Tips for Carving the Perfect Pumpkin Halloween is fast approaching, and along with that, comes the fun your family can enjoy with decorating for the season. Regardless of how big you go with your spooky decorations, the one tried and true piece that you just can’t leave out is a jack-o-lantern on your front porch! Whether this is your first or twentieth time in doing this activity with your children, here are a few tips to make the activity fun and easy! Pick the Right Pumpkin Not all pumpkins are created equal, especially when it comes to carving jack-o-lanterns. A solid pumpkin with no bruising or soft spots will result in a solid jack-o-lantern. Look for one with a long stem, as that will make it easier to take the lid on and off after you’ve carved it. Also look for a flat bottom so that he stays put! Another fun idea to add character to your spooky friend is to select a pumpkin that already has lots of character. An elongated pumpkin is perfect for a laughing face, while a short, fat pumpkin is better for a goofy and toothy grin. Bumps on the skin can also turn into a crooked nose or a wart on his chin! Hats Off Removing the top of your pumpkin is an integral part of carving the perfect pumpkin. Cut at an angle so that you can easily pop the top back on without it falling into the abyss of your jack-o-lantern.

Remove the Pulp If you have an ice cream scoop, this is the time to shine! Otherwise, a big ol’ spoon will do the trick to remove the seeds and stringy flesh from inside of the pumpkin. Get as much pulp out as you can so that the pumpkin will be easy and clean to carve. Also, don’t forget to keep the seeds for roasting later! For a healthy snack later, boil them in salted water for 10 minutes, then toast them in the over with a little bit of olive oil until they are golden brown. Map Out your Face Design Good planning perfects your pumpkin. Roughly sketch the face of your dreams on your pumpkin before digging in. Use a water-based temporary felt-tip marker for your initial sketching. Draw out the eyes and nose and overdo the features. A large flat nose will show out better than a small one. Play with it until you are satisfied with the design, then go back over the sketch with a permanent marker. You can also print a template out and stick it on the pumpkin so that you know where to cut it. Try to use as many straight lines as you can, since those tend to be easier and cleaner to cut. Be Safe When lighting up your spooky friend, try using several tealight candles rather than a large one so that your pumpkin can shine safely all night. The tealights work best for the traditional spooky flickering look. However, if you choose to go with the traditional larger candle, be sure to cut a small hole in the top for drafting! Make sure there isn’t anything flammable above your candle when you put the pumpkin into place. Another idea is to use battery operated tealights to eliminate the risk of setting fire to anything.

Prosper in the Early Years Back in 2016, we began a section on the history of Prosper, written by the late Mr. Bill Hays, who served as our town historian and authored two books. As our town grows at an astronomical pace, we feel it essential to bring this historical section back in order to remind us of our roots. We’re starting off with the Settle family. This is an interesting story about one of the early settlers that arrived in the Prosper area in the 1870’s. Before the Civil War there were not many families in the western part of Collin County. A few families had settled in the area but most of the settlement began after the Civil War. Nathan Chris (Chris) and John Settle were born in Kentucky. Chris was born May 14, 1857, and John was born January 31, 1855. Both of their parents died in 1870. A man by the name of John Allen then purchased the farm in Kentucky and had a brother named Billy Allen who had moved to Frisco, Texas. John and Chris wanted to come to Texas to live but had to convince their brother and sisters (there were a total of seven children in the family) to let them come to Texas at such an early age. They had an aunt and uncle that were coming to Texas from Kentucky and wanted to come with them. The couple’s name was Wesley Goodnight, who was kin to Charles Goodnight. Charles had settled in the panhandle of Texas and became well known for his ranches and cattle. The Wesley Goodnight’s were coming to Texas to settle in the Rock Hill area. The family decided to let the two young teenagers travel to Texas via covered wagon. John wrote in one of his letters that is was a sad day when he left his three sisters, brother, grandmother and an aunt and uncle that he would never see again. They left Bowling Green, Kentucky and traveled to Memphis, Tennessee. From there they got on a steamboat and went five miles up the Mississippi River to land in Arkansas. They had two covered wagons and an extra horse. They travelled over very rough and muddy roads, forged many creeks and crossed on many ferryboats. They survived on fish and squirrel. They arrived in Little Rock, Arkansas and then the corner of Oklahoma, crossing the Red River into Texas near Dekalb. John saw his first Indian in Oklahoma just before he crossed the Red River. They came through Paris, Bonham, Honey Grove and then to McKinney. They came through McKinney and finally to the flats of Western Collin County. The prairie chickens were plentiful, and they would sit in their wagons and kill all they needed to eat. John and Chris stayed with their Uncle Offie Button who had come to Denton County earlier. They left Kentucky on September 23, 1871, and arrived in Collin County on November 15, 1871. John and Chris stayed with the Button family for a couple of years and worked for them on the farm. Chris said he made $160 the first year and $175 the second. With the money they had saved they purchased a Yolk of Oxen and then decided to purchase some land northwest of the current town of Prosper. Prosper hadn’t been settled yet, so here were these two 10 | WeAreProsper.com
young kids that were buying land without a house on it, or even roads leading to it. The Lakes of Prosper development is currently located on some of the Settle Land. John and Chris travelled 40 miles to Dallas in a wagon to get the lumber to build their house. They built only one room and lived in it for over a year. The stove was a small box. Chris said he had a pan and lid and put it inside the stove to bake bread. They sat on homemade stools and slept on straw mattresses and bedsteads that Chris made. In 1879, John married Fina (Viney) Cline, so they had to add a 2nd room to the house. They received all their supplies from Jefferson, Texas and used Ox teams to pull the wagons. Jefferson was close to the Louisiana border and probably took at least a week to get there. They would take their cotton to Jefferson and bring back groceries and supplies. Jefferson was a port and boats would come up the river and deliver needed supplies. Chris said that some families had five or six yolk of oxen and drove them to Jefferson and back all through the spring and summer. Mr. Howe had built a house near Chris and John Settle. They had no church so Mr. Howe let them use one room at his house to worship. This house is still standing today, just south of Prosper Trail on the west side of Coleman. It is known as the McElhannon House. The McElhannon’s had a mercantile store and a grocery store in Prosper. Before there was a Richland School Mr. Howe also let them use this room for a school. L.L. Naugle, who was living in Rock Hill at the time, preached his first sermon in this room. L.L. became a pastor in Rock Hill and when the Methodist Church moved to Prosper in 1902, he became the pastor. His brother, Benjamin Naugle, became postmaster of Prosper in 1896, while the Post Office was in Richland, and continued until 1942, for a total of 46 years. Chris became the superintendent of the Sunday School and continued for years. Next month we will discuss more of the hardships that the settlers faced as they migrated into the western part of Collin County.

Ghostly Graveyard Cake 1 box chocolate cake mix 10 chocolate creme cookies 1 cup black melting chips 1 cup red melting chips 1 cup heavy whipping cream 3 cans buttercream icing 1 purple food coloring 1 black food coloring Skull sprinkles Tombstones and bones candies Prepare cake mix according to package instructions in three 6-inch baking pans. Once baked, allow to completely cool outside of pans. In zip-top bag, using rolling pin, crush chocolate creme cookies; set aside. In separate small bowls, add black melting chips and red melting chips. In microwave, heat heavy whipping cream 1 1/2 minutes. Pour half the mixture into one bowl of chips and other half into other bowl of chips. Stir until chips are completely melted; set aside. After cakes cool, on cake board, add small amount of buttercream icing so cake sticks. Using bread knife, level cakes. Place one cake on cake board and add thin layer of icing on top. Place second layer of cake on top and add thin layer of icing on top. Place final layer of cake on top and add thin layer of icing on top. Add thin layer of icing to entire cake. Freeze 15 minutes. In small bowl, mix two parts purple food coloring to one part black food coloring. Ice cake with deep purple icing. Using grooved scraper, scrape along sides of cake. Using angled spatula, smooth top of cake. Add skull sprinkles around edges of cake. Using piping bag with small opening at tip, drip black drip mixture around top edges of cake. Repeat using red drip mixture. Add chocolate creme cookie crumbs to top of cake. Add tombstones and bone sprinkles to top of cake. 14 | WeAreProsper.com

The Haunted Side of Boston
Boston, Massachusetts is one of the oldest cities in America, dating back almost 400 years. There are underground tunnels, unmarked graves, historic public execution sites, and the occasional grave robbery. The city is drenched in history, leading to many haunted tales. The ghost stories about the area are local legend and lore, weaving together researched history and haunted accounts. Boston’s darker side of history includes a city troubled with war, murderers, and strife…it’s really no surprise that it remains one of the most haunted cities in America. Colonial Boston only scratches the surface of its darker side. There are burial grounds nearly 400 years old, one of which has the largest number of unmarked gravesites and was the site of the biggest graverobbing scandal in New England’s history. King’s Chapel, the city’s oldest burying ground, is within the confines of Downtown Boston and is the final resting place of many of Boston’s first inhabitants and heroes of the Revolutionary War. Sir Isaac Johnson established King’s Chapel and was the first person to be buried there. Many have heard the haunted tales of the man buried alive and of the woman whose gravesite was dug too small, so they decapitated her and placed her head between her legs to fit her into the ground. The lack of respect for the dead in these accounts is said to be the cause of many paranormal occurrences in the cemetery. Along with the creepy burial grounds, there are other sites rumored to be haunted. One of the most famous of which is The Omni Parker House – Boston’s most haunted hotel. Founded by Harvey Parker in 1855, it is situated in the heart of downtown along the Freedom Trail. Paranormal activities have been reported, such as sightings of a bearded man dressed in colonial era attire on the 9th and 10th floors of the hotel and in Room 1012, orbs of light hovering down the 10th floor hallways and then mysteriously vanishing, strange shadows throughout Room 303 and bathtub water that randomly turns on and off by itself, the elevator that randomly stops on the 3rd floor when no buttons have been pressed 18 | WeAreProsper.com
and the sounds of rocking chairs creaking late at night when none are present. Could these activities be the works of Harvey’s ghost or that of Charlotte Cushman, who died on the 3rd floor in 1876? Only the bravest are willing to stay the night at one of the most haunted and historic hotels in New England. Other historical landmarks with sinister reputations include the Granary Burying Ground, located on Tremont Street. Famed patriots such as Samuel Adams, Paul Revere, and John Hancock are buried there, along with the family of Benjamin Franklin and the victims of the Boston Massacre. Copp’s Hill Burying Ground, the second oldest in Boston, was founded in 1659 and named after shoemaker William Copp. There are many spirits rumored to roam in Copp’s Hill and are said to be the souls of those who are not able to rest peacefully.
