Celina Connected As the old saying goes, the month of March typically “roars in like a lion,” but February sure hit us with one last punch on the way out the door. Many of us were impacted by lost power and water in our area, and we certainly had our share here in Celina ISD. Despite preventative measures, the extended days of cold were ultimately too much for some of our pipes, and each of our campuses were impacted by the weather. We are so grateful for the work of our CISD maintenance team as well as our district and campus custodial staff who answered the call to come in during the time our buildings were closed to make sure we were ready for learning the following Monday. While dodging all the winter weather in February, we still have plenty to celebrate around Celina ISD. This past month, our elementary and middle school campuses participated in UIL A+ Academic competition. Over 240 students in grades 2-8 competed in a variety of academic contests against several other area school districts. Due to the number of students participating, the contest was held virtually this year. We were excited for the opportunity to challenge our students academically outside of the classroom. In music news, CHS choir students competed in the UIL Solo & Ensemble contest, with 8 students achieving top ratings to advance to the state level. The CHS Band took 66 students to the Region 25 UIL Solo & Ensemble contest and received 49 First Division Superior ratings and 11 Second Division Excellent ratings. 25 of these students are advancing to the state level with several competing in two events. Two CHS students were named to the Texas Music Educators Association (TMEA) All-State Band and Choir. CHS Junior Bekah Stuart (Choir) and senior Zachary Flores (Band) were selected out of over 70,000 students throughout the State of Texas that auditioned. The accolades in our CHS Fine Arts Department extended beyond music into the realm of dance and theater this month. The Celina High School Dance team, Las Gatitas, performed 17 different dances at their first competition of the year and came home with a host of awards in choreography and lyrical dance as well as an award for Best in Class for 6 | Celina LifeAndLuxuryMagazine.com
medium ensembles. Additionally, our ladies received an award for sportsmanship that truly demonstrates the class shown by our Bobcats. Gigi LaFreniere took home two top soloist awards as well. Meanwhile, our CHS Theater Department, under the direction of Cindy Baker, hosted the District 9-4A One Act Play contest with another strong showing by our theater troupe. As our winter sports teams wind down successful seasons at both the junior high and high school, we do also want to celebrate CHS Junior, Taylor Zdrojewski, who has been named as a candidate for the Gatorade High School Female Athlete of the Year. Established in 1985, candidates for this prestigious national award are selected based upon athletic excellence, academic achievement, and exemplary character. Taylor is an amazing student athlete who is a member of the girls soccer team and a valued leader on and off the field. Each month we have celebrated our theme, “Celina Connected,” which we share with the City of Celina as a calling to our community. Again, we are so grateful for the work of our CISD maintenance team after our schools were impacted by the weather, but we’d also like to celebrate so many people from around our community who reached out to ask how they could help our schools. So many friends of the district pitched in to help, including several local plumbers and technicians, to make sure we could be ready for kids. We cherish these relationships for it is our connectedness that makes us a community.

Dr. Tom Chandler completed his undergraduate studies at Indiana University, where he received his Bachelor of Science Degree in Biology in 1996. He earned a scholarship from the Army to attend the Case School of Dental Medicine in Cleveland Ohio. While at Case, he served as class president for three years, and student council president his last. He received his Doctor of Dental Surgery Degree in 2001. Dr. Chandler was commissioned as a Captain, and served as Dentist for the 75th Ranger Regiment at Ft. Benning, Georgia, where he completed his active duty commitment. He received an Army Commendation Medal for clinical excellence and service, along with the Army Physical Fitness award all three years. Following his service Dr. Chandler completed an Advanced Education in General Dentistry Residency Program at Baylor College of Dentistry in Dallas, 2004. He went on to receive his Fellowship Award from the Academy of General Dentistry in 2005. Well that depends on your space but be sure to allow enough room for the plants your considering installing and plenty of good rich soil around them. This soil is what will retain all your moisture around your plants so don’t be stingy with it! It is always a good idea to also know the mature size of those plants to avoid overcrowding once they start to mature. Don’t Forget about Drainage! You will always want to have a few drainage holes at the bottom of your container or at a very minimum have a layer of gravel or now available they also make a plastic type insert that comes with pre drilled drainage holes built in so you don’t have to do the drilling! What Kind of Dirt or Soil?

Stay away from all the types you would typically use in your flower beds or on your yard. All of those are generally much to dense. Instead try using a good brand of potting soil that contains a generous amount of Vermiculite or Pearlite and maybe even some Peat in it too. For extra large containers you will need a pretty thick chunky type style this will help you maintain your consistency all the way down to the bottom around the roots of your plants.

In small saucepan, melt butter. Whisk flour with butter. Gradually pour in milk, whisking each time. Bring to simmer, whisking until mixture starts to thicken. Remove from heat; stir in Swiss cheese. Set aside. Use rolling pin to thin out puff pastries. Cut each into nine squares. Line pastry squares in muffin cups, pressing bottoms down firmly and moving pastries up sides for edges to come up just over muffin tins. Fill each cup with 1 teaspoon cheese sauce. Crack one egg into each cup and sprinkle each with diced ham. Bake 10-15 minutes until eggs set. Sprinkle with chopped green onions.

Remove from pan and cover loosely with tinfoil to rest 5 minutes. Reduce heat to medium and add splash of oil. Add onion; cook 1 minute. Add red bell pepper and mushrooms; cook 1 minute. Add cumin, paprika and chili powder; stir through. When veggies are tender (about 2 minutes), add tomato and cook until soft. Season with salt and pepper, to taste. In large bowl, whisk eggs, milk and salt and pepper, to taste. Heat pan to medium heat and add splash of oil. Pour egg mixture into pan and cook, lifting and folding eggs until thickened and no visible liquid egg remains. Do not stir constantly. Lay tortillas on flat surface or plate. In center of tortilla, add cooked veggies and top with thinly sliced beef. Add handful of spinach, scrambled eggs, crumbled feta, cilantro and avocado. Fold bottom of tortilla and roll. Serve with lime wedges and hot sauce, if desired.

Prepare cookie sheet with paper towel to drain doughnuts once out of hot oil. In bowl, mix flour, 3/4 cup sugar, baking powder and salt. Add lemon zest, eggs, ricotta cheese and vanilla extract; mix until well combined. Use ice cream scoop to scoop small amounts dough into oil, 4-5 pieces at a time. Fry each batch until golden brown, about 7 minutes. Keep oil at or near 350 F; if oil is too hot, doughnuts will turn golden brown but centers may still be raw. Remove from oil and drain in paper towel. Repeat with remaining dough. While still hot, toss doughnuts with remaining sugar. To make lemon curd, if desired: In large bowl of stand mixer, cream butter and sugar until light and fluffy. Add eggs and egg yolks, one at a time. Add lemon zest, lemon juice and salt. Transfer mixture to saucepan and cook at low-medium heat until thick and creamy, stirring constantly. Remove from heat and let cool before serving with doughnuts.

Complete with chocolate candy eggs, shredded coconut and chocolate chips for little bunny toes, this recipe goes all out to paint a picture of the Easter bunny. This cake is worth every step. It’s delicious and as cute as can be, plus it’s perfect for dessert after a big Easter dinner. EASTER BUNNY BUTT CAKE Nonstick cooking spray 2 eggs, plus 4 egg whites, at room temperature 3/4 cup cream of coconut
Line muffin pan with four paper liners. Spray oven-safe glass bowl with nonstick cooking spray. In large bowl, whisk eggs, egg whites, cream of coconut, pineapple, coconut extract and vanilla extract until combined. In food processor, pulse flour, sugar, baking powder and salt until combined. Add 6 tablespoons butter. Pulse until combined. Add remaining butter. Pulse until coarse meal forms. In large mixing bowl, add coarse flour butter meal. Add half of egg mixture. Beat 1-2 minutes. Add remaining egg mixture; beat until combined. Fill each muffin cup 2/3 full. Bake 18-20 minutes, or until done. Cool completely. Pour remaining batter into prepared oven-safe bowl. Bake 1 hour, 40 minutes, or until done. Cool completely.
1/2 cup crushed pineapple, drained 2 teaspoons coconut extract 1 teaspoon vanilla extract 2 1/4 cups flour 1 cup sugar 2 teaspoons baking powder 1/2 teaspoon salt 12 tablespoons unsalted butter, at room temperature Buttercream Frosting: 3 cups powdered sugar 2 sticks unsalted butter, softened 3 tablespoons milk 1 teaspoon vanilla extract 1/2 teaspoon coconut extract 4 thin pretzel sticks 1 bag (10 ounces) sweetened shredded coconut 8 drops green food coloring
To make buttercream frosting: In large bowl, add powdered sugar and butter; beat until fluffy. Add milk, vanilla extract and coconut extract; beat until creamy. Turn bowl upside-down on cake stand until cake removes from bowl. If cake needs leveled, turn cake over and trim to flatten. Frost cake. Remove wrappers from cupcakes. Using two pretzel sticks, press into base of cupcakes and anchor to bottom rim of bowl cake to create bunny feet. Frost feet. Take third cupcake and cut muffin top off. Cut muffin top in half. Using one pretzel stick, anchor one muffin top half at bottom of full cupcake to form toes. Repeat with second muffin top half for other foot. Frost toes. Attach final cupcake with remaining pretzel stick to butt area of cake to make tail. Frost tail. Apply 1 1/2 cups shredded coconut all over cake. Press chocolate candy melts into bottoms of bunny feet to resemble foot pads. Add chocolate chips to resemble pads for toes. Place remaining coconut in plastic bag. Add green food coloring. Toss in bag until coconut is colored. Spread around base of cake for grass. Decorate grass with chocolate eggs.
