The turkey needs to thaw, so get that going first. Your pie needs apples and the potatoes need pealing. Oh, and what about that centerpiece? It isn’t going to make itself. While you’re at it, you might as well decorate the house. After the meal is complete, take it down and start all over because Christmas is just a few weeks away. I really hope November and December are a joyful holiday season in your home, but more than likely, this season will be overwhelmed by lists upon lists of things that need to happen.
Presence This holiday season, I pray we will all make ourselves attentive to those sacred moments that are nothing less than gifts from God. Playing with our children. Listening to our parents. A long walk together. A lingering embrace. Hands held in prayer.
I have been thinking recently about Jesus’ visit with Mary and Martha (Lk 10:38-42). Mary sits at Jesus’ feet taking advantage of every sacred moment she has with him while her sister frantically tends to her lists. When Martha insists her sister is a bad hostess, Jesus replies “you are worried and upset about many things, but few things are needed... Mary has chosen what is better, and it will not be taken away from her.”

Diabetes is a chronic

Winterizing Your Home By Tiffany Smith
Fall has definitely arrived in North Texas! I love this season for many reasons, including the cooler temperatures, falling leaves, and neighborhood porches adorned with pumpkins and mums! The fall season is also a great time to start preparing your home for winter. Here are five tips to help you prepare your home for the coming months: Furnace Inspection: You can have an HVAC professional inspect your home’s furnace to be sure that your system is clean and in good repair for somewhere between $50-$150. This inspection will also measure any Carbon Monoxide leakage. The EPA recommends that this be done annually to prevent deadly buildup of Carbon Monoxide. While getting a furnace inspection will actually help maintain the life of your furnace and help lower your heating bills, this step towards winterizing your home is less about money and more about safety. Install Smoke and Carbon Monoxide Detectors: The City of Prosper requires smoke detectors and carbon monoxide detectors be installed near your fireplace, furnace, and water heater. Since you will probably be lighting the fireplace and turning up the heater, this is a great time of year to either install or test these detectors. Get the Fireplace Ready: Fireplaces provide both warmth and a warm ambiance on those cold winter days. Before the cold weather arrives, be sure your fireplace is safe to use. Inspect the damper for proper opening and closing, call a chimney sweep to remove soot and creosote, and be sure your firewood is stored in a dry place away from the exterior of your home.
Wash the Windows: When the windows are clean and free of debris, this is the best time to check for cracks and damages to the caulking. You should improve the caulking and weather stripping as necessary to prevent cold air from seeping in. Prepare Landscaping: Winterizing your yard now can save time and money in the Spring. Fall is the best time to use a herbicide or remove weeds by hand and fertilize the grass. You will also need to trim trees or any branches hanging too close to the house. Ask a gardener when your trees should be pruned to prevent winter injury. There are many local providers to help you accomplish these tasks around your home, so let’s keep Prosper thriving by using the skilled professionals in our own backyard!

Thanksgiving Turducken A Three Bird Royal Roast Recipe courtesy of Paula Deen
What is a Turducken, you ask? Only the most scrumptious poultry dish ever! Begin with a chicken, stuffed into a duck, which is then stuffed into a turkey. The turducken is quickly becoming a popular Thanksgiving recipe. Each slice contains delicious portions of chicken, duck and turkey, with cornbread stuffing in between the layers. While time consuming to prepare, it is not difficult, and the finished result is an amazing show-stopper! Poultry needed:
Prepare your Cornbread Dressing: Cornbread: •
1 cup self rising cornmeal
•
1/2 cup self-rising flour
•
3/4 cup buttermilk
•
2 eggs
•
2 tablespoons vegetable oil
•
18 to 21-pound turkey, skin intact and boned except for drumsticks
•
3 to 4-pound duck, boned
Dressing:
•
3 to 4-pound chicken, boned
•
7 slices white bread, dried in warm oven
Begin with your brine:
•
Cornbread
•
1 cup kosher salt
•
1 sleeve saltine crackers
•
1 cup brown sugar
•
2 cups chopped celery
•
1 gallon water
•
1 large onion, chopped
Preheat oven to 350 degrees F.
•
8 tablespoons butter
•
7 cups chicken stock
•
1 teaspoon salt
To make the cornbread, combine all ingredients and pour into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.
Prepare your House Seasoning:
•
1/2 teaspoon freshly ground black pepper
•
1 cup salt
•
1 teaspoon dried sage
•
1/4 cup black pepper
•
1 tablespoon poultry seasoning
•
1/4 cup garlic powder
•
5 eggs, beaten
Mix salt and sugar with the water. Brine is ready when the mixture is completely dissolved. If the water is heated to quicken the process, make sure it is cooled to room temperature before placing meat in. Refrigerate the 3 birds overnight in the brine.

To make the dressing, crumble dried white bread slices, cornbread and crackers. Mix together and set aside. Saute chopped celery and onion in butter until transparent, approximately 5 to 10 minutes. Pour over corn bread mixture. Add stock, mix well and add salt, pepper, sage, and poultry seasoning. Add beaten eggs and mix well. Follow instructions to stuff birds.
Preheat roaster to 500 degrees F.
Begin trussing up the turkey at the neck. Insert metal skewer about 1/2-inch from the edge and up through the other side. Run butcher's twine between skin and skewer and tighten to draw both sides together. Continue down to legs. With every other skewer, draw together the duck and chicken skin. Tie together turkey legs to resemble standard turkey. Dust turkey skin with paprika.
Lay turkey skin side down on a flat surface. Dust turkey with House Seasoning and add 1/4-inch layer of cornbread dressing. Lay duck skin side down on top of dressing. Dust duck with House Seasoning and add 1/4-inch layer of dressing. Repeat with the chicken.
Roast turducken for 15 minutes. Then turn the roaster down to 225 degrees F to finish, approximately 3 hours. Remove turducken from roaster once the internal temperature in the chicken reaches 155 degrees F. Let rest for at least 20 minutes before carving.
Once your preparation work is complete, it’s time to assemble your Turducken! Keep all of your poultry refrigerated until you are ready to use it, and to avoid food borne illness from contaminated stuffing, do not assemble the Royal Roast until you are ready to bake it.
Cut across the middle of the breast completely through. Plate thin slices containing turkey, duck and chicken. Add your favorite traditional Thanksgiving sides, and indulge. Paired with a Pinot Noir, your turducken is sure to be your new Thanksgiving centerpiece! The Pinot Noir’s style is typically a lighter to medium bodied, fruit-forward red wine. Pinot Noir is red wine for white wine lovers. It has all of the cherry/berry/herb flavors that you associate with red wine, but because of its high acidity and low alcohol, it feels like white wine. A perfect food wine for almost everything that’s not overly bold flavored.

Prestonwood Baptist Church loves being a part of this burgeoning community. For the past six years, the North Campus has been honored to be “a church to call home” for hundreds of families in the U.S. Highway 380 Corridor. It’s a relationship that grows stronger and greater each year—so much so that the church recently doubled its ministry space to meet the needs of its members and those not yet there. Prestonwood Baptist Church has just opened an additional 75,000 square feet of ministry space to accommodate incredible growth and potential for more at the North Campus on Prosper Trail. “One of the things that this new building project has done is create an amazing level of excitement both in the body of our church and the outlying communities,” said Campus Pastor Marc Rylander. “Wherever I go, people ask about what’s happening. It reminds us that, although we get to enjoy this new building expansion as a church family, there are people who are already talking about it and will be a part of it in the future.” The building provides additional classrooms for children and adults, a full-sized gymnasium that doubles as youth worship space, a welcome center, bookstore and more. “We know that these walls and buildings are just buildings,” said Pastor Jack Graham at the building dedication this fall. “But they are buildings dedicated to the glory of God and for the work of Jesus Christ. So we pray that every time you walk on this campus, you will sense that something is different, that God is working and the presence of the Holy Spirit is moving and active in this place through His people.”

On Tuesdays and Thursdays, more than 200 children attend Christian Learning Center (the mother’s day out program), and Wednesday night activities, featuring events for every member of the family, draw some 700 people weekly. “My children anxiously awaited the new children’s area, and my daughter couldn’t wait to invite friends and show them how awesome our Children’s Ministry is,” said member Farrah Cox. “This expansion means we can continue to share the Good News of Jesus to more people than ever before.” Tyra Damm is a writer with the Communications Ministry at Prestonwood Baptist Church. The Eagle’s Nest Prosper ISD Selected as one of the 23 School Districts in the High Performing Schools Consortium Prosper ISD was named by TEA as one of the 23 districts in the state representing 1,200+ public school districts and charter schools to participate in the Texas High Performing Schools Consortium. The Consortium will come together in order to help develop a plan for innovative, next generation learning standards, assessments, and accountability. The Consortium will make recommendations in four key areas: Digital learning - Engagement of students in digital learning, including the use of electronic textbooks and instructional materials and courses offered through the Texas Virtual School Network. Learning standards - Standards that students must master to be successful in a competitive postsecondary environment.
Multiple assessments - Various methods of measuring student progress to keep students, parents and schools informed and the actions consortium participants are taking to improve learning. Local control - Ways in which reliance on local input and decision-making enable communities and parents to be involved in the important decision regarding the education of their children. The Consortium’s recommendations will then be presented to the Commissioner of Education, Michael Williams, representatives of the governor’s office, legislative leaders and the Texas Education Agency. Prosper ISD along with many other districts across the state applied to be a part of this Consortium. The selection process was rigorous and further honors the innovative work being done throughout all campuses in Prosper ISD. According to Dr. Watkins, Prosper ISD Superintendent, “Although our charge is to study and develop a plan that will serve all Texas students, we are thankful and very proud that Prosper ISD has been selected and will be directly represented in this Consortium that will hopefully be instrumental in evaluating student learning and redesigning state assessments.” TEA to hold first Consortium meeting with selected districts next month.
The first annual Wildlife Outdoor Expo, hosted by First Baptist Church Prosper, welcomed 5 sponsors, 35 vendors, and over 800 people! El Dorado Chevrolet sponsored a Duck Call Competition, the Casting Competition was sponsored by Tommy Graham Allstate and run by the UNT Fishing Team, and kids fished the afternoon away thanks to PondMedics! The highlight of the event was listening to Jase Robertson, of A&E's Duck Dynasty, speak. Jase shared his life story and talked about how Jesus Christ is his Savior. Today, parents are greatly concerned with giving their young children the greatest head start possible in learning to read. Many children entering kindergarten are already beyond their ABC’s. In fact, many are walking in the classroom door as a reader and/or legible writer. If your child is not there yet, do not panic. Below are some basic literacy activities that will enrich a child’s foundation in learning to read and write. Letter Recognition: Upper & Lowercase. Identifying Letters and Sounds. Before students can read, they must associate sounds with the correct letter. This is the basis of phonics and is the foundation that all students need. Phonemic Awareness: This marks the ability to recognize the individual sounds in words. Phonemic Awareness is a good predictor of later reading success or difficulty. A – apple/a/, B – barn /b/. Letter Factory by Leap Frog is an excellent DVD video for Letter/Sound Recognition. Vowel Sounds: Learn short vowels first.
Word Play: Build basic words with letter magnets. P – I – G. Using a few letter magnets, ask your child to recognize and tap the beginning sound, middle sound and ending sound. Rhyme: A love of reading begins with rhymes. Research has shown that familiarity with nursery rhymes helps children to develop pre-reading skills, the first step in becoming successful readers. Book Awareness: Enjoy cuddling up with a terrific children’s book and read aloud with your child every day. Use his finger under each word as your read aloud to help encourage the awareness of how to read. He’ll be watching your finger skate across the page as you read left-to-right and top-to-bottom, encouraging reading readiness skills. Writing: Writing on lap sized white boards with slender dry erase markers is a fun way to begin writing letters, short 3-letter words, and eventually building up to emergent sentence writing. For example, write the alphabet in all uppercase letters, then all lowercase letters. You can also write numbers 1 – 10 or 1 – 20. If she makes a mistake, the eraser is fun to use and is much less frustrating than a traditional pencil with eraser. Enjoy this special time of developing early literacy skills with your children. You may have never taken a puff of one cigarette. It doesn’t matter. Despite health and age, if you have lungs, you can get lung cancer. November is National Lung Cancer Awareness Month. Become familiar with symptoms, facts, and alarming statistics. Many people don’t experience a cough at all. They have neck and shoulder pain. Who knew this could be lung cancer? Each year approximately 220,000 people are diagnosed with lung cancer and more than 157,000 die from the disease. Lung cancer kills more people than breast, colon and prostate cancer combined, yet it remains the least funded cancer because of the attached stigma. People still believe you have to smoke to get lung cancer; however, almost 80% of new diagnoses are people who never smoked or quit long ago.
The 16% survival rate after five years of diagnosis hasn’t changed much since the 70’s. The new rate of lung cancer cases over the past 33 years has decreased by 22% for men, while it has risen by 106% for women. With the same recognition and support that breast cancer and prostate cancer receive, we could make a huge difference in research, screenings and treatments. Every May, the annual Free to Breathe 5K/10K event takes place in Plano. Let’s work together as a community to create change by raising awareness and funding. For every 1 person who doesn’t survive breast cancer, $18,000 is donated to research. For every 1 person who doesn’t survive lung cancer, about $1800 is donated to research. Let’s change that.
