Dont Blink
Flashback to 1997…I was in my early 20s and thought I was so grown up, knew so much about the world and could do just about anything. My life was about to change…I was about to become a mother and I thought I was ready! Little did I know exactly how much that perfect little baby boy would change my outlook on the world and on myself. I knew the second they handed him to me – my life held a different meaning…I felt a love I’d never felt…I was a brand new person…I was a Mommy!! Those first few years with him were a combination of sleepless nights, first smiles, crying fits, slobbery kisses, first steps, independence, new words and pushing boundaries. Every day was something new, and although it was exhausting, I always went to sleep happy…that little blond haired, blue-eyed boy meant the world to me! It seemed like some days lasted FOR-EVER, but the years flew by. Next came school, baseball, football and wrestling…and not necessarily in that order! Sports were his thing, and oh, how I loved to watch him compete! He was special, everyone said it…a natural athlete. He was going to do something big someday! But to me, he was still that sweet little baby who wouldn’t sleep unless he was laying his head on my chest. Fast forward to August 2015…that little blond cutie entered his first day of Senior year – where had the last 17½ years gone? How was it possible that my baby was beginning the year of the “lasts”?? His last first day of high school…his last Homecoming…his last varsity football game…his last Prom…his last varsity baseball game…his “last” last day of school!! That sweet little blue-eyed boy, who I swear just yesterday was 5 years old, graduated from high school a few weeks ago. I can hardly believe it…I blinked and he grew up. In 2 short months he’ll be heading off to college to play baseball and further his education. And so will begin the cycle of sleepless nights and crying fits – only this time it’ll be me, ha!! I’m so proud of that boy – he was my first true love and taught me more about myself than anyone ever could. Thank you God for making me his Mommy! For all of the parents of Prosper High School Seniors who will be graduating on June 4th – we wish you the best…we wish you a wonderful season of celebrating your babies who were, just yesterday, 5 years old too! To the Class of 2016 – Congratulations! Know that this is just the beginning of the rest of your life! Enjoy the next steps, make good choices and get out there and leave your mark on the world. Make your parents proud – you’ve already made your school and your town proud. And don’t forget to check back in every once in a while…we’ll be here waiting to share in your successes. #weareprosper #weareone

Let’s Stay True to Our Good Health Pledge!
’ve tried to personally thank as many people as possible for helping Prosper win the IT’S TIME TEXAS Community Challenge. Competing against cities and towns of our similar size, we proved to be the healthiest. It was a great accomplishment that took the effort of a lot of people, churches, businesses and organizations. If I have not yet thanked you in person, please accept this expression of gratitude. The challenge was designed to encourage communities to maintain a healthy lifestyle as well as create and maintain good nutrition and exercise habits. Prosper residents proved to be up to the challenge. We won because residents took the challenge to heart. In addition to a $1,200 grant for school health initiatives, we were awarded a trophy and a banner.
on other programs that will target our growing active adult population as well. Our parks offer lots of opportunities for team sports in collaboration with local and area leagues. The Prosper Youth Sports Commission works closely with our Parks and Recreation staff in putting on athletic programs that attract many of our young people. And, if enough people express an interest, adult sports leagues like soccer and flag football can be formed. The staff is always willing to listen and assist.

But we can’t rest on our laurels. In order for us to continue to be the healthiest small town in Texas, we all need to maintain our good wellness habits. We have to remember to exercise, keep our weight down and eat right. And, I’m talking about all of us, from the youngest to the oldest among us. A good quality of life begins with good health, so, in essence, we can continue to win every day.
To help us stay true to our good health pledge, the Town’s excellent Parks and Recreation Department offers a variety of fun and beneficial programs for most everyone. And, while we do not yet have a recreation center, that has not stopped the staff from coming up with innovative ways to help us maintain our exercise regimens. Through third-party arrangements and handshake agreements with the Prosper ISD, Parks and Recreation offers exercise programs for kids, adolescents, teens, new moms, and adult men and women. They’re working

At the same time, Prosper’s trails system is perfect for walking, jogging, running and hiking. During our centennial year, Parks and Recreation came up with the 100-mile challenge. Many residents took up that challenge and some even surpassed the 100 miles substantially. The challenge has been renamed The Mayor’s Fitness Force and is becoming an annual event.
I encourage you to visit www.prosperparksandrec.org and look for something that suits your interest. Then, devote some time and energy to it. If you have an idea or interest that is not yet part of our program, drop a line to Parks and Recreation Manager Will Mitchell at william_mitchell@ prospertx.gov or Recreation Coordinator Julie Shivers at julie_shivers@ prospertx.gov. This is the perfect time to commit to health and wellness since the summer programs are getting underway. I hope you’ll join me in helping keep Prosper healthy and fit.

DR. MANJU PANDEY: THE ROAD TO PROSPER HOW ADVERSE LIVING CONDITIONS HELPED PRODUCE ONE OF PROSPER’S PREMIER FAMILY PRACTITIONERS Manju Pandey, M.D., was born and raised in Nepal - a small and underdeveloped country, landlocked between India and China. Throughout her adolescence, she was exposed to inadequate healthcare conditions that regularly forced individuals to travel significant distances to receive proper medical care. She realized early on that all people, regardless of social class or age, deserved easily accessible medical attention when they needed it most. These conditions and the desire to help others helped forge her life’s path of becoming a doctor.
With the full support and dedication of her family, Dr. Pandey pursued her dream to practice medicine and studied at Nepal Medical College. Once she received her medical degree, it was then that she decided to move to the United States to seek out more advanced medical training. She completed her residency in Family Medicine at the University of Minnesota. At that point, she met her husband – whom she’d known in Nepal but had grown up in the United States – and together, they decided to move to Texas. Once her foothold as a physician within 12

the state was established, it was then that Dr. Pandey chose to align with Methodist McKinney Hospital and her path lead to Prosper and Prosper Family Medicine. Now, in the medical field for over 15 years, she remains dedicated as ever to helping her community receive medical care when it’s needed the most. Yet, she takes a different approach to family medicine. For Dr. Pandey, it’s not about the quantity of patients she sees but more so the quality of care she delivers.

Prosper in t he Early Years The Settle Homestead
O
n May 14, I attended the annual Collin County Preservation Award Program held at the Craig-Heard Building in McKinney. It was hosted by the Collin County Historical Society, Collin County Judge Keith Self and the Collin County Commissioners Court. Other representatives from Prosper were Pamela and Eric Nishimoto, Betty Hughes, Rebecca Hunter and Betty Stewart. Various awards were presented to individuals, Heritage Associations and Museums for their participation in preserving the past History and Heritage of Collin County. There were also four people who told stories about individuals who played an important part in the settlement of Collin County and the hardships they faced during the early years of Collin County. As I was enjoying the program and storytelling, I thought it would be a good idea to talk about the early life in Prosper and surrounding areas. This month I am writing about the Settle family. This is an interesting story about one of the early settlers that arrived in the Prosper area in the 1870’s. Before the Civil War there were not many families in the western part of Collin County. A few families had settled in the area but most of the settlement began after the Civil War. Nathan Chris (Chris) and John Settle were born in Kentucky. Chris was born May 14, 1857 and John was born January 31, 1855. Both of their parents died in 1870. A man by the name of

John Allen then purchased the farm in Kentucky and had a brother named Billy Allen who had moved to Frisco, Texas. John and Chris wanted to come to Texas to live but had to convince their brother and sisters (there were a total of seven children in the family) to let them come to Texas at such an early age. They had an aunt and uncle that were coming to Texas from Kentucky and wanted to come with them. The couple’s name was Wesley Goodnight, who was kin to Charles Goodnight. Charles had settled in the panhandle of Texas and became well known for his ranches and cattle. The Wesley Goodnight’s were coming to Texas to settle in the Rock Hill area. The family decided to let the two young teenagers travel to Texas via covered wagon. John wrote in one of his letters that is was a sad day when he left his three sisters, brother, grandmother and an aunt and uncle that he would never see again. They left Bowling Green, Kentucky and traveled to Memphis, Tennessee. From there they got on a steamboat and went five miles up the Mississippi River to land in Arkansas. They had two covered wagons and an extra horse. They travelled over very rough and muddy roads, forged many creeks and crossed on many ferryboats. They survived on fish and squirrel. They arrived in Little Rock, Arkansas and then the corner of Oklahoma, crossing the Red River into Texas near Dekalb. John saw his first Indian in Oklahoma just before he crossed the Red River. They came through Paris, Bonham, Honey Grove and then to McKinney. They
came through McKinney and finally to the flats of Western Collin County. The prairie chickens were plentiful and they would sit in their wagons and kill all they needed to eat. John and Chris stayed with their Uncle Offie Button who had come to Denton County earlier. They left Kentucky on September 23, 1871 and arrived in Collin County on November 15, 1871. John and Chris stayed with the Button family for a couple of years and worked for them on the farm. Chris said he made $160 the first year and $175 the second. With the money they had saved they purchased a Yolk of Oxen and then decided to purchase some land northwest of the current town of Prosper. Prosper hadn’t been settled yet, so here were these two young kids that were buying land without a house on it, or even roads leading to it. The Lakes of Prosper development is currently located on some of the Settle Land. John and Chris travelled 40 miles to Dallas in a wagon to get the lumber to build their house. They built only one room and lived in it for over a year. The stove was a small box. Chris said he had a pan and lid and put it inside the stove to bake bread. They sat on homemade stools and slept on straw mattresses and bedsteads that Chris made. In 1879, John married Fina (Viney) Cline, so they had to add a 2nd room to the house. They received all their supplies from Jefferson, Texas and used Ox teams to pull the wagons. Jefferson was close to the Louisiana border and probably took at least a week to get there. They would take their cotton to Jefferson and bring back groceries and supplies. Jefferson was a port and boats would come up the river and deliver needed supplies. Chris said that some families had five or six yolk of oxen and drove them to Jefferson and back all through the spring and summer. Mr. Howe had built a house near Chris and John Settle. They had no church so Mr. Howe let them use one room at his house to worship. This house is still standing today, just south of Prosper Trail on the west side of Coleman. It is known as the McElhannon House. The McElhannon’s had a mercantile store and a grocery store in Prosper. Before there was a Richland School Mr. Howe also let them use this room for a school. L.L. Naugle, who was living in Rock Hill at the time, preached his first sermon in this room. L.L. became a pastor in Rock Hill and when the Methodist Church moved to Prosper in 1902, he became the pastor. His brother, Benjamin Naugle, became postmaster of Prosper in 1896, while the Post Office was in Richland, and continued until 1942, for a total of 46 years. Chris became the superintendent of the Sunday School and continued for years. Next month we will discuss more of the hardships that the settlers faced as they migrated into the western part of Collin County.

f the surge in barbecue and smoking competitions across the country is any indication, grilling has become an art form. This Father’s Day, grab dad and gather around the grill or try a new technique that’s rising in popularity – smoking – to create a masterpiece meal – and plenty of memories – together.

Some pit masters consider their equipment as vital an ingredient as the meat or flavorings they choose. Preparation varies from one recipe to the next, but one constant is the importance of maintaining a steady temperature. As you prepare your charcoal, be conscious of where you’ll place any wood chips or other flavor enhancers for maximum impact.
Start with style
Slow and steady
The first step is deciding how you’d like to prepare your meat. Consider stepping up your game by smoking your meat. Smoking is a popular choice because it infuses flavor through out the meat, while extended cook times at low temperatures make it extra tender. Another advantage is the chance to create a wide range of unique flavors using wet and dry rubs, as well as seasoned wood chips and planks.
Choose your cut
Virtually any meat can be smoked, but the most popular cuts of meat to smoke are brisket, ribs, pork shoulder or turkey, all of which are typ ically large in size. Ancho Chile Rubbed Smoked Beef Brisket Total time: 13-16 hours 1 Whole Omaha Steaks Brisket for smoking 2 cups white vinegar 2/3 cup yellow mustard 3/4 cup Omaha Steaks Ancho Chile Rub 4 cups Ancho Chile Smoking Spritzer, divided (see separate recipe) 8 cups apple or cherry wood chips, soaked in water
Remove brisket from bag and rinse with white vinegar then rinse with water. Dry completely using paper towels. Slather brisket generously with yellow mustard. Rub generously with ancho chile rub and inject with 1 cup Ancho Chile Smoking Spritzer. Prepare smoker using 1 chimney of pure lump charcoal fully lit and one chimney of pure lump charcoal unlit. Make sure water pan is full and adjust vents until smoker maintains a temperature between 225 and 250 F. Place brisket on smoker fat side up and brush smoking spritzer over top. Every hour, check smoker temp, squirt with smoking spritzer and add handful of wood chips. After 3 hours, flip brisket fat side down and squirt with spritzer. After 6 hours, flip brisket fat side up. Wrap heavy duty foil around the last 3-4 inches of brisket tip to prevent it from drying out. Restock water pan and add lump charcoal as needed. Adjust vents until temperature is between 225 and 250 F. Beginning at 8 hours, check internal temperature every hour and apply spritzer and wood chips as needed. Between 11-13 hours, when internal temperature is between 195 and 200 F, if fork slides easily into brisket, it is done. Let brisket rest for 1-2 hours before slicing and serving.

This seems like common sense, but most of us are never taught what proper fit means. Here’s the rule of thumb to follow: make sure items fit close to your body, but aren’t tight. Pieces that are too tight or oversized will actually make you look bigger than you are. Living a Legacy When Jesus chose a word to describe God and His relationship with Him, He chose the word father. What an amazing compliment to men. He was saying that a father exemplifies God’s characteristics of loving, providing for, and protecting His children. He has given us His Spirit. In the same way, we can influence the lives of our children through giving ourselves to them and letting them see the character of Christ in us. Fathers, we have the awesome privilege and responsibility to leave a legacy of faith by guiding and growing our families closer to Christ. Psalm 78:5–7 provides an excellent picture of our duty as fathers to leave a rich spiritual legacy: He established a testimony in Jacob, and appointed a law in Israel, which He commanded our fathers, that they should make them known to their children; that the generation to come might know them, even the children that should be born; who should arise and tell them to their children, that they might set their hope in God, and not forget the works of God, but keep His commandments. But, fathers, before we can leave a legacy, we must live it. We must strive to live every moment of our lives in a Christ like fashion with what the Bible calls the end or goal in mind. It isn’t about what we leave behind when we’re gone. We are to look forward and upward, because we have a living faith and we serve a risen, living Savior. If we live the legacy of our faith today, we can make sure we hand off the baton of faith and commitment to Christ to our children and our children’s children. If you want to leave a legacy that lasts, teach them, train them, talk to them, give them a spiritual heritage. They don’t need the stocks and bonds. They don’t need the lands and the portfolios. They don’t need the bank accounts. They may want it, but they don’t need it. What they need is you … and the faith of the Lord Jesus Christ. Our job description as fathers is to teach our children to put their faith and trust in God; never forgetting the great works of God, and to obey Him by keeping His commandments. It is truly a privilege to be a parent. It is the highest occupation in life to raise Godly children, to lead our children to Christ and then to help them, assist them along the way in discovering God’s plan, God’s purpose, His will for their lives. As we celebrate Father’s Day, let us be reminded of the greatest sacrifice ever made by a Father. God, the perfect Father, sacrificed His only Son so that we could have an intimate relationship with Him. So we must ask ourselves as fathers, how much are we willing to sacrifice?
