It’s no big secret
It’s no big secret that my favorite type of food is Mexican food. In fact, queso (formerly called “cheese dip” in my Alabama upbringing) is my go-to comfort food. So imagine my delight when in the same week we moved to Prosper, Mesa’s Mexican Grill also came to life. Owner Alfredo Benitez opened Mesa’s Mexican Grill in the summer of 2012, and he has already had such great success that they’ve just recently opened a beautiful second location in neighboring McKinney. As a local favorite, Mesa’s is packed each night with satisfied patrons dining on their combination of authentic Mexican and TexMex fare. So packed, even, that parking can be a problem. Many cars line the street along the west side of the building at peak times. Benitez has combined years of restaurant industry experience with a talent for customer service to bring Prosper first-class hospitality and consistently excellent food.

Customers are quickly welcomed to their table with fresh corn tortilla chips, creamy black bean dip, and a peppery red salsa.
Brunch is served at Mesa’s all day, every day. They take reservations, so you can skip that typical weekend wait and get straight to the good stuff.
Is there a wait for a table? No problem! Sip on a Swirl margarita at the bar, or venture outside to enjoy their expanded, heated patio.
You can enjoy happy hour all day Monday, 11am – 7pm Tuesday-Thursday, and 11am – 6pm on Friday.
Start your meal with traditional favorites like guacamole made tableside, a cup of tasty tortilla soup, or shrimp nachos. My personal favorite appetizer is the Queso Chorizo – melted jack cheese with chorizo (Mexican sausage), served with Pico de Gallo and flour tortillas (7.99). Don’t be caught off guard by the heavy consistency of the cheese – just make sure to eat it correctly! Instead of dipping like regular queso, stir up the Queso Chorizo, spoon a small portion into a tortilla, fold the tortilla, and eat like a soft taco. Enjoy.
Mesa’s Mexican Grill is a convenient and enjoyable place to become a regular. Watch the game at the bar over Dos Equis with your buds. Enjoy dinner with the family. Have margaritas on the patio with your neighborhood pals. Pick up a delicious meal on the way home from a long day’s work. No matter what the occasion, Mesa’s will always welcome you to their table.
There is an abundant selection of entrée options to please even the pickiest palate. Sample one of Mesa’s authentic Mexican specialties such as Carne Asada (grilled beef ), Chimichangas, or Pollo con Hongos (chicken with mushrooms). Fish lovers might enjoy the Salmon a la Parilla – a grilled salmon filet marinated in Guajillo sauce, served with rice and sautéed veggies. For the Tex-Mex traditionalist: Order Margarita’s combination plate (9.25). This plate includes a chicken enchilada topped with sour cream sauce, a cheese enchilada, and a cheese soft taco. Their Brisket Chile Relleno (with queso blanco) is a lightly fried poblano pepper, and is plenty to share. For a smaller brisket dish, order the

The entrée I cannot get enough of: Grilled Jalapeno Fajitas (12.50). Select your choice of chicken or beef fajita meat, served on top of the most amazing cheesy cilantro sauce you’ve ever tasted. The fajitas are then covered with grilled or fried onions and served with rice, guacamole, and pico de gallo. I highly recommend choosing the beef fajita meat and the fried onions: perfection.

Last but certainly not to be overlooked is Mesa’s dessert menu, with traditional offerings like flan and sopapillas. The real star of the final course, however, is Mesa’s Sizzling Apple Pie with ice cream (5.50). GENE ION LECT RAL E h 9t MAY Prosper Town Council: The upcoming May 9 General Election will give citizens of Prosper the opportunity to determine who will occupy two seats on the Town Council, says Town Secretary Robyn Battle. “Two Council seats are up for election, Place 2 and Place 6,” she said. “All seats on the Council are at-large, meaning that anyone who meets the qualifying criteria is eligible to place their name for consideration, regardless of where in Prosper they live.” Currently, the places are occupied by Kenneth Dugger and Jason Dixon, respectively. Candidate packets and filing materials are available at the Town Secretary’s office. The first day a candidate could file paperwork was Wednesday, January 28 and the deadline is 5 p.m. on Friday, February 27. Applications may be submitted in person or by mail. Any mailed applications must be received, not just postmarked, by 5 p.m. on February 27 to be accepted. Completed applications must be mailed to: Town Secretary, P.O. Box 307, Prosper, Texas 75078 or delivered to the Prosper Town Hall offices, 121 W. Broadway Street in Prosper. Candidates deemed eligible to run will
participate in the ballot drawing on Monday, March 2 at 8:15 a.m. at Prosper Town Hall to choose the order of appearance on the ballot. The deadline to withdraw as a candidate is 5 p.m. on March 4. Prosper Independent School District Board: Two PISD Board of Trustees seats are up for election, Place 4 and Place 6. Although elected to numbered positions, trustees represent the District as a whole, not specific geographic areas. Currently, these seats are held by Mr. Mays Davenport and Mr. Daniel Jones, respectively. The filing window for the School Board election began on January 29th, and the last day to file is February 27. PISD Administration is located at 605 E. Seventh Street, Prosper, Texas 75078 and hours are 8:00am – 4:00pm. To be eligible as a school board candidate, you must have resided in Texas for the previous 12 months, and inside the district for the last six months. Early voting by personal appearance takes place starting on April 27 and ends on May 5, 2015. Dates, times and locations for early voting and

After an extensive search and interview process, Prosper is proud to announce Chris Ross as the new Head Football Coach / Assistant Athletic Director. Ross’ 19-year career includes time as an offensive coordinator, defensive coordinator, head coach, and athletic director. His teams have consistently made deep runs in the state playoffs and he plans to continue his winning ways here in Prosper. Over his coaching career, Coach Ross has been selected as the District Coach of the Year seven different times, which is a great compliment to Coach Ross and the staff with which he surrounds himself. Ross has already met with coaches, the athletes, faculty and staff, and parents outlining his hopes and expectations for Eagle Football. With all of that said, most importantly, Coach Ross and his wife (Leslie) have three children, Lauren (4th Grade), Rachel (9th Grade), and Zach (11th Grade) – all are excited about becoming a part of Eagle Nation!!

Prosper’s Person of the Year GREG WRIGHT Mr. Wright was nominated for his leadership and love for the school and community that has made Prosper the envy of many! He has created an environment where students have school pride- something that’s missing in a lot of school districts nowadays. The students are proud to say they go to PHS and this pride has poured out into the community! Mr. Wright has lived in Prosper for 2.5 years and serves as the Principal of Prosper High School. He is in his 30th year in Education and 20th year as an Administrator. His vision for Prosper is it would be a community that sets itself apart from all other communities in the Metroplex and is the “GOLD STANDARD” for all communities in the United States. “I firmly believe that the school is the community and the community is the school. We are all Prosper and that is why every year I have a theme that starts with “We are Prosper.”

Amy was nominated for helping with Cornerstone Christmas for the less fortunate families. She helped put the true meaning of Prosper and Christmas together for so many. Amy has lived in Prosper Since 2008. Her vision for Prosper is to see it be a place where all residents are accepted and feel like they are part of this community, where relationships are real and we continue to be generous when people need a helping hand.
Mark was nominated for his servant leadership with the Mighty Eagle Band. He is the epitome of the great volunteer leaders we have in Prosper, and as person of the year he would be a great representative of all the volunteer leaders who give selflessly to our community. Mark has lived in Prosper since 2008 and his vision for our town is to help us embrace the growth and change that is imminent, but without sacrificing the spirit of excellence and sense of community that embodies our small town.

MARK DEMATTIA This is an excerpt from the person who nominated Mark: As a volunteer chairman of Planning and Zoning Commission Mark endured pressure from many levels, but he never wavered from his calm, graceful and highly effective manner. Mark remains very active in the community as a youth football coach, church youth leader and all around pillar of his local community. Mark has lived in Prosper since August of 2004 and is a man who has shown he is motivated to serve Prosper for the benefit of his community, and not for personal gain. “So many people here strive for family and godly values, and I am amazed at their generosity. I love how the people in Prosper rally around each other in time of need or tragedy.”
“I try to be helpful and of service to all who need it in our community, and I try to stay positive and encouraging with everyone I come in contact with.”
SHANNON DONAGHEY Shannon has been a force behind feeding needy children in a summer program, assisted with Thanksgiving baskets, Prosper's Clothe A Child, Bethlehem Place, Cornerstone, Prosper Ladies Association and helps with Light Lunch Ministries. She is the first person to step up when she hears of a need. CHIEF RONNIE TUCKER Nominated for over 20 years of service to this town both as a volunteer and paid employee, Chief has always put the residents of Prosper first. On many occasions he has put them ahead of his own family’s needs. He is always the first on the scene of an emergency and has mentored generations of firefighters. Chief moved to Prosper in 1991 and has been married to Janie for 34 years. His vision for Prosper is that it remains a place where everyone matters. “What you see is what you get. I am the same person day and night. I practice what I preach.”

History of Prosper Presentations
As the year-long celebration of Prosper’s official founding 100 years ago enters into its final months, a special treat for residents and visitors unfolds this month. “Prosper’s home-grown treasure, our official historian, will share first-hand accounts of the Town’s signature events,” says Centennial Committee Chair Robyn Battle. “Bill Hays not only grew up in Prosper, his family was among the Town’s pioneers. And, he’s kept incredibly detailed accounts of daily life in early Prosper.” Chairman of the Prosper Historical Society, widely-read author of two large volumes of Prosper’s history, “Prosper, Texas Its History and Families” and regular contributor of Live & PROSPER Magazine’s “Remember When” column, Hays will participate in two sessions of remembrances and recollections of Prosper’s long and storied history. The first session centers on young children and the second on adults and families. On Thursday, February 5th, the Prosper Community Library will hold its weekly Children’s Story Time at the Prosper Historical Society’s museum in the Board Room of the Prosper ISD, 605 E. Seventh St. The Prosper Historical Society displays various exhibits, photos, clothing and documents in the museum. The 45 minute presentation will focus on local historical events that the children will find fascinating and songs, dances and stories directly related to the day’s topic will be included. The second presentation is set for Thursday, February 26 from 6:00 – 7:30pm at the same location. Geared toward adults and families with older children, this event will include costumed participants and light refreshments, along with a question and answer session. To help tell the story, the Prosper High School video department has created a documentary-style program that uses many of the photos and stories collected by Hays. The video will be played during the February 26th presentation.

Remember When
THE WALNUT GROVE SETTLEMENT

I
n last month’s article we mentioned several settlements that developed in the late 1850’s but were not associated with a certain community such as Rock Hill, Richland and Rhea’s Mill. Some of these settlements had only a church, some had a church and a cemetery and others had church, a cemetery and a school. They were in rural areas where there was no school or grocery store so these pioneers formed these settlements so they could worship, educate their children and bury their dead without having to travel a great distance. Last month we mentioned the Pleasant Ridge area. This area just had a school with no cemetery or house of worship. Most of these farmers used Rock Hill or Walnut Grove for a place of worship and used Walnut Grove or Bethel Cemetery for a place to bury their families. In today’s article we will discuss the Walnut Grove area. The Walnut Grove area is located east of Prosper on First Street. The cemetery is located on the north side of First Street where it intersects with Custer Road (FM 2478). In addition to the cemetery this area had a school and a church. This church is one of the oldest churches in the western part of Collin County and was located on the northwest corner of Custer Road and First Street (along with the cemetery). The Walnut Grove school was located on Custer Road (FM 2478) on the east side of Custer between First Street and U.S. Highway 380 (about ½ mile north of the current highway 380). At this time there was no highway in the area.
THE WALNUT GROVE SCHOOL The Walnut Grove school began in 1853. Not much is known about the history of the Walnut Grove school. The location of the school was about one mile south of the intersection of First Street and Custer Road. It was located on the east side of Custer Road. It was a two room school and the grades only went through grade eight. To get a further education the students had to travel to McKinney or to Frisco. This was prior to 1902 when the school opened in Prosper. Some of the teachers were Mrs. Elva Crank, Miss Angeline Patterson, Miss Patterson’s sister-inlaw and Miss Laura Mahard. The school closed in 1941 and most of the students transferred to the Prosper Independent School District. A few transferred to the McKinney school district. For most of these years Mrs. Elva Crank was the lead teacher in the two teacher school the school had a teacherage (home for the teachers) and Mrs. Crank lived in the teacherage with her four children. The teacherage was a three room house and was located on the school grounds. Elva’s husband, Richard Crank, was killed in a train accident in Floyd County, Texas and left Elva with four children: Rick, Robert, Joe Ben and Dorothy. The rooms were small and Mrs. Crank, Dorothy and Joe Ben slept in the front room which had a double bed and a small bed about the size of a twin bed. The room also had a dresser, small chest of drawers and a pot bellied stove fueled by coal. The west room had a double bed and had a closet like attachment where everyone hung their clothes. Rick and

Robert slept here. The kitchen/dining room was the north room. It contained the dining table, a kerosene cook stove, a storage cabinet and work table combined, an ice box and a bed. The bed was separated from the other part of the room by a curtain. It was for Miss Lillian, the housekeeper. She had to take care of the children while Mrs. Crank taught school. There was a water well between the house and the school and it had a hand pump to get water from the well. This well was used both by the school and the Crank household. This created a problem during the winter because the hand pump froze. Their toilets were outside and were two –two holers which was also used by the school. The two room Walnut Grove school was divided with grades 1-4 (north side of building) being in one room and grades 5-8 in the other room (south side of school). Each room had their own cloak room where they hung the coats and placed their lunch sacks, as no one could afford lunch boxes. Normally one teacher taught grades 1-4 and the other teacher taught grades 5-8. The school had a pot bellied stove in each room and there was a coal shed beside the school building. The local farmers kept the school supplied with corn cobs for kindling to start the fires. They would soak one cob in kerosene to make the fire start easier. The older boys, Rick and Robert, had to start the fires each morning at school. It was the lead teachers job to start the fires every morning in the school. Later on Mrs. Elva Crank also taught at the
Possum Trot (Pleasant Ridge) school and in Prosper. Joe Ben Crank went to school in Walnut Grove and supplied much of this information regarding his life in Walnut Grove. Imogene Maxwell Gideon also went to school at Walnut Grove, Rhea’s Mill and graduated from Prosper in 1950. She remembers much of the same about the school. She also had a sister, Bessie, who went to Walnut Grove. Others she remembered (in addition to the crank’s) were Clyde Ray Chesney, Isaac and Barbara Horn, Willie Dowell Malone, Gwendolyn and Margie Brown, C.P. and Junior Hodges. She remembers the teacherage that Mrs. Crank and her children lived and the water well, which was shared by the school and the Cranks. There was a swing in the school yard where they played. Not much organized activity. Everybody just seemed to “hang out”. The school was painted white and it had no library. The children learned to read by using the “Spot Books” (See Spot Run & Run Spot Run) Imogene remembers her first grade teacher as miss Angeline Patterson and also Mrs. Crank. Sometimes their parents brought them to school but there were times the weather was a problem and they had to walk, sometimes many miles.

The Walnut Grove Cemetery is located in the Town of Prosper. It is on the northwest corner of First Street and Custer Road (FM2478). The east entrance to the cemetery is on Custer Road and the south entrance is on First Street. The Presbyterian Church owned 30 acres (1868-1869) the land was split. The Presbyterian Church built a building on the north part of the land in 1869. The church had built a building earlier (1852) but it was located one and one-half miles south of this location. The building was modified in 1858 and in 1869 a new building was built. In the early years the cemetery was west of the church, closer to Wilson Creek. The newer part of the cemetery is located north of the church. In 1995 the Presbyterian Church donated the cemetery land to the Walnut Grove Cemetery Association. The cemetery was started in 1851 although there are no headstones dating back to that period. The earliest headstone is 1861 (John W. Smith) the earliest date of death in the new part (next to First Street) is January 7, 1863 (Joseph R. Rhea). The cemetery is very active, well kept and has an annual decoration day in May of each year.

After the school closed the building was used for a residence and rented out to several families. In the late 1940’s the building was moved to the Prosper school campus and became the first, second and third grade rooms as the Prosper school district was expanding. Later on the building was moved to Main Street (one block south of Broadway) and was used for a field house as the football field was located behind the businesses located on the south side of downtown Prosper. The building was eventually torn down.

Clyde Ray Chesney lived about a mile from the school and had to walk every day. He remembers basically the same things that Joe Ben Crank and Imogene Maxwell Gideon remembered. He remembers Billy Jack Shelton going to Walnut Grove. Billy Jack also went to Prosper after Walnut Grove. Also, W. C. Malone, who rode his horse to school every day. The horse was very stubborn and would stop all of a sudden and throw W. C. Off the horse. Also, the horse would break loose during the day from the hitching post and return home. Paul Baxter lived near the Walnut Grove school but never did attend. He said his brother James and his sister Louise attended school at Walnut Grove. Isaac Horn also attended Walnut Grove and remembered basically the same things mentioned above.

Myth: To get a quick start to a green lawn, scalp the lawn in early Spring. Reality: Scalping lawns is beneficial to mowing services. They can charge extra to scalp the lawn down to the dirt and then haul off the clippings. It’s best to only mow 3/4 inch off the top in the Spring to give lawn a clean trim look. Don’t bag the clippings- leave them on the soil to add organic compost and to hold moisture in the root zone. Also, scalping can expose roots to a late spring freeze. Myth: Cutting back the tops of crape myrtles is needed to increase flower buds. Reality: Topping off crape myrtles is “‘crepe myrtle murder”. It does not increase flower buds and causes stress to the tree. Stressed trees are less resistant to insects, powdery mildew, fungus, and drought conditions.
Yes, every year involves at least one unforeseen challenge. However, there are some things that stay the same. That is there are many myths about lawns and landscape that are never go away. Here are a few for your perusal. MYTH: It’s a good idea to remove grass clippings after mowing. REALITY: There is a misconception that grass clippings contribute to thatch. Grass clippings are mostly water and decompose rapidly, returning significant amounts of ‘organic’ fertilizer to the lawn. Research shows that up to one-third of applied fertilizer can be recycled buy returning clippings to the ground.
