here once spring and fall in the world-renowned ski town and summer recreation mecca of Vail, Colorado, signified restaurant closures, deep kitchen cleans and front-of-the-house employees’ weeks-long trips to Indonesia, there has increasingly been only a slight lull between restaurant seasons in Vail and in many other of Colorado’s most famous resort towns. One Vail Chef that has experienced this trend first hand is Paul Anders, executive chef of two Vail restaurants; the iconic, Sweet Basil, and ultra nouveau, Mountain Standard. Anders originally moved to Vail in 2005, seeking a change from the fast-paced environment of cooking for successful urban restaurant giants including the Brown Palace in Denver and the Broadmoor in Colorado Springs. Only, when Anders got to Vail, cheflife didn’t slow down. Anders accepted a position as Chef de Cuisine at Sweet Basil and after only one winter season, with his experience and dedication to his craft, he was promoted to Executive Chef. In December 2012 he was promoted again to Executive Chef of both Sweet Basil and Mountain Standard, overseeing menu development at both restaurants. Any in-between season lulls have been disappearing ever since. “The classic ‘mud’ or ‘off’ seasons have progressively gotten shorter and shorter,” said Anders. “I moved here eleven years ago and from then to now, there’s a remarkable difference in the number of visitors and residents here year-round. We do close to one hundred covers a night during the shoulder season, when five years ago, we did thirty.” 6 livsothebysrealty.com
The DISAPPEARING SHOULDER SEASON of RESTAURANTS in VAIL It is not only the influx of visitors and residents enjoying Vail year-round that keep Anders and his team busy during the disappearing ‘off’ season, but increased efforts by the town of Vail to broaden cultural experiences, most recently by securing a new sister city relationship with San Miguel de Allende, Mexico, are reasons for more bodies occupying seats in Chef Anders’ restaurants year round. “This year, we’re really pushing the idea of a cultural culinary exchange with top chefs in San Miguel de Allende. We’re going down for a big food festival in the middle of Junewe’re participating in it and cooking in it. The following week, their most notable chefs will come here and do a 5-course dinner at Sweet Basil. The two Mexican chefs will do a course, our chefs at Mountain Standard will do a course and our pastry chef will do desert.” What keeps patrons visiting Sweet Basil and Mountain Standard during the traditionally “off” seasons are the playful combinations and free cooking techniques that both Sweet Basil and Mountain Standard are known for despite their markedly different concepts. “Sweet Basil is 39 years old this year,” said Anders. “The cool thing about Sweet
Basil is that it’s hard to define what it is, therefore it’s easy to stay ahead of the curve, do remodels, freshen things up- so it doesn’t feel like a 39-year-old restaurant.” What is undeniable about Sweet Basil, is that it’s always evolving. “I’ve looked at past menus I’ve done just five years ago, and laugh at them. There have been so many changes,” said Anders. “While the restaurant is upscale, we pull from influences that are inspiring to us. If the chefs are interested in Spanish cooking, we’ll create Spanish dishes- it’s the fun about modern American cuisine, it’s always evolving.” One thing that stays consistent at Sweet Basil, is its name. “At this point, the name Sweet Basil is such a brand that I don’t see us changing it,” said Anders. “We recently bounced the idea around, but at this point- it would be like changing the name of Kraft. Sweet Basil is just so iconic in Vail.” The inspiration for Mountain Standard was based on a more casual approach. “Purposely, we wanted a place that was more approachable on a daily basis,” said Anders. “Our original blueprint for Mountain Standard was that we wanted a place that is as comfortable to a CEO as it is to a liftie. We quickly focused on the wood-fire element-we wanted to have that openness when we cook.” Anders and his team employ a wood-fire cooking technique that touches nearly every dish on the menu, down to the wood-charred tomatoes in Mountain Standard’s signature bloody Mary’s. “It’s not smoke-house style BBQ, it’s a quick cooking process. Wood-fire cooking is
not a very level playing field. Put a steak on a gas grill versus a wood burning grill- same seasoning, same cut of meat, and without a doubt, the wood grilled meat is going to taste better. It’s primeval and really organic- that’s the fun part about it. We can’t just come in and turn the knob. To get a good cooking surface it takes about three or four hours and then maintaining that throughout the day.” And while wood-fired cooking is the preferred style of cooking at Mountain Standard, there is no shortage of variety of dishes. Mountain Standard has been open for only three and a half years and they are already on volume 29 of menus. “The volume number is printed on the top of every menu. It’s kind of a cool little thing to look for.” And despite the volumes of menu’s Mountain Standard puts out, one thing that is for certain is that the menu items are always fresh. “Hopefully it’s a forgone conclusion that restaurants these days are seasonal,” said Anders. “We try to be micro-seasonal. Colorado Peaches are amazing, but they’re not ready until August- so that’s when you’ll start seeing them on our menus. We work with farmers that give us a little road map of what’s coming in season. We like to use a trickle effect, introducing new menu items when they become available. We’ll change 7 or 8 items one week, then the next week, change 4 or 5 items as the weather changes and more becomes available.” Even in a place with as high of culinary peaks as there are in Vail, there are also valleys. “It’s hard for chefs to support a high level of quality year round. People come and go,” said Anders. “There’s a huge shortage of cooks in the country. Cooks don’t get paid very well. They pay a lot to go to culinary school, they need to pay rent, and it takes long hours and a lot of very hard work to get to the point of becoming a professional chef.” Anders uses unique tactics to retain top quality chefs at Mountain Standard and Sweet Basil.
“We offer employee housing opportunities, great benefits and wages, but the one retention factor we’ve found to be the biggest influence is that we try to be an educational kitchen; cooks love to learn. If they’re not feeling like they’re learning every day, they’ll go somewhere else. Keep teaching them, keep them engaged, keep them,” said Anders. In an environment where off seasons are shrinking based on more and more people choosing lifestyle over life’s limitations, chef Anders still manages to be true to his roots and the reasons that inspired him to move to Vail in the first place. A regular contributor and 3-time winner of Taste of Vail (most notably for the annual lamb cook off event), and participant of Gourmet on Gore, another signature Vail culinary event, Anders stays true to all that’s local. “We end up jamming so many things into the off season- it’s never really slow. In addition to all the local events we prepare for, we do weekly special-event dinners, cocktail parties, and more. It’s totally about the lifestyle. It’s about not having a stoplight on my way to work. I have two young kids, being able to raise them in a place like this is unparalleled. That, and being able to work at two caliber restaurants is pretty special.”

How Music in Colorado’s Resort Communities Has Become More Than a Performance BY BRITTANNY HAVARD
M
usic has long been considered the natural medicine thought to have the ability to relieve stress, raise self-awareness, and elevate one’s mood. When you combine those attributes with the qualities associated with being in an outdoor environment- improved attention span (short and long-term), boosts in serotonin levels (the feel good neurotransmitter) and increased activity in the parts of the brain responsible for empathy, emotional stability, and love– magical things can happen. Listening to music in the mountains not only lifts the spirit, but it refreshes the mind and body.
Colorado’s resort mountain communities are increasingly placing as much investment in music programming as they are into skiing. With the caliber of quality, professional, and above all, inspiring, ways to listen to music in the mountains, there is no shortage of ways to improve your outlook, and interestingly, it’s not just the musicians that are giving back to resort communities. Today, the mountains are giving back to the musicians. No longer are summer musical residence programs a one-time experience, but rather, Colorado’s mountain towns are increasingly becoming a second home to these musicians, establishing Colorado’s most notable resort towns as centers for the arts, in addition to serving as hotspots for recreation. Two organizations whose musical roots continue to grow are the National Repertory Orchestra in Breckenridge and the Bravo! Vail music festival in Vail. For more than 50 years, the National Repertory Orchestra has played an important role in preparing young musicians for careers in the orchestra world, while delivering outstanding musical performances for residents and visitors in Summit County (Breckenridge, Keystone, Copper, Frisco, Dillon, Silverthorne). Conversely, Bravo! Vail, invites already-professional orchestra musicians to Vail, which plays host to four world-renowned orchestras in a single season, bringing an unparalleled listening experience to the community. While both organizations operate on dramatically different performance structures, they each bring the gift of quality music programming to the mountains, and the mountains increasingly serve as a second home to the participating musicians. 8 livsothebysrealty.com

CHANGING LIVES THROUGH MUSIC When Douglas Adams, CEO of the National Repertory Orchestra, came to Breckenridge he was not expecting the high level of quality musicians that would be performing at an organization aimed at preparing youthful musicians for their first orchestra job. “It’s not a student orchestra, it’s a pre-professional orchestra,” said Adams. “One of the things that really surprises people when they hear the orchestra for the first time is how good they are. I couldn’t believe it. Winning a seat in the orchestra means first and foremost [that] you’re really good. That’s the first thing.” Over an 8-week period, NRO musicians work with world class guest conductors and perform as many concerts as a full time symphony orchestra performs in a nine-month season. “Our organization is experience based. We don’t teach musicians, what we do is give them experience playing a substantial amount of music.” Every year the NRO auditions nearly 1,000 musicians between the ages of 18 and 29 in about 25 different cities across the country to fill the 88 tuitionfree spots of the orchestra. “Most musicians have graduated college; some have completed graduate degrees. They are professional musicians gaining the experience to help them secure their first big job in the music world,” said Adams. “After attending the NRO, alumni are employed by virtually every professional orchestra in America, and…around the world.” The NRO program demands a rigorous playing schedule to prepare these youthful musicians for jobs in the orchestra world, an industry which has gotten more competitive than in years past. “Typically, here in the summer, our musicians rehearse twice daily, amounting to between four to six hours of practice a day,” said Adams. “What most people don’t realize is that the musicians have to show up already knowing everything. They don’t learn the music in rehearsal, they learn it on their own. When they get to rehearsal, they are ready to play.” Today, there is more to a job in a symphony orchestra than being on stage. “We help our musicians understand other components about what playing for a symphony orchestra entails to be successful,” said Adams. “It used to be performing on stage was the beginning and end for an orchestra musician’s job. It’s just not like that anymore.” NRO students participate in a multitude of programs in addition to their standard play including educational outreach programs and visits to local schools to mentor children. Leaders in the industry conduct seminars, engaging such subjects as music therapy, outreach and education. Musicians reach out to new and under-served audiences performing chamber ensembles through the community. “Representing the orchestra in the community as a professional is important- it also makes the community itself successful,” said Adams.

What there is no shortage of, is the bond that NRO students form with the community while living in Breckenridge, often inspiring them to come back. “Musicians take inspiration from their surroundings,” said Adams. “Recruiting people to come play with us is greatly enhanced by the program being in Breckenridge. We encourage the musicians to get outdoors in their free time and hike and bike- they do all of those things. Some of our young musicians have never seen mountains like these before. They’re blown away.” Breckenridge provides more than just a beautiful setting to the musicians, it provides structure and a sense of belonging. “There are some places that have visiting musicians, and while they’re good musicians, they don’t take it seriously

because they’re on vacation. Our people are here because they want to be here. They work hard, they want to learn, and those things contribute to making the music quite beautiful.”
COMMUNITY INVOLVED Another unique attribute of the NRO is its community link program. “People that live up here sort of ‘adopt’ a musician for the summer. The musician doesn’t live with them, but the family usually invites them over for dinner once a week,” said Adams. “These relationships often last for years. They stay in touch and often come back to visit year after year. It’s a very rewarding part of our program, to serve as resource to the musicians.” To truly experience the level of quality a NRO performance entails, one has to see it. With the variety and frequency, the NRO performs, both visitors to Breckenridge and residents alike benefit from attending a production. “We believe we play enough of a variety of music during the summer that we’re going to play something almost everyone will like,” said Adams. “It’s important to understand the concert experience at the River Walk [Center of Events], where the NRO typically performs, is very inviting and fun. People who might be reluctant going into a big concert hall won’t be reluctant here. Here, you can take a glass of wine to your seat. It’s very inviting. It’s not in any way a scary place to a person that hasn’t been to a classical concert before.”
Adams believes that it is a joy to any observer of an NRO performance to witness the clear indication that these young musicians are not just performing, but enjoying the experience themselves. “The thing that contributes to the high quality of music making is that the young people that are here are thrilled to be here. They give it their all,” said Adams. “It makes you feel good to see the musicians doing what they’re doing, and loving what they’re doing. You appreciate seeing how much fun they’re having.” While the NRO performs in Breckenridge only in summer, the foundations the young NRO participants develop last a lifetime. “Virtually every week I see an email from a graduate of this program, who has gotten a job, won an audition, and in one way or another say ‘I couldn’t have done it without the NRO. It has changed my life’.” With the top quality of music the NRO offers, attending a performance should be a do-not-miss activity for any visitor or resident of Breckenridge.

What started as a small Chamber music festival in Vail has grown to become the only festival in North America to host four world-renowned orchestras in a single season. Now in its 29th year, Bravo! Vail is hailed as one of the Top 10 “can’t miss” classical musical festivals in the United States by National Public Radio, and, increasingly, has put Vail on the map as one of the premier listening communities in the world. Jennifer Teisinger, executive director at Bravo! Vail joined the organization in 2015. With a background in orchestral management, Teisinger was drawn to the summer festival environment for the simple reason that festivals and music make people happy. “You are outside listening to some of the best music in the world, surrounded by the most majestic mountains in the world. The people in attendance and the people on stage are both simply thrilled to be there. It’s great to be a part of an organization that’s enriching people’s lives,” said Teisinger.

Orchestras visit from various metropolitan areas and some have had a relationship with Bravo! Vail for over a decade. “Many orchestras look for summer opportunities to go on tour so they are not performing in their home concert hall 52 weeks out of the year. One reason these musicians love Bravo! Vail is because it is not a tour, it is a residency. Orchestra musicians are coming and living here for a week and a half or more. They discover their favorite hiking trails, they make friends. Vail is unique in that it offers several orchestras a summer home in one of the premier resort destinations in the world. “One of the greatest things about Bravo! Vail is that the organization brings in so many different orchestras to Vail. It’s the Philadelphia Orchestra one week, the New York Philharmonic the next,” said Teisinger. Bravo! Vail is also unique in that it has the uncanny ability to connect visitors and residents of Vail to their home communities. “There are people that own a second home in Vail that also own a home in New York City. They go see the New York Philharmonic in New York, and then they see the New York Philharmonic here in Vail. This goes for Dallas as well. For these people get to see ‘their’ orchestra when they come to Vail- it’s really something special. It’s bringing a little piece of home with them.”
2016 is the first season Bravo! Vail will host four orchestras; the Dallas Symphony Orchestra, the Philadelphia Orchestra, New York Philharmonic, and one international orchestra, Academy of St Martin in the Fields. Each performs several concerts during their stay in Vail. By having multiple orchestras perform, Vail’s summer season is extended significantly. “Having a fourth orchestra start as early as June 23 is a huge opportunity for Vail. Some would once say summer doesn’t really get going in Vail until around the 4th of July, but that’s just not true anymore.”

Vail’s visiting orchestras. “The relationships we have with these orchestras go back years and years,” said Teisinger. “We want the orchestras to love Vail and to have their patrons come to Vail and experience what a great relationship this is. Ultimately, it is our hope these orchestra patrons develop a residency relationship to Vail.” When orchestra musicians are in Vail, they become a part of the Vail community. “Vail is a brilliant place to be in the summertime. These orchestras are coming in from major metropolitan areas, and enjoy an escape from the city, but what we are seeing more and more, is that these orchestra performers keep coming back to Vail, increasing the community’s status as a true draw for not only lovers, but performers, of the arts.” Bravo! Vail has demonstrated success by emulating the international feel that is so iconic to Vail. “Given that Vail is a world-class destination for recreation, it has to live up to that reputation in the arts as well,” said Teisinger.
A PERFORMANCE FOR ALL Each domestic orchestra plays six concerts at Bravo! Vail, and typically holds one rehearsal for each concert. A unique attribute of the organization is its structure which makes it possible for residents and visitors to Vail to experience the symphony at no cost. “Bravo! produces more free concerts than ticketed ones,” said Teisinger. “Even if you didn’t want to buy a ticket or lawn pass you can still go see the music because we have so many concerts happening during the festival.”
There’s something for everyone at a Bravo! Vail performance and the organization prides itself on being an inclusive experience. “You can get dressed up and have a seat close to the orchestra and do dinner and cocktails before, and create a really elegant evening out of it. Or, you can sit back with your picnic basket on the lawn in jeans and a tee shirt and make the experience as casual as you want.” While audiences come for a variety of reasons, they stay with Bravo! Vail for the ultimate trifecta: enjoying extraordinary music in the company of great friends and the natural beauty of the Vail Valley.
