How to Raise a Healthy Eater at Every Stage of Childhood Daily food choices can have a profound impact on overall health and wellbeing. Not only do healthy dietary patterns help maintain good health, they also reduce the risk of chronic diseases throughout all stages of life. The United States Department of Agriculture’s Dietary Guidelines for Americans, 2020-2025, and nutrition experts agree it is vital to establish healthy eating habits early and maintain them throughout childhood. “Research shows toddlers who eat a wide variety of foods are more likely to carry those habits into adulthood, so it’s important to introduce and reinforce healthy eating habits from the time a child starts to eat solid foods,” said Courtney Hines, KinderCare Learning Centers’ registered dietitian. “In fact, the first two years of a child’s life are often referred to as ‘the golden window’ because this is when kids are most open to trying new foods and flavors. By encouraging variety and healthy eating early in life, parents and families can dramatically reduce picky eating habits many toddlers and children develop over time while also helping their children develop balanced relationships with food they’ll carry with them into adulthood.” Consider these tips and tricks to try at home with kids of all ages to build healthy eating habits and excitement around trying new foods.

Babies When babies are ready for solid foods, be sure to expose them to a wide variety of whole, unprocessed foods with varying flavors and textures. Start with soft foods like mashed potatoes, avocados, cooked rice and bananas until your children are ready for firmer solids.

Toddlers Toddlers who turns up their noses at veggies or fruit may be more openminded if they’re an active participant in mealtime prep. Ask your children to pick one new fruit or vegetable and agree that you’ll both taste it. Asking your children to describe the appearance, texture, taste and smell of the food can also be a fun way to build vocabulary.

Preschoolers Around the 2- or 3-year mark, children become interested in investigating and learning. Engage their natural curiosity in the world around them by planting a small vegetable, fruit or herb garden for your tiny chefs to tend to it can be as simple as a windowsill garden. Gardening helps children understand where healthy, nutritious foods come from. Plus, children are more likely to eat what they’ve grown, which means more fruit and veggies in their diets.

School-agers

The kitchen is chock-full of learning opportunities for all ages. Schoolagers can work on their math skills as they measure ingredients for recipes. “Cooking together also gives parents an opportunity to talk about nutrition in terms children can understand,” Hines said. “For example, carbohydrates, like bread, provide energy for our bodies and brains. When we eat carbohydrates, our bodies store them for later. That’s why we’re having whole-grain pancakes for breakfast, so you have the energy you need to fuel your brain and body all morning.”

Life Happens Fast Life moves quickly and at times it can feel as if we are swimming upstream. In the fast-paced world, we live in many times life is passing us by without us even blinking an eye. If we were to take a moment to reflect, we might just find the answers to why it feels as if we are swimming upstream. In the book Upstream by Dan Heath, he shares in the first chapter a public health parable (adapted from the original, which is commonly attributed to Irving Zola). The parable is the following: You and a friend are having a picnic by the side of a river. Suddenly you hear a shout from the direction of the water-a child is drowning. Without thinking, you both dive in, grab the child, and swim to shore. Before you can recover, you hear another child cry for help. You and your friend jump back into the river to rescue her as well. Then another struggling child drifts into sight…and another…and another. The two of you can barely keep up. Suddenly, you see your friend wading out of the water, seeming to leave you alone. “Where are you going?” you demand. Your friend answers, “I’m going upstream to tackle the guy who’s throwing all these kids in the water.” It is so easy to focus on responding, putting out fires, and handling emergencies. We take care of the problems but do not always seek out solutions on how to make improvements. For example, in our fast-growing community, we drive down one road and see no houses, just open land, and then within days a subdivision or business is beginning to take shape. Have we become comfortable with the scenery or are we just too busy to notice the changes in front of us? We are well underway in the second semester of the school year which is hard to believe but I challenge you to find ways to stop the cycle of swimming upstream. Our students in Prosper ISD are changing rapidly and our seniors at both Prosper High School and Rock Hill High School will be moving on to their next stage of life in the blink of an eye. The first-grader will soon become a fifth-grader, a middle schooler, and then a graduate. Life happens fast just like the water in a stream can move quickly. I encourage you to pause, look for the patterns, see solutions and be willing to wade out of the water to go find the guy who is throwing all these kids in the water. We Are Prosper, We Are One!

Community Library Hosts ‘Luck of the Irish’ Blood Drive Bloodmobiles to visit library on March 16 and 17 Donors who participate in the Prosper Community Library’s March blood drive won’t be required to wear a green item of clothing, dance an Irish jig, or carry a shamrock in their pocket, but they might benefit from a bit of the ‘luck of the Irish,’ according to drive coordinator Amy Shannon. Set for Tuesday, March 16 and St. Patrick’s Day, Wednesday, March 17, the blood drive will be conducted in conjunction with Carter BloodCare and will utilize the mobile blood donation units parked at the library, 200 S. Main St. in Prosper. Shannon, Library Administrative Assistant, says donors are encouraged to make appointments for their donations, allowing the Carter staff to ensure that appropriate social distancing is maintained within the mobile units. Donors may visit https://ww3.greatpartners.org/donor/schedules/drive_ schedule/122659 to make an appointment on March 16, and https://ww3. greatpartners.org/donor/schedules/drive_schedule/122660 to make appointments on March 17. Blood donations have been deemed safe by the Centers for Disease Control. Masks are required, and donors should be in good overall health when appearing for their donation. Carter BloodCare provides donors a mini-physical and is now testing blood donations for antibodies to the COVID-19 virus. Donors can thus determine whether or not they have been exposed to the virus. Appointments can be made as early as 7:35am and as late as 5:35pm on both days. In addition to earning points which can be redeemed for thank you gifts, donors will receive coupons good for food and drink items from participating McDonald’s restaurants and Dr. Pepper. The Prosper Community Library regularly hosts blood drives through Carter BloodCare and promotes them to their patrons, residents, and the general public. The importance of the two-day Prosper drive is enhanced because of the diminished collections and canceled drives due to the recent winter storm. The effects of the winter storm along with the lingering effects of the pandemic continue to hamper Carter BloodCare’s blood drive operations. The organization is asking eligible and healthy blood donors to schedule appointments and donate. These donations are important in rebuilding the critically low blood supply.

AVOIDING COMMON LANDSCAPING MISTAKES We live in a do-it-yourself culture. The upside to that reality is that many of us get tremendous opportunities to try our hands and new skills and to learn interesting things while saving money. The downside is that we sometimes trade expertise and quality for that experience and costeffectiveness. Landscaping is a perfect example of this. Everyone wants to take care of the job without calling the professionals, but their lack of expertise can create problems. Professional landscapers know the business inside and out. They understand composition; they know which plants will compliment others. They understand the soil, the elements and what things will actually compliment the design of your home. You might think you have a “great eye” and you may be a quick study. However, the average do-it-yourselfer is not an expert landscaper. As such, several common mistakes are repeated over and over again across the nation’s lawns. Let’s look at four common landscaping mistakes. By understanding the errors of others, you might be able to avoid doing the same things! Ruling with a Ruler: Errors of Linearity Many self-styled landscapers approach their projects as if the world functioned exclusively along the rigid lines of grid. The natural world, however, isn’t flat or square. It’s bumpy and curvy. It undulates and sways. Professionals understand that and they try to work within natural lines and to use the “imperfections” of nature to heighten aesthetic appeal. make everything square and straight. When everything is straightened, it tends to create an uninviting and severe atmosphere. Play with nature as much as you play against it. Neglecting the Front: Forgetting to Put your Face on Most of us prefer some degree of privacy. Thus, we tend to spend the bulk of our time in our backyards instead of in front of the house. As a result of that preference, we also tend to have much larger areas with which to work behind our house. Thus, it does make sense that most landscaping work will occur in the back. However, too many amateurs focus on the backyard to the near-exclusion of the front. There is no “harm” in that, per se, but it does represent a wasted opportunity to improve the value and attractiveness of your home. Make sure you plot a course of landscaping success in the front yard, too. Living in the Moment: Ignoring Future Developments Those shrubs you plan on planting right under the bay window will look great this year. And the next. After that, though, you had better plan on a weekly trimming. You have three feet of clearance between ground and window, and those cute little shrubs will grow ten feet high if not held in check. You get the idea, right? That’s just an example of a common problem experienced by do-ityourself landscapers. They aren’t forward thinking enough and that can cause problems. You need to understand your plants, how they will look now and how they will grow in the future. That kind of knowledge can help you create better look and can save you tons of work in the end.


It’s your Lawn: Neglecting the Rest of the Family A common amateur error is to design a landscaping plan without taking the usage patterns and desires of other family members into consideration. That wonderful winding path to the garden might cut right across the kids’ favorite place to play ball. That fivefoot retaining wall may create an attractive vista, but it may not be attractive to a potential buyer with three small children a few years from now. Consider what others will appreciate and don’t assume your amateur vision is perfect.

Typically, all Japanese Maples are considered to be strictly shade ornamental trees under the canopy of an older established tree. The exception would be on the east side of your house where you’re getting morning sunlight exposure only. Any location on your property where it’s getting full sun and you’re setting yourself up for some much burnt foliage!

Question: Jimmie, quick question for you. I have a large bed of English Ivy that has outlived its usefulness. It is climbing and attaching itself to anything and everything near it. What is the best way to get rid of it?? Thank you so much for your time!! – Susan P. in Prosper Answer: Hi Susan, at some point you will need to strip it away from walls, tree trunks and other supports. It is really easier to do that when it green and supple than to use a weed killer. Peel it off the vertical surfaces, then use a sharpened hoe at a time when soil is modestly dry to scrape as much of the planting as you can away. Rototill to prep area for your new planting, and rake to remove the rest of the stubble remaining. Broadleaf weed killers will kill the Ivy while it is actively growing in spring or summer but keep in mind there is a risk to harming adjacent plantings in that area. Set aside. Use rolling pin to thin out puff pastries. Cut each into nine squares. Line pastry squares in muffin cups, pressing bottoms down firmly and moving pastries up sides for edges to come up just over muffin tins. Fill each cup with 1 teaspoon cheese sauce. Crack one egg into each cup and sprinkle each with diced ham. Bake 10-15 minutes until eggs set. Sprinkle with chopped green onions.

Remove from pan and cover loosely with tinfoil to rest 5 minutes. Reduce heat to medium and add splash of oil. Add onion; cook 1 minute. Add red bell pepper and mushrooms; cook 1 minute. Add cumin, paprika and chili powder; stir through. When veggies are tender (about 2 minutes), add tomato and cook until soft. Season with salt and pepper, to taste. In large bowl, whisk eggs, milk and salt and pepper, to taste. Heat pan to medium heat and add splash of oil. Pour egg mixture into pan and cook, lifting and folding eggs until thickened and no visible liquid egg remains. Do not stir constantly. Lay tortillas on flat surface or plate. In center of tortilla, add cooked veggies and top with thinly sliced beef. Add handful of spinach, scrambled eggs, crumbled feta, cilantro and avocado. Fold bottom of tortilla and roll. Serve with lime wedges and hot sauce, if desired.

Prepare cookie sheet with paper towel to drain doughnuts once out of hot oil. In bowl, mix flour, 3/4 cup sugar, baking powder and salt. Add lemon zest, eggs, ricotta cheese and vanilla extract; mix until well combined. Use ice cream scoop to scoop small amounts dough into oil, 4-5 pieces at a time. Fry each batch until golden brown, about 7 minutes. Keep oil at or near 350 F; if oil is too hot, doughnuts will turn golden brown but centers may still be raw. Remove from oil and drain in paper towel. Repeat with remaining dough. While still hot, toss doughnuts with remaining sugar. To make lemon curd, if desired: In large bowl of stand mixer, cream butter and sugar until light and fluffy. Add eggs and egg yolks, one at a time. Add lemon zest, lemon juice and salt. Transfer mixture to saucepan and cook at low-medium heat until thick and creamy, stirring constantly. Remove from heat and let cool before serving with doughnuts.

A Hoppy Easter Cake Heat oven to 325 F. Warmer days at the start of spring mean Easter is almost here, and the big bunny himself will be hopping around in no time delivering goodies. This Easter, celebrate with your loved ones with a delicious and colorful Easter Bunny Butt Cake. It can bring smiles and laughter while putting everyone in a light, joyful mood. This cake is fun and bright with a fluffy, moist interior. Complete with chocolate candy eggs, shredded coconut and chocolate chips for little bunny toes, this recipe goes all out to paint a picture of the Easter bunny. This cake is worth every step. It’s delicious and as cute as can be, plus it’s perfect for dessert after a big Easter dinner. EASTER BUNNY BUTT CAKE Nonstick cooking spray 2 eggs, plus 4 egg whites, at room temperature 3/4 cup cream of coconut

Line muffin pan with four paper liners. Spray oven-safe glass bowl with nonstick cooking spray. In large bowl, whisk eggs, egg whites, cream of coconut, pineapple, coconut extract and vanilla extract until combined. In food processor, pulse flour, sugar, baking powder and salt until combined. Add 6 tablespoons butter. Pulse until combined. Add remaining butter. Pulse until coarse meal forms. In large mixing bowl, add coarse flour butter meal. Add half of egg mixture. Beat 1-2 minutes. Add remaining egg mixture; beat until combined. Fill each muffin cup 2/3 full. Bake 18-20 minutes, or until done. Cool completely. Pour remaining batter into prepared oven-safe bowl. Bake 1 hour, 40 minutes, or until done. Cool completely.

1/2 cup crushed pineapple, drained 2 teaspoons coconut extract 1 teaspoon vanilla extract 2 1/4 cups flour 1 cup sugar 2 teaspoons baking powder 1/2 teaspoon salt 12 tablespoons unsalted butter, at room temperature Buttercream Frosting: 3 cups powdered sugar 2 sticks unsalted butter, softened 3 tablespoons milk 1 teaspoon vanilla extract 1/2 teaspoon coconut extract 4 thin pretzel sticks 1 bag (10 ounces) sweetened shredded coconut 8 drops green food coloring

To make buttercream frosting: In large bowl, add powdered sugar and butter; beat until fluffy. Add milk, vanilla extract and coconut extract; beat until creamy. Turn bowl upside-down on cake stand until cake removes from bowl. If cake needs leveled, turn cake over and trim to flatten. Frost cake. Remove wrappers from cupcakes. Using two pretzel sticks, press into base of cupcakes and anchor to bottom rim of bowl cake to create bunny feet. Frost feet. Take third cupcake and cut muffin top off. Cut muffin top in half. Using one pretzel stick, anchor one muffin top half at bottom of full cupcake to form toes. Repeat with second muffin top half for other foot. Frost toes. Attach final cupcake with remaining pretzel stick to butt area of cake to make tail. Frost tail. Apply 1 1/2 cups shredded coconut all over cake. Press chocolate candy melts into bottoms of bunny feet to resemble foot pads. Add chocolate chips to resemble pads for toes. Place remaining coconut in plastic bag. Add green food coloring. Toss in bag until coconut is colored. Spread around base of cake for grass. Decorate grass with chocolate eggs.

Trending Vacation Habits in 2021 For many travelers itching to go on vacation, 2021 offers plenty of opportunities to get out and go. Whether it’s heading to an outdoor escape or simply cozying up with loved ones while enjoying beautiful surroundings, vacation is on the minds of many. To identify which trends will shape travel in the coming months, the 2021 Vrbo Trend Report includes data from its global vacation rental marketplace along with survey data from family travelers around the world. When planning your next vacation, keep these trends in mind: Finding Fresh Air Heading to the great outdoors for adventure has long been a popular form of travel, and that desire will likely reach new heights in 2021. After a year of isolation and uncertainty, many families are seeking the serenity and escape of the wilderness. According to the survey, four of the top five emerging destinations for 2021 are near lakes, rivers or streams where families can camp, hike and fish. At the top of the list, Emory, Texas is a mere 1-hour drive from Dallas where Lake Fork offers a top fishing spot for catching largemouth bass, and the area is also home to the A.C. Typically nestled near mountainsides, forests and lakes, cabins and chalets offer open spaces so families can leave behind the hustle and bustle of everyday life while being surrounded by natural beauty, which has led to an increase in demand for Vrbo cabins by nearly 25% and chalets by almost 20% year-over-year. Going All Out After a year of canceled trips, families may have found a new appreciation for travel and have a sense of urgency to finally take that dream vacation. In fact, according to the survey, families who were forced to cancel a 2020 vacation are ready for a redo.
