Firsts and Lasts
W
ith Fall activities, football and a new school year in full swing, it seems we’ve made our transition into a cooler and more peaceful atmosphere. Although activities haven’t necessarily subsided, we’ve made our way into a comfortable space of handling the reigns of student activities and are now face to face with the upcoming season of tradition and giving. As we look forward to the quality time with family and friends in the upcoming months we can’t help but look back at what a phenomenal season it has been. Sometimes it only takes thinking back on a year to see how far you’ve come and what developments and opportunities have presented themselves. Our lives have changed as the face of our family is in a constant state of change, raising children from the age of 4 all the way up to college students! With such a wide range of ages, we are in different “seasons” with each of them. But the common theme continues to be firsts and lasts…first days of pre-school, first Senior portraits, first middle school dances and last home game performances and proms. So many changes have come our way and each of these milestones is a blessing to our family. Our business is always in a constant state of growth and change. In an industry that crosses over several mediums, we do our very best to cover news, updates and community events that are beneficial. We’ve seen our way through the growth that surrounds us, the ribbon cuttings for new businesses, grand openings and economic livelihood. The most exciting part of that is that we too get to witness each milestone of growth, while raising kids right in the middle of it. Believe me when I tell you that there isn’t an aspect of raising children that Jason and I haven’t experienced on some level. One thing we’ve always been able to count on is our friends and our community. We look forward to the future firsts and lasts and are blessed by opportunity to make a difference in the lives of the children we’re raising, by giving them a front row seat and an example of what a loving community looks like. We have chosen our life’s work because we’re passionate about it, but we also do it for every other parent out there facing the same firsts and lasts, doing it right alongside of us. Celina Proud,

From The Desk of Rick DeMasters From quotes to poems, we are constantly reminded to be thankful during the month of November. The dictionary defines thankfulness as a “feeling or expression of gratitude.” From celebrating our veterans to gifting our local charities, this time of year reminds us all to help those in and around our community and is what funnels our passion to express our gratitude. It is especially moving when we witness our actions of gratitude in those of the students we serve. We are thankful for organizations like the Celina PTA, that work very hard to support our students and faculty through programs and incentives throughout the year. The first weekend of November, the PTA will be bringing back the tradition of Fall Festival to be held on the Celina and O’Dell Elementary campuses. This fun, fall activity will be held on Friday, November 2nd from 5:00pm 7:00pm. PTA members have been hard at work organizing this special event and hope that you will grab the family and enjoy the different activities that will be available that evening. The Celina PTA will also be hosting their first annual Reflections Fine Arts Program to be held during the third week of November. We are very excited to be able to host this national competition for our students to display their creativity. Next on the agenda will be the Celina High School Veterans Day celebration on November 8th. This is an event where gratitude overflows from those that have organized and sponsored this event to those that are our guests and to whom we give honor. Doors open at 8:00am, with breakfast served at 9:00am for veterans and their family members. The program starts promptly at 10:15am in the CHS auditorium. The Celina Band and Choir programs will perform and we have scheduled some special presentations that will make this day one to remember for all in attendance. On the athletics side, our Varsity Girls Cross Country Team will be traveling to Round Rock to compete in the State Cross Country Meet to be held on November 3rd, 2018, and the entourage will also include two of our Varsity Boys’ Team members as well. We wish them all good luck as they prepare for the State meet. Our CHS Basketball programs will start out running with numerous tournaments scheduled throughout the month. Coach Kristin Cole will head up the Varsity Girls program with help from Coach Sherry Ollison. Both of these ladies bring a wealth of knowledge and expertise to the game and we are very excited to see this program grow under their leadership. Last, but not least, the district will be closed from November 19th – 23rd for Thanksgiving Break. Thanksgiving is a time of togetherness and it is our hope that your break is filled with joyful times and relaxation among family and friends. To our families, students, faculty and community members, we are thankful for all that you do to make Celina ISD great! Safe Travels and Happy Thanksgiving to All!

Prep time: 20 minutes Cook time: 20 minutes Serves: 4 Nonstick cooking spray 1 package Bob Evans Macaroni and Cheese 1 package (10 ounces) frozen chopped spinach, thawed and drained 1 1/4 cups shredded Gouda cheese, divided 1 package Bob Evans Thick Sliced Hardwood Smoked Bacon, cooked and broken into pieces
1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 2 eggs, lightly beaten Heat oven to 400 F. Spray four ramekins with cooking spray. Heat macaroni and cheese according to package directions. Once cooked, stir in spinach, 1 cup cheese, bacon, salt and pepper. Let mixture stand 10-15 minutes to cool. Add eggs. Spoon evenly into ramekins. Sprinkle with remaining cheese. Bake 20 minutes, or until centers are set.
Sweet Potato Cookies
Prep time: 28-33 minutes Cook time: 10-12 minutes Serves: 36 3/4 cup vegetable shortening 3/4 cup brown sugar 1 large egg 1 cup Bob Evans Mashed Sweet Potatoes 2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon kosher salt 1 teaspoon pumpkin pie spice 1 cup butter, unsalted 3 cups powdered sugar 1/2 teaspoon maple extract chopped honey roasted pecans (optional) mini marshmallows (optional) Heat oven to 350 F.
In large bowl, using hand mixer or paddle attachment, cream shortening and brown sugar. Add egg and sweet potatoes; mix until combined. In small bowl, combine flour, baking soda, salt and pumpkin pie spice. With mixer on low speed, slowly add flour mixture to egg mixture until well mixed. Using small cookie scoop, drop rounds onto greased baking sheets. Bake 10-12 minutes, or until golden brown. Cool completely before frosting. In separate bowl, beat together butter, powdered sugar and maple extract until frosting is light and fluffy. Frost each cooled cookie with maple butter cream frosting. Sprinkle with pecans and mini marshmallows, if desired. Carefully toast marshmallows with culinary torch, if desired, while avoiding melting frosting.
Mini Hash Brown Casseroles
1 cup shredded cheddar cheese In skillet, cook sausage according to package directions. Heat oven to 350 F. Lightly grease two 12-cup muffin tins. In bowl, whisk eggs and milk. Add hash browns, butter, ham, black pepper and cheese; mix thoroughly. Fill muffin tins two-thirds full. Bake 27-30 minutes, or until toothpick or knife inserted in center comes out clean. Substitution: For healthier alternative, substitute 1 cup AllWhites liquid egg whites instead of eggs.
Prep time: 10 minutes Cook time: 30 minutes Serves: 24 1 pound Bob Evans Original Roll Sausage 4 large eggs 1/2 cup milk 1 package (20 ounces) Simply Potatoes Shredded Hash Browns 3 tablespoons butter, melted 1 cup ham, cubed 1/2 teaspoon black pepper
Bacon-Wrapped Jalapeno Poppers
Prep time: 30 minutes Cook time: 30 minutes Serves: 40 2 packages Bob Evans Thick Sliced Hardwood Smoked Bacon, slices cut in half 1 package Bob Evans White Cheddar Mashed Potatoes 1 package garlic herb cheese spread 20 jalapeno peppers, halved, seeded with membranes removed 1/4 cup brown sugar 1 teaspoon ground cayenne pepper Heat oven to 400 F. Set bacon out to thaw to room temperature so it is pliable. In mixing bowl, use rubber spatula to combine mashed potatoes and garlic herb cheese. Stir until incorporated. Spread 1 teaspoon mashed potato mixture in each jalapeno half; level each with butter knife or spatula. Wrap each jalapeno with bacon; use three half slices for large jalapenos or two halves for smaller sizes. Be sure bacon is wrapped sealing in mashed potato mixture tightly. In small mixing bowl, combine brown sugar and cayenne pepper. Generously sprinkle over bacon and pat gently to make it stick. Line cookie sheet with piece of parchment paper so sugar does not burn to pan. Bake until bacon reaches desired crispiness, around 25-35 minutes. Let peppers cool slightly before serving, about 5 minutes.
Perfect Holiday Potatoes Mashed potatoes are a staple on many holiday menus, but all that peeling and mashing can take hours. This year, save time by using refrigerated, ready-to-eat mashed potatoes, such as Bob Evans Original Mashed Potatoes, which taste just like homemade. n Add your family's special ingredient, like sage butter, and no one will

know they aren't homemade. Microwave the mashed potatoes just before dinner or throw them in a crockpot on low and pitch the packaging so no one knows you didn't make them ahead of time. Buy a couple extra and store them in the fridge in case you have unexpected holiday guests.

Grace Bridge is located in Celina and was founded on April 9, 2011. On that day, 40 volunteers utilized their resources to serve 110 local families. Since then, they have expanded into several initiatives, but remains a volunteer-based organization equipping neighbors to help neighbors. They seek to serve hope to those in the community who are in need of assistance. Their goal is not to simply distribute food and other material goods, but to develop lasting relationships that over time will encourage those who receive help to return and help others. The Food Bank is strategically focused on serving the “whole person” – striving to meet needs both physically and spiritually. While they do not require families to live within a particular area to receive assistance, their primary service area includes communities along the 380 Corridor in Collin and Denton Counties that are within a 30-mile radius of their Distribution Center in Celina. To more easily meet the needs of families outside of this area, they have formed partnerships with local churches and groups who facilitate “Limited Distribution” sites. Carter Morris, who serves as the President & CEO had this to say about the organization, “We are people caring for people, families serving families and companies impacting communities.” The Distribution Center, located at 319 W. Walnut, is open on the 1st and 3rd Saturdays of every month from 11:00am – 1:00pm for local families to participate in food distributions. They do not require any pre-paperwork or proof of qualification to receive assistance. At every distribution, they serve an average of 115 families and have a variety of volunteer opportunities. They are partnering with Lamar Bank for a canned food drive which is going on now through November 16th. One of the ways that the Food Bank is supported is through the Grace Bridge Resale Store. They provide high-quality, new and gently used clothing, shoes, accessories, and household goods at affordable prices for local families. They rely on donations to maintain quality store inventory. All profits are used to support other Grace Bridge Initiatives, primarily the Food Bank. They believe this is the most beneficial way to re-purpose donated items and serve the community. There are two locations – one in Celina and the other in Frisco. Niki Carbajal, Store Manager said, “It’s not about a hand out, it’s about a hand up.” Located on the historic square in downtown Celina, Grace Bridge Farms provides fresh, organic produce to local families who attend Grace Bridge Food Bank Distributions. In addition, Grace Bridge Farms provides opportunities for local families, businesses, and schools to get involved in community garden efforts. The goal is to train families to replicate this method of raised-bed gardening in their own backyards. Another resource that Grace Bridge is able to offer are free eye exams and low-cost prescription eyewear for local families in need. Thanks to their partnership with Lone Star Vision and Dr. Brantley, they house a full-service exam room in the Distribution Center. Since 2011, Grace Bridge has been blessed with more than 30,000 volunteer hours. If you would like to get involved with serving local families in need, they would love to have you join their team! In 2018, the two Habitat affiliates in Collin County merged to become Habitat for Humanity of Collin County which is part of a global, nonprofit housing organization operated on Christian principles. “We put God’s love into action by building homes and communities. We are dedicated to eliminating substandard housing locally and worldwide, believing everyone deserves a decent place to live. We encourage positive relationships throughout the community by advocating for fair housing policies and by providing training to help families improve their shelter conditions.” NCC Habitat was incorporated in 1992. They have enabled families throughout northern Collin County (Anna, Blue Ridge, Celina, Farmersville, Frisco, McKinney, Melissa, Princeton, Prosper and the rural areas) to achieve the dream of home ownership and dignity. With the help of partnerships, NCC Habitat has built over 100 new homes and repaired nearly 200 existing homes. Affordable Housing Programs provide strength, stability and self-reliance for low to moderate income families. The organization donated their 100th Home in December of 2015 right here on Oak Street in Celina. Since that time, NCC Habitat has added 2 more homes to our community as they celebrated the complete construction with a Double Wall Raising Ceremony in June of 2017. The Home Repair program, “A Brush with Kindness” helps low income families with exterior repairs including roof, siding, paint and general clean up. Many seniors and disabled have been served through this program. Internationally, NCC Habitat has built 48 homes in Mexico, Egypt, and Asia Tsunami & Honduras. Habitat operates a ReStore in McKinney that is open to the public Tuesday – Saturday and sells new and gently used building materials and furniture.

The modern world has many conveniences that most of us find absolutely necessary. It really doesn’t matter that these recent necessities were once luxuries reserved only for those living in the right places and who had the right financial means with which to support them. Today most people in modern America find the notion of living without utilities or central air conditioning simply impossible to consider. Any many homeowners find the appearance of air conditioning units and utility boxes disrupts the beauty and tranquility of their lawn and garden areas. The good news is that there are plenty of ways to disguise these objects that so terribly disrupt the flow and serenity of nature in your outdoor living area. Before you make any real attempts to hide these blemishes to your property you must carefully think and consider the fact that there will be times when these items must be accessed. In other words, anything that is used to hide them must not impair your ability to access them. There are some common solutions to this problem as well as some creative solutions, so you must ultimately choose the solution that works best for you.

Wood is a natural material and wooden fences with gates can be built around your visually unappealing landscaping necessities to hide them for the eyes of the world. made’ options at your local garden center. Most of these will be either plastic or wood but will look a good deal better than an ugly and unsightly piece of metal. Another thing to consider is the ground maintenance around these eyesores. Most of our designs for clients include a decorative gravel verses normal bedding plants, grass or groundcover that would require regular maintenance. Gravel tends to be neater and more functional with little to no maintenance. Question: Jimmie, I have only lived in Texas now about 5 months and own my first home. I used to garden with my dad when I was a kid and always found it to be a therapeutic source for me. I want to plant a few small trees with my kids that hopefully they can grow old with, too. I would really like a suggestion or two from a pro like yourself on what type of trees I
can plant that will live here and, if possible, have some nice fall colors of foliage. I know you are a busy guy so whenever you have a chance let me know. Some really good choices for you and your kids would be Red Oaks, Chinese Pistachio, Autumn Blaze Maple and October Glory Maples, Lacebark Elm and Cedar Elm. Also look into Crape Myrtles, Oklahoma Redbud, Vitex and Japanese Maples for Ornamental Anchors that can look incredible throughout different seasons of the year! Nandinas in general are multi-trunked. They are always meant to be a natural plant in your landscape. In order to maintain that natural look the appropriate way to prune them is once or twice a year, remove every 3rd or 4th trunk all the way down to the ground so you “naturally” thin the plant without butchering it. Also remember the leaves on any shrub is all it has to protect itself from a hard freeze so if you “chopped them down” you would leave yourself open to losing the plant entirely. And two other things, thank you for reading and don’t feel bad it took me years to learn all the varieties of all our different shrubs in our climate zone! Until next time… Happy Gardening!!

Teaching to Your Child’s Temperament By: Rosh Ramanujam
If you watch a roomful of young children for a while, you’ll start to see some very familiar personality types. There are active ones and quiet ones, happy ones and fussy ones, some who love to show off and others who prefer the sidelines. It simply reinforces that every child is an individual, with his or her own unique style when it comes to interacting with the world around them. They were born that way and it makes them the special person they are. That unique style is known as temperament. Characteristics of Temperament Behaviorists have long sought to figure out what makes up the recipe for temperament. In general, they’ve landed on at least nine characteristics that affect it. Among them are: Activity Level – the level of physical activity a child displays in their daily activities Approach and Withdrawal – the way the child responds to a new stimulus Adaptability – the degree of ease or difficulty in adapting to a new situation Intensity – the degree to which a child responds to a situation Mood – how the child mood (positive or negative) is reflected in words and behaviors Attention Span – the ability to concentrate without distraction Sensory Threshold – the amount of stimulation needed to get a response from the child
