Growing Our Garden

With a son graduating from High School this year and his sisters making excellent time right behind him, it’s easy to think about the investments we’ve put in our children through the years. A lot like our garden, we’ve planted seeds along the way, by teaching lessons. As parents, we provide the environment in which these children grow. We water them with assurance, guide them based on what our lives have taught us and when necessary, prune them when another direction needs to be sought. As early sprouts, the needs are different than that of a hearty tree. We tear up when we drop them off at kindergarten, scream the loudest when they score their first point and let go a little when they don’t need us to tie their shoes. We go through all the motions, check off all items of the list that includes, using manners, being kind, respecting your elders and teachers. In later years, the lessons include the importance of showing up on time, wearing your retainer, fastening your seatbelt and answering the phone when we call. Our teachings combined with lessons taught by community like, being a part of a sports team, honoring your commitments in activities, having a first girlfriend or a first job, all play a part in determining the success and future of these seeds we’ve all planted. For some of us, this season finds us looking eye to eye at young men and women who used to hold our hands and stand at our knees. They’ve made touchdowns, danced or played their instruments in parades, won science fairs, been the treasurer for their class. They’ve made lifelong friends, turned in essays and taken the tests. We’ve seen them through injuries, slumber parties, school projects and every other milestone we as parents have the responsibility of seeing them through. It’s time! We did it, Celina! May is here and with that brings another crop of graduating seniors. It’s time for a harvest, a time for us to reap the benefits of what has been sewn in our own lives as well as a community. What we did through all of those years, is grow our garden. We cultivated the soil, planted the seeds, watered them and with a little help from the sun, grew what will be future Doctor’s, Attorney’s, Football Coaches, Teachers, Executives and business owners. We as a family are proud to raise children in an environment that is rich in heritage and good people. The opportunities afforded us as a community, create the ideal breeding ground for successful people whose children are their harvest. When raising them, we never realize how fast they will grow, it seems to happen overnight. But, if you think about it, flowers never bloom while we’re watching. We just wake up one day after a season of hard work and notice that there are flowers in the yard. Celina Proud,

Whether we’re transplanting actual flowers or cultivating the soil to plant seeds, being outdoors in the sunshine is where we prefer to be this time of year. Gardening provides an opportunity to enjoy nature and reflect. I recently, with muddy hands and sweaty brow, had a revelation regarding how important it is to provide and nurture the environment needed for the longevity and livelihood of the flowers and plants I hope will take root in our little piece of Earth. The analogy sent me on a trail of thoughts that led me to raising children.

M

any of our parents are questioning where did time go as they prepare to watch their child graduate in a few short weeks. This same feeling runs through my administration team that was preparing to open our campuses for the 2017/2018 school year and then, in a blink of an eye, we find ourselves starting to prepare for next year. In August, our thoughts were consumed with opening a brand new elementary campus named for a man that was an integral part of our district for many years. We also opened Celina Primary for the youngest of our Bobcats, which created a campus centered on early childhood education. Now, we find ourselves just a few weeks away from saying goodbye to our students. Some, for only the length of a summer break, but for others, our goodbyes are filled with cheers of good luck as they leave Celina High School to start their careers and/or continue their educational pursuits at the next level. The month of May represents crunch time. For our administrators, faculty, and staff, this can resemble what it would be like to run a marathon daily due to the numerous extracurricular activities, programs, senior practices, exams, banquets, and state testing requirements that seem to fill each and every day of the May calendar. Listed below, are the exams dates to keep in mind during this busy month.

Also, you will find the 2018 Celina High School Senior Class preparing for their final exams, while at the same time, juggling their studies with senior practices, graduation pictures, field trips, and final banquets. The first of the senior ceremonies is Baccalaureate, which is scheduled for Sunday, May 20th. The ceremony will be held at First Baptist Church Celina starting at 7:00pm. Graduation ceremonies will be held on Friday, May 25th at Stonebriar Community Church. Graduation will begin promptly at 3:00pm. Tickets are not required for admittance, but we recommend arriving early to obtain the number of seats needed for family and friends. Finally, the graduation class will take one last field trip together as they continue the tradition of Project Graduation. The program was started many years ago that promotes alcoholfree activities as an alternative post graduation party. Students will board school buses to spend the night at Speed Zone before being transported back to Celina for one last breakfast together. From field trips to ceremonies, there is much to do during the month of May. It is also a time when the realization starts to sink in that day to day activities for our seniors will have a much different look as they go forward. Some will continue their education at colleges and universities throughout the United States, while others will join the workforce. There will be those that are called to mission work and will leave behind friends and family to travel to places around the world. In the end, it doesn’t matter what path our graduates take because their teachers are confident that they have been prepared to face and overcome any challenges that come their way. Graduation is not the end of your story, but the beginning of your journey. Take pride in all that you have accomplished and always have faith in yourself to pursue your dreams.

Celina's Cajun Fest 2018 By Jodie Brownd

It is safe to say, that despite Mother Nature and the winds she brought with her, she too had a blast at Celina's 6th Annual Cajun Fest. Fans of all ages came from near and far to gather in Celina's downtown once again for a taste of the spicy Cajun food, music and fun. The free-admission festival hosted a massive crawfish boil, live alligator shows and music from five awesome Zydeco and Cajun bands, including Ronnie Mathews, The Keith Blair Project, Jamey Bearb & Friends, Roddie Romero and the Hub City All-Stars and Grammy award-winner Wayne Toups. Between bands, guests had the chance to sample the mouthwatering crawfish, corn and potatoes as well as homemade ice cream, Po Boy Sandwiches, Funnel Cakes, kettle corn and Homemade sodas to wash down corn dogs and a popular favorite, beignets. Kids of all ages had plenty to entertain them. The Celina Fire Department offered a Jr. Firefighter Challenge while others worked off energy on inflatable bounce houses and they could even pet a real life mini alligator at the popular Gator Country Exhibit. Celina opens its downtown streets to host the event each year and although it's easy to head on over if you're lucky enough to be from Celina, the event entertains guests from all over the map. Cajun ladies Melinda Andrews of Frisco, Texas and Stephanie Manuel who came all the way from Kinder, Louisiana picked out a warm spot to celebrate. When asked, “What brings you back to the event?�, Manuel, who has made her way from out of state twice since 2013 says, "Most definitely the music and atmosphere." You couldn't help but want to pull up a chair and party with the two who enjoy celebrating Cajun heritage any chance they get, and no matter what state they're in. Another fun aspect of the event was seeing local friends and neighbors enjoying themselves together whether shopping, eating, dancing or just taking in the sights and melodic sounds. There wasn't anyone without a smile on their face and a skip in their step. It's the stuff that community events are made for. With activities for all family members and local businesses open for the festivities, guests also had the opportunity to experience the home town feel of one of the most up and coming towns making headlines in the media. That's what is great about Celina, if it isn't your hometown, you'll wish it was after a visit. Bobcat Country did it again and despite the wind and cooler weather, even Mother Nature couldn't stay away from Celina's 6th Annual Cajun Fest.

Celina Firefighter and Hero, Andrew Needum "Runs In" By Jodie Brownd

Imagine this...you're with your parents, your wife and your two children, headed home from a long-awaited vacation in New York City. You board a plane headed back to the real world and your job as a fireman. Suddenly, you hear a "pop" and chaos floods in as emergency oxygen masks are deployed and everyone acts out the emergency steps the flight attendant covered just moments before your plane took off. Your wife is beside you, your children are looking at you to determine how to respond, and you find yourself managing a surreal situation that all seems like a scene from a movie you'd like to end. You don't know whether the plane is going down, or if each passing moment will be the last minute spent with your loved ones. You hear a commotion a few rows away and you look your wife straight in the eye and you know what you have to do. "Go", she says, "They need you more than we do right now." What would you do?

Andrew Needum, a firefighter from Celina, Texas was faced with this very decision. It took only his servant heart and human instinct to "run in" to help his fellow man. Andrew was only rows away from a very difficult scene to process on Southwest Airlines Flight 1380. After debris from an engine explosion flew through the window where 43-year-old Jennifer Riordan was sitting, passenger Tim McGinty, another heroic passenger, rushed to pull Riordan back inside of the plane. It was when Andrew helped the man retrieve her from the window, that they were able to pull her back inside. At that time, Needum performed CPR on Jennifer, a banking executive from New Mexico. Regrettably, she obtained fatal head injuries and did not survive. A bizarre accident that resulted in the death of a fellow passenger, are too few words to describe what really happened on Tuesday. Anyone reading this could have been in any one of those seats on that Southwest flight... with their wife, their mother or their children. The only thought that makes that truth easier to process is the fact that there are real men in this world... fathers, sons and brothers that "run in" to help when it is needed. Andrew proved that. They "run in" to make a difference, even when their own are looking them in the face. Specifically, because their own are looking them in the face. Witnessing. A little 8-year-old boy and a 6-yearold girl saw their father, who did not have to help (as no one knew he was a Fireman) but DID. And for no reason other than that is who he is. He did it because it was the right thing to do. His own children witnessed that first hand, as well as an airplane full of strangers that I have no doubt are proud to have shared that plane with two modern day heroes who are too humble to claim the status. An interesting side note that has yet to be shared is that Celina, Texas has recently received media attention for producing other newsworthy heroes. Wendy Gracy, and David Heron were recognized as two "Angels Among Us" for their part in an 18-year-old story of Caleb Electric Brain, a boy searching for the nurse and first responders that "ran in" and saved his life after a fatal car crash. A press conference last December lead to a happy reunion for these two Celina residents and for a second press conference to be held regarding another hero from this small Texas town is nothing short of miraculous. The fact that Gracy, Andrew and his wife Stephanie are all friends that are as close as family, is a direct reflection of the love in

this community and a testimony to the quality of people that have roots and wings there. Andrew's story has made national headlines for good reason but has yet to be fully told. There will be an abundance of sources eager to tell it. The take-away from today's press conference is that sometimes heroes wear street clothes and sometimes they are in uniform. The silver lining that provides hope in the midst of tragedy is that they're out there, and they're "running in" regardless, and despite any unknown outcome.

It has been said that the character of a man is established when no one is looking. Andrew didn't set out to be a hero on Tuesday, and although the outcome wasn't what he'd hoped for, he's a hero because he chose to be a fireman on a day he didn't have to be. For every person a fireman or first responder can't save, there are thousands that they do. The outcome isn't what makes a hero, the willingness to be a divine steward is. Especially in a situation where a commitment to the outcome is solely rooted in who you are as a human and without any tangible reward obtained because of it.

The next time you board a plane or pass a stranger on the street, know that you're sitting and walking amongst heroes. When you think about what you would do under circumstances outside of your control, know that at any moment you could be called to be a hero in your own life as well as in the lives of others. What will your witnesses say about you? Andrew Needum's son called him a "Hero" and the name is fitting. Sometimes you're a hero because of who is watching and who you decide to be, and if you ask the heroes and angels among us, being from Celina, Texas, doesn’t hurt either.

The funniest moment in all four years would have to be thinking I did great on a test, and getting it back, and I got a 35, that was a knee slapper. My favorite high school memory would be going to the football field to spend the night on Senior Night. After High School I will attend Ouachita Baptist in the fall where I plan to major in marketing.

A Boy and His Steer By Jodie Brownd

D

awson James Campbell is 14 years old, and you’ll never meet a young man with better manners. He plays football, is #44 on the Celina Jr. High 8th Grade football team and has a little side hobby that has proven to be pretty lucrative. Dawson has been involved with the Celina FFA and Collin County 4-H for years. Raising and showing 2 or 3 steer each year since he was 8 years old, he has a collection of jeweled belt buckles and awards won throughout the years that would make anyone proud. His infectious smile seems to always be present, but it gets significantly bigger when you bring up Checkers, his nearest and dearest steer as of late. When asked about his favorite livestock friend, excitement takes over his face because he and Checkers worked together and did something that is well, a REALLY BIG deal. On February 23, 2018 Dawson Campbell and Checkers, his Champion MaineAnjou Steer, won Overall Grand Champion, $110,000 and a four-year $10,000 scholarship at the San Antonio Livestock Exposition. Dawson, who credits his Dad for being his role model, hero and the person who taught him the trade, is the apple of both of his parent’s eyes. When asked about where he gets his flawless manners, he credits and claims that his mother definitely keeps him in line. Dawson laughs under his breath as he explains the circumstances surrounding his big win. He and his entourage headed south to San Antonio without expectations of winning while his Dad, Heath, stayed behind just this once to work. His Dad brushed it off

and said, “Just go and do your best,” and THAT he most certainly did. When I asked how he told his Dad he had won, they both spoke of the exciting phone call. Neither were able to conceal their excitement or how sentimental the moment was. After the tenderness had passed, I laughed as Dawson added playfully and somewhat under his breath, “I basically told him to put THAT in his pipe and smoke it.” The picture of Dawson, in the moment he won, says everything that needs to be said about the young man’s excitement and character. That moment won’t soon be forgotten and even though his Dad wasn’t there that one time, you can rest assured he was just as excited, celebrating the boy he loves back home as if he had been. Heath and Carrie run Wild H Cattle Company in Celina. You need only drive up to their beautiful home to feel at one with nature and country living. The excitement these two share about their son’s win and what his future holds illuminates from their faces. They have taught Dawson the importance of hard work, integrity and determination. I was most impressed by how much they really care about the animals, their wellbeing and the life lessons that are taken away by illustrating the idea that what you get out of something is a direct reflection of what you put into it. When asked about what he will spend his prize money on, Dawson smiles that smile and says, “A lot of it will go into savings, or maybe another steer or two.” His walls are covered with impressive awards and mementos from past winnings and this one is no different. He speaks of them all tenderly


and with pride, each holding a certain memory and experience of hard work earned and there will be many more in the future. Dawson and Checkers made an amazing team and although I could see the sentiments in his eyes for the creature he raised and cared for, this kid is very aware of the heart, soul and hard work that goes into caring for an animal. Dawson devotes hours after school to his craft, as well as numerous hours in the barn in the summer months. It’s a lifestyle that promotes nurturing, healthy competition, knowledge of agriculture and citizenship. It teaches the importance of and sense of pride in community, as there are so many likeminded families that support each other in what has been proven to be much more than just a hobby. It is a way of life, and for Dawson Campbell, that’s definitely something to smile about.

Slide into oven and bake 6- 8 minutes, until chicken is cooked through and no longer pink in center when sliced with a knife. Set aside to rest 5 minutes then shred. To make dressing: In large bowl, mix peanut butter, coconut milk, fish sauce, chili sauce, garlic, ginger, sesame oil and hot water. Whisk well until smooth.

Divide spinach and avocado among four bowls. Top with chicken, zucchini, carrots, radishes and cilantro. Drizzle with dressing and serve immediately. Tip: If you don’t have a spiralizer, you can achieve the same effect by using a vegetable peeler to shave thin ribbons. You can also use a mandoline vegetable slicer then use a knife to cut the strips into thinner noodle-like strips. Using slotted spoon, remove eggs from water and drain on paper towels. Place poached egg in each avocado half. Coat medium skillet with olive oil spray. Heat skillet over medium heat and add prosciutto. Cook until crispy, about 2 minutes per side. Transfer two avocado-filled egg halves to each plate and serve immediately with two slices prosciutto. 7 Tips to Combat Seasonal Allergies It’s time to welcome fresh air, enjoy outdoor barbecues and run around at the park with family and friends. While embracing these warm activities, you may also face the dreaded symptoms of allergies.

Wash your pets: Your furry friends are also vehicles for transporting pollen. Wash them after being outside so they don’t bring pollen into the house. Talk with your veterinarian regarding the best practices for washing your pet.

However, allergy season doesn’t have to keep you indoors. Pediatric health expert Dr. Tanya Altmann offers these tips to help manage and prevent common symptoms.

Close windows: Keep bedroom windows closed to prevent pollen from entering. If you love the fresh air, open non-bedroom windows in the afternoon or evening when pollen counts are lower, or opt for indoor fans and air conditioning.

Avoid the allergy: Avoid what you are allergic to as much as possible. If you are allergic to tree and grass pollens, limit your time outdoors. Consider taking part in activities without as much exposure to tree and grass pollen, such as gymnastics or swimming. Spend time outside in the afternoon: While exercise and playing outdoors are important (and fun), try to stay inside during the morning hours when pollen counts are typically at their highest, and instead opt for outdoor workouts and activities later in the day. Protect your face: Shield your eyes with sunglasses, keep your hair pulled back or wear a hat to prevent pollen from contacting your face.

Wash pollen off: Bathe kids and change clothes after being outside to remove pollens from their hair, faces and clothing. Pollens are airborne and microscopic, so you can’t always see them. Wash hair at night to avoid sleeping in pollen. Do your laundry: Pollen can linger on clothing, so try to wash clothes after they’ve been worn, especially after outside play. Unlevel Lawn bugging you? Here's how to fix it!

Sections of a lawn can become uneven over time, due to "settling" and other factors. In the least extreme cases, you will want to solve the problem by "topdressing" the areas, which allows you to level out your lawn. Is this problem new to you? If you have never experienced it, you may need a brief introduction to it, and its solution, in order to understand what it is all about. The following exchange between a reader of my landscaping column and a lawn care expert at a local nursery provides a case study that will help bring you up to speed.

The Problem: Low Spots Develop in a Lawn, Making the Surface Uneven Richard writes, "I have a lawn that was put on over a ledge where the house was built in 2006. Now the lawn is very uneven with dips in the surface that can even twist your ankle while walking around. The grass is also in bad shape and looks dead in places. One side of the lawn is really sloping. What should I do?" The Solution: How Bad Are Those Low Spots? Most of us enjoy our turf grass lawns as a great foundation for outdoor activity. Maintaining our lawns properly is very important, in part, to ensure safe and enjoyable outdoor activity. A lawn needs to be smooth to avoid injuries that might be caused from stepping on an uneven surface. Your grass is your "floor" of an outdoor living space, and floors need to provide stability for you and your family. A level and even lawn is also much easier to maintain. Who wants to mow a lawn with low spots in it, right? It is uncomfortable, much like when you drive your car over potholes. And it can also cause you to scalp the grass‌as the mower drops down when the tires pass over low spots, the level of the mower blade also drops, plunging into the higher spots and cutting the grass there much too low. So, what is the solution to the problem of low spots? It really depends on the severity. Are we talking about some minor depressions, extreme catering, or something in between? The solution differs accordingly, which is why these responses must be broken up into three sections, which we will term Methods 1, 2 and 3:

Method 1 -- Leveling Out a Mildly Uneven Lawn by Topdressing Topdressing the low spots works well for leveling mildly uneven areas; it is the least invasive approach. Here is what you can do:

1. In a wheelbarrow or similar container, mix up a batch of topsoil, sand, and compost -- basically, a soil medium that can support turf grass growth.

2. Apply 1/2 inch of this soil mixture on top of the low areas. Do not make it deeper than that, because this approach must be gradual, so that you do not smother the grass.

3. Rake the topdressing to spread it out evenly.

4. With a push-broom, work the soil mixture in between the blades of grass as thoroughly as possible.

5. Monitor the progress in the area. Eventually, you should see just grass, no dirt (assuming there were no bare spots before you began the process of topdressing). If it is still uneven, keep repeating these steps until it is level. If the spot is level now, then you are done.

6. If you had bare spots in the area before you started topdressing it, you will have to overseed the lawn in these areas.

Method 2 -- Leveling Out a Moderately Uneven Lawn: "Sweeping the Dirt Under the Carpet" The topdressing process described above takes time to work. What if you have a few really low spots in your lawn? Obviously, topdressing would not be very effective, since you have to proceed 1/2 inch at a time, and you would be waiting forever. Yet, since, it is only a few low spots that we are talking about, there would be no need to take the kinds of drastic measures described in Method 3. Fortunately, there is an intermediate method. I call it "sweeping the dirt under the carpet," because you are essentially picking up sod (the carpet) and putting dirt under it. This method works as follows:

1. Remove the sod over the low spot (if the area is bigger than 1-foot square, cut out multiple chunks, since a piece of sod greater than 1-foot square is hard to move around without breaking) and set it aside.

2. Shovel enough topsoil into the hole that, once you replace the sod, the area will be even.

3. As you shovel the soil into the hole, add water. This will remove air pockets. The last thing you want is for the sod to settle after you have finished -- which would defeat the entire purpose of the project.

4. Replace the sod and water the grass.


Method 3 -- How to Level Out a Lawn That Looks Like a Moonscape Finally, we come to the most extreme end of the spectrum. Is your lawn so littered with craters that it looks like the surface of the moon? If the uneven areas are substantial enough and numerous enough that neither topdressing nor the sweep-the-dirt-under-the-carpet method will solve the problem, then you may need to do a more major renovation by regarding the area and establishing a new strand of turf grass. To accomplish this, you need to take the same steps that you would take to establish a new lawn, except that you are applying these steps to a smaller area. You have two basic options:

1. You can lay sod

2. Or you can start the grass from seed

Find Teachable Moments In Your Daily Routines By Rosh Ramanujam

W

hen you think about all the things your children need to learn during their formative years—from ABC's to multiplication tables and so much more—it's downright dizzying. Couple that with the ultra-hectic schedule that most working parents keep, and the prospect of finding time to teach your kids anything other than how to 'hurry up' becomes almost unimaginable. From the time your child wakes up until the time she goes to sleep at night, there are countless opportunities for learning and growing. At Kiddie Academy of Prosper, we look for those opportunities to learn in every aspect of your child’s day. Here are a few examples of “teachable moments” you can employ at home: •The commute. Most of us spend a good chunk of time each day trapped in our cars, commuting to and from work. Rather than zone out listening to the radio, it's the perfect time to engage your children in a fun but enriching activity. Have a toddler? You can make up silly rhymes, ask her to count all the cars painted her favorite color, or even listen to an audio story and talk about it together afterwards. •Preparing for dinnertime. While many of us throw something together for dinner each night, the teachable potential as you prep for dinner is endless. A preschooler can practice his ability to follow one or more directions at a time while playing assistant chef, as you ask him to fetch you the ingredients you need. Older children can work on comprehension skills by reading and following directions for recipes, or using math skills to measure out proper amounts of ingredients, particularly when you halve or double the recipe.
