Celina Strong When we headed out for Denver at the beginning of Spring Break, we never dreamt that things would change so drastically in a week. It was a beautiful drive with a fun group of volleyball friends…and I was grateful for the one-on-one time with my daughter. Denver is always beautiful, and the Colorado Crossroads National Qualifier has always been one of my favorite tournaments. It was our first Qualifier of the season and our team was ready to do BIG things! As we competed that weekend, we began to hear rumblings about the Coronavirus…and we noticed that the convention center had set up lots of extra hand sanitizer stations. By the time Monday rolled around, everyone was talking about it – but we never expected that as we packed up our volleyball gear and headed back home, it would be for the last time this season. Or that our last dinner with friends in New Mexico would be the last time we ate at a restaurant for months. Within two days of returning home to enjoy the rest of our Spring Break, everything began shutting down. We were in disbelief…but honestly never thought it would directly affect us here. Then the news came – an extra week of Spring Break. That was okay, we would enjoy another week at home with our kids. Then our oldest daughter called with the news…the University of Arkansas was moving to online classes for the rest of the semester and the dorms were closing. Well, we could handle that too – we missed her and looked forward to having her home early. But in the days and weeks that followed, as more and more things closed and cancelled, the somber reality began to set in. This wasn’t going to be over in a week or two…we were looking at months! Fear began to set in for our friends that own local businesses and restaurants…for those that began to lose their jobs due to the Stay at Home Orders…and for our children that were being asked to give up being with friends and extended family, as well as staying home from school and extracurricular activities. It was surreal. We all adjusted…we had no choice. We set up our home offices, school desks for our kids and hunkered down. We only went out for groceries and to support our local restaurants a few times a week for curbside service – and fell in love with the loosening of the guidelines to allow for take-out margaritas, growlers of beer and mason jar drinks from The Gin! We followed the orders and we adapted for our clients…we did whatever we could to help our community and flatten the curve. We wanted this to end…we wanted people to be able to get back to work and for local businesses to open their doors again. We wanted our kids to get back to doing what kids do. We wanted to go out to dinner with our friends. We wanted our community back… and we wanted it stronger than ever! Now that things are opening back up again, things are starting to feel more “normal”. Graduation ceremonies are being planned and the Class of 2020 can breathe a sigh of relief that all is not lost. If there is anything that we’ve learned over the last two months, it’s that kindness, grace and compassion mean EVERYTHING. Yes, it’s a scary time…yes, we’re all living differently…yes, we all have our own opinions about the virus and the orders. But witnessing our community coming together to help those in need proves just how STRONG we are. We are honored to represent our community each and every day and pray that everyone stays safe and healthy. Reach out to us and let us know how you’re doing…let us know what we can do to help. Unleash Your Inner Home Chef With many Americans staying home, the pressure is on to maintain fun and variety in the kitchen, so family meals don’t get boring. However, cranking out three meals a day can be a burden.

Have breakfast for dinner. Seemingly always a kid-friendly favorite, scramble some eggs, cook some bacon and get creative with pancakes, French toast or waffles by adding fruit, spices or chocolate chips.

Busting Common Cooking Myths Myth No. 1: Frozen is not as good as fresh. When it comes to nutritional value, frozen foods are packed and frozen at the food’s peak freshness, meaning they’re still full of nutrients. Myth No. 2: Cooking seafood is hard. Seafood is a healthy source of protein that can be steamed, baked, grilled or fried. Start with one technique and master it. An easy way to start is to saute shrimp or fish fillets in a bit of oil. Use the same technique as when you fry an egg and don’t overcook it. Myth No. 3: Fish should never be microwaved. Microwaving seafood can actually help preserve nutrients that are typically broken down when heated using other cooking methods. Closing Out the 2019-2020 School Year The month of May has always been filled with numerous end-of-year banquets, field days, year-end parties, and our seniors checking off their “last” experiences of high school. A few months ago, none of us could have predicted that our everyday lives would be so disrupted by a virus, but what we have accomplished in the wake of this disturbance is truly amazing. We are so proud of our students’ efforts to continue their learning as we all adjusted to a “new normal,” and I know you join me in thanking our teachers for carrying on the quality of instruction expected in Celina ISD. We continued to hold out hope that our students and staff would come back together before the school year ended, but with the Governor’s last order, which closed our doors for the remainder of the year, we redirected our focus to a strong finish and celebrating the Class of 2020. Celina HS Principal, Dave Wilson, and his team went to work to finalize plans to celebrate this group of seniors. The Senior Spotlight campaign began on our social media pages, individually highlighting activities and future plans for each of our seniors. Also, as a surprise for our graduates, twenty administrators, teachers, and staff members placed over 200 celebratory signs in front of seniors’ homes. Our team continues to work on alternative graduation plans, and one way or another we will provide a ceremony for our students that honors the traditions unique to our community. 12 | Celina LifeAndLuxuryMagazine.com

As we begin to close out the school year, we would like to honor our Superintendent Award winners for the 2020 spring semester as these fantastic kids deserve to be celebrated. Celina ISD Plans Outdoor Graduation Ceremony By Dave Wilson, Principal of Celina High School

With the Governor’s most recent Executive Order No. GA-21 issued on May 5, 2020, and the Texas Commissioner of Education’s Graduation Task Force recommendations calling for no outdoor graduation ceremonies prior to May 29th, the Celina High School Graduation ceremony will now be held on Friday, May 29, 2020, at Bobcat Field starting at 9:00am. Celina ISD previously received permission from legal and local authorities to hold a hybrid ceremony on Friday, May 22nd; however, this plan would have greatly altered the time-honored traditions that our graduates and their families hold dear. A hybrid ceremony would have required the ceremonial portions, including all speeches, to be streamed on the evening of May 21st, separate and apart from the diploma distribution on the morning of May 22, 2020. Additionally, holding our graduation ceremony on May 29th allows our district to honor the clear recommendations of the Governor’s Executive Orders, which are intended to maintain the safety and security of our students and families.

Please understand that while we do not anticipate any further changes, directives from the state remain fluid, often changing week-to-week. Districts are required to monitor the health of our communities and the state up to seven days prior to our graduation ceremony, and certainly weather conditions are always a factor for outdoor graduations. Celina ISD is prepared with contingency plans, including a hybrid ceremony if necessary, on May 29th, should conditions at that time preclude us from holding a full graduation ceremony. In order to fulfill the requirements set by the Governor and the Texas Education Agency, Celina High School will begin sharing information next week with our graduates and their families in regards to the expectations required for those in attendance. We appreciate your flexibility and understanding as plans change in accordance with state orders. In the end, it is our sincere hope to provide an experience that will closely reflect the long-standing traditions and expectations of our graduates, their families, and our community.

Introducing Your Children to Gardening Has the beginning of 2020 been a tad different that what you had planned? It certainly has been for our family, as well as most of the people that I talk to and connect with. It’s been a bit challenging to say the least…and a lot of folks are at home with their children all the sudden! Feels like we’re waking up in a new world, huh? Hopefully by the time you’re reading this, our Stay at Home Quarantine has been lifted and things are getting somewhat back to normal. However, they may not be and this may be the new normal for a while. If so, why not take advantage of this priceless time and introduce your children to gardening? Here are some tips below to help you! Get good quality child-sized garden tools. Have the child make a special ornament for his/her garden. Pick seeds that are easy to handle and plants that are easy and reliable such as Nasturtiums, Marigolds, Zinneas, Scarlet Runner Beans, Sunflowers, etc. Plant the children’s garden over several days, if necessary, to maintain attention. Start seeds inside under florescent light for slow growing flowers, because kids enjoy having things growing. Plant the child’s name using alfalfa seed or grass seed planted in a tray of cotton fluff or potting soil Have child decorate a Styrofoam cup as a face. Fill the cup with dirt and plant it with grass seed. As the grass grow the child can give it “haircuts”. Make stepping stones for the children’s garden that feature their hand &/or foot prints from concrete (add fiberglass filaments to strengthen for cold weather durability). Grow carrot tops by cutting off all but 1” of the carrot (potatoes, sweet 24 | Celina LifeAndLuxuryMagazine.com

potatoes, and other root vegetables work as well). Stick 4 toothpicks into carrot around sides and place over a cup of water with the carrot slightly into the water. Plant orange seeds to start an orange (grapefruit or lemon) tree for in your home. Save seeds of flowers (marigolds, sunflowers, etc) or vegetables (beans, pumpkins, etc.) to plant next year. Place seeds on paper plates until dry and store in a sealed jar until planting season. It is good to learn that we don’t have to buy seeds; we can find them and save them. Take cuttings together from ivies, geraniums, or other easy to root plants. Plant a terrarium together in an old aquarium or large glass bowl. In the garden, children like extremes. Plant huge sunflowers and other large plants in one area. In another area grow tiny plants-maybe make a “fairy garden”! Mini-Greenhouse You can make a mini greenhouse to start your plants using empty soda bottles…use green bottles if you can. If you only have clear bottles, punch some extra holes in them or they will get too hot inside and cook your plants. Cut the bottom off a 2-liter plastic soft drink bottle. Remove the label and the cap. Place the bottle right side up over your seedling and push it far enough into the top hold it upright. Once your plants have grown tall enough to touch the top of the inside of the bottle, remove the bottle. Don’t let the plant grow through the top you won’t be able to remove it and your plant will not thrive.

Make a Weather Station It’s important to pay attention to the weather in the summer as the weather affects the growth of plants. We have different weather patterns every year, so our plants grow differently every year. It is easy to put together a few things that help keep track of the weather so that you can write it down in a notebook…your very own weather journal! It’s important to keep the journal going so you can compare this year to last year or several years before. You will need: outside thermometer minimum/maximum thermometer (optional) sturdy pinwheel rain gauge Snow measuring stick (make your own with a yard stick mounted to a stake. The stake can secure it into the ground. Make sure the yard stick is touching the ground at 0.) Notebook or journal with pencil or pen attached with a string, so it doesn’t get lost. These items can be purchased inexpensively at many home supplies stores. Once you have purchased them, decide where your weather station will be. You may have to spread a few items around to have them in the ideal position. When placing the thermometers, make sure they are not in the sun. A place on the north of the house or in a shady area may be best. The pinwheel needs to be placed out in the open where the breeze or wind will blow on it. The rain gauge and the snow measuring stick also needs to be in the open for best measurement.

Once everything is in place take measurements daily. Check the rain gauge each morning. Check the temperature when it is at the hottest, about 4:00pm. The minimum/maximum thermometer is great for telling the highest and lowest temperature each day. Look at the pinwheel to see how strong the winds are, do they change during the day or evening? As you collect the information (or data), record it in your journal. Each day could have a piece of a page with all the information written out. Have fun with your weather station. A summer weekend isn’t complete until you fire up the grill, but flame-kissed steaks are just the start to an unforgettable meal that celebrates all the best of the season. To create the perfect main dish, start with high-quality protein, like Omaha Steaks’ Private Reserve Boneless New York Strips. CANDIED BACON 1 pound (1 package) Omaha Steaks Applewood Smoked Steak-Cut Bacon 1 tablespoon fresh ground black pepper 1 cup packed light brown sugar Heat oven to 375 F. Place wire rack on foil-lined baking sheet. Place strips of bacon on wire rack and sprinkle with black pepper. Lightly pat brown sugar on top of bacon in thin layer. Place baking sheet on center rack in oven and bake 25 minutes, or until brown sugar melts and bacon is crisp. Remove from oven and cool 10 minutes. Using tongs, transfer bacon to parchment-lined baking sheet and cool to room temperature. Store in airtight container up to 3 days at room temperature.

QUICK PICKLES 1/2 cup white vinegar 2 teaspoons sugar 1 teaspoon mustard seed 1 teaspoon salt 1 clove garlic, crushed 1/2 teaspoon red pepper flakes (optional) 1 teaspoon dried dill, chopped, or 2 tablespoons fresh dill leaves 1 bay leaf 4 cucumbers, cut into angled 1-inch slices Heat small saucepan over medium high heat. Add vinegar, sugar, mustard seed, salt, garlic and red pepper flakes, if desired; cook until mixture begins to simmer and sugar dissolves. Remove from heat. In heat-proof bowl, toss dill, bay leaf and sliced cucumbers. Pour simmering liquid over cucumbers and stir to evenly coat. Cool to room temperature or chill before serving. Note: Pickles may be made up to 3 days in advance. Refrigerate in covered non-reactive container.

DRY-BRINED NEW YORK STRIPS WITH GRILLED BROWN BUTTER BALSAMIC ONIONS Dry Brine: 4 tablespoons Kosher salt 1 tablespoon coarse ground pepper 4 (11-ounce) Omaha Steaks Private Reserve Boneless New York Strips, thawed Butter and Balsamic: 4 tablespoons salted butter 2 tablespoons balsamic vinegar 2 teaspoons fresh thyme Grilled Onions: 2 large sweet onions 4 wooden skewers, soaked 1 tablespoon olive oil To make dry brine: Combine salt and pepper; season steaks generously on all sides. Place steaks on elevated rack on baking sheet and refrigerate at least 1 hour or overnight. To make butter and balsamic: Heat small skillet to medium high heat. Add butter and cook until butter begins to brown and smell nutty. Remove from heat and add balsamic vinegar and thyme. Set aside.

CONNECTICUT-STYLE SHRIMP 4 tablespoons unsalted butter 2 tablespoons chives 1/4 teaspoon salt 1/8 teaspoon black pepper 12 large, cleaned, uncooked Omaha Steaks Wild Argentinian Red Shrimp Heat medium skillet to medium-high heat. Add butter; cook until melted. Add chives, salt, pepper and shrimp to pan. Cook 2 minutes, turn shrimp and cook 2 minutes, or until shrimp is opaque and cooked through. Remove from heat and serve.

To make grilled onions: Peel off outer layers of onions. Slice into 1/2inch slices. Lay onions on flat surface. Push skewers through centers of onions; two onion slices per skewer. Brush onions with olive oil and season with salt and pepper, to taste. To cook steaks and onions: Make two-zone fire on charcoal grill with coals on one side and no coals on the other. Place onions on cool side of grill; flip and rotate every 10 minutes until golden brown, approximately 25-30 minutes. Total time will depend on how hot coals are and how close onions are to fire. When onions are golden and tender, brush with brown butter balsamic mixture. On hot side of grill, during last 15 minutes of cook time for onions, cook steaks to desired temperature. When steaks are 5 F from desired temperature, remove from grill and let rest 5-10 minutes. Remove onions from grill. Carefully remove onions from skewers and place in serving dish.
