Members of the food industry took part in The Royal Agricultural Society of Tasmania’s annual fine food show in July this year. TOP APP REVIEWS BY BRANDON COWAN, APP CREATOR LOST ON CAMPUS A must-have app for Australian university and TAFE students. Lost On Campus lets you easily find every tutorial room, lecture theatre, coffee shop, carpark, bus stop, sports field, toilet and even the nearest vending machine! It also shows how far each location is from you and a compass is displayed to point you in the right direction. Kinda cool huh? I tried out Lost On Campus for myself and it took me right up to my lecture theatre at Macquarie University. For the first time, I didn’t have to ask a ton of people to point me in the right direction because Lost On Campus did it for me! Lost On Campus currently has over 40 campuses and a massive 100,000 students are using the app. Available for free on iPhone/iPad, Android and Windows Phone.
SNAPCHAT Snapchat is a photo sharing application with a fun twist. It lets you take a picture [or video], select your friends that you’d like to send it to and select how long it will be displayed to your friends for. After that time period, it disappears and cannot be viewed again. Snapchat has gained popularly, particularly amongst teens and millions of pictures are shared through the app, daily! The app has also faced some skepticism, as it is possible to take screenshots of pictures sent through the app, meaning that some pictures that were meant to be deleted forever after the time period is expired, are not gone forever. As with all social networking sites, it's advisable not to send any Snapchats you wouldn’t want the public to see. Available for free on iPhone and Android.
ITORCH FLASHLIGHT As the name suggests, iTorch Flashlight is a simple flashlight app. This app is the missing pathway between your iPhone with and without a bright light that will help illuminate your surroundings at night. If the normal screen (even on full) brightness isn’t enough to help you navigate your way in the dark, this is a very handy app to have. The app also has a cool strobe light affect if you want to create a party atmosphere in your room, or in any other dark location. Available for free on iPhone 4 (and newer iPhones). There are also lots of other free flashlight apps but this is my preferred one. 12
PIXEL BLOCKOUT Pixel Blockout is a fun little app that lets you put pictures over your friends’ faces. You can use an existing photo or take a new one, then place a paper bag, smiley, blur out or place other pictures over your friends face. It also lets you share the picture via Facebook, Twitter and email. Pixel Blockout is currently available on iPhone for $0.99.

• UVB – has been called the burning ray as it is associated with the heat or burning feeling • UVC – mostly filtered by the steadily depleting ozone layer, meaning more and more of this harmful ray can reach us. There are two types of sunscreen (SPF) available: 1.
Physical sunscreen – uses natural ingredients like titanium dioxide or zinc oxide and causes a physical barrier on the skin to reflect the UV away. Think of cricket players, when they apply zinc on their nose, it reflects the damaging rays and protects the skin underneath.

Chemical sunscreens – use man-made ingredients like buty methoxydibenzoylmenthane. When applied to the skin it absorbs the harmful UV rays and turns it into heat, so it will slightly heat up on the skin.

"They were given the primary responsibility to care for our guests and, in a very natural way, they talked and joked with the ARV residents and made each person feel very special." The College’s Building Connections in the Community program raises awareness among its students about community services that help individuals and families, while simultaneously encouraging students to look to the needs of others and experience that every person has value, irrespective of age, disability or illness.
Two students wrote an account of day five: "Yesterday, we headed off to the war memorial for the soldiers who had passed away in Afghanistan. The bus then drove us to Yungaburra for an opal cutting demonstration, and onto Gordonvale where we budgeted in the IGA to buy healthy lunches for our next stop at Yarrabah State Primary School. We played some lunch games, donated our books to their library and watched some home-made movies. Then we drove around Yarrabah, which is one of the most populated and poorest Aboriginal communities in Australia before heading back for a long trip to Gennezano. Going to Yarrabah, really opened our eyes and made us realise how grateful we should be. It was an amazing experience that changed our perspective of Aboriginal communities." By Bella P and Georgia C
FAR NORTH QUEENSLAND EXPERIENCE Recently, 150 Year 9 students and staff from Loreto Normanhurst embarked on the FNQE (Far North Queensland Experience), a two week program where students and staff engage with a number of Indigenous communities, perform community service, and experience learning outside of the traditional classroom. The physical environment is largely classified World Heritage and allows students to appreciate the glory of creation and to find a place for prayer and reflection. 26
BARKER'S NEW CENTRE Barker Junior School has been transformed over the past 18 months into a new centre designed to provide a teaching and learning environment to maximise each boy’s potential. First opened in 1955, the Junior School has provided the foundational learning for nearly

6000 boys of the Baggy Blue over almost 60 years. Already, the new facilities are helping the Junior School staff experience a whole new paradigm in learning, which is radically different to the traditional Junior School. "The new learning and enrichment centre has been planned deliberately to stimulate the young male brain," Junior School Headmaster, Mr Neil Harrison said. "It will tap into their natural curiosity and inquisitiveness." The new centre has a very open plan, and with its generous connecting common spaces, it brings all grades together, providing a great sense of curriculum continuity. Many more boys are now utilising the spacious and well-resourced Enrichment Centre with its enormous library/research focus. Classroom teachers are able to access spaces and specialist teachers to provide art, music, pottery and now science experiences to enrich the curriculum.

Many people could say they know a great candidate for Father of the Year and in this edition, I had the pleasure of meeting one; the amazing father of Jackson, David Keleher. Jackson has cerebral palsy (CP) and is defying the odds in every way. David’s sacrificial love meant that he gave up his full-time job to be with Jackson on a day-to-day basis but as David explains as the interview unfolds, Jackson is well worth it and is literally progressing in leaps and bounds. Despite being given a grave outlook by doctors at birth, at threeyears-old, Jackson can now sound basic words and has taken some unassisted steps. We recently caught up with the local family, in Wahroonga Park and heard their story - an ever-unfolding miracle. While finishing the interview, David reflected on his relationship with his son, and said admiringly, “I'm so proud of Jackson; he's been through hell and fought so hard. I think, good on you Jackson, you are a true champion. Each day, Jackson just keeps trying and keeps smiling. What a beautiful boy. He deserves every opportunity to gain control of his body.” 1. Can you tell us a little about how Jackson's cerebral palsy came about? At three hours of age, he was found in a very bad state. He wasn't breathing, he didn't have a heart rate, and he required full resuscitation by the medical team to survive. Something had 30
gone dramatically wrong and we're not sure, to this day, what it was. The quick decisions to cool Jackson’s body within minutes of the episode, and place him in experimental hyperthermia, may have saved Jackson from a certain death. The levels of acid in Jackson's body had started to

cook his internal organs. Jackson had suffered a major insult of newborn encephalopathy: lack of oxygen and blood to all organs in the body. 500 babies). Can you explain what Cerebral Palsy is and how it affects Jackson? CP is a brain injury received before the age of three. 80% of infant brain injury occurs during pregnancy, and the other 20% occurs at the time of birth, or near after. There is a distinct difference in symptoms and my son, Jackson, finds himself in the 20% category. Jackson’s thinking brain is unaffected, his cognitive reception is normal, and he can understand everything another three-year-old could. At 16 weeks, Jackson's diagnosis was that 95% of his body was disabled. His intelligence was un-affected. The injury in Jackson’s brain is in a place called the basal ganglia, which is the area that controls movement on the outside – he’s a working brain in a non-working body. Jackson was never expected to walk or talk. I've always accepted Jackson and 32
his brain injury. The one thing I don't accept is that his brain injury is going to leave him as a quadriplegic in a wheelchair for the rest of his life. I discovered that with intense physiotherapy and exercise, the young brain can be retrained to communicate with the body. Day after day, I pushed my son to the limit and slowly it started to work.
LIFESTYLE 3. Can you describe a typical week with Jackson? A week with Jackson is a pretty intense experience. Simply last year, we had 253 specialist medical appointments and constant daily requirements of support aids, necessary for correct postural positioning or to improve mobility. Not having sufficient physical support will cause Jackson to have deformities and place further stress on an overloaded musculoskeletal

system, resulting in painful early surgical re-alignment by the age of six. There’s a whole range of appointments that Jackson needs as well as all the normal stuff for a three-year-old like trying to go to kindergarten and doing forward rolls on the picnic rug and conductive education classes and play dates and stuff that three-year-olds just like to do, like going to parties and blowing out candles. Jacko also loves to hit the beach, play in the park (he's such a little dare devil!) and get dirty at Jubilee BMX park. We normally crawl into bed at 7:30pm and crash and burn. It’s pretty exhausting every day with Jackson. We’re early to bed and up at around 4:30-5am every day - it doesn’t stop. It was okay in summer when he would try to wake the birds up in the valley but in the winter it’s tough but he wakes up happy and he’s so keen to go that it’s infectious. Grandma, Poppy and myself and obviously Jackson, are on team Jacko – we’ve been working with Jackson since he was very young. We share the load: Grandma the catering van, Poppy the old silly fella [laughs] and I handle Jackson on a day-to-day basis. 4. With Father's Day just passed, we acknowledge the importance of dads. What has being a father taught you? I have learnt more and grown more since Jackson's birth than at any other time in my life. I have learnt patience and witnessed miracles, which otherwise I would have been too busy to notice. I have learnt acceptance. I realise that during my life I have been www.livinglocalguide.com.au

COVERStory wrong to judge and I have learnt a thing called unconditional love. Jackson is a miracle of unconditional love. He teaches me so much – we were up at the local school the other day and one of the kids asked me if I’d taught Jackson sign language but he’s pretty much teaching me sign language. He teaches me so many things about life. I see [his] determination and I can’t help feeling that it is my responsibility to give him the opportunity. I never want to look back and think I should have, or could have, done something. I only want to look forward knowing I’ve done everything. That’s how I live. Being so involved with the rehabilitation of a brain-injured infant has simply taught me so much about life. There is a responsibility attached to Jackson, which involves personal sacrifice. Raising Jackson is a fulltime position and there is an uncertainty about the future. I do not think I could ever look back at life before Jackson. It's a matter of looking forward and making a very bad situation better.
WAHROONGA 5. What do you like most about living in Wahroonga? I grew up in Wahroonga as a kid and have great memories of a very active and full life. The family home has been here for 38 years. When Jackson was young we were lucky enough that my parents committed to help getting Jackson to where he is. 34
We’re lucky to be a part of this community. I had a pretty active lifestyle and have some great memories and great friends, which I have carried through life. Some of my mates are now Jackson’s Godfathers and the founders of his charity. These friendships span 35 years. They are great mates standing with me in the face of adversity and supporting Jackson. If Jackson can make relationships with people in this community, make friends with people who will join him in his journey, I think that would be the greatest thing for this little man, raising Jackson in the local area. 6. What sort of support do you get from the local community and what would you like to see? Jacko just has one of those infectious smiles. We fought so hard in these early years to prepare him with the hope that one-day he could integrate within the community. One of Jackson's greatest steps was making his way into the local Kindergarten this year. Seeing Jackson with his able peers, we are hoping that this will aid his development and progress. The kindergarten and the kids have been amazing and we hope Jacko goes onto school making lifelong friends to join his journey through life. There are some really special people across the country that have become part of Jackson’s life and that makes the journey a lot easier with nice people around.

CHARITY 7. Can you tell us a bit about your 35 former classmates? When Jackson was one-yearold we were really struggling. I had committed to Jackson and realised how much work was involved. I really wanted to commit to him full-time and so I invited the boys (Godfathers) to come around and have a bit of a chat. I told them that I wanted an army of men to fight for one beautiful boy named Jackson, a boy fighting 'a fight against all odds’, a brain-injured boy, a boy with determination, a boy with support, a miracle boy. So the boys started a not-for-profit charity for Jackson called, Walk Talk Fly and we set about raising the money to finance Jackson’s rehabilitation. 8. So, what is Walk Talk Fly all about? Walk Talk Fly, the Jackson Keleher Cerebral Palsy Fund is stepping forward with Jackson, where government organisations fail. Walk Talk Fly is privately funded and intends to continue supporting and providing Jackson with the opportunities to an ideal life. The treatments that we need for Jackson couldn’t have happened without the help of these guys, the funds raised and with the generosity of the community. We are providing a model of the right way forward. The big picture for Jackson is hard to swallow, as we budget for ongoing therapies and equipment, it's a price tag which as an individual is impossible to meet. COVERStory to be the larger ongoing costs year after year, providing housing for an independent future and opportunity to live a full life. We have set out to give Jackson an ideal life and along the way we are going to help other kids like Jackson too. Because miracles do happen, they just take hard work and people to believe. Despite Australia being a wealthy country, long term care and proper support for Jackson and others like him is simply not available. 9. How can the community get involved? We as a community must reach the point of lifelong care for our brain injured children. There is one born in Australia every 15 hours. So just before we finish up, what has Walk Talk Fly achieved so far? Walk Talk Fly has basically stepped in to help raise enough money for Jackson’s therapy for the next three years. He’s got a pretty heavy burden of therapy both physically and financially, but honestly, we can say that it’s helping him – we are so lucky that we are in a position to say that the applied therapies are paying off and the early intervention has changed the future for him. So, Walk Talk Fly has done an amazing thing and everybody who has donated should be really proud because they’ve helped in a miracle. I didn’t really think about how Jackson’s journey would affect others and now I understand that there is a real responsibility telling our story. The responsibility that goes along with that is also letting other people know about how we got to this point. I’m also hoping cerebral palsy becomes something that we want to give attention to and address and help these kids because it changes their lives. During the past financial year the Turramurra and Lindfield Community Bank® Branches of Bendigo Bank operated by locally-owned Ku-ring-gai Financial Services Limited (KFSL) have continued to achieve significant new milestones. In terms of banking, the value of banking business on the books of our branches surpassed $260 million as at 30 June which included an increase of $40 million (18%) during 2012/13. Almost $100 million of this banking business comprises lending provided to local residents and businesses in the form of home loans, business loans, investment loans and personal loans. The resultant growth in KFSL’s revenue has enabled the company’s directors to significantly increase the levels of financial and other support that we provide to local clubs, charities and community organisations within Ku-ring-gai. The new joint headquarters for local Ku-ring-gai State Emergency Service (SES) and Bush Fire Brigade was officially opened at a special launch event held at North Wahroonga’s Golden Jubilee Field, on Saturday May 25.
Support Lindfield is a group of committed residents and business owners working together to turn the Woodford Lane parking lot into community space and have the proposed commuter car park built underground.
Premier of NSW, Barry O’Farrell, Commissioner of the NSW Rural Fire Service, Shane Fitzsimmons and Commissioner of the NSW State Emergency Service, Murray Kear, Paul Fletcher MP and Elaine Malicki, Ku-ring-gai Mayor were among the special guests to celebrate the opening of the new HeroHQ. Also in attendance were other local federal, state and council members, along with members of the SES and RFS and the general community. Funding for the $3.6 million state of the-art-facility was provided by Ku-ring-gai Council, the SES and RFS. Ku-ring-gai Financial Services Limited matched each public donation, dollar for dollar up to $100,000 to secure the $200,000 total needed to undertake the internal fit-outs.
The first aim of Support Lindfield was to stop the development of the above ground car park. The group met with the Minister for Transport who agreed that her department will work with Council and the community to provide an outcome that is in everyone’s best interests. Another aim was to engage Council in the project. In May, Councillors unanimously agreed to prepare a master plan for the site in partnership with Transport for NSW. Our Branch has proudly sponsored two Support Lindfield community meetings that helped engage the community in this important initiative. The most recent was held at the end of July and was attended by 150 residents and business people. There was overwhelming support for the direction of the project which will enhance the amenity of Lindfield and provide much needed community facilities. CLANCY’S AT PRINCES STREET Keith and Cheryl Stark have owned and operated Clancy’s Supermarket and Newsagency in Princes Street, Turramurra for over nineteen years. Reducing Deaths From
CARDIAC ARRESTS
BY EDWINA HUNTER Further to a defibrillator being placed on the ground floor of the Gordon Centre, I recently spent a few hours with Angela Farr-Jones, talking about CARDIAC Responder. It was lovely to catch up again, after initially meeting her last winter for our cover story, starring her husband, Nick Farr-Jones. She has really opened my eyes about the importance of these miracle machines. A study carried out by the American Medical Association in 2006, identified a 2% failure rate of defibrillators due to defibrillator malfunction. It was essentially the results of this study which led to the formation of CARDIAC Responder and their fully monitored systems back in 2008. Angela is dedicated to educating people about cardiac arrest with the aim of reducing the number of needless, sudden, cardiac deaths. CARDIAC Responder does this by working with professionals, deploying defibrillator/AED (automated external defibrillator) rescue systems, and enhancing public understanding of cardiac arrest survival, in particular that 42
the basic life support action plan for CPR now involves DRSABCD (Dangers, Responsive, Send (for help), Airway, Breathing, Circulation and now, Defibrillator). A defibrillator controls heart fibrillation (heart rhythm disorder) by application of an electric current to the chest wall or heart. While this sounds complicated, Angela assured me that these devices can be used by anyone by simply following the machine’s instructions (audio steps). The terrifying thing that occurred to me is that many cardiac arrest victims appear healthy prior to a cardiac arrest incident, with no known heart disease or other risk factors. Sudden cardiac arrest occurs when electrical impulses in the heart become rapid or chaotic, which causes the heart to stop beating unlike heart attacks which occur when blood supply to part of the heart muscle is blocked. Angie explained that cardiac arrests are more common than one thinks: • 23,000-33,000 fatalities occur in Australia annually (more than breast cancer, shootings, and

road crashes combined). • 75% happen out of hospital with a survival rate of just 6%. • Early defibrillation may improve the survival rate by 80%. Organisations that have embraced a culture of heart safety, by deploying fullymonitored and securely-enclosed AEDs, raising awareness of AEDs and heart safety action plans, have achieved survival rates of 30-50% and higher - significantly reducing the likelihood of a delayed or failed response. Apart from the Gordon Centre, many sporting organisations, other public venues and also many Sydney train stations have been deploying these systems for the last four years with a number of successful rescues. A serious issue is that effectiveness of defibrillators can be hampered due to the low uptake and poor deployment of defibrillators in the workplace and public spaces as well as low public awareness. The CARDIAC Responder system ensures that their defibrillators are readily accessible, operable, and used effectively, which dramatically reduces the possibility of failure and better protects those they serve. More than A PAIN IN THE NECK BY KRYSTYNA ZAWADZKA, SOMATHERAPY, GORDON (SEE PAGE 44) WHIPLASH INJURIES OF THE HEAD AND NECK
Most commonly, whiplash of the head and neck results from a car accident but it can also be the consequence of high speed or a blow to the head. Whiplash can also result from sudden stopping of a car where the body remains fairly in place but the head and neck are thrown forwards. Whiplash is caused by sudden exaggerated thrust of the head backward, forward, and sometimes sideways. Abnormal forces are applied to muscles, ligaments, nerves, bones, intervertebral discs, blood vessels and eyes as the head moves beyond normal physiological limits. There may be no visible bruises or abrasions from this type of injury, yet victims report classic symptoms, called Whiplash Syndrome. In the vast majority of whiplash injuries the damage is to the neck’s ligaments, tendons, muscles, soft tissues of the head and vertebral alignment causing nerves impingement. A worst case scenario occurs in a small minority of the cases where there is actual bone fracture and spinal cord damage. The most severe spinal cord damage can cause www.livinglocalguide.com.au
paralysis and death. The most prominent is consistent neck pain – a dull aching sensation is initially noted at the base of the head, which is aggravated by movement and neck stiffness with restricted mobility. Pain may radiate to the head, shoulders, arms and area between shoulder blades. Headaches frequently result from a whiplash injury. Some people may experience ear ringing, visual disturbances: blurred vision, sensitivity to light, pain behind eyeballs, dizziness, diminished concentration and memory disturbances. Numbness, pins-and-needles and tingling of the arms and hands, along with weakness and reflex changes have frequently been found in patients after suffering whiplash injury. Occasionally, there may be tearing or a running nose. Whiplash can lead to the development of TMJ (jaw joints) symptoms.

As mum’s carer, feelings of guilt hit me as if I had failed her by moving her from the family home into hospice care. Relinquishing control of care to others was difficult but made easier by the quality of staff at the hospice. At the end of each day I was leaving mum with staff that treated her with dignity.

“There is no experience quite as stunning as when there is nothing where something has always been.” This quote from Alexander Levy’s book, The Orphaned Adult, provided me with a framework in coming to terms with my own journey through grief. In the summer of 2011, my mother was diagnosed with terminal breast cancer. The cancer metastasized and within six months of her diagnosis, my mother had passed away.
emotionally present and loving my mother in order to have the opportunity to do the things I wanted to do for her before she died? How would I cope with my pain in the midst of such a tragic time? I had no answers to those questions except to take each day as it came. Though I had some regrets regarding my relationship with my mum, I could not go back and make things better. Instead I could only make the future better.
My overwhelming waves of grief began with mum’s diagnosis. With emotions all over the place, I found that my new daily companions of anger, depression and sorrow depleted my energy. How could I focus on being

Though anticipatory grief gives you the opportunity to gradually come to terms with losing a loved one, it still doesn’t shield you from the inevitable impact of such loss. I lost my best friend when my mum passed away.

TODDLER TEETH BY DR LAURENCE MCCARTHY, BMEDSCI, BDENT (HON) I am frequently asked questions by new mothers and devoted parents about how they should be caring for their children’s teeth. Below are a few questions that pop up most frequently. When should I start cleaning my child’s teeth? The mouth should be cleaned even before there are teeth present. The gums can be wiped once a day with a moist cloth or washer. Once the first teeth arrive, a small headed soft bristled baby brush can be used to gently massage the teeth and gums with some water. This should be done at night time, after the last feed and is usually easiest with the child lying down. At around 18 months, a very small amount of low fluoride children’s toothpaste can be introduced. Encourage them to spit out the excess but if spitting 50
is initially difficult, wipe away the excess using a cloth or washer. During their third year, a second brush can be initiated after breakfast. How should I clean my child’s teeth? The teeth should be cleaned methodically and systematically, ensuring that all surfaces are cleaned. Begin each brush by cleaning the cheek-side and tongue-side surfaces using small circular motions with the brush angled in towards the gum. Then brush the biting surfaces with a back and forth motion. Aim to eventually have a brushing time of around two minutes. When should they start brushing on their own? At around four to five years of age, they can begin to learn to brush their own teeth. However at first they will not have the skills to effectively clean without

Yes. It is never too early to instill good habits. While many baby teeth are spaced apart, often the baby molars at the back of the mouth have contact points that can harbor plaque and lead to decay. Flossing between these teeth about twice a week from around age two to three years will help to prevent problems in these areas and encourage excellent oral hygiene for later in life. On our way home, we took the inland route, continuing through Bowral to visit Mount Gibraltar, the highest point between the coast and the Great Dividing Range, with numerous spectacular vantage points. We stopped to take in the view mostly of the car. Along the way, we were spoilt for choice with so many quaint villages, seaside towns, and relaxing, alfresco cafes, restaurants, wineries, and B&Bs. NEPAL SCHOOLS PROJECT BY RICHARD JACKSON
HAPPY ANNIVERSARY! I’m sure all the supporters of Nepal Schools project know of Allan Waldon’s central role in the creation and subsequent success of the project. In April 2006 Allan trekked to Everest Base Camp. His guide was Nepali local Prem Khatri. Prem is very well educated but his education came at the cost of hardship and sacrifice 56
unimaginable to Aussie kids. Prem walked for two hours each way every day, in his later years at school. On his return to Australia, Allan started working with Prem to help rebuild Prem’s local school, Bhairabi Primary School, in the Gorkha District. Allan’s dedication continues today, seven years on from that visit. The rewards for his effort are many. Bhairabi Primary School has been totally rebuilt and several other schools nearby have been significantly improved, in particular Dharapani Secondary School, plus training for dozens of teachers, a sprinkling of new toilet blocks and even a library. But best of all, thousands of Nepalese children have had their life changed through Allan’s efforts and for Allan, helping those kids is what it’s all about. BEYONDLocal FARM NEWS The farm is looking fantastic this time of year, very green and there are lots of calves, lambs, and kids. We really love the fact that we produce our own meat on our farm. We know our animals from start to finish. We will have a constant supply now until well after summer. The Murray Grey cattle are really great carcass animals as well as being extremely quiet and easy to handle. The Dorper sheep are doing well. They are a leaner type of lamb with a thicker build, and we will have a good supply of these lean spring lambs from October. We still have our goats however supply is a little limited until the next lot are ready.

We have been working hard to get our hands on some really good produce with a focus on quality, and good animal welfare practices, we have engaged suppliers such as Pembroke Eggs at Nabiac, Organic milk and yogurt from Elgaar Dairy in Tasmania, and fish from Macquarie Harbour in Tasmania. We deal directly with the producer in most cases so know the welfare of the animals. We know that it’s not possible to produce milk cheaper than water.
LATEST NEWS We have had some huge success this year with our sausages. The Sydney sausage competition was
something we have not done for a few years, but we took out the award for Best Gourmet Sausage with our San Choy Bow sausage. We also entered three of our varieties of sausages in the Tasmanian RAS Fine Food Show, one of the largest food shows in Australia with over 2000 entries, and renowned for being the good-food capital of Australia! We only entered three sausages yet won Best Beef Sausage, Best Pork Sausage, overall best sausage, and San Choy Bow not only won its class, but also took out the only Gold Medal sausage of the whole show! We thought winning Best Gourmet Sausage in Sydney was good, but the Tasmanian result was beyond our expectations.

BY SUE HANDISIDES My friend Tina and I took a comfortable drive in a new Renault Sports Mégane GT 220 Sports Wagon to the Blue Mountains to enjoy an experience at Segway Blue Mountains and I have to say it was a very pleasant trip. What struck me most was how solid the Mégane felt and the numerous features that increase safety and convenience. With the key in my pocket, the car unlocked as I approached it and it started with the press of a button. The headlights and windscreen wipers are both automatic and the connectivity for my phone and sound system worked well and also sounded great. The inbuilt GPS was easy to use and the dual climate control air conditioning meant both of us were comfortable. The handbrake automatically released, and reapplied when I stopped, which meant there was no problem with hill starts. Many people choose automatic cars as they are easier in the city, but the Mégane, with 58

5. Trevi Fountain - You will see Bernini’s art all over Rome. The Trevi Frountain is near both the Pantheon and the Spanish Steps.

LOCAL LAD TO BIG BUSINESS BY LIVING LOCAL MAGAZINE James van Rooyen grew up in St Ives, played local sport and worked casual jobs for local businesses. Today, James is best known as an entrepreneur, with his latest business, Bicycles Online, seeing exponential success with annual revenue of over $3 Million. 1. Can you take us on a quick journey from growing up on the North Shore to where you are today? The North Shore provided a wonderful nurturing ground growing up. My bike was my first taste of freedom. I was always in the parks and reserves. Following school at St Ives Primary then Barker College, I completed a Bachelor of Commerce and headed overseas to pursue a career in motor racing. A few years later I returned, working in corporate jobs in the environmental sector. This changed my perspective and bikes became the perfect blend 62
(environmentally friendly yet still had that mechanical aspect to them) and I started a new venture with a friend, Jonathan Allara. 2. You were recently named in BRW’s Fast Starters List. What do you see as the key factors that led to your success? I think you need a good understanding of the way a business or a market operates and then be willing to offer something different. You need belief and passion to follow through on your idea, learning from mistakes as you go. We saw the opportunity to cut out the middlemen in a fragmented supply chain, by sourcing direct and selling online - meaning high quality bikes at previously unheard of prices. 3. Can you share the most challenging event in the leadup to your success? In the first few months of Bicycles Online we had an opportunity

to purchase bikes at a large discount. On paper the idea made sense, however, we had to purchase over 1000 bikes to get the discount. We scrounged the funds needed yet had no space to store them, or staff to build, sell and service them. In just two months we found a location, fitted it out ourselves and signed a three-year lease, not knowing if the market could handle all the bikes we were bringing in. 4. What advice would you give to others considering taking on a new business venture? I would have to caution that it is difficult, stressful and not quite as romantic as it might seem. However there are certain positives, such as choosing to work with the people you like, following your passion, and answering that lingering question "What if?" My top 3 tips are: • Don’t be afraid to tell people about your idea. •
Don’t over-capitalise in the beginning. Your business model will change from what you first thought.

For so long our café culture in Australia has had its coffee beverages based upon espresso. In my travels around the world I have noticed we have one of the most established cultures of this, not only in our rich café scene but also coffee made at home. In the end the espresso machine is merely an instrument for brewing coffee. With better quality raw coffee and better roasting techniques emerging over the past few years we have seen other techniques of brewing come into the fray and other methods of consuming coffee showcased. Some of these methods are ‘older’ style methods brought back to life with a renewed knowledge on how to get the best out of better quality beans. To most, some of these methods are seen as inferior to the common espresso beverage but for the past few years what lacked was not the inadequacy of the brewing device, but the quality of coffee going in and our techniques. Some of these devices include such humble methods as the plunger, drip-style coffee (often associated with American coffee or catering coffee) and pour-over coffee. With fresh roasted, specialty coffee and a tight technique these methods commonly snubbed can beat a poorly extracted espresso beverage any day of the week. I haven’t convinced you have I? It is early stages so far, but many progressive specialty coffee cafes are bringing these brew methods back to life and roasting specifically to showcase particular origins, varieties or terroir of certain coffees. Believe it or not, there is actually an internationally recognised competition dedicated to alternate brew methods that require no espresso machine at all. I had the pleasure of winning last year's NSW 66
competition and placed second in Australia. The winner of Australia eventually went on to win the world title in 2012 in Vienna. Like all things, they progress and become more refined. We are in the early stages in where the specialty coffee industry is taking us in Australia and I am personally excited to see where it leads, elevating the humble cup of coffee from a mere commodity to a quality-focussed specialty beverage. Along with the lovely spring weather also comes a far greater risk of your pet being affected by the dreaded paralysis tick. The paralysis tick (Ixodes holocyclus) is the single most dangerous parasite for dogs on the eastern coast of Australia. One single tick is capable of causing paralysis and death. Cats are also becoming increasingly affected. Native animals such as possums and bandicoots are the native hosts and often have a huge burden of ticks and yet are not affected themselves. In other countries the Ixodes ticks carry other diseases harmful to people. Currently a lot of research is underway in Australia to see if such diseases may be here too. Although we do see ticks all year round, the peak season is from September through to April.
RECOMMENDATIONS • •
Clip the long hair to make it easier to do a daily tick search Apply spot-on tick preventatives every two weeks
Speak to your vet about how to wash your dog when applying these products. It is not cheap to keep up the best healthcare for your pet and you don't want to be wasting your time stripping these products off their coat.

In the garden centre business, spring starts in August and we get very excited about getting loads of lovely new plants in. I want to focus this time on just a few absolute stunners that we currently have in the nursery. TRI-COLOUR ABUTILON STANDARDS If you have a love of abutilons, also known as Chinese Lanterns, but can never decide on which colour you’d like, how does having three colours in one grab you? My grower has planted a red, an orange and a yellow abutilon in one pot, plaited their stems and created a standard to die for. It looks like it’s just one plant but with three flower colours. Abutilons bear flowers for most of the year, need a morning sun but afternoon shade position, especially in summer and need to be kept fertilised all year round – I recommend Garden Gold be applied each season. They respond brilliantly to a good haircut in summer.
GORGEOUS GERANIUMS Geraniums have made a huge comeback in recent years. The www.livinglocalguide.com.au
new varieties have interesting foliage and brightly coloured flowers. 14 years of breeding for the Calliope geranium has resulted in a combination of show stopping large flowers, with petals that do not easily shatter, attractive dense dark green foliage and a wonderful semitrailing habitat. The new sister of big red, a highly successful variety released a few years ago is big pink, which bears profuse large neon pink semi-double flowers throughout spring summer and autumn. They make great pot specimens but are equally happy in the ground but as with all geraniums, make sure you give them full sun and ensure they don’t have wet feet!
damage to magnolias and it’s not unusual for the leaves to develop brown edges in late summer. Good watering and mulching will reduce this problem. My hot favourites are: black tulip, a deep burgundy with a tulip-like flower; vulcan, a compact magnolia with deep magenta flowers; burgundy glow, a soulangeana, with dark purplish-pink and white gobletshaped fragrant flowers; and the ever popular denudata, with ivory white flowers that really stand out against a blue sky.
