Spinach Salad with Bacon Dressing:
Spinach Salad:
8 cups fresh spinach leaves, stems removed Almond slivers 1/2 red onion, thinly sliced
Bacon Dressing
5 slices bacon 12-16 medium shrimp 1 1/2 tablespoons finely chopped shallot 1/2 cup red wine vinegar 2 tablespoons honey mustard, or more to taste Salt and freshly ground black pepper
Directions In a skillet add the bacon and cook over medium heat until
crisp. Using a slotted spoon transfer the bacon to a paper towel lined plate to drain. Roughly chop and set aside. Pour off all but 2 tablespoons of fat from the skillet. Heat the remaining fat over medium-high heat, add the shrimp and cook for 3 minutes, then add shallots and cook 2 more minutes, stirring occasionally. Whisk in the vinegar, desired amount of mustard, and salt and pepper, to taste. Scrape the brown bits from the bottom of the skillet, then remove the skillet from the heat.

For the salad, in a large salad bowl, toss together the spinach, bacon and onion. Pour the dressing and shrimp over the salad and toss to combine. Serve warm. Enjoy!

Back in the 1800′s, hatters used a process called carroting. The hatters would use an orange liquid (mercury nitrate) to help separate the fur. Because workshops and warehouses were so badly ventilated at the time, workers were slowly killing themselves via mercury poisoning. They would go insane hence the term “as mad as a hatter”

One’s right to grieve is a very much over-looked part of living. I have given much thought to the imbalance of time, energy, and attention we allow ourselves to devote to this central part of a full life. Recognition of other milestones--birthdays, weddings, graduations, religious rites of passage, buying a house and landing the job--are honored and relished in elaborate ways. Sometimes you wake up and everything is just a little weird. Like today, when my windshield wipers stopped working. I brought the car to the dealer and he took out the motor, he dropped it on the floor and it started working again! No charge. At the car dealership I saw my friend who sold me a car 20 years ago. We talked and talked and shopped for a new car. Then, on the same day, my satellite T.V. stopped working. I called tech support, and it just had to be reset. While on the phone, they told me that they offer insurance on all of my computers for twenty five dollars per month. What a great deal, so I took it. This is called “half luck”. Something bad happens; then something good comes from it. Sometimes, you have to just go with the flow. You never know what is around that detour in front of you.

Gretchen, A Bad Dog There was no one in sight when I walked into the house from a long day at work. Then I noticed her... an adorable German Shepherd puppy sitting on the sofa. As I picked her up and hugged her, my husband appeared. I had wanted an Afghan Hound, but he went out and adopted a German Shepherd puppy without my consent. He knew that I can’t resist a puppy--and his plan worked. Once again he tricked me. We named her Gretchen. She was so cute and full of energy. The first indication that she was going to be trouble was when she chewed through the rungs of the kitchen chairs and then moved on to chewing the corners of the new kitchen cabinets. As she grew, she got into the garbage, stole food off of the counter and went through the dirty laundry. Yes, she was trouble.

Training Gretchen was impossible. She had a mind of her own. Most of our time was spent trying to teach her what not to do. She figured out that if she climbed on the sofa, she could reach the top of the window. If it was unlocked, she would pull the window down and climb out. She ripped right through the screen. Everyone on our block knew Gretchen. Most people were afraid of her, but she just wanted to know what was going on. She would see someone walking by and desperately try to climb out the window. And when she did, she’d follow them. She wasn’t mean, just crazy.
With a dog like Gretchen, I had to keep my counters clear. She got into everything. One Gretchen was quite a character. I planted a new tree in the yard night I used an electric fryer to make french fries. I left and noticed that it had be damaged. It looked as if someone had it out to cool and went to bed. Too bad I wasn’t quick been chipping away the bark around five feet up on the trunk. enough to empty it before Gretchen found it in the As I examined the tree, my neighbor laughed. “Gretchen has morning. She had pulled it off of the counter and was been attacking the tree,” he told me. She had been jumping up covered in oil. The oil was everywhere. What a mess! She constantly pushed me to my limit. The straw that broke the camel’s back came the night I went to make dinner and couldn’t find the chicken that I was going to cook. Could she have taken it? I searched for signs. All I found was the wrapper. She had opened the refrigerator and eaten the entire raw chicken. We rushed her to the veterinarian. He said she was fine but what about me? She was driving me crazy. Now I had to worry about her opening the refrigerator, too. Once she learned how to open the refrigerator, there was no stopping her. We had to strap it shut. Eventually we bought a new side by side that she couldn’t get her paws into. Gretchen was too smart for her own good. Had she been a little dumber, maybe we’d have been able to train her. All of our energy was spent cleaning up after her or stopping her from wrecking our home. How nice it would have been to throw a ball for her to retrieve or taking her for a long walk without her pulling us down the road. She’s gone now, but I’ll always remember her love of life. She was the happiest dog I’ve ever owned. Lisa Ball
