2 7-ounce tubes almond paste 1 cup sugar 2 large egg whites finely grated zest of one orange 1½ cups whole pine nuts Preheat oven to 350 degrees F. Line 2 baking sheets with parchment. Crumble almond paste into the work bowl of a food processor and process until the paste is in fine crumbs. Sprinkle in the sugar with the motor running. Once the sugar is incorporated, add the egg whites and orange zest. Process to make a smooth dough, about 20 to 30 seconds. Spread the pine nuts on a plate. Form the dough into 2-tablespoon-sized balls by rolling in in between the palms of your hands, then roll the dough in the pine nuts until coated, then place on baking sheets. Bake until lightly golden and springy to the touch, about 13 to 15 minutes. Let cool on baking sheets for about 5 minutes, then transfer the cookies to cooling racks to cool completely.

Are you excited about Christmas? I am. Why you ask? Because I choose to be happy. I refuse to worry about how I’m going to afford it or what to cook or which house we will choose to gather. I will prioritize gift giving from the youngest to the oldest. After all, the oldest had so many more Christmas mornings then the little ones. And little kids are so much fun to watch as they open their gifts. Friends will understand if I give them small tokens of love. They don’t need expensive gifts but they do need acknowledgement that I care deeply for them. Finding them the perfect gift may be time consuming but does not need to be expensive. One year I found the perfect gift for my mother right in the supermarket. She loves to clean so I shopped for all the latest, greatest cleaning products. All of gadgets that makes the house sparkle. I wrapped them in a brand new bathroom trash basket covered with shrink wrap with a big bow. She loved it! She felt loved. I knew what she liked. It may have been non-traditional but it was all about my mother. Non-traditional gifts are unexpected and fun. One year my brother gave me a radio / flashlight that can be hand cranked to recharged. We now know how handy that is during storms.

The holidays are here! It is an exciting time of the year and a lot of motivation is needed to get all the work done. Decorating, shopping and baking takes so much energy that if you don’t stay off of the sofa, you’ll never get it all done. Early sunsets add to the difficulty of getting motivated. I know that I go to bed early in the winter. Cold weather slows me down. Yet, the excitement of the holidays keep me going. Christmas carols and eggnog with a raging fire is what I need to wrap gifts and tuck them under the tree. The wonderful smell of pine and cinnamon fills the air as we hang cookie ornaments on the tree and nibble on the broken ones. Christmas is a big deal. I can’t wait until black Friday to start my shopping. The minute Halloween is over I start right in on Christmas shopping. Trying to pick out the perfect gift for everyone that I love is very time consuming. The day after Thanksgiving the tree goes up and decorating begins. The countdown begins. Only 4 weeks until Christmas, panic sets in. I spend the weekend wrapping gifts that I’ve been hiding for the past month. I make the list of people I missed and list the people I need to send cards to. And there I sit...waiting for Christmas.

Christmas season makes its presence known like high tide on the shore: gradually, persistently, undeniably. My thoughts turn to my father. He was buried on Christmas Day. The year was1988; he ended on a Friday morning during the English as a Second Language Department holiday breakfast at Fairleigh Dickinson University, where I was teaching at the time.

Snowflakes are not created from frozen raindrops. Liquid water that freezes in the atmosphere as it falls to the ground is actually sleet. And hail, is just a large piece of sleet that collects water and grows as it travels from the atmosphere to the ground. Snowflakes are formed from water vapor that condenses directly into ice inside of clouds. They take shape as water vapor molecules from cloud droplets condense and freeze on the surface of a seed crystal, and patterns emerge as these crystals grow. The seed crystal itself forms on a tiny particle, like a speck of dust in the air, which serves as a base for ice growth. “A snow crystal is a single crystal of ice. A snowflake is a more general term for a snow crystal, or a few snow crystals stuck together that form ‘puff-balls’ that float down from the clouds.”

Maddie Maxfield and Seán Steede have been best friends since they were three years old, can you believe that? Anyway Seán is our son and Maddie is our friend's daughter. We've (the two families) have rented a house in Beach Haven together for the past five years. Since we are always there for two weeks at a time we really get to know the lifeguards and this year Allison and Alex invited them to help as Jr. Lifeguards. They kids met the lifeguards at 10AM most mornings to help set up whether it was helping carry a flag, first aid kit, cans or rescue board stand. If we were around at 5PM they would help clean up too. The real lifeguards were great at explaining every thing to the kids from what to have in the first aid kit to digging holes with their toes for the cans to be put in. We couldn’t have had two more kind, attentive and fun lifeguards at out beach! Allison even babysat the kids so the adults could go out! The real lifeguards would put riddles on the back of their chair almost every day and we all enjoyed trying to guess the answer! The kids wanted to chip in with some riddles of their own on the days the lifeguards didn't have any to post.

Geocaching on LBI Recently a friend of mine, Mary Ann Everitt-Gutchigian of Beach House Retreats, brought geocaching to LBI. It was a fun outdoor event for the entire family and will become a yearly event on LBI.

Geocaching is a real-world, outdoor treasure hunting game using GPS-enabled devices. Participants navigate to a specific set of GPS coordinates and then attempt to find the geocache (container) hidden at that location.

How is the game played? At its simplest level, geocaching requires these 8 steps:

There are several theories when it comes to the symbolism of seven: it took seven days for God to create the earth, the Bible says. Others believe that seven stands for the sacraments. Catholic Italian-Americans eat fish like calamari (squid), baccala (cod), blue crabs, scallops, pupa (octopus), shrimp, clams, oysters, lobsters and much more to celebrate Christmas.
