There seems to be some controversy as to whether the bottles that state BPA free actually are. You can buy glass bottles for babies or metal drink bottles for children. As a mum who drinks lots of water I have bought a metal bottle from the health food store. It cost about $18 which was a bit of an investment but saves the environmen and much healthier for mum. Re: Myths and Hype of Modern Medicine - Spring12 It’s so great to see Dr Ross Walker acknowledging that in circumstances, Western Medicine is not exhaustive and that a pill is not the solution to everything. The more we examine and tackle the root of health problems the better. The victory in the battle against obesity lies in prevention and lifestyle management, before diabetes and cardiovascular disease become a problem. With 25% of children and 61% percent of adults in Australia now overweight or obese, it’s time to take responsibility for our own health. Amy Andrew (Chatswood) Student, Master of Public Health, Sydney University Re: Dr Ross Walker’s article - Spring12 Dear Living Local Magazine Just a quick note to congratulate you and your LL team for another fabulous edition. Dr Ross Walker’s “5 stages of Health” has certainly got me thinking!! Keep up the great work! Best wishes. David Langdon Chairman, Ku-ring-gai Financial Services limited Re: App Reviews - Spring12 Dear Living Local Magazine I loved the new section on the APP reviews! SOCIALPages other’s views as valid, let alone true. We should happily admit that we believe some views are better, truer and more legitimate than others. The way forward, I believe, is not to advocate 'tolerance' but to encourage the more classical virtue of 'grace'. Grace does not mean believing things less firmly. It means regarding opponents more highly. It means treating with friendship and respect those with whom we deeply disagree.

The angelic announcement “Peace on earth and good will toward men” seems far from reality this Christmas. Whether it’s the poisonous slanging match between a 'shameful' Julia Gillard and a 'misogynist' Tony Abbot or the nearly forgotten (thank God) vitriol of the Internet movie The Innocence of Muslims and its troubling reaction, 'tolerance' appears to be dead. And I say good riddance. Tolerance is typically thought of as the acceptance of other views as equally true or valid. But can this really work? Can we really ask Buddhists to accept as true or valid the Hindu doctrine of the 'eternal soul', when the

Buddha himself explicitly rejected the idea? Would tolerance for Richard Dawkins really involve accepting that Christian theism is just as true or valid as atheism? Conversely, does Archbishop Jensen have to think Professor Dawkins is really onto something with his kindergarten Who-MadeGod? argument? By definition, every sincere conviction consigns contrary convictions to error. Atheists think Christians are wrong, and vice-a-versa. Pro-choicers think pro-lifers are wrong, and vicea-versa. Gillard thinks Abbot is wrong, and vice-a-versa. That is fine. We shouldn’t pretend that each side has to regard the

www.livinglocalguide.com.au

A gracious Buddhist can reject Hinduism but demonstrate compassion to Hindus. The gracious Christian, too, can think that the New Atheism is bland and implausible but still work for the good of atheists. Politically conservative grace stands up for what it believes in but never allows this to justify discrimination and bigotry. Likewise, the gracious 'liberal' should be able to profoundly disagree with the conservative position without descending into name-calling and smugness. At the heart of Christmas is an extraordinary example of grace: the Lord of all humbling himself to a lowly manger for our sake. Only when we are able to embrace this sort of grace will 'peace on earth' be more than a pipe dream.

Living Local reviews Organi Line.

SUE’S REVIEW I was pleased when Organi agreed to let us review their products as a friend had tested a sample in a shopping centre and was very impressed. All the products were organic and hypoallergenic. The first thing I noticed was how beautifully presented the products are. I was hopeful that they lived up to the packaging and I’m pleased to say they did! I used the Organic Cleanser & Toner, Organic Firming Serum and Organic Day Cream and have to

say they are the nicest products I have ever used leaving my skin feeling very soft and nurtured.

as my skin has loved it from the start without any bad reactions as I have sensitive skin.

All 3 products only required the smallest amount and spread easily without being oily. My skin seemed to drink it in and sighed with relief at the comfort it brought.

Organi contains no paraben preservatives, petrochemicals, additives or synthetic fragrances.

The Cleanser & Toner doesn’t foam and didn’t sting my eyes when I accidently blinked at the wrong time. It has a light and delicate feel as does the firming serum which felt like it really did firm my skin as the name suggests. The day cream is non-greasy, light and a lovely base for any make-up. The price point is rather high for these products but with the tiny amount needed the investment will last months and your skin will thank you for it. EDWINA'S REVIEW This new product caught my attention for two reasons: it is made in Australia and is natural! It has been an easy product to test

I found the Organi Cleanser & Toner gentle. You can feel the Aloe Vera’s soothing effect. It also includes Grape Seed and Cinnamon Oil. The Organi Day Cream would be my favourite! You will notice its subtle fragrance as it contains pure Aloe Vera Plant and Green Tea Leaf Extract, which offers some protection from the sun and is a powerful source of vitamin C. It's absorbed quickly so you can apply makeup soon after. The Organi Firming Serum consists of pure Manuka honey, Myrrh Oil and Calendula Oil and again absorbs really well. Costly but require small portions and looking at them now, they still look almost full!

I recently went to a beauty expo and was thrilled to see a dedicated section for natural and organic products. Thinking back to beauty expos I went to some years ago, there was no real market for natural products. Today, however, it’s a very different story! Ingredients used to formulate natural beauty products are the best nature’s pharmacy has to offer and have been tried and tested for centuries, so the change is not surprising. Manufacturers of cosmetics and beauty products are increasingly considering what nature has to offer to inspire their next miracle cream. Natural products have been used to enhance and nourish the skin throughout history. Cleopatra was CUCUMBER IS famous for her soft and supple skin. The secret? Milk. BLACKHEADS (COMEDONES) - use a scrub made of sea salt, honey and lemon this can be scrubbed over the face with light pressure. Honey is a natural anti-inflammatory, think of manuka honey which is very healing. Lemon has astringent properties to cleanse, balance oil and due to the citric acid will brighten the skin and the sea salt will help dislodge the blackheads. RED IRRITATED SKIN - ground up oats have a huge calming effect on the skin as it contains Beta Glucan which has amazing anti-inflammatory qualities. You bet. After a few weeks of resting up and considering how the lost maths marks happened, it may have occurred to parents and students alike that a better plan was needed last year.

If we were in a race and, if it were legal to have a head start, we would be crazy not to accept it, right? In 2013, there is a head start available in the race for the final maths marks.

There is a ‘secret weapon’ available during the January School Holidays. “Thank heavens”, you might say!

We all agree that better preparation and less pressure makes a lot of sense; but HOW?

At ‘A’ 4 MATHS, we’ve learned that making certain a student’s skills are up to the coming maths studies means each student accomplishes their schoolwork with greater CONFIDENCE, in less time, with better marks and LESS PRESSURE (on both students and their parents) than ever before. Please do yourselves a favour and enrol in ‘A’ 4 MATHS Learning Centre’s HEAD START on 2013 Holiday Maths Program, while there are still spaces available. More GOOD NEWS – its only $250 for 10 hours of unique maths tuition! Phone 9418 4888 A school readiness program incorporating reading, numbers and writing is offered to children in the Pre Kindergarten program. BRENDAN DEWAR - BRENDAN DEWAR'S PATISSERIE

PETER BARTER - THE COOK'S GARDEN

DAVID FELTON - TABLESPOON

We selected a few of Ku-ring-gai's favourite places to eat and caught up with Brendan Dewar from Brendan Dewar's Patisserie (St Ives), Peter Barter from The Cook's Garden (North Turramurra) and David Felton from Tablespoon (Lindfield). We asked these top chefs about food this summer and what we can expect.

BRENDAN DEWAR Brendan Dewar trained with Pierre Hermes in Paris, has had extensive experience working at some of Sydney’s supreme establishments such as the ANA hotel, now the Shangri-La Hotel, Lindt Chocolate Cafe and Rockpool where he had Adriano Zumbo as his apprentice. Each of his desserts displayed is an individual work of art. “We get a lot of people come in just to have a look. We make a joke about charging a museum entry fee,” says Brendan.

What prompted you to open your own shop? For years I worked for other people. I wanted to see if I could turn it around and make something my own. People go to Zumbo because he’s one of the best and has done a world of good for pastry. I want people to travel from other areas and come to the North Shore to see what we are doing. The North Shore needs more businesses like this on offer to attract people here.

You claim your head pastry chef, JuJu Hsieh, is the master of macarons? There are a lot of macarons in Sydney; A lot are made from a machine but JuJu pipes them all by hand. Her signature flavour has to be Watermelon. She can design any macaron to any shape, like they are doing overseas: bunny rabbits, hot-cross buns, lady beetles, strawberries. It’s freaky how good she is as they are not easy to make. She is currently working on Christmas designs - coming soon.

COVERStory QUICK QUIZ 1. What did you inspire to be when you were a child? A journalist 2. How long have you lived on the North Shore? 30 years in Wahroonga

What are the trends for summer? Modern, with a traditional twist using seasonal fruits, stone fruits and berries. It might be a berry pudding with mangos inside. Our industry is now full steam ahead with creativity. This Christmas, we have to remember it’s not snowing. We should serve cold desserts such as a berry tart or mousse. Weddings, croquembouche and profiterole towers are taking over the fruitcake. We also do a lot of triple chocolate cakes for weddings. What impact have programmes such as Master Chef had on the industry and employment? At the moment, with all of the coverage from these shows, they make it look glamorous, but the industry is facing a problem as there aren’t enough young people wanting an apprenticeship, not enough people patient enough to stick with it. It must be exciting to have creative freedom? Yes it is. The B-Mac (a pastry in the shape of a hamburger) came from us just saying, “I feel like a hamburger today”. A lot of people are familiar with The Triple Chocolate Cake, which is especially popular around Christmas. We use good quality 28

ingredients and ensure the textures are right. This makes it unique and I would like to be remembered by it. People are now ordering it as their wedding cake. The JuJu cake is very unique in appearance and taste. It has mousse textures, is nice to eat and is smooth like ice-cream. The thing with pastry is it’s hard to point out something original. If I put pomegranate onto an orange panna cotta, it has an individual twist on it, something on it that makes it yours with a subtle hint. It doesn’t have to be traditional to taste good. I’ll let you in on an idea in the making: the poison apple –it’s Snow White’s apple with a little shot of alcohol inside. Is there a strange/unique ingredient we can look out for?

3. How long have you worked on North Shore? 5 years 4. Favourite dessert? Ice-cream 5. Favourite thing to do in Ku-ring-gai? Visit the National Parks. I love escaping the city and being central to Dural, the beaches and National Parks 6. How do you like your coffee? Strong Lattes. I’m really fussy! 7. School you attended? St Leo’s 8.

Favourite ingredient? Chocolate. You can’t have so many options with other ingredients. Chocolate is like wine; there's so much you can do with it

We have to be careful not to make it too whacky but we have a panna cotta and instead of vanilla in the mango we put vodka and cracked pepper. In your opinion, what country achieves/inspires the best meals? These days in my opinion, the best pastries are in Asia. Singapore is outstanding. Japan, without a doubt in my mind, is the best place in the world for patisseries. They were very clever about it.

The fact that The Cook’s Garden was a blank canvas when I started made it very appealing. What trends in food can we expect this summer, including wedding food trends? The trend at the moment seems to be leaning towards sharing food. Plates in the middle of the table create a more relaxed and social feel. Weddings also are adopting the sharing trend with cocktail style weddings proving to be quite popular.

Wood Smoked Pork Belly with Sautéed Balmain Bug Tails. Is there a strange/unique ingredient we can look out for, at The Cook’s Garden? This summer I will be using some unique coastal vegetables such as Samphire and Beach Bananas. They are a succulent style of plant that grows on beaches and coastal areas. Their salty flavour matches very well with fish.

COVERStory

QUICK QUIZ 1.

DAVID FELTON David has extensive experience working as a chef, for half his life, in a range of top restaurants both in Australia and for two and a half years in the UK, specialising in fine dining. “Funnily, I used to work here (at Tablespoon) in 1993 when this place was called Perdies. Very interesting to compare how much has changed since then,” said David. What lead you to become Tablespoon’s head chef? An opening came up only a few weeks ago. I sourced it out in the paper, applied for it and was lucky enough (and thrilled) to get the job. What trends in food can we expect this summer? I think we will see a lot of Asian-style food, exploring different colours, aromas and tastes. Consumers are asking for more choices in food, with freshness being the most important. What is your signature dish? If I had to choose one I would say, chocolate flourless cake. What foods are popular at Tablespoon? They love our ‘grab’ items, such as muffins and breads. When diningin, our customers love the Salmon Wonton Snack and our lamb and chicken sandwiches. We have a varied menu with many popular items! In your opinion, what country achieves/inspires the best meals?

Asian countries. The Asian culture focuses on fresh produce, old and new techniques and styles. This is now very big in Australia, especially as the population has become well educated in food. Ten or fifteen years ago people didn’t really know what they wanted. They now know what they want and do their research online, for example. Customers are very specific on their flavours and styles. It’s great as it lifts our game as chefs, making our job better as we become more accountable. The bar has been raised! Is there a strange or unique ingredient we can look out for, this summer, at Tablespoon? Yes, black sea salt. It has only been on the radar for a short time. We have a dinner coming up and we will be serving crispy-skin barramundi with black sea salt.

How long have you lived in Ku-ring-gai? All my life less the three years I was travelling

2. How long have you worked in Ku-ring-gai? Around twelve years 3. Favourite meal? A good lasagne 5. Favourite thing to do in Ku-ring-gai? Visit the Lane Cove National Park 6. How do you like your coffee? Short black 7. School you attended? Gordon Primary School and Asquith Boys High 8.

Hours in a typical day? 6:30am to about 4:30pm. We don’t open nights

9. Favourite ingredient? Manuka honey

What impact have programs such as MasterChef had on the industry and employment? (Laughs) MasterChef creates illusions in the industry. A lot of people, when starting in hospitality are shell-shocked by the preparation they are faced with. They imagine they will walk straight in and start working on creating cakes and pastries. They don’t realise how much preparation is involved. It has glamorised the food industry, which basically involves a lot of work. You really have to love this job to be in it.

COMMUNITYNews OUR TURRAMURRA BRANCH HAS HAD A MAKEOVER! By Denice Kelly, Senior Branch Manager

Our Turramurra branch was recently closed for four days while it underwent a refurbishment that has transformed it into a ‘Branch of the Future’. The interior of the Turramurra Community Bank® Branch now boasts the latest in banking technology in a bright modern, open plan environment. The old security screens and counter are gone and a new era of informal banking has arrived. The branch has been designed to promote a welcoming and

engaging environment that will allow our customers to choose how they interact with us. The new layout incorporates technology that will make transactions more efficient and allow our staff more time to spend with you. Our customers are now able to talk one-on-one with our team members in a comfortable sit-down environment. They can also use the latest self-service technology, such as our coin counting machine, a fast deposit box and phone banking. One of the last occasions we celebrated in our old Branch interior was our 9th birthday party on October 19. Approximately 50 people attended including staff

members from Bendigo Bank State office, directors, customers and friends. It was a time to celebrate and to reflect on the past nine years of serving our loyal local customers who now number more than 3,500. Please come in and visit us in our wonderful light and bright Turramurra branch. If you would like to speak to Denice Kelly about any of your banking requirements, please give her a call on 0428 437 761.

STOP PRESS! Michele Ferris was recently awarded the ‘Pride of Workmanship’ award from Turramurra Rotary Club. Two of our staff, Rosie Aldrich & Gabrielle Phipps, were also recipients of Rotary Youth Leadership Awards and have been selected to undertake a 3 day leadership course to be held at Vision Valley in the New Year.

EASTERN ROAD QUALITY MEATS – DOG BONES CONTINUE TO FUND SCHOOL CHILDREN IN NEPAL Local butcher, Allan Waldon has been running Eastern Road Quality Meats for 16 years and has 9 employees. Five years ago he bought a farm and now grows most of his own beef and goats. To Allan, his business is all about building a rapport with his customers and providing exceptional service and quality. Eastern Road Quality Meats has a reputation for producing award-winning sausages. In August this year at The RAS of Tasmania’s ‘Royal Hobart Fine Food Awards’ this tradition continued with wins for “Best Chicken Sausage”, “Best Lamb Sausage” and “Best Overall Sausage”. Allan has been a customer at Turramurra Community Bank® Branch since its inception and was a founding shareholder. He has numerous accounts, both business and personal at the branch. What he likes about the Turramurra branch is that when he calls, he can talk to someone that he knows and who knows him and is familiar with his accounts. Several years ago, after a trip to Nepal, Allan was inspired to raise money to help educate Nepalese children. Allan raises funds by selling dog bones in exchange for a gold coin donation. His “Dog Bones Build a School” program is now raising $7,000 - $10,000 a year. When Allan first heard about Shree Bhairabi Primary School in Gorkha, there were 39 children being taught in the one classroom. There are now 175 children in 7 class rooms. In addition, another 3 schools in Nepal are being supported with funds in varying ways with a total of 800 - 900 children benefitting from the program. Eastern Road Quality Meats is open Monday to Friday from 7am - 6.30pm and on Saturdays until 2pm. They are located at 101 Eastern Road, Turramurra. Phone: 9489 4345. www.livinglocalguide.com.au

COMMUNITYNews HAMLIN FISTULA ETHIOPIA (AUSTRALIA) LIMITED The Addis Ababa Fistula Hospital was established in 1974 to treat poor Ethiopian women suffering from the horror of obstetric fistula. Over 2,800 patients are treated annually using a surgical technique pioneered by Dr Reg Hamlin OBE and Dr Catherine Hamlin AC in Ethiopia more than 40 years ago. To date more than 35,000 patients have been treated free of charge, thanks to donations and the ongoing support of the Ethiopian Government. At the age of 88, Dr Catherine Hamlin continues to operate, train surgeons and oversee a network of regional hospitals and the Hamlin College of Midwives. “We do not treat just the hole in the bladder. We treat the whole patient with love and care, literacy and numeracy classes, a new dress and money to travel home”, said Dr Catherine Hamlin AC. The Turramurra and Lindfield Community Bank® Branches were thrilled to sponsor a “Dinner with Catherine” in September where approximately $70,000 was raised to support this inspirational cause. After reading Dr Hamlin’s autobiography, ”Hospital by the River” eight years ago, South Turramurra resident Lucy Perry decided to volunteer. She is now the CEO of Hamlin Fistula Ethiopia (Australia) Ltd, a brand new entity in Australia. Lucy heads up the only official, authorised organisation in Australia representing the work of Dr Catherine Hamlin, the Addis Ababa Fistula Hospital and the Hamlin College of Midwives. KU-RING-GAI PHILHARMONIC ORCHESTRA PERFORMS IN THE PARK In mid-September, local families headed to Wahroonga Park to enjoy the KPO’s ‘Last Night at the Proms Ku-ring-gai Style’ twilight concert hosted by Ku-ring-gai Council. Resplendent in their handsome new red KPO/Turramurra and Lindfield Community Bank® T-shirts, the orchestra presented a program of firm family favourites (including music from Mary Poppins and Phantom of the Opera) to the delight of the 3000 strong audience. “The concert provided an opportunity for the KPO to promote our love of music more widely in the community and we have had a lot of really positive feedback since the event. We hope that in partnership with the Bank, we can continue to make a significant difference to community life over the next three years” said KPO President Anne Cahill.

PURE GRAPHICS Pure Graphics is an award winning design and advertising company based in South Turramurra. The company was established by Bruce and Lucy Perry 20 years ago and specialises in providing creative solutions for print and digital media to medium to large businesses. Lucy was a member of the original steering committee of the Turramurra Community Bank® and has been banking with the Branch since they opened. All the Perry’s business, personal and charity accounts are held with the Turramurra Branch. Lucy said, “I love my bank manager”. She and Bruce like only having to deal with the one bank manager for all their accounts and love being able to just pick up the phone and speak to Denice Kelly directly when they need to. Treating pain using analgesics is a fairly ‘hit and miss’ approach. It is more effective to determine the nature and cause of the pain and to treat that instead. Get to the root of chronic pain, target the source of the problem to relieve symptoms and return to good health. The diagrams shown below may help you to understand some of the most common chronic pain patterns (referred pain) and location of its source – ‘where the pain is coming from’.

HEADACHES SCM muscle refers pain to the neck, face and head. It can be a cause of many kinds of headaches, dizziness (is called ‘dizziness muscle’), redness, tearing, strain of the eyes, blurred/ double vision, pain in the ear and atypical facial neuralgia. SCM is also an important functional part for vigorous or labored/effortful breathing.

SHOULDER, ARM ,ELBOW, WRIST AND HAND PAIN Deep neck muscles (Scalene) stabilize the cervical spine. Increased tension of these muscles is causing sensory and motor disturbance due to entrapment of the nerves in the cervical spine between C2 - C7 (Scalene Syndrome). Scalene are called ‘the

entrappers’. Symptoms may include widespread referred pain to the arm, shoulder, elbow, wrist, hand and neurological symptoms like weakness, pins and needles, numbness. They can mimic Carpal Tunnel Syndrome. Continued on page 41.

Robert Lerman, MD, PhD

WHAT IS SOMATHERAPY Krystyna of Somatherapy has extensive professional training and experience in the treatment of many forms of myofascial pain and dysfunction. She is a certified practitioner in the clinical application of the Frequency Specific Microcurrent Therapy (FSM), with a diploma in Myofascial Release and Government accreditation in Tactile Therapy (highest level). Traditional approaches to chronic pain are not always effective. Krystyna provides therapy with a difference, changing what is possible in pain management. She offers highly specialised, non-invasive and painless manual therapy, in combination with the latest 40

advances in FSM Therapy. FSM Therapy represents a significant improvement in rapid pain control and injury repair stimulation. It uses currents in the micro ampere range, 1000 times less than TENS and below sensation threshold. It is an exciting new way of treating nerve pain and muscle soreness. New injuries heal in record time. It has been shown that FSM may reduce tissue inflammation by 62% in four minutes and accelerate healing of ligaments and tendon injuries by over 250%.

Often, the pathology/dysfunction in the low back (L3 and L4) can be another cause of the knee pain.

I first saw Krystyna with very painful knees which western medicine wanted to replace and I adamantly refused to do. I had passed Krystyna’s clinic numerous times and taken her information on microcurrent therapy. I decided to give it a try. After the first treatment I felt wonderful. The pain started to decrease significantly with each treatment. It is 3 months since I began with Krystyna and the pain in my knees, hips and back (the source of my knee problems) has improved 90%. Most of the time my knees are very good and I no longer have to descend stairs in a crab-like fashion and have begun walking again for exercise, which had been a major problem for me. I have referred 2 others to Krystyna. They have had the same results. We are indebted to Krystyna and her therapy. I would have no hesitation in recommending a consultation with Krystyna who is careful to state that depending upon your specific condition; she may or may not be able to assist you.

YOURHealth a laundry list of every slight, injustice or problem is overwhelming for anyone. Limit yourself to the present problem.

Freelance Writer and Counsellor The way we relate to people directly affects our level of peace, joy and happiness. In a healthy personal or professional working relationship no-one sets out to deliberately cause another person pain. However, when conflict arises, our emotions can run high and when we are caught up in the emotional maelstrom, old ineffective ways of fighting need to be replaced with constructive measures with a focus to benefitting both parties. There are three main responses people use when being faced with conflict: avoid, placate, resolve. Avoidance only places the problem on the road to further misunderstandings, tension and eventually a fullblown crisis. Placating another person may keep a fragile peace between two people but it 42

only serves to legitimise bad behaviour. Resolution, at best, offers the opportunity to restore what was lost. When fighting fair, ground rules must apply. Here are some helpful ideas when resolving relational conflict. Remain calm. Having your point considered by others is best made by dialing down your emotions. Don’t play the blame game. Putting the other person on the defense and assigning all fault to them is counter-productive. Demanding that the other person must change, only serves to shut down meaningful discussion. Take responsibility for your behaviour and any role it might be playing in causing tension. Be specific about what is actually bothering you. Throwing the kitchen sink at someone, complete with

Express how you feel. Honest communication helps to focus on what needs to be addressed. When expressing feelings, rather than saying “You make me feel…”, instead say, “When you say or do this, I feel…”. It may seem like a game of semantics, however, the subtle difference shifts ownership and responsibility of your emotions and behaviour, back onto you. What we personally own, we tend to take better care of when something needs repairing. Neither dominate or clam up. Communication is a two-way street. Domination merely belittles or diminishes the other person’s version or perception of events. Hopefully both parties in the relationship adopt healthy measures to get to the root of the problem. However, even if the other person isn’t fighting fair, it is still important to keep yourself emotionally, physically and mentally safe. Don’t let your character change because of someone else’s negative or harmful words and actions. Adopt constructive measures that maintain a healthy dose of personal respect and integrity. A positive change can result from any conflict, even if the change is only to raise your own personal level of self-awareness and improve other and future relationships. www.livinglocalguide.com.au

YOURHealth and the increasing use of fertility treatments, such as IVF and fertility drugs. In Australia, approximately 8% of all pregnancies conceived with IVF result in the birth of twins. Interestingly, the highest rates of twins occur in Africa and the lowest rates occur in Asia. Having non-identical twins can run in the family, while having identical twins is a spontaneous event.

“There are two things in life for which we are never truly prepared: Twins”.

In Australia, almost 4500 sets of twins are born annually meaning a set of twins is born every 66 births.

Josh Billings was correct in saying that back in the 19th century, and it still stands true today – there are no early signs for a twin pregnancy so until a mother has her first ultrasound, she won’t know to expect double!

There are two types of twins: monozygotic, the one egg splits in two with each twin having the same DNA (hence are known as ‘identical’), and dizygotic (also known as ‘fraternal’ or ‘nonidentical’ twins), derive from two separately fertilised eggs. These twins will have different - AnitA KochAriAns DNA, just like ordinary sisters • General Podiatry and brothers.

The rate of identical twins is relatively constant worldwide, while fraternal twinning rates vary with geography, ethnicity, maternal age at conception and access to fertility treatments. Twins births are on the rise with women having babies at an older age

LIVING LOCAL MAGAZINE SUMMER 2012

Compared with singleton pregnancies women carrying twins usually have more pregnancy symptoms, such as morning sickness and backache. They are more likely to develop other complications, including anaemia, gestational diabetes and hypertension. Women with twin pregnancies are at higher risk of developing hypertension during pregnancy than women carrying one baby. Twin pregnancies can also more result in smaller babies being born early. In fact, more than half of all twins are born preterm. For women with a twin pregnancy, it is important to seek care from health care professionals able to provide emotional support and information specific to their pregnancy. Women should be advised on nutrition, diet, lifestyle, timing and mode of delivery, breastfeeding and parenting. Although one can never truly prepare for twins, the birth of two precious babies is magical and joyous. Some might even say twice as much! In this edition of Living Local, I want to share some thoughts of Kevin Bailey, CFP FFPA, one of Australia’s leading professionals in personal investing.

DON’T SIT ON THE FENCE However, you have to be careful not to lean too far the other way and spend your investment life sitting on the fence. It is a mistake to think that you aren’t taking any risk leaving your money in the bank. Over time the ravages of tax and inflation can decimate your capital. But a high interest savings account is a great place to park your capital in the short term whilst you complete your research and consider the recommendations you’ve had.

Most speakers ramble or speak too long. Take a lesson from Sandra Bullock’s Academy award acceptance speech for The Blind Side and notice the elements that make it effective.

Last night I watched an acceptance speech that was mind-numbing and unending. I wished I was in the dentist’s chair getting a root canal instead. Whether it’s the Emmys, Oscars or a Business Award, it is the same experience where people give boring speeches, thanking a long list of people. With the end of the year approaching, you might receive an award or prize for helping out in the community, being the best sales person, or winning a contest. Here is how you can give a knockout acceptance speech by remembering 5 points.

48

1. Start with a humorous opening line. “Did I really earn this or did I wear out?” Humour in an acceptance speech works if you keep it short and with a good punch line that is relevant. 2. Acknowledge the competition. Sandra spoke to each of the nominees by name and said what she appreciated about them. You can mention other participants that made the competition tough. 3. Thank the people who gave you the award and helped you to achieve your goals. Sandra thanked the family who provided the story, the people who made the film, and people who showed her support. You can thank your company, institution sponsors and mentors for their contribution.

about for her and thanked all the mothers who take care of children. She skilfully transitioned into thanking her mother and her husband. You can also thank your close friends and family for their support when you have put in the long hours and their words of encouragement. 5. End with a thank you and exit the platform. Commit to ending on time. Finish your speech strong. PS: It is better to prepare an acceptance speech and not receive an award, than to not prepare and you do receive an award. Always be ready to give a speech with impact. You can see Sandra Bullock’s speech at https://www. changingtools.com/acceptancespeech.php

4. Make it personal. She talked about what the film was

BEYONDLocal “THE QUESTION IS NOT, CAN THEY REASON? NOR, CAN THEY TALK? BUT, CAN THEY SUFFER?” ~ JEREMY BENTHAM, 1823.

In addition to moral and ethical considerations, there are compelling economic arguments as to why live export should be banned. According to an independent report, the live export trade has had the following implications for Australia: 1. A loss of $1.5 billion in GDP 2. A loss of $270 million in household income 3. Around 10,500 jobs sacrificed (Heilbron, 2002).

For the last three decades, many millions of animals (particularly cows and sheep) have been boarded, forcibly and callously, onto massive 'carrier' vessels en-route to foreign countries as a result of the live export industry. Their fate, predetermined and poorly regulated, is to be sacrificed for 'cultural practices', tradeagreements and economic profit. Even the most hardened drover would have to agree that upon seeing an export vessel being loaded with its live 'cargo', in preparation for what will be a long and deadly journey, this practice is cruel, unnecessary and quite indefensible. However, in the absence of empathy or compassion, over the years, millions of animals have died on the high seas before they have even reached their distant destinations. Such extreme waste and shameful neglect is not justifiable, but it is strongly reflected in the high rate of travel-mortality.

Upon arrival, animals endure further trauma and suffering. They are thrown, dragged and handled inappropriately. Some sheep are shoved into car boots to be taken away for 'home-slaughter'. Many animals have their throats slit without being pre-stunned as most importing countries do not have the appropriate laws in place to ensure protection and humane treatment of animals that arrive from Australia. Animal overcrowding leads to sickness and death, which also makes it easier for importing countries to claim that animals are diseased and to then reject the 'cargo'. The token veterinarian on board each ship is unable to provide adequate care or treatment. In September 2012, this was made evident with the rejection of Australian sheep in Bahrain and Pakistan. Despite being healthy, twenty-one thousand sheep were brutally slain or buried alive by local authorities in Karachi, Pakistan.

www.livinglocalguide.com.au

These losses arise because animals are exported live rather than processed onshore. The economic benefits of onshore meat processing are clear: 1. Job creation (especially in regional areas) 2. Value-adding to the economy 3. A growing market overseas for meat that is slaughtered humanely. In summary, our focus should be on animal welfare and the gradual cessation of the liveexport industry altogether.

HELP STOP LIVE EXPORTS 1. WSPA ‘Humane Chain’: humanechain.org.au 2. Order a free ‘Live Export Action Pack’: animalsaustralia.qnetau.com/ take_action/action_packs.php 3. Put a sticker on your car: stopliveexports.org/help-stop-live exports/take-action.html 4. Write a letter to your local MP or send an electronic letter via the RSPCA: rspca.org.au/how-you-can-help/ campaigns/ban-live-export/ 5. BEYONDLocal and the excellent meals provided by the trekking cooks arranged by our logistics partner, Ace the Himalaya. Despite being tired after a hard days work, they found the energy to play with the local kids and explore the village. St Augustine’s fulfilled all their goals and are very keen to return next year.

ST AUGUSTINE’S VISITS NEPAL

Like most of the independent secondary schools, St Augustine’s at Brookvale runs a community service program, The SEA program, (Service, Education & Awareness). The idea is that the boys do some volunteer service as part of a horizon expanding adventure overseas.

monsoon rains before they could proceed. If not transfixed by the plunging falls from the edge of the road, the views are spectacular. Manaslu, over 8,000 metres high and where 11 climbers died in an avalanche in September, is visible most of the way.

We arranged for a party of 13 year 10 boys and 4 staff to camp at our schools in Arupokhari for 6 days as part of a two week SEA program visit to Nepal, from 25th September to 1st October.

As St Augustine’s specially asked for a physical job, we arranged for them to cement render the outside of the Bhairabi school buildings. Rendering the buildings, while very desirable, has not been a priority. Fortunately the St Augustine’s team had $8,000 available for materials which was enough materials to render the outside and most of the inside of the school, a major step forward.

Just travelling to Arupokhari is an adventure in itself. The tar road ends some 5 hours from Katmandu at Gorkha, the provincial capital. The dirt road steadily deteriorates as it winds deeper into the Himalayan foothills. Several stops were required to rebuild the road to repair damage from the 52

The trip was a major success. The boys thoroughly enjoyed the adventure, evening campfires

The background is interesting. St Augustine’s has previously sent SEA program groups to Nepal to work in a school for disabled children in Kathmandu. Dean of the Middle School, Mr. Peter Nolan was keen to arrange a ‘hands-on’ alternative in the Nepal hills. A staff member at St Augustine’s knew someone in the UN mission to Nepal, who was approached for a recommendation. The UN person asked the Australian Embassy, and the Ambassador recommended our project! The bone bucket at Eastern Road Quality Meats has been a great source of fund raising. To July we banked $5850.00 from the bone bucket. I expect it will be around $10k for the year hopefully. I am travelling to the school on 1st Jan with 4 local people from Wahroonga on a fund raising adventure trip... This really is exciting for those seeking something different. Not a holiday, an adventure. www.livinglocalguide.com.au

A couple more quick stops at the Smelly Cheese Shop to grab some much loved Labna from Binnorie Dairy and on to Tamburlaine Wines for some dessert wine for Tina and we were heading home after what had been a fantastic escape for the day.

It was a glorious spring day and my friend Tina and I jumped in the car mid-morning on our way to the Hunter Valley. After a beautiful two hour drive we arrived at the Hunter Valley Visitors Centre and picked up a map and tourist guide. Second stop was Peterson House, producers of premium sparkling wine. We knew what we wanted so, even though the tasting room was jam packed with bus loads of people, we quickly purchased a couple of bottles of their very special Sparkling Botrytis (the only one I’ve ever seen) and

walked next door to the Hunter Valley Chocolate Company to have the mandatory (in our eyes) strawberry skewer dipped in chocolate. We grabbed a bite of lunch and then went to Ivanhoe Wines for our one and a half hour personalised seated wine tasting using our voucher from the spring edition of Living Local Magazine. The tasting was fantastic, great service, fabulous wine, great cheese platter and the rocky road for dessert with coffee, just yum! The setting at Ivanhoe is gorgeous. Sitting on the balcony watching the geese wander around the lake and beyond that, seeing the vineyards that produce the grapes used in the wine you taste, is lovely. Armed with a case of wine we jumped back in the car.

We’d love to hear from you! competition@livinglocalguide.com.au Remove crayon off your walls by blowing it with a hair dryer for a minute and then put a little baby oil on a cloth and wipe it off. The heat softens the crayon and the oil removes it. Always salt your potatoes before you cook them. As they only absorb salt when cooking, very hard to salt potatoes once cooked. Write out your weeks menu and leave it out so you remember to take meat out of the freezer. This saves you having to think of things to cook each night and money as you’ll shop more effectively. Also take a photo of your menus so you can look back and remember your meal options. Most oven thermostats are not accurate especially when using fan forced. Buy yourself an oven thermometer that sits in the oven they are only about $10 and will make you a much more successful cook/baker. If you don’t have drawers in your kitchen for your plastic containers, find a cupboard you want to use and get a large plastic tub that fits in it and use it like a draw for your plastics.

It's great to see that awareness continues to grow in regards to ethically sourced and traded products. With so many certification programs it's hard to truly know the ins and outs without a lot of research. With coffee, Fair Trade Certified is a good place to start. They have done some great things in regards to raising awareness on the issue. That aside, it needs to be said that just because a product is not Fair Trade Certified, it does not mean that it has not been traded in a fair and ethical manor. Some others to look for are UTZ certification and Rainforest Alliance Certified. Also, just because a coffee is not sourced through a certification program does not necessarily mean it was unethically sourced. The specialty coffee movement has driven Direct Trade programs whereby the supply chain has shortened and roasters are able to have a working relationship directly with famers. Ethical and

12 LIVING LOCAL MAGAZINE SUMMER 2012

transparent lines of trade can be opened up to ensure farmers and their workers are getting paid a fair wage and have adequate working conditions as well as support for their families. If you are willing to put your foot forward in supporting ethical trade, you have to understand that there are costs involved to maintain these standards. As a result, be prepared to pay a higher premium. On a related note, ethically sourced or traded coffee does not necessarily mean that it is going to be a quality product. All of these certification programs and models for ethical trade are a start and are far from perfect. We still have a long way to go. How to know? Ask your local barista, coffee shop or roaster where the beans are from; were they sourced through ethical channels? If they don't know, they could source the information. The advice from long range weather forecasts seems to be that this summer will be hotter and drier than last summer. Certainly it has already been hot and our gardens are dry already. MULCHING Plants can be helped through a hot dry summer by mulching the garden beds. The layer of mulch holds moisture, helps the soil and plants cope with the heat of summer whilst suppressing weeds. Preparing the soil is the first thing. Weed the garden bed, fertilise the soil and water thoroughly. Soil wetting agents can also be sprinkled over the soil before mulching and raked or

mixed in, especially in pots. Mulch with a layer of wet newspaper and your mulch of choice e.g. lucerne, sugar cane or pea straw which are better than wood chip in my opinion as the mulch eventually breaks down and adds to the soil mix. Watering the mulch while you are spreading it keeps the dust down. Make sure that the mulch is cleared from the plant stem or it will rot. WATERING Plants need deep watering in summer, ideally with recycled grey water or collected rain water if possible so that water bills stay affordable. Early morning watering is probably best so the

plants do not become stressed during the day. Some say that watering at night can leave plants wet for long periods and lead to problems with fungal disease. PRUNING Fast growing summer crops like tomatoes need to be pruned and tied to stakes. Fruit should be removed as it ripens so that insects aren’t attracted to rotten fruit. Azaleas, Rhododendrons and other shrubs can be trimmed or pruned when they have finished flowering. Wisteria needs to be regularly trimmed, otherwise it will go places you don’t want it to! YOURHome FRUT AND VEGETABLES There’s nothing better than growing your own fruit, vegetables & herbs. Citrus trees love the sun & there are many dwarf varieties available which are great for pots. Create a herb garden & use them to jazz up salads, sauces & dressings. Keep them healthy with fortnightly applications of the liquid fertiliser Powerfeed for Vegies.

December is officially the first month of summer & the month for entertaining at home so most of us will be planning a quick garden makeover.

PLANTS We all like to have our outdoor areas looking colourful for Christmas so here are just a few of the many plants that are available right now. Hydrangeas are at their best at this time but keep them in the shadier areas as they need shelter from the harsh summer heat. In contrast, Vincas love the sunshine & heat & this superb perennial will flower right through to the end of Autumn.

POTS Potted colour is great to instantly spruce up pots & empty spots in the garden. The pick of what’s available now are the petunias, lobelia, alyssum & bedding begonias. Use Thrive for Flower & Fruit, a soluble fertiliser high in potassium, every couple of weeks to keep those flowers coming. Hang baskets of colourful spreading Petunias, Geraniums & Dichondra Silver Falls in your sunnier areas & Nodding Violets, Tahitian Bridal Veils & lush Bostons Ferns in the shadier parts.

The Mandevilla is a fast growing climber that produces abundant white, pink & red flowers & talking of climbers, you can’t go past the heady scent of the Chinese Star Jasmine. 10

LIVING LOCAL MAGAZINE SUMMER 2012

WATERING Water your plants well – deep watering & mulching will go a long way to ensuring their survival through the heat of summer. Fertilise your plants with Garden Gold every couple of months to keep them well fed & apply a seaweed solution like Seasol to promote root growth & to help your plants cope with the stresses of heat & the inevitable pests & diseases. CHRISTMAS Christmas wouldn’t be the same without a stunning Poinsettia. Put it in a white ceramic pot to show off the red leaves & make it the centrepiece on your table. Give one to a friend or loved one, after all, a plant is the gift that keeps on giving! Merry Christmas!

YOURHome HOW DO I REMOVE A TICK? If a tick is found, it should be removed as soon as possible. Tweezers or special tick removing hooks can be used to gently lever or pry them off the skin. Your veterinarian can show you the best way.

WHAT ARE TICKS? Ticks are small external parasites that attach to and suck the blood of animals (and humans). The most common species and the one we are most worried about with our pets is the paralysis tick (Ixodes holocyclus). They are found along the eastern coast of Australia from North Queensland and all the way down to Victoria. HOW YOUR PET GETS THEM? Ticks attach to pets by climbing onto grass, low foliage or bushes where they wait for passing hosts to attach to and feed on. HOW TO CHECK PETS? Checking your pet daily for ticks is extremely important especially if you live in tick prone areas. To check your pet for ticks, use

your fingertips to feel through your animal’s coat. Ticks or tick craters (raised areas where a tick may have attached) feel like small lumps on the skin surface. SIGNS OF TICK POISONING: • Lethargy • Weakness or loss of coordination in the hind legs (wobbliness or not being able to get up) • Change in the bark/meow • Retching, coughing or vomiting • Loss of appetite • Progressive paralysis to include the forelegs • Laboured or rapid breathing If your pet shows any of these signs it is very important to have your dog seen by a veterinarian as soon as possible, as affected and untreated animals may die.

WHAT DOES TREATMENT AND PREVENTION INVOLVE? Treatment essentially involves the administration of a tick anti-toxin and supportive therapy in hospital until your animal has recovered from the tick poisoning and is strong enough to go home. Prevention, as always, is better than cure. Products available include sprays, rinses, spot-on treatments and tick collars please consult your veterinarian for more information on what is appropriate for your pet. It is important to note however, that no tick preventative products are 100% effective in preventing ticks, therefore it is still extremely important that you continue to search your pet daily and immediately remove any ticks that are found.

YOURHome The decisions about what is needed in a future property vary for everyone. Sometimes it seems impossible to find independent advice and obligation free support you require in making these decisions. Kevin Hinder, a JP and Upper North Shore Specialist, understands many of the downsizing options available to you and, over the years, has helped many families in Ku-ring-gai make the right decision. He can provide many of the answers to your questions and take the pressure off moving home.

Is it time to enjoy the finer things in life rather than spending precious hours on maintenance and upkeep of the home? Are you sick of being tied to daily chores? Do you want more travel, more comfort and less stress? Selling the family home can be challenging. After raising a family and spending 30 or 40 more years in the same location, the prospect of moving can be daunting. There can also be an emotional toll when moving from the family home to a new environment and a change in lifestyle. It is important to be informed when making these

4

decisions and to be aware of the benefits in downsizing - both in terms of increased economic resources and time to enjoy life free from home and garden maintenance. Once the decision to downsize is made, it is a good idea to start sorting and clearing rooms in the house that are currently not being used. Bedrooms that were once occupied by children, rumpus rooms or other less frequently used rooms where you will often find items that have not been used for quite some time and that can be passed on to children, grandchildren, charity or perhaps sold on eBay.
