Daddy’s Make the World Go ‘Round The beginning of summer ushers in many fun activities and memories, as well as a pretty important date for all the Daddy’s out there. You know what I’m talking about…Father’s Day! And while most of us don’t need a specific date to celebrate the most important man in our lives, June 21st is the designated date on the calendar this year. Don’t feel bad if this date is news to you…the celebration changes year-to-year. If you ever forget, just remember that it always falls on the third Sunday in June. Fathers are our leaders in faith, our supporters, our enforcers… they wear many hats and bear many responsibilities. They are their daughters’ first love and their sons’ first hero. The teach their children to play catch, how to ride a bike, how to fish and how to love the Lord. They’ve always got our backs, they are always there when we need them, and they teach us about perseverance and patience. They are the backbone of our families and they are our children’s biggest cheerleaders and influencers. And while I admit I may be a bit biased, I believe that Prosper is filled with some of the best Daddy’s on the planet! This year’s celebration may look a little bit different than year’s past with everything going on in the world, but we should still take the time to commemorate his day. If you can’t be together, maybe you can surprise him with a porch drop-off gift or even a meat delivery so he can grill up his favorite meal. Whatever you do, don’t stress about finding the perfect gift for him…most guys insist they don’t need anything. We’ve provided some fun gift ideas on page 10, or you can’t go wrong with the old stand-bys: a new tie, grill set, Best Dad coffee cup or a wallet. You may wonder how the first Father’s Day came to be…but it probably won’t surprise you that it was actually created by a woman. Back in 1909, a woman named Sonora Smart Dodd tried to establish an official equivalent to Mother’s Day for male parents. She went around to area businesses to gather support for her idea and on June 19, 1910, the state of Washington celebrated the first-ever Father’s Day. The event inspired President Woodrow Wilson and President Calvin Coolidge to urge Americans to acknowledge this day for Dad, but it still wasn’t an official holiday. During the Great Depression, there was a push by retailers to commercialize the holiday and when World War II began, people started to use Father’s Day as a way to pay respect to American troops. Finally, in 1972, President Richard Nixon signed a proclamation that declared Father’s Day as a national holiday. The first official celebration was on June 18, 1972. Happy Father’s Day to all the Daddy’s out there…thank you for everything you do for your children. And to my husband and father of our children…thank you for always being the light of our lives. Thank you for loving them with every breath in your body and thank you for loving me. The best gift you have ever given our girls is your unwavering love for their mother. We are blessed by you every day and can’t wait to celebrate you!!

Prosper ISD Athletics has announced their 2nd class to be inducted into the Hall of Honor. The district began the Hall of Honor in 2020 with five recognitions. The Hall of Honor is designed to recognize and celebrate those athletes, coaches, supporters and teams who have laid the foundation for what Prosper ISD Athletics is today. Prosper has seen insurmountable successes in the past few years with multiple individual and team State Championships contributing to winning the 5A UIL Lone Star Cup in 2018! The Hall of Honor committee is committed to inducting the best representatives of the district. After a nomination process, the nomination committee deliberates and chooses the honorees from four categories: Athletes, Coaches, Supporters, & Teams. The Class of 2021 includes: Bailey Belvis (Athlete) - Bailey graduated from Prosper ISD in 2009. Bailey was a UIL Cross Country State Champion in 2008 setting a State Record time of 11:10:24. Bailey ran track in the spring of 2008 finishing 2nd in the 800 Meters at the UIL State Meet with a time of 2:16:19 and also finished 4th in the 1600 meters with a time of 5:12:43. In 2009, she won the UIL State Championship at the State Track Meet in the 1600 meter race. Bailey went on to Missouri University on a track scholarship. While in attendance, she won several races and received several recognitions including All-Midwest Region and All Big 12 for Cross Country, All Big 12 for Indoor Track, All-Academic Honors, and First Team Academic All Big 12 for Cross Country. Kim Castleberry (Athlete) - Kim also graduated from Prosper ISD in 2009. Kim was active in both track and soccer. In 2008 she won the UIL State Championship in the 400m race. She set many school records in long jump, the 200, the 400, the 4x100 relay, and the 4x400 relay. She was named the Soccer Offensive player of the year in 2007. Her Senior year she was the #1 recruited soccer player after receiving two NSCAA All Americans Recognitions and two High School Parade All American Recognitions. Kim went on to earn full scholarships at both Texas A&M and TCU.
Erin Kauffman (Coach) - Coach Kauffman just finished her seventh year at Prosper High School as the Volleyball Coach and Assistant Campus Coordinator. Coach Kauffman was an Assistant volleyball coach at SFA State University for four years and then served as a Varsity Assistant at Lovejoy High School. Since starting at Prosper, she has coached the PHS Varsity Volleyball team to six District Championships, five Regional Tournament appearances, a State Runner-up and a 5A State Championship in 2017. Coach Kauffman has numerous coaching awards: 5 time District Coach of the Year, 2 time Dallas Morning News Coach of the Year and PISD Head Coach of the Year. She has been selected as an All Star coach by both TGCA & TAVC and was named the NFHS State Volleyball Coach of the Year in 2018. 2008 State Championship Football Team (Team) - In 2008, Prosper High School won the Class 3A, Division 1 State Championship with a 14-1 record on the season. Coached by Kent Scott with Team Captains of Hunter Nix, Cole Dafft, Ryan Carroll, Chase Petersen, and Drew Miller the team’s only loss was on Homecoming which proved to be the motivating factor to propel them all the way to the State Championship. The journey wasn’t an easy one with a double overtime thriller win against Abilene Wylie in Semi-finals and then being down 10-0 at the half of the State Championship game. The team went on to defeat La Vega 17-10 to win the State Championship.

Prosper ISD Celebrates the 2020 Graduates C
ongratulations Prosper High School Class of 2020! Y’all are tough… born into this world during the 9/11 era and graduating from high school during a worldwide pandemic. We understand that your Senior year didn’t end the way you had hoped. Some of you missed playing your favorite sport for the last time…you missed your Senior Walk, your Senior Prom, Senior Privilege Week, riding your bikes to school on the last day of your high school career, a traditional graduation ceremony at The Star and so, so much more. But here’s what you DIDN’T miss…you didn’t miss the love, pride and admiration of your entire town who was rooting for you and cheering you on from our living rooms. Prosper stepped up in so many ways to show you how special you are and how proud we are of the last class to graduate from Prosper ISD as a single high school district. Your senior year and your graduation may have looked very different the Class of 2019, but it was no less special. Our administration truly set the standard for the absolute BEST graduation ceremony possible during these crazy times.

The Class of 2020 celebrated their commencement ceremony on the evening of June 5, 2020 at Children’s Health Stadium. It was a beautiful night and the excitement from the students, family, faculty and administration could be felt throughout the entire town. As the crowd of socially distanced families gathered in the stands, a video of the graduate’s baby photos played on the jumbotron. The Board of Directors made their way to the stage just as the ceremony began with a flyover by vintage airplanes. Dr. Burdett, Prosper High School Principal, then took the stage to welcome the graduates. Senior Austin Mann sang the National Anthem, accompanied by blasts of fireworks. Dr. Burdett then introduced Salutatorian Trent Johnson, who was awarded a plaque by PISD Superintendent Dr. Drew Watkins. After Johnson’s speech, Dr. Burdett then recognized the Board of Trustees and the Top 10% of the graduating class. It was then Jack Robnett’s, Class of 2020 Valedictorian, turn to take the stage. His speech was filled with encouragement for his classmates and a plea to improve our communities and one other. As Robnett left the stage, the graduates each began to walk across the stage to receive their diplomas…something that they, nor their parents, thought would be possible just a few weeks prior.

Prospering Farm English Riding Lessons & Summer Day Camp Horseback Riding
A typical day is comprised of an english style lesson, horse grooming, arts & crafts, swimming & educational discussion regarding horse care, horsemanship and equipment. Ages 7-13 Beginners thru Advance Dr. Watkins then took the stage to congratulate the students and their families…he has known many of them since they began Kindergarten at Prosper ISD. He has sent them birthday letters every year, opened their car doors in carpool, cheered them on at games and competitions, encouraged, supported and loved them throughout their time at Prosper schools. So of course, his message to them was perfect, as it always seems to be: “This was certainly not what anyone scripted to finish out your senior year. I don’t have any pearls of wisdom to offer you to answer all of life’s questions. You will have your own unique challenges in the coming months and years of your life. I will just offer this…I encourage you to work to be slow to anger and quick to forgive and be kind to all in your path.” He then began a countdown that led to all lights out and a firework show that only Prosper ISD could pull off. As the lights returned, the celebration concluded with green and white streamers and confetti pouring from the sky. It was the perfect ending to a perfect pandemic graduation ceremony!

T
he idea of buying a new construction home can be so exciting! Who doesn’t go into those extraordinary model homes and dream of having a home finished out exactly as they have it expertly laid out? Most builders’ model homes are like a wonderland of what is possible. The builder has set the stage to draw you into that feeling that you could just bring your toothbrush and a few clothes and move right in. Haven’t we all been guilty of walking slowly through the model home taking in all the thoughtful details, everything down to the perfectly placed accent pillow. This wonderland is a nice place to be and for the right price, the builder might sell that model to you as is. But, for the vast majority of us, the steps necessary to get from the model ‘dream home’ to the reality of what our budget will allow involve an extensive list of details and decisions to be made. There is no denying that in the North Dallas area the new home construction business is booming. Recent market reports show that in the fourth quarter of 2019 builders in DFW had 8,888 new home starts, or an increase of 20.7 percent over the fourth quarter of the prior year. The data also indicates that for the year of 2019, there were 35,228 new

homes which were sold in DFW, an increase of 4.8 percent over 2018. This information illustrates that the growth of the new home construction market in DFW is currently considered balanced, with about a 2.5 to 3-month supply of inventory. Buying a home is one of the largest financial transactions of one’s life and it can be intimidating for anyone. It’s important for buyers to educate themselves to protect their equity. Buying a new construction home is an entirely different dynamic than buying a pre - existing home. You will be buying directly from a builder who has built the home with the sole purpose of selling it at a profit. This builder needs to move the new home so he can move on to his next project. In order to understand the best strategies for buying new construction you need to be able to put yourself in the shoes of the builder. While the builders Sales Professional is a wonderful resource and able to provide a great deal of information about the neighborhood, the home features and the building process it is important to understand that it is not their job to protect the interest of the buyer in the transaction.

Batting Cages This is another sports construction element we are seeing implemented into residential backyards. The higher end ones will stand up to the straightline winds and storms we frequently get verses the less expensive prefab ones on the market from the big box stores. We are now seeing custom colored artificial turf installed inside that designates the raised pitching mound area with state-of-the-art pitching machines, fully marked batters’ boxes, even a separate interior turf section with drop down netting that also allows someone to go in and drive golf balls inside it! You can actually train like the pros at home!
Fun, family fitness is the new trend. Parents are liking the fact they can get the kids out of their rooms or off the couch, put down that video game and get back to having quality family time. Many are encouraging their youth sports teams to now get that extra practice in before the next big game or tournament! Their backyard has become “the cool” place for the neighbors’ kids to hang out at. Athletic Courts Technology has advanced in these backyard courts also. Question: Jimmie, when exactly should I be feeding my landscaping? I have heard many different answers from the people at Home Depot, Lowes, and local nurseries. They also can’t seem to tell me what to feed with? Or how often. I have been reading your column for years and I cannot tell you how much I have learned over the years. Thank you again!!! – Melissa M. in Prosper Answer: Hi Melissa! Thank you for the kind words and I hope we run into to each other sometime so I can thank you for reading! Okay, down to your question. Best time to feed your landscaping is early spring and once again in early fall. Our plants are constantly taking nutrients from the soil so they can grow, bloom and generally be healthy and thrive. Therefore, we must put those nutrients back into the soil or it will become depleted over time and our plants will gradually decline. It is best to use a granular tree and shrub food available at most higher end nurseries that slowly releases Nitrogen into the soil over time. If you have Acidic plants then they need to be fed Acid type food. You can simply save a gallon milk jug, pour a cup of vinegar into it and fill rest of way with water and pour around root system of plants, another excellent source is coffee grounds for acidic plants. MEXICAN BEEF SLIDERS WITH JALAPENO SALSA AND AVOCADO CREAM Patties: 1 1/3 pounds lean New Zealand grass-fed ground beef 1 clove garlic, crushed 1 medium onion, grated or finely chopped 1 egg, lightly beaten 3/4 cup red kidney beans, rinsed and drained 2 tablespoons tomato paste 3 teaspoons dried oregano, chopped 2 teaspoons mild smoked paprika 2 teaspoons ground cumin 1 teaspoon ground coriander 1/2 cup Parmesan cheese, grated Salt and pepper, to taste olive oil
1/2 cup melted butter 1 cup Well•Pict Strawberries, rinsed, for garnish 1 cup Well•Pict Raspberries, rinsed, for garnish
Jalapeno Salsa: 1 cup cucumber, thinly sliced into long ribbons 3/4 cup fresh cilantro leaves, chopped 1 red onion, finely sliced 1/2 cup pickled jalapenos, finely chopped Salt and pepper, to taste olive oil lime juice Avocado Cream: 1 avocado, mashed 1/2 cup sour cream 1lime, juice and zest only Salt and pepper, to taste 8-12 slider buns, halved 2-3 cobs sweet corn, cooked and sliced into shards 8-12 small bamboo skewers To make patties: In bowl, combine beef, garlic, onion, egg, kidney beans, tomato paste, oregano, paprika, cumin, coriander, Parmesan cheese, salt, to taste, and pepper, to taste. Shape into 8-12 small patties. Cover and refrigerate 15 minutes. Heat grill or frying pan to medium heat. Brush patties with oil on both sides. Cook 2-3 minutes on each side, turning once to brown both sides evenly, until cooked through. To make Jalapeno Salsa: In bowl, combine cucumber, cilantro, onion and jalapenos; season with salt and pepper, to taste. Drizzle with olive oil and lime juice. To make Avocado Cream: In bowl, combine avocado, sour cream, lime juice and lime zest; season with salt and pepper, to taste. Spread Avocado Cream on bottom buns and place patties on top. Top patties with Jalapeno Salsa, corn and top buns. Press down gently and poke in skewers to secure sliders. In blender or food processor, mix graham crackers and melted butter to crumb consistency. Lightly grease two medium muffin pans and pack graham cracker mixture at bottom of each opening. Pour strawberry mixture over graham cracker mixture and chill until set. Gently pull tartlets from muffin tins and place on serving tray. Garnish with strawberries and raspberries. 2020 hasn’t exactly been what we expected, and our summer vacations may have to look a bit different this year. Even though it SEEMS like we’ve been on summer break for 3 months already, the reality is that Summer has just begun. As states begin to open back up and travel restrictions are lifted, many of us are gearing up for a fun family vacation…and with the continued uncertainty, most are looking for somewhere closer to home or within a decent driving distance. This month, we’re going to take you on a tour of Seaside, a quaint beachfront community nestled between Panama City Beach and Destin along Highway 30A…and only a short 11hour drive from the DFW area. In Seaside, you can literally walk or bike anywhere…there’s no need for a car. The narrow cobblestone streets are lined with charming beach cottages, white picket fences and quaint shops and storefronts. In the center of town there is a field that hosts a weekly farmer’s market, outdoor concerts and movies under the stars. Around the Town Square you’ll find amazing restaurants, quaint cafes, gourmet food trucks, adorable clothing boutiques, delicious ice cream shops and the most delightful book and record store. It’s the idyllic vacation life. Seaside is not like other commercialized beach towns. There are no skyscraper hotels or giant condominiums…you literally feel like you are living at the beach. The food choices are unique as well. Our favorite place to eat was Great Southern Café – it’s a must if you are anywhere near the area! Known for their “new-fashioned” southern cuisine, their menu is full of fresh produce from nearby farms and fresh seafood from the Gulf of Mexico. We also loved “Airstream Row”…a grouping of food trucks at the center of Seaside. Favorites include The Meltdown on 30A, featuring traditional and specialty grill cheese sandwiches; Frost Bites, serving shaved ice, homemade frozen custard and fresh squeezed lemonade and Wild Bill’s Beach Dogs, the best hot dogs on the beach!
