer: Hi Vicki, I have good news for you! There are actually quite a few tropical plantings that do pretty well here. For height centerpieces, you may want to consider Windmill Palm trees or Sabal Palm trees, they are two of the heartiest of the Palms for our zone climate with really no need for wrapping trunks with burlap in the winter etc. Sago Palms are also used frequently as a lower tier to the taller centerpiece Palms, but you need to be willing to cover the foliage on them if a hard freeze is on it’s way. If you don’t cover it and it does freeze, simply cut the foliage back to the main trunk and it will totally refoiliate by early summer the next year. Oleander is a great tropical shrub to use here with wonderful flowers all summer long. Just be careful that you don’t have small children that might eat the foliage, as it can be poisonous if ingested. Some great perennials to use would be Hardy Hibiscus and Verbena. For annuals, use Tropical Hibiscus, Mandevilla, and Bougainvillea and Crotons.

Yes, we do see this scenario quite often actually! What you’re describing would typically involve resurfacing the pool, repairing or installing new tile around edges, a new surface coping around the pool such as flagstone etc. The pool deck will be the most aesthetic part of your upgrade (I am assuming yours has cracks as most that age do), so you would perhaps want to consider a patterned/colored/stamped concrete, pavers or travertine surface. Football Royalty Visits Celina

When a football town like Celina gathers to meet an iconic football coach like Lou Holtz, you know it’s something really big. That’s exactly what happened last month when one of the most successful college football coaches of all time was a guest in Celina at the home of Carmen Roberts, an active community leader in Celina, who opened her home to anyone who wanted to be there to meet the coach. There was an autograph and photo session available, along with catered lunch from Tenders BBQ, followed by an inspirational speech from the coach who was there at the request of Pat Fallon. Fallon is currently deeply embroiled in a campaign for election to Texas State Senator, District 30 opposing Craig Carter and incumbent Craig Estes. Holtz said that he told the men he coached that if they would give him four years, he would be available for them for the next 40. And that is why he made the trip to Texas - not only for the event in Celina, but also as the keynote speaker at the Grayson County annual Lincoln-Reagan Day Dinner. Fallon was a member of Holtz’s team at Notre Dame for the 1988 National Championship. Tony Rice, who made the 1989 College Football All-America Team as a quarterback, and Chris Zurich who had an NFL career that started by being drafted by the Chicago Bears in 1991, were teammates with Fallon and were also on hand with Holtz to support Fallon. “If enough people care, we can solve anything and that is why we have elections,” Holtz told an attentive crowd. He said he respects anyone who goes into politics to serve, and he spoke further about the importance of choice throughout life. “It’s the most important word,” he said. Holtz also shared poignant stories from his coaching life and teased Tony Rich about being threatened to have Holt’s size 9.5D boot to convince him do it Holtz’s way. When Holtz took over as Notre Dame’s 25th head football coach in November 1985, he brought with him a well-proven reputation as a fixer of football

Start Planting By Chris Carter
Spring is just around the corner and if you are like me, the warmer weather makes you want to get out into the yard or maybe even plant a garden. Our minds immediately begin thinking of what will be produced from our springtime labor: tomatoes, carrots, potatoes, strawberries, and various flowers. I can just see myself eating those fresh vegetables this summer and even sharing some of the extra with my friends. But, if you are like me, reality sets in soon afterwards. I get busy with other things even though I am still thinking about that great harvest I’m expecting. Before I know it, spring has come and gone, and I haven’t planted anything. The sad truth is that if you don’t plant anything in your garden you certainly won’t have a harvest. Jesus told a story about a farmer planting seeds in Matthew 13. There were various places where a farmer planted seeds and depending on the nature of the soil in that area, and what else was growing, he received mixed results from the seeds he planted. But he also planted good seed into good soil and from that good seed he reaped a harvest. Matthew 13:8 NLT - “Still other seeds fell on fertile soil, and they produced a crop that was thirty, sixty, and even a hundred times as much as had been planted!” Based on my previous gardening experience, I’d certainly take a thirty, sixty, and hundred times harvest on my seeds! Jesus went on to explain this story and tell us that in fact the seed he was describing is actually the Word of God. And the soil he was referring to is our hearts. When we read the Bible, listen to teaching of the Word, we are sowing good seeds in our hearts and we will receive a harvest of good things in our lives from that seed sown. I believe one of the most important points Jesus was making in this story was that if we want a harvest, we have to start sowing. Good intentions won’t get the job done. “I’ll get to it next week” won’t be enough for my garden to produce what I want, I have to sow seeds! What kind of a harvest can we expect from planting the seed of God’s Word in our hearts? According to Galatians 5:22 we can expect love, joy, peace, kindness and much more. Does that sound like something we all could use more of in our daily lives? I want to encourage you to sow some seeds today. Even if it’s 1 verse, 5 minutes, whatever, it’s not about the quantity as much as being diligent to plant those seeds. If you want a harvest, you have to sow seeds. It’s a natural principle as well as a spiritual one. Sow the seed of God’s Word in your heart today and you can expect results! Prep time: 10 minutes Total time: 30 minutes Servings: 12 8-10 pounds cooked shank-end ham water (optional) 1 tablespoon Spice Islands Cracked Black Pepper 1 tablespoon Spice Islands Ground Mustard 1 tablespoon Spice Islands Garlic Powder 1/2 cup honey 1 1/2 teaspoons Spice Islands Ground Saigon Cinnamon 1/2 teaspoon Spice Islands Ground Cloves Heat oven to 325 F. With sharp knife, score ham at 1-inch intervals; place in baking dish. If ham appears dry, moisten surface with water. In small bowl, combine black pepper, mustard and garlic powder. Rub pepper mixture over surface of ham. Roast according to package directions. Combine honey, cinnamon and cloves. Drizzle over ham during last 30 minutes of roasting. Remove ham from oven and let rest 20 minutes before slicing.

Prep time: 45 minutes Total time: 2 hours, 30 minutes Servings: 6 Crostata Crust: 1 1/4 cups all-purpose flour 1 stick butter, cut into 1/2-inch cubes and frozen 1/2 teaspoon Spice Islands Fine Mediterranean Sea Salt 1/4 cup ice water Anise Almond Filling: 1 cup blanched, slivered almonds 3/4 teaspoon Spice Islands Anise Seeds 1/3 cup sugar 1 large egg 1 teaspoon Spice Islands Vanilla Extract 1/4 teaspoon Spice Islands Fine Mediterranean Sea Salt 2 tablespoons butter, at room temperature 3 Fiorelle or small pears, sliced into thin wedges 2 tablespoons sugar, plus extra for sprinkling 1 tablespoon lemon juice 1 large egg, beaten 2 tablespoons Polaner Apricot Preserves, heated cream or ice cream (optional) To make crust: In food processor, combine flour,
frozen butter and salt. Pulse until dough is size of large peas. Add 3 tablespoons ice water and pulse several times. Pinch dough to see if it is holding together; if not, add water a couple of teaspoons at a time, pulsing once or twice after each addition, until dough holds together. Form dough into disk, wrap in plastic wrap and chill 30 minutes. Heat oven to 400 F. To make filling: In food processor, blend almonds, anise seeds, sugar, egg, vanilla and salt until paste forms. Add room temperature butter and blend again. Set aside. Toss sliced pears with 2 tablespoons sugar and lemon juice. Set aside. On sheet of floured parchment paper, roll out dough into 13-inch circle; transfer on parchment to rimless cookie sheet. Spread almond paste onto circle, leaving 2-inch border. Scatter pears on top, covering almond paste. Fold dough up and over pears, overlapping dough as needed. Brush with egg wash and sprinkle crust generously with extra sugar. Bake until pears are tender, 40-45 minutes. If crust starts to get too brown, lightly cover with foil. Remove tart from oven and brush pears with heated apricot preserves. Serve with cream or ice cream, if desired.

Cover and cook on high 6 minutes until almost tender. Add maple syrup and butter. Mix well and continue to cook, uncovered, 2-3 minutes, until carrots are well-glazed. Season, to taste, with sea salt.

The forests of Vietnam are known for their premium cinnamon. High in volatile oils, the Vietnamese cinnamon trees produce a deep, reddish-brown cinnamon with an intense fragrance and sweet, red-hot-candy-like flavor.

ver 160 students from Celina Elementary and Donny O’Dell Elementary campuses competed in the UIL Academic Meet held at Anna High School on Friday, January 26th. We are extremely proud of their accomplishments. Thirteen elementary schools competed in the event. Celina Elementary placed third and Donny O’Dell placed sixth overall! Congratulations Students and Coaches! The UIL Middle School Academic Meet was held at Anna High School on January 26th. Celina Junior High, including the 6th Grade Center competed against students from the Anna, Aubrey, Bonham, Melissa and Princeton School Districts. Celina Junior High comprised of grades 6, 7, & 8 placed second overall. Congratulations to all of the students that competed.
