Spring is just around the corner, and what better time than the present to highlight the Parks of Prosper? We are truly blessed to live in a community where the Town gives so much back to the residents, and imparts such careful consideration to the development of our parks and open spaces. However, it isn’t just the Town that gives to the community…last year Prosper showed the rest of the Metroplex just how incredible our community spirit was with Windmill Playground. It was a lofty goal; there was plenty of hard work to go around, and far too many individual efforts at hand to recognize each of them. We are proud to have been a part of it, proud of our children for their fundraising efforts, and proud of our neighbors who came together to leave such a colossal legacy for our children and future Prosper residents. There are many exciting changes happening at Live & Prosper Magazine! We have updated our website, and included a “Prosper Today – News & Events” section. The field stretches out in emerald perfection, the scent of the freshly mown grass sweet as a stroll in the country. The groundskeepers roll the baselines straight and true, capturing in that broad sweep of green the season’s endless possibilities. For fans of the great game of baseball, nothing matches the hope of spring, when no one languishes in last place and everybody can dream of the World Series. On opening day, the vendors seem friendlier, the hot dogs hotter, the popcorn extra crunchy. No matter what the weather—already summer-like in Arlington or Phoenix and still winter in Cleveland and Boston—the anticipation leading up to that first game makes every fan a school kid again. But baseball is a lot like life, filled with ups and downs, victories and defeats. And in the relentless heat of summer, springtime hopes for a World Series seem as likely as a sudden cold snap. The world has a way of trampling our hopes, sweeping them away like a walkoff homer in the bottom of the ninth. One moment we’re up, confident, counting down to the final strike. And then a hanging curveball, the sharp crack of the bat and a ball that soars deep into the nighttime sky, carrying our hopes with it. No wonder the Bible speaks of building on the solid rock foundation of faith in Jesus Christ. The world might tug at us as we follow the narrow road to salvation, but faith in God sustains far more than any human hope could. Wouldn’t it be great if Christians could borrow a page from the book of baseball and savor the hopeful joy that fans find this time of year, that they could share the Good News of Jesus casually around the water cooler or with friends and family and look forward with a fan’s fervor to the great day of salvation? Just think of it—all of God’s children gathered together, swept up in eternal joy, carrying their gloves, wearing their caps, all heading toward that celestial stadium shining gold and silver in the heavenly light. When that game is over, we’ll talk about the next one, and the one after that, savoring an endless season when everyone’s a winner. Because heaven is a place filled with all of God’s greatest creations. And with all those wonderful things, well, you know there has to be baseball. March of 2013 is National Nutrition Month. Although we all have learned about nutrition ever since grade school, our fast-paced lifestyle generally does not lend itself to healthy eating choices. Unfortunately as we reach adulthood, usually less time is spent preparing food or choosing healthy meals. Instead, we develop habits of eating fast food or snacks that have lots of calories but are without essential vitamins and minerals. Family Physicians value discussing nutrition with their patients starting from the initial office visit, as good nutrition is the foundation of a healthy lifestyle, the prevention of many diseases, and maintaining a healthy weight.

A frequent question for doctors is “How should I change my diet to eat healthier?” Here are few simple tips to keep in mind: Always eat three meals per day. Many people who skip breakfast find themselves overeating at lunch or dinner. If you habitually skip breakfast, make a habit of consuming a small portion of fortified cereal, fruit, oatmeal, milk, or orange juice in the morning. You will have more energy and your caloric needs for lunch or dinner will be less. The cereals and orange juice contain folate, an important nutrient for childbearing females for fetal development. Consume enough calories to have adequate energy to function in your daily activities, yet avoid too many “empty calories”. Foods to eat include fresh fruits, vegetables, beans, rice, nuts, fish, lean meats, and dairy, as well as certain breads and cereals. Fruits and vegetables are the foundation of a nutritious diet. Five or more daily servings of fruits and vegetables are recommended. Consuming fruits and vegetables may reduce your risk of heart disease, stroke, and possibly certain types of cancers. Fruits, vegetables, beans, nuts, breads and cereals all contain fiber. A high fiber diet (at least 20-35 grams per day) is beneficial to regulate bowel function, and may reduce your risk of colon cancer, heart disease, and stroke. Equally important foods contain calcium and vitamin D, including fortified milk and cereals, green leafy vegetables, milk, cheese, almonds, fish, and eggs. Foods to avoid include foods high in sugar and saturated fat, including red meat, baked goods,

pastries, candies, butter, and margarine. Also limit your total daily intake of foods high in salt content, like canned soups, A Comprehensive Approach boxed rice and noodle mixes, sauces, to Family Medicine dressings, condiments, pre-made frozen meals, deli meats, hot dogs, smoked, cured, or pickled foods, and restaurant meals. When cooking, choose the healthier cooking oils like olive oil and canola oil which contain unsaturated fats. Soft drinks are commonplace in our diet and ideally should be eliminated from your diet. If you drink several soft drinks per day, try switching to diet soda first, then gradually cut down on your daily intake of soft drinks and drink more water to replace the soft drinks. Be sure to drink at least 8-10 eight ounce glasses of water per day, and possibly more if you are exercising regularly. Patients that consume alcohol should limit intake to less than one drink per day for women and less than two drinks per day for men. By choosing nutrient-rich foods for your daily meals, you will reduce hunger cravings in between meals. A well-balanced, nutritious diet is the foundation of healthy living and disease prevention. Dermatologists do a lot of things, but in my opinion, the most important service we provide is the total skin exam (TSE). If you have any of the following risk factors for skin cancer, you should have a regular scheduled TSE. - You have had a skin cancer previously - You have had at least one significant sunburn growing up - You grew up in a sunny climate - You have more than 50 moles on your entire body - You use(d) tanning beds, especially if it was before age 30 - You have or had lots of sun exposure (golf, tennis, soccer, boating, gardening)

- A close family member had skin cancer (especially melanoma) As you can see, most people could benefit from having a TSE. When you have your TSE, make sure that your medical provider looks over the entire skin surface. Anything less than this complete exam is not advised, including recommendations from our governing body, the American Academy of Dermatology. This may seem unusual or unnecessary to some folks, but keep in mind that melanoma, a common and deadly skin cancer, can occur anywhere on the skin, including places that never get sun exposure. And many other skin cancers or potentially dangerous growths can hide in plain sight on your skin, if you are not well trained what to look for. The first time or two, at least, your dermatology provider should also provide you with much information during the exam. This would include why we do the exam, the importance and technique of the self skin exam, the sources of ultraviolet radiation, ramifications of exposure to UVR, and means to minimize exposure to it. A brief discussion of the three major skin cancers may be appropriate as well. Questions you have should be answered satisfactorily. It’s a lot to cover! Impossible to do in 5-10 minutes - plan on 15-20 with the provider. Biopsies may be needed at the time of the visit also. Ultimately, after taking into consideration your family and personal history a recommendation will be made as to the frequency for the TSE. Dermatologists do a lot of things, but a well done total skin exam is the most important. Please strongly consider it.

Eagles Landing Park Eagles Landing Park is located on the west side of Rucker Elementary, off of Craig Street. This facility includes a lighted baseball field, a softball field, a t-ball field, a lighted multi-purpose field, portable restrooms, a basketball court and walking trail. Folsom Park Folsom Park is located at the southeast corner of Somerville Drive and White River Drive, within the Lakes of La Cima subdivision. The facility includes a lighted soccer field, a walking trail, playground and a pond. Pecan Grove Park Pecan Grove Park is located at the northwest and southwest corners of La Cima Boulevard and Amistad Drive, within the Lakes of La Cima subdivision. This facility includes a pond, a playground, a creek, picnic tables, park benches, open playing fields, and hike & bike trails. Frontier Park Frontier Park is located east of Prosper High School with access off the south side of Frontier Parkway (1551 W. Frontier Parkway). The facility includes two lighted soccer fields, 9 non-lighted soccer fields, three lighted baseball fields, two lighted softball fields, two restroom/concession structures, two sand volleyball courts, a walking trail, a pond. Recent improvements include Windmill Playground, a pavilion structure, additional restrooms, and a splashground.

Boyer Park Boyer Park is located on the northeast corner of First St. and Church St., west of the Town Development Services office. The facility is a passive park with two lanai structures, benches, a drinking fountain, children’s handprint tiles, and a small lighted fountain for children that is activated by a button on a column of the northern lanai structure. Town Lake Park Located on the east side of Prosper, Town Lake Park offers a 27acre stocked lake, all-weather hike and bike trails, and picnic areas. Canoe or kayak the open waters or winding creeks of one of the first city parks in Prosper. Whitley Place Pavilion Pond Located between Wilson Creek Trail and Whitley Place Drive, this park offers Rainbow Trout fishing in the winter and scenic pavilion and bridge.

The Eagle’s Nest We all know that our families are PROSPER PROUD, and now is our chance to show the rest of North Texas! Please mark your calendars to attend PROSPER ISD NIGHT with the Frisco RoughRiders on Sunday, April 28th at 4:00pm. Tickets are only $17, and a portion of each ticket goes to support the Prosper Open Foundation. PISD will be performing the National Anthem, and All-You-Can-Eat nachos, brats, hot dogs and Dr. Pepper drinks will be served from 3:00pm – 5:30pm. We will have a special Group Seating Section so that you may sit with your classmates and friends while enjoying the game. You will also receive a limited edition RoughRiders baseball hat and game program. Players will be available for autographs before the game, and students will have the chance to run the bases after the game. Please contact your school campus’ secretary for an order form or for additional information. The deadline to order tickets is March 22, 2013. Sharing the Easter Season with Children By Jody Capehart

Easter is the most important celebration of our faith; it is the very essence of what makes us Christian. Therefore, it is important that we find meaningful ways to celebrate its significance with our children in order to build a deeper level of understanding as they mature in their walk with the Lord. When my children were young, we began making “Holy Week Baskets” at home to celebrate Easter. We began to gather items that represented events from Holy Week. As we added each item, we would talk about it, look up the scriptures, and weave them together into the rich tapestry of Holy Week. I noticed how my children’s interest and knowledge grew and deepened as they became engaged in this interactive learning process each year. As head of school, we began to make Holy Week Baskets at school. Later as minister to children, we made them at church. My children became my “Happy Helpers,” and during the month before Holy Week, we would gather the items, organize them, sort jelly beans by colors for the Jelly Bean Prayer, and prepare items so hundreds of children could create Holy Week Baskets. Sundays would find us taking around wagons over-flowing with items for little fingers to touch, and later teach others about the significance of what happened each day from Palm Sunday to Easter Sunday. It became our Easter tradition…as a family…in our school… and in our church. I saw children, parents, and teachers get excited each year and ask, “Are we going to make Holy Week Baskets this year?” They make lovely centerpieces for you to give to Grandparents and other people in your family, especially those who may not know the Lord. It’s a joy for children to have the opportunity to explain each item in the basket, much to the amazement of adults who have no idea what the Resurrection is all about. Some may assume Easter is just about bunnies. Those who have heard about Jesus might not understand the depth and glory of the Resurrection story. There is no better way to

share the Gospel than through this Holy Week-Resurrection Basket! Making a Holy Week Basket Start with an empty Easter basket. Add lots of grass to make a lovely, meaningful centerpiece. I would vary the items that go in the basket depending upon the ages of my children. For example, I would not put in a nail for younger children. I would add more items each year as they got older and had the developmental ability to understand abstract concepts, such as the curtain in the temple torn in half. As you take each item out, teach your children about the significance of each. Look up the scripture together as a family. Items may include: * Donkey and/or palm branch to represent Palm Sunday * 1” piece of towel: washing of feet; symbol of service * Unleavened bread and communion cup: to represent the Passover and Last Supper * Silver coins to represent Judas’s betrayal (I used play money from the Dollar Store) * Cross: made with popsicle sticks * Nail: (only with older children please) * Rock: placed over the tomb where Jesus was buried * Scroll with a mini-gospel such as 1 Corinthians 15: 3-4, or John 3:16 (type the verse, copy, cut into strips, glue popsicle sticks on either side, roll each side to the center and you have a scroll) * 2” black cloth: world turned dark when Jesus was on the cross * 2” purple cloth: temple curtain torn in half when Jesus died * 2” linen cloth: shroud to wrap Jesus’ body * Grass: New life when you believe in Jesus * Cotton ball: Jesus will return through the clouds to gather all those who believe in Him (share the Gospel!)

Parents, may I encourage you to take time to find an activity that teaches the profound message of Easter and one you can build upon each year as your children grow older. You may want to bring out your Holy Week Basket from the previous year and review it with your children. A word to the wise: children love repetition when they are young. As they get older, they may begin to become cynical and say “I already know that...” and not want to participate. Remember, this is a good time to invite them to be the helper and/or leader with their younger siblings. Or if they are the youngest, I simply say that since the truth of this activity is so important to our faith, it is worth hearing it again. You may suggest that we might learn something new this year as we explore it together. I know I do each time I read the gospels! These meaningful memories become beautiful threads in the tapestry of our children’s spiritual hearts. These windows of opportunities are worth every minute of the investment of our time and energy, as they reap rich dividends… for eternity.

In Good Taste Southern Fried Chicken

3 eggs 1/2 cup milk 2 cups self-rising flour 1 teaspoon each of pepper, paprika, salt and garlic powder 1 (1 to 2½ pound) chicken, cut into pieces Peanut Oil 1. In a medium size bowl, beat the eggs and milk. In another bowl, combine the flour, pepper, paprika, salt and garlic powder. Dip the chicken in the egg mixture, and then heavily coat with the flour mixture. 2. Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil. 3. Fry the chicken in the oil until brown and crisp. It should take dark meat around 13-14 minutes, and white meat around 8-10 minutes.

Picnic Potato Salad

2 pounds new red potatoes, cubed 4 hard boiled eggs, chopped 1 pound bacon 1 onion, finely chopped 1 stalk celery, finely chopped 2 cups mayonnaise Salt and pepper to taste 1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool. 2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. 3. In a large bowl, combine potatoes, eggs, bacon, onion and celery. Add mayonnaise, salt and pepper to taste. Chill for an hour before serving.
