I

n an era where altering your shape and face to achieve beauty, youth and freshness is accepted and normal, we run the risk of seeing an increasing volume of people looking less and less like themselves and more like a caricature of their former selves. There is a distinguishing line between making a person appear naturally fresh faced and rejuvenated, and making them look fake and (dare we say it) older because they look like they have had every injectable option available. The responsibility for how our clients look after their treatment lies entirely with us as practitioners. It is much easier to provide the ‘frozen’ look, or to overfill past the face’s natural boundaries and structure than it is to achieve fresh faced, natural rejuvenation. Our aesthetic compass must always point in the right direction. If people are walking out of our clinic with a look that isn’t right for them it will give our clinic the wrong reputation. As practitioners in this industry it is incredibly important we fully understand the unique balance and harmony of our client’s faces. We need to be able to see how one person’s face moves in conversation and laughter, and treat them in the best possible way - and then do something entirely different for someone else. It is not a set formula for every person walking through the door. The human race is beautiful in its uniqueness and no two people are ever the same. We are defined by the twinkle in our eyes, the little fine lines around them that show we have lived and can take a joke, as well as the wonderful unique look of our own faces. ‘Less is more’ is the best approach to take when administering botulinum toxin (‘Botox’)

The key to good facial rej uvenation is the clever minimal u se of Botox, and the even cleverer and more minimal u se of fillers. or fillers. It is a myth that lots of Botox makes you look younger. In your 30’s Botox can be very effective, but as you venture through your 40’s and into your 50’s we tend to administer smaller amounts of Botox as whilst it softens lines, a line-free area starts to mismatch the rest of the face and the skin’s texture which only serves to emphasize lines elsewhere. It no longer gives that light freshness it once did. In the 40’s and over, the use of fillers becomes advantageous. As we head into our forties, the natural ageing process means we produce less water in our skin and our natural collagen production slows. We start to lose the volume in our upper face as fat pads descend southwards producing heaviness around the jowls. Clever use of fillers can be used to re-volumise and re-contour, thus enhancing the face’s natural features and replacing lost volume where it is most needed. In the UK, we see many clinics offering ‘areas’ of the face that can be filled, and the client dictates the area they want treated. We however believe there is an inversion of roles that needs to be addressed. As injectors we

WWW.QUEENSWAYSKINCLINIC.CO.UK winter

19

2015

need to see past the client’s request and not simply inject wherever we are told. The approach to using fillers should be to treat the whole face, rather than one area for much more natural and subtle results. It is with this in mind, we embarked on training in the 8-point non-surgical facelift (the so called liquid facelift pioneered by renowned Brazilian surgeon, Mauricio de Maio). By clever administration of filler at up to 8 key points in the face you get a whole, natural, subtle lift to the face which is very effective. The key to good facial rejuvenation is the clever minimal use of Botox, and the even cleverer and more minimal use of fillers. Not crossing the line between natural enhancement and obvious over injecting is the key to success for both client and practitioner. Frozen and flat faced is not sexy or attractive. We want to see that person throw their head back, laughing, talking and smiling - all the things that really define a confident, sexy and attractive human being.

The artistry of facial rejuvenation‌ A delicate touch to leave you looking radiant and fresh

Introducing the 8-point non-surgical face lift that enhances the face’s natural features. Pioneered in Brazil and now available at Queensway Skin Clinic. Book a free 30 minute consultation with Dr Uzma Olbrich or Dr Rebecca Hierons. Call 01642 554667 or visit www.queenswayskinclinic.co.uk

ward winning Greg Temple, dubbed the colour guru, is super excited about the latest technique introduced by L'Oreal, which he believes totally transforms the way we colour our hair. The team at REDS Salon, in Sunderland, where Greg is salon manager, has just received training from L'Oreal on their newest technique 'Hair Contouring' and he predicts it's going to be huge. "It's all about personalised colour," he explains. "We'll be looking at face shape and then using the colour to contour a client's features. The other day I had a lady in who had a longer face so we used a colour with slightly lighter tones mid length which totally

L ' O rĂŠ al P rofe ss i onne l Cont our i ng

changed her face shape. She loved it." Greg believes the new technique opens up a world of colour possibilities for clients. "Hair contouring means that anyone can have their hair any colour. It's all about finding the right shade for their skin tone. It's going to transform the way hair is coloured in salons. Hair looks plumper and healthier; it's a technique that delivers on so many levels." Hair contouring fits in beautifully with all the major colour trends that are going to be coming in for 2016, says Greg. "It's all a bit softer and more integrated next year. Blondes will be more believable, Ombre will be more blended and hair shades such as grey and pink will be softer and more nuanced."

“I just felt the need to drop you a line to say how happy I am with the results of my recent surgery I cried tears of joy when I saw the difference in my appearance and could not ask for more. I also want to add that everyone I have encountered during the whole process has been wonderful, so friendly, helpful and informative every step of the way. O

n the first day of Christmas my true love bought for me. One consultation for that tummy tuck that she always joked about wanting, but really didn’t want you to arrange because she really wanted to think you hadn’t noticed that little ‘fold’ after the caesarian section from the birth of your child. Moral – always ask and never presume. On the second day of Christmas my true love bought for me Two areas of Botox, remembering to always go to a recognised practitioner who is trained and has experience in aesthetics. Never use an unqualified and unregistered practitioner in your own home. On the third day of Christmas my true love bought for me. Three sessions of skin peels to refresh your skin and take away the ageing effects of all those holidays in Lanzarote. On the fourth day of Christmas my true love bought for me. Four sessions of micro sclerotherapy for red spider thread veins. Before you know it you’ll be tripping the light fantastic in your short salsa dress thinking Craig Revel-Horwood loves you dahling. On the fifth day of Christmas my true love bought for me. Five gold rings – of course. On the sixth day of Christmas my true love bought for me. Six laser hair removal sessions (much more effective and far less painful so I am reliably informed than waxing). On the seventh day of Christmas my true love bought for me. ‘Seven days to rock hard ABS’ DVD featuring the D-list celebrity from the soap you can’t remember, but she has lost an amazing seven stone by chewing on an Aloe Vera leaf every day and bouncing on an exercise ball to music that gives you a headache. On the eighth day of Christmas my true love bought for me. Eight weeks of 25 sessions of lipomassage therapy endermologie, because the DVD ‘Seven days to rock hard ABS’ is now hanging outside my conservatory window on strings as a wind chime.

winter

On the ninth day of Christmas my true love bought for me. Nine days of pampering after a Define L lift one stitch face lift. On the tenth day of Christmas my true love bought for me. Ten minutes free mini-consultation (just call 01642 794150 and quote LADIDA). It is so amazing that it could just change your life! On the eleventh day of Christmas my true love bought for me. Eleven months of a gym membership. Special offer buy 11, get 1 for free. None of which matters because I will go twice and get really upset by that Cheryl Fernandez-Versini wannabe look alike in the size 4 spandex combination crop top and pants and fluorescent running shoes. Don’t you hate the way she flicks her pony tail and so obviously flirts with the personal trainer guy you’ve fancied since you were (dis)-oriented into the gym? On the twelfth day of Christmas my true love bought for me Twelve Krispy Kreme doughnuts and now I do wish he had got me that consultation for the tummy tuck operation! Have a great Christmas! Be happy and enjoy. Have a little of what you fancy every day. Be ‘stunningly good’.

See you in the New Year!

ven when jet lagged after stepping off the plane from L.A, you can’t mistake the passion in top surgeon Shlok Balupuri’s voice when he talks about the way weight loss surgery is transforming the lives of his patients. “Probably the most rewarding thing for me is to see my patients come back after they’ve lost the weight and I can see the difference in their eyes. They’ve got their lives back. They are now able to do things that people take for granted such as going on a plane and doing the seatbelt up easily. Little things but they mean a lot to my patients,” he says. “Many have never been in that space before, where they get to experience life as a slim person. It is truly life changing and I get an enormous reward from seeing how happy it’s made them. Some hug me, some kiss me, they say ‘Thank you for giving me my life back’, it’s very moving.” The main benefit of weight loss surgery is the impact the surgery has on obesity related conditions such as diabetes. Research has shown that after surgery most people have an improved quality of life and reduced risk from medical conditions that are related to morbid obesity. Bariatric surgery is mainly designed for seriously overweight people with a BMI of 40 plus, who have tried everything else to lose weight. Research suggests that weight loss surgery is a more clinically effective intervention for treating obesity in suitable people compared with non-surgical options such as weight loss drugs or diet. Assessing the patient’s needs and behaviour is the first step before the right type of surgery

can be recommended. “I consider the patient’s circumstances to give them the best possible chance of making the changes they want in their life. We look at their eating habits, medical history and also their relationship to food,” Mr Balupuri explains. “If people are very dependent on food for emotional reasons, then they are referred to our psychologist. They will work with them to find other ways to deal with their feelings otherwise that food addiction could easily be transferred onto another substance such as alcohol if they aren’t given new strategies.” It’s not a quick and easy answer to weight loss but surgery can give people longer and better lives and it’s clear that for many of Mr Balupuri’s patients, it has been truly life changing.

hould we be wearing wellies after the age of 30? The fashion icon that is Alexa Chung, thinks not. She even commented on national radio last month that we aren’t ten and shouldn’t be wearing wellies. If it rains, however, why would we not do our best to keep our feet dry and ourselves warm. Isn’t her comment the same as saying it is raining outside and there is an umbrella but don’t use it? The fash pack are well known for their envious country fashion but can we imagine them taking jaunts through the countryside, crunching through Autumn leaves and wading through muddy puddles in anything but wellies? I think not. I understand that maybe Chung personally doesn’t see them as a fashion item but does this matter when it comes to keeping dry and warm? Actually, yes and thats why the fashion industry has jumped on this and wellies are now unbelievably fashionable. For instance, 2009 saw the launch of the Jimmy Choo wellie and my was this something. Everyone from students to ladies that lunch lusted after this ‘must have’ item. and the likes of Kate Moss and Kate Winslet were seen trotting around in these beauties, albeit both in denim hot pants to boot (excuse the pun!) These are still being knocked out ten to the dozen and are on the lust list of many a lady. At the whopping price of £250 and sleek lines to match they really do pack a fashion punch. Dare I say it as I know millions of people idolize Alexa Chung, but I really do think she is wrong. Go ahead, throw those wellies on and keep your tootsies warm and dry. Even better, do it in style with a little help from the likes of Jimmy Choo and Chanel.

Christmas...

T

HERE’S an old saying that the best gifts come in small packages – think rings, think watches …just think diamonds. After all, no woman ever swooned with joy at the sight of a huge new tumble drier at the foot of the Christmas tree? No, Christmas isn’t for big and practical – unless it’s a car - it’s for small and gorgeous ….and Gateshead’s intu Metrocentre has that in spades. With a host of new stores and a revamp of its House of Fraser flagship, there aren’t just perfect presents in abundance but – and here comes the icing on the Christmas cake – lots of lovely little rewards for all that hard work, pounding the aisles and making lists. Let’s start at House of Fraser and, ladies, Jo Malone is in the House. The gorgeous, black-ribboned, cream boxes, concealing perfumes and candles scented with peony, Earl Grey, pomegranate and all manner of floral and fruity fragrances, are virtually a Christmas essential. In fact, the new beauty hall is positively brimming with super desirable labels – there’s Nars (is their bronzer on your list? It should be); there’s Crème de la Mer (so, so expensive, but lasts forever if used sparingly) and there’s Tom Ford (with a red nail varnish that just screams stocking filler). And, because you really can’t just give them socks again, why not treat the man – or men – in your life to something smelly and sexy from Giorgio Amani or classically cool from Acqua di Parma? Those who can drag themselves away from the beauty hall would do well to explore the rest of the store, where they’ll find the womenswear and fashion accessories departments totally transformed. Not only are there new premium brands, such as Michael Kors, Lauren and Whistles, but the ground floor now hosts a fabulous new World of Shoes – Santa’s elves, take note. We’ll come back to House of Fraser but, while we’re still on the trail of gifts and goodies, it’s time to venture further afield …to Ireland, or, rather, a little corner of the Platinum Mall where shoppers’ eyes, like Irish ones, are smiling. For the first time in its 50-year history, Ireland’s best loved retailer Carraig Donn has crossed the Irish Sea to open its first UK branch in the North East. This is a small – we’re back to small – but beautifully formed, boutique department store with everything from homeware and gifts to international fashion. winter

Looking for a gift for a hard to please teenage girl or twenty something? Check out its range of jewellery brands; names such as Momenti, Pilgrim and Knight and Day. Meanwhile, if you’re looking for something cool for children, why not head for the land down under? The Red Mall: where Australia's best known children's stationery brand, Smiggle, is crammed to its brightlycoloured rafters with stationery, bags, lunchboxes, accessories and gadgets. Another new kid on the block is Cath Kidston, which may be opposite Zara and All Saints within the centre, but is a world away from their sleek silhouettes and neutral shades. This glorious store is a floral tribute to the Christmases of childhood, with stocking fillers, clothing and gifts all jostling for space in an explosion of prints in crystal clear shades of pink and yellow, turquoise and red. So now, with your gifts safely purchased, it’s time for thoughts to turn to wrapping, to Christmas cards and to ribbons and … to Fenwick. For the first time in more than 130 years, Newcastle’s retail flagship has spread its wings and landed on the south side of the Tyne. Right through Christmas and the New Year intu Metrocentre’s Platinum Mall is home to a seasonal pop-up store. This 13,000sq ft. Christmas Wonderland is bursting with decorations, cards and wrapping paper, trees, food and drink, not to mention a fair few rather lovely gift ideas for those last minute treats you simply can’t leave without. You’re not finished just yet, however, because there is one person you’ve forgotten to treat; someone whose selfless pursuit of other people’s happiness definitely deserves to be rewarded. So, let’s pop back to the start of our spree; to House of Fraser, where a special new pampering section will ensure that, Cinders, you shall go to the ball. Let teams of specially trained staff soothe you with a Decleor spa, put the bounce back in your hair at SHOW Beauty blow dry bar, give you a Nails Inc manicure and an Estée Lauder 10 minute makeover. And, then, when you’re laden with gorgeously wrapped gifts and looking a million dollars, why not head for the store’s new Café Botanico restaurant for a celebratory cocktail … or two? You’ve earned it.

OUR EARLY YEARS

make such a difference

A

TO THE PERSON WE GROW UP TO BE

t Red House School we keep the whole journey in mind. Our experience shows that a well-rounded education, filled with co-curricular activities, leads to so much more than academic success. Children discover the confidence to grasp the opportunities that life will present beyond the classroom. Of course academic success matters and our record backs that up; we have been ranked the Number 1 Co-Educational Independent School in England without a sixth form, for the last two years, in the Sunday Times Parent Power League Tables, but at Red House we believe that exam results are not the sole indicator of a child’s capabilities. That is why we create a positive and supportive environment where children are nurtured to achieve their full potential, not only academically, but

in all aspects of school life. Indeed, we know that academic improvement often stems from the self-belief found in sport, music, theatre or travel. Our school ethos is built around giving children a complete education: physical, intellectual and emotional development gained from a wide range of experiences within a broad and balanced curriculum. Teachers are given the time to care for every child so that their individual talents emerge and develop. By retaining smaller classes, children feel more secure about contributing. Red House School has a unique family atmosphere. We encourage parents to become involved in their child’s education, weaving a close-knit community among teachers, children and parents, so that the best results are achieved.

THE BEST WAY TO EXPERIENCE LIFE AT RED HOUSE IS TO VISIT THE SCHOOL. TOURS ARE AVAILABLE THROUGHOUT THE YEAR. APPOINTMENTS CAN BE MADE BY CONTACTING MRS CLAIRE BELLERBY, HEAD OF ADMISSIONS ON 01642 558119 OR EMAIL CLAIRE.BELLERBY@REDHOUSESCHOOL.CO.UK.

Why not take a note out of Bond’s book and try Bollinger La Grande Année Magnum? Bollinger’s prestige champagne is produced only when the harvest reaches a perfect balance: it is Bollinger’s version of an exceptional vintage. Bollinger La Grand Année is truly one of the greats of Champagne, a traditionalist house making muscular wine with body, length, depth, and every other dimension. Sourcing nothing other than quality fruit, it consists of 76% Grand Crus and 24% Premiers of Crus with a minimum aging of 5 years.

BI T OF A B U DG ET ? There’s nothing wrong with Prosecco, but Italy has a lot more to offer. Lambrusco (forget the ‘ini’, please) can be superb, and it’s not all sweet. One of my personal favourites is the red, crunchy stuff. Oozing sour cherries and dark fruit, this begs to be placed next to a huge plate of cured meats to be enjoyed to its fullest.

Cigar pairing

F

ew things are more satisfying, from a palate pleasing point of view, than pairing your favorite cigar with a suitable libation. Some classic pairings with cigars are cognac, single malt whisky, bourbon, rum, rye, and port. With the exception of tequila, most white spirits – such as vodka and gin - do not work as well because the cigar will overpower the drink. Medium-bodied smokes are great with Speyside and some Lowland whiskies, most Irish whiskeys, rums, bourbons, ryes and ports. Fullbodied smokes are a perfect match with peaty Islay and heavier Highland single malts. Whether it’s cigar and scotch pairing, cigar and beer pairing or any cigar and liquor pairing, even the most seasoned cigar smokers and spirit connoisseurs can sometimes find themselves at a loss when pairing drinks with cigars. Highlands and Speysides work really well with Romeo y Julieta’s or Montecristo’s, a mellow smoke (for a Cuban), Edradour or Glendullen are personal favourites for

winter

pairing, and the combination is relaxed with none of the flavours battling for supremecy. Lightly peated Highland Park and a Cohiba is my favourite match. Both have enough oomph for you to know you’re really having something, but without leaving you slightly queasy if you are new to this kind of pairing Peaty Islay whisky such as Ardbeg is the perfect foil for a Bolivar or Partagas, but nothing in this pairing is for the faint hearted. These are BIG flavours and strong. This is a pairing for commando’s.

ailed recently as one of the top hotels in the UK, Rockliffe Hall has become the place to go to for the region’s fine and fabulous. And if proof were needed, the day we do our shoot we share the space with Middlesbrough FC’s footballers, who are having a photoshoot for their calendar. But it’s a different kind of sport that has Chief Executive Eammon Elliott excited. The hotel has just hosted Rugby World Cup Champions, The All Blacks, and the team cited their preparations at Rockliffe Hall as a contributory factor behind their victory. “They were a lovely group of people, very humble and gracious, everyone fell in love with them,” he says. “Their professionalism and dedication was so inspirational.” And that sporting dedication to excellence is an approach mirrored by him and his team. "You can't be an elite resort without having first class facilities," he explains. "Our facilities are second to none and if they weren't we would invest and make sure we got the best of the best. If we needed a better spa, we would do it, if we needed a better golf offer we would do it, if we needed a better team we would do it. Other hotels I have worked at have invested around 40% of their profits back into the hotel; here 100% is invested to make sure we have the best winter

facilities money can buy." Rockliffe's facilities are stunning and they opened their gorgeous Garden Spa earlier in the year to much acclaim, but it's the staff that make it such a lovely place to stay. "Our staff are mainly local and have been here for years and they are terrific," he says. "I expect every one of my team to come in every day and absolutely excel. Whether it's the kitchen staff, the porter or me, everyone has to come in and do their best for our guests every single day without fail, nothing less is acceptable. Two staff who are’nt local are Head Chef Richard Allen and The Old Hall Food and Beverage Manager Shaun Corrigan. Both worked with Eammon at his previous hotel, The Grand in Jersey, and he brought them up with him. "We've all worked closely together for years and their standards are as high as my own," says Eammon. "Every day they both come in and ask 'how can we make it better' and in the last year we have made it better. "We're all very proud to work in the North East, the region has some great hotels, some of the best facilities, properties and people, now we just need to make it more accessible so more people from all over the world can come and see what a beautiful place we live in."

Food & Drink

I

f you met Richard Allen, Head Chef at the Orangery, in his ‘civvies’ it would be easy to mistake him for a military man. He has that same focus and self discipline. He very nearly became a Royal Marine but was turned down due to Asthma. He focused instead on using his drive and passion to excel at cooking. Talk to him for a few minutes and you get a sense that whatever he sets his mind to he achieves and gives it 150%. Which is why we’re quietly confident that Rockliffe will get its much desired Michelin star status. But for Richard, Michelin isn’t the critic to impress, it is himself. “I’m not cooking for Michelin. I don’t care who’s in the restaurant,” he says. “The food just needs to be the best it can be all day every day.” “I’m quite OCD and a perfectionist,” he confesses, “I bought a lot of my staff with me when I came up and it’s taken a while to get the kitchen team as I want it. When Michelin came to try us I had only been in the kitchen for eight weeks so I knew we weren’t going to get it. The hotel is obviously keen for us to

get a Michelin star but for me that’s not what drives me.” Richard achieved Michelin star status at The Grand Hotel in Jersey, his previous post. With a ‘tiny kitchen and domestic oven’, it was a considerable achievement but it was a different set of circumstances in Jersey which has influenced the style of cooking he is winning rave reviews about. “In Jersey if the weather is bad you don’t get your food delivery,” he says. “So I started working with a local forager and doing a lot of dishes using super foods like goji berries, quinoa, tumeric root and purees. It helped me develop my signature style. Before that I did ‘Frankenstein cooking’, which is where you take bits from every head chef you’ve worked with. But eventually your own style finds you.” Richard’s style is certainly creating a real buzz on the North East food scene. Delicious, beautifully balanced, divine dishes that are healthy and don’t use lashings of butter and cream. He may be winning rave reviews but he is still his harshest critic. “Nothing great is created suddenly,” he says.

W

e arrived at Rockliffe Hall for dinner on a warm November evening, excited to sample the delights of Richard Allen’s cooking – Head Chef in The Orangery at Rockliffe Hall. Firstly, I do love to hear a pianist play and Rockliffe has secured the sublimely talented Michael Mulroy whose repertoire seems tireless – from Bond Themes to Jazz to recent chart hits and even a smidgeon of Let It Go from Frozen! Choosing our dinner was simple – we opted for the surprise menu with matching wine flight. This turned

out to be an inspired choice that had our taste buds tantalised from start to finish. Nine courses included an Amuse Bouche of Brown Shrimp & pepper risotto with crispy potatoes, then through beautifully, presented and exquisitely flavoured dishes of Scallops, a Goats Cheese salad, Sea Trout to our favourite dish, the Pork with pork belly, pork cheek, langoustine & squash – suitably paired with a 2010 Paumanok ‘Assemblage’ from Long Island. Dinner culminated with a Sandwich of Black Truffle & Tunworth Cheese with Waldorf Salad, a pre-dessert of Cointreau Crème with a Mandarin

Granite, then a Pistachio & Olive Oil Cake with Chocolate & Orange and finally to end on a taste bud tingling sensation the Apple, Black Butter Doughnut and Calvados Mousse with a sublime pudding wine of 2009 Rafael Palacios, Sorte ‘O Soro’ Godello from Valderras. Best of all as we were finishing our dinner, Michael played All of Me by John Legend which my husband thought I had asked to be played for him …. it was our anniversary after all (it was pure fluke!) but made for a romantic end to three and a half hours of food and wine heaven.

he Old Hall Food and Beverage Manager Shaun Corrigan is the antithesis of a stuffy, snobby sommelier. Hailing from the New Forest, he has worked at the prestigious Chewton Glen and was head hunted by the Burj Al Arab in Dubai. A self confessed beer drinker in his youth, he fell in love with wine completely by accident. “I was partying a lot in my early twenties and didn’t have an idea what I wanted to do with my life,” he explains, “my friend had just left a job at a hotel as a waiter and I phoned them up asking to replace him because I needed somewhere to stay. I didn’t know anything about wine, I always drank beer but the restaurant manager was into his wine and gave me pointers and I started studying it and I went from there.” It was the start of a love affair which has seen him work at the best hotels around the world. It also informs his approach to the wine offer at Rockliffe. “Our wine list is complicated, deliberately so

really,” he says. “We want people to ask questions about the wine. We tell them ‘you will need help with the wine list’ and we find out what they like, what the occasion is, do they want to show off or celebrate? We have 85 glasses of wine we sell by the glass and we encourage people to try wines they may not have thought about and which we think they will love.” The wine offer is stellar, as you would expect from a top hotel. “Even the house wines need to be really good, we wouldn’t accept anything less”, says Shaun. “Get the right wine and it takes the whole food experience to another level. The wine list needs to be unique, the food needs to be unique, the service should be unique and that’s what makes a place special. “People who come here are often celebrating,” he says. “They want an evening they’ll remember forever and that’s why we winter

sell wines such as Chateau Petrus by the glass. It’s £250 but for many people it’s a once in a lifetime experience to taste such a beautiful wine.” Shaun has changed the hotel’s wine events and made them more relaxed, fun and informal. A forthcoming one features wine and chocolate which cleverly makes fine wine far more accessible and is a great way to introduce new people to the hotel’s fabulous wine offer. Wine novice or cognoscenti, the chances are Shaun will have something in his cellar to surprise and delight you. “Our wine list is off the wall for up here but if you want success you need to be original,” he says. “Originality is the difference between being great and being good.” WWW.ROCKLIFFEHALL.COM

he quickest self taught chef to get a Michelin star, the awards and accolades have kept coming thick and fast for chef James Close. As we meet his Raby Hunt restaurant is just about to be named as number 17 on the Sunday Times list of best restaurants in the country. An incredible achievement which James takes in his stride. “Whatever I do I like to be the best at. I am a perfectionist. You’ve got to have a bit of confidence as a chef and that can be difficult for many chefs, they are usually quite shy,” he notes. He had originally wanted to be a professional golfer but although very talented it didn’t work out. But he still has a passion for sport and it’s that professional mindset he uses to help him in the kitchen, he says. But it’s the creativity at the heart of his business he cherishes and nurtures. He has just reworked his restaurant hours to ease his chefs’ work and life balance and give them more time to experiment and create new dishes. “I get inspiration from anything. Creativity just happens. I can go for two weeks without doing any dishes. If you did it every day it would be hard to keep that creativity. After two weeks I am ready to pick up a cook book again and ideas start coming to me. “I just instinctively know if something is going to be a signature dish before it’s even plated up. “

I thi nk t he Raby Hunt be i ng awarded a Micheli n st ar was a very p osi t i ve thi ng for t he No rt h E ast . At the moment street food is inspiring him. He has just returned from London after enjoying meals all over the city and it’s the street food culture and the creativity and fusion of influences which interests him. But he is a firm champion of the North East food scene. “I think the Raby Hunt being awarded a Michelin star was a very positive thing for the North East. It made other places believe it was possible for the region’s food to be recognised.” He chooses his words slowly and deliberately, clearly concerned that such a statement could be misinterpreted to look self congratulatory. But his pride in the North East comes across in spades. As we finish up he whisks out his mobile and shows me an interview online with the Editor of the Michelin Guide. In it she is quoted as saying the North East is becoming the area to watch. He is clearly delighted. And much of the credit for bringing the region to the notice of Michelin must surely go to him. In his own quietly confident way he is putting creativity and flair firmly back on the menu. winter

hampagne corks have been popping at the Cleveland Tontine after they recently scooped the coveted The Best Restaurant with Rooms category at the Yorkshire White Rose awards. And all eyes will now be on the restaurant which has generated a lot of very positive buzz all year. It’s a lot of pressure for new Head Chef Paul Bussey but having spent years working in Dubai with Gordon Ramsay’s Verre, in London with The Caprice Holdings Group which includes the iconic Le Caprice and The Ivy, and, closer to home, The Orangery at Rockliffe Hall, he is taking it all in his stride. So what can the great and good who regularly frequent the Tontine expect to see? He describes his signature style as similar to the cooking at The Ivy.

“It’s all about elegant but simple food on the plate,” he says. “I won’t be overcomplicating it, its classic cooking with the freshest of seasonal ingredients.” Paul designed the Autumn/ Winter menu and has kept it in a similar culinary direction to that of his predecessor, James Cooper, while adding his own twist. “At Cleveland Tontine a signature Lobster dish is always very popular so we have kept that on the new menu but I have added my own take on it by doing it as a native lobster and prawn ravioli with fennel and a seafood bisque,” he explains. The new menu features a lot of top quality game, a favourite of Paul’s. His favourite dish is locally shot roast breast of woodpigeon with chestnut puree and le puy lentils. Diners can also enjoy flavourful dishes such as Raby Estate winter

Paul’s favourite is Basil Pannacotta with Spiced Plums. “It has a lovely savoury and sweet taste, all at the same time,” he says. “ We also have a great Tarte Tatin and a very indulgent Baked Raspberry Souffle with White Chocolate Ice cream.” And should all that good food and fine wine take their toll on you, you can always book into one of the hotel’s fabulous quirkily decorated and award winning rooms for the night.

ecently the Rose and Crown has hosted the French glitterati from the nearby Yves Saint Laurent exhibition, Masterchef's Gregg Wallace and the day of our shoot, a Lord was coming for lunch. Not bad at all for a Dales Inn which is off the beaten track. The picturesque Rose and Crown is located in the beautiful village of Romaldkirk, all stone cottages, stunning views and sheep dotted fields. The YSL French fashion bosses raved about the food and since then a growing buzz has been building about the place. Popular with walkers, it’s set in the heart of Teesdale surrounded by spectacular scenery and picture perfect Dales villages. It makes a great place to stop off for a fabulous lunch or dinner on a trip out to the country and enjoy fine

food and local ales. Dogs are welcome and even get their very own artisan biscuits. The menu showcases seasonal produce with inventive and beautifully presented dishes which lack pretension but still surprise and delight. “I would describe my style as classic with a modern twist,” says David. “We have great produce on our doorstep so I want to use it to its fullest and produce really flavoursome food that celebrates the quality of the ingredients. Our game up here is second to none and I love working with game. We get it from a local gamekeeper and its top notch.” And nothing is wasted. “I can’t abide waste so our team here practice trash cooking. Basically it’s a challenge to see how much of a vegetable or a piece of meat winter

you can use to produce really tasty food. Parts that would normally go into a bin are used in really interesting ways to add new flavours and textures to dishes.” A delicious example of ‘trash cooking’ was the chargrilled and blackened cabbage and cauliflower stems and leaves that came with the Venison Loin, Parsnip Puree, Squash and Walnuts dish. “By chargrilling and blackening them, it gives them an amazing texture and taste,” says David, “and yet most people throw them away.”

Where would you like to drink?" "Outside the box," is the easy reply from general Manager and Wine Advisor for Malmaison in Newcastle, Richard Lockstone. His raison d'etre is to demystify wine lists and get his customers to try food and wine combinations away from their comfort zones. Which wines would you like to see more customers trying? One of my favourite grapes is Gruner Veltliner, a versatile and very underrated white wine grape from Austria. (Ask for Gruner and you can miss out the tongue-twisty bit). It's very balanced and will pair with many white meats, even taking a little bit of spice in its stride. What do you find are the 'go to's on a wine list? Without doubt, New Zealand Sauvignon Blanc and Malbec are the most asked for wines. This probably has a lot to do with people's winter

perceptions of wine being complicated and 'just for experts'. Pronunciation of grape varieties and the added complication of Old World wines being about region as opposed to varietals, alienate a lot of potential wine lovers. How would you suggest a customer gets the best from a wine list? "Ask. We're here to help and would much rather you enjoyed your experience with us by helping you navigate. Sauvignon Blanc won't work with everything, but it's easy to remember and you know you like it. It will, however, completely unbalance a red meat dish or a chicken in a creamy sauce. We love what we do and being asked for a suggestion puts us in a 'point of pride' position. We won't suggest the most expensive option, we would suggest the most appropriate. Experiment, and be a bit more liberal with prices. Spend more and you really do get more.

What's your biggest bugbear? "The confusion between places and grapes. The customer is absolutely not to blame, the wine industry is doing very little to help demystify this for non-professionals. A perfect example of this is the ABC (anything but Chardonnay). Great big oaky monsters in the 90's have a lot to answer for, and managed to put a lot of people off a beautiful grape. The same customer who has an aversion to Chardonnay, possibly loves Chablis, an amazing, minerally and complex wine from Burgundy. Is there anything more perfect with oysters? Chablis is made from un-oaked Chardonnay. What are your favourite 'Blockbuster' wines ? "Whilst I love the edginess and lack of pretension the New World offers, and it can offer more experimentation and fun, I do love the old world, however, step off the beaten track and try a Croatian Tannat and you might find it rivalling Valpolicellas and Amarones." winter

nd we weren’t disappointed. The glam Chateau is THE venue of choice for discreet shindigs for the many celeb glitterati that book into Malmaison. Being contrary by nature, we decided to invite the guests to a ‘secret party’ and keep them in the dark about the location of the venue. Team Mal rose to the challenge by producing bespoke instructions marked ‘Top Secret’ with intriguing clues to follow and a personal entry keycard to the room for every guest. Once inside they were greeted with champagne, a candlelit room and the dulcet tones of the very talented musician David Ball. Chefs were on hand to add a touch of theatre and our guests feasted on a delicious live buffet of artisanal meats, breads and cheeses. But the star of the show was the special Malmaison cocktail menu they designed for us. Each one was divine and dangerously moreish. Faves included the super sophisticated Smoked Old Fashioned with Malmaison’s house smoked bourbon, a stunning Metropolitan and a Margarita topped with sea salt foam which had our Drinks Ed in raptures. Guests left extremely happy and laden down with goody bags which included ESPA products from John Lewis’s Beauty Retreat, a white lavender and amber candle from our fave candle brand Northburn Candles, spa treats from Malmaison and luxury hair products from iconic hairdressers Hooker & Young. Fit for a Duke…

T

he drive from Edinburgh following the coastline which was bathed in sunshine was just the start of my amazing day out. Passing the site of a famous battle and having time to walk across the estuary to a bird sanctuary all added to the experience and led me to Duke Street Cookery in Kingston. My first glimpse of the old primary school was quickly followed by a warm welcome by Lisa and Neil Johnson, the owners. Once inside I was in heaven. The once school room is now an open space decorated in muted colours and plaid fabric and the log fire was blazing even on this fine day. Coffee in hand, we all relaxed on the sofa and their story began to unfold. They fell into cooking accidentally and a hobby became a business. Lisa says that running a restaurant when she was very young and with no training was ‘a baptism of fire’ but it got her where she is today, via a stint at the BBC Radio in Edinburgh. She recalls cooking meals for freezers and how this slowly evolved into catering and now they cater for the top events and weddings in this part of the world. They both have an unstoppable drive and loads of enthusiasm but it is the combination of Lisa’s passion for food and natural talent combined with Neil’s business acumen that make this team outstanding. As a caterer I know how difficult it is to mention customers by name and how discreet we have to be to keep the customer base, but the hint of a client and the list of venues on their website soon makes me realise that they are catering for high society. They are dealing with people for whom only the best will do. From the beautiful private houses owned by fund managers in Stockbridge to castles near Inverness, national trust properties in Cumbria to the high class corporate business in city centres. To achieve all of this, Lisa’s explains, takes a great team and at this point I can see the key member in the catering kitchen. Chef Michael is just a room away prepping what is to be our lunch. As I watch this happen I find out that his journey includes winter

The school room is the setting for our lunch of scallops, all local, followed by the best lamb dish I have tasted in a while with Scottish spring veg and a blade or two of wild garlic. The dessert was a chef ‘showing off ’ and a lovely end to a meal with my generous hosts. As we ate the talk turned to cookery school, which is my passion and the classes they run in the months when weddings and events don’t fill every page of the diary. All the teaching is done in a casual manner in the catering kitchen under Michael’s guidance with the addition of experts in bread making and other specialised areas. Lisa admits she loves being around when the classes take place and is often found washing up. Class titles such as ‘Taste of the Sea’ sound wonderful The kids days sound fun and frantic, a perfect holiday treat, but the one that takes my fancy is Impress Your Guests, it would be an ideal gift for the foodie in your life, and yes, vouchers are available. As we finish our lunch and I tear myself away from the beautiful school room, life slips back into full throttle, the phone rings for Lisa and the caterer is back in action while Neil plans his list of jobs around the most important part of their life, the home and kids. For me it has been so refreshing to find such talent in Lisa. I can empathise with her lack of formal training or qualifications and her need to cook. It’s a great combination of passion for food and creative drive and it has resulted in a fabulous school and a top class events company.

oined ‘Yorkshire’s food capital’, the picturesque North Yorkshire market town of Malton is a foodie haven. Home to the famous Malton Food Festival, Malton boasts some of the greatest regional produce and draws in visitors from afar, eager to visit the independent shops and monthly markets. Keen to taste the local produce for myself, I jumped at the chance to try the

newly opened Brasserie at the Talbot Hotel. Already host to the successful Wentworth Restaurant, The Talbot has achieved a reputation for quality fine dining and I arrived at the Brasserie with high expectations. On entering the hotel I was directed to a beautiful open plan orangery, natural light flooding the tables and a lovely, welcoming atmosphere. Spoilt for choice on the menu and array of specials I chose mini croque-monsieur to start and grilled Barnsley chop with smoked mash and salsa verde for main. With the promise of locally sourced produce and the quality of a four star kitchen I was expecting great things, and I was right to. My food was delivered quickly and the quality was by no means compromised. Piping hot and tender, my Barnsley chop was delicious and brought to life with the wonderful combination of smoked mash and salsa.

There’s no dodgy wallpaper, patterned carpet or Indian kitsch in this establishment. Instead walls feature corrugated steel, breezeblocks and untreated wood alongside a distinctive mosaic floor. They do Indian food differently too. Inspired by his travels to Delhi where he dined in roadside food shacks, owner Sanjeev Sanghara wanted to re-create an authentic way of eating Indian food by serving it tapas style. It’s an eating experience that works. The well-thought out menu offers up a rich variety of dishes of street food, curry and grill and there is a fabulous cocktail menu too. My friend and I feasted on a popadom basket with spiced onions, mango chutney, mixed pickle and raitha, served in cute, glass jars while we decided on our tapas dishes. Neither of us can eat really hot Indian food so

The Brasserie began to fill up as I was eating and the bustling atmosphere was informal and friendly. With quick service and no need to book, this would be the perfect place to pop in for a two course lunch in under an hour. I took the opportunity to quiz the Manager, David Macdonald, on the local suppliers and was impressed to discover that you can literally nip across the road to the Talbot Yard Food Court to buy the bread, beer, ice cream and coffee used in the Restaurant and Brasserie. The other produce, including meat, is all sourced from local farmers and businesses or grown in the Talbot gardens. A real showcase of Yorkshire’s talent.

we opted for the safe confines of Tikka Masala, Chani Chicken and chicken pakora with servings of basmati rice and a nan bread. The chani chicken was marinated in a sweet and sour sauce while the pakora had been blended with herbs and marinated for 24 hours. The quality of both the ingredients and the cooking was evident-both were superb. The Tikka masala was equally as delightful. It was a real novelty to be able to .dip in and out of the dishes rather than having to focus on just one meal. The chef also sent over a portion of Aloo Machi Tiki. It’s a dish I’ve never eaten before and boy was it delicious. Tender pieces of cod are crushed together with potato, coriander, ginger, garlic and onions, coated in breadcrumbs and fried. It was divine. My friend and I had a great time tasting the different dishes while enjoying a couple of glasses of fizz. winter

My childhood was foraging for seasonal fruits (which also included picking thousands of sloe berries to make copious amounts of homemade sloe gin), holidays roaming the Scottish Highlands, beating on local pheasant shoots and learning how to safely and responsibly handle and shoot a gun - your average Swallows and Amazons childhood. Alongside Game shooting, competitive shooting is the biggest sporting interest in my family and (according to my father) I had 15 Olympic disciplines to choose from, trying many from a very young age. I started shooting air pistol competitively aged 15. I tasted early success as a junior, finishing 3rd in my first British Championships and subsequently winning another three, alongside international medals and British records. From there I was hooked, it was under my skin. As most athletes will agree, success in sport is a massive buzz and the drive to be better and better becomes part of everyday life. What attracted you to the role at BASC? So much of our lives are consumed by the job that we do every day and it is important for me that time spent working is meaningful and enjoyable. Many people don’t realise the huge contribution that shooting makes to the conservation of habitats and endangered species, so it is wonderful to be involved at a practical grassroots level. Your BASC area covers a large area, what do you love about living and working in Yorkshire and the North East? The people! I am continually blown away by how helpful, friendly and kind people are. As my role covers such a large area I rely a lot on volunteers. Their willingness to step up and help me is inspiring. The Brasserie at The Arden offers an exceptional culinary experience – the bread rolls are served hot in a heated bag that keeps them at that ‘just out of the oven’ temperature they are accompanied by a choice of butter, olive oil & a tapenade. Popular dishes on the menu include the famous Arden fish and chips, aged fillet of Charlois beef, salmon cooked at 40 degrees and ginger bread dessert with caramelised honey custard and golden plum cream. GRAVETYE MANOR

T

here was method in my madness when I arranged two days of meetings in Sussex – a long overdue visit to Gravetye Manor – where Head Chef, George Blogg, has recently been awarded a Michelin star. Gravetye Manor is an Elizabethan Manor House filled with fine antiques and rich fabrics in keeping with its authentic home from home feel. It is set in 1,000 acres of wooded parkland, with its immediate 35 acres of gardens laid out to wildflowers, rolling banks of mixed florals and lawns, famously created by William Robinson, arguably one of England’s greatest gardeners and the founder of the English Flower garden. The beautiful wood panelled walls, log fire, mullioned windows made for a very relaxing back drop for a glass of pre-dinner champagne or in my case sparkling Sussex wine from the nearby Ridgeview winery. Dinner was superb - smoked salmon 3 ways (the mousse was sensational), main course of Pigeon which was cooked to perfection and the accompanying faggot had an incredible flavour. Dessert of Hendriks Gin Sorbet was perfect to finish off on a light and refreshing note. Service was excellent, with knowledgeable staff that had a great understanding of the menu and all ingredients. Service was professional yet with an unobtrusive touch of humour and conversation.

My large, wood panelled bedroom complete with four poster bed was furnished with period furniture in keeping with the building but the mattress was certainly modern and provided a wonderful night’s sleep. A cupboard concealed in the panelling revealed a Nespresso machine, a flat screen TV was cleverly placed not to dominate the room and the bathroom was state of the art complete with under floor heating. Gravetye is the ideal place to stay for those heading to Glyndebourne and guests can purchase tickets directly from the hotel. The focus of Glyndebourne each year is the Festival. Running from May to August, it offers a programme of six operas. At the end of the summer it hosts the opening weeks of the Tour, providing a less-formal alternative to the Festival at lower ticket prices. And through the rest of the year it is used for education projects, concerts, rehearsals and scenery fit-ups. KILWORTH HOUSE HOTEL & THEATRE

K

ilworth House Hotel is a breath of fresh air to break up a long journey from North Yorkshire to the south – only 5 minutes off the M1 at junction 20 – here you will find an enchanting blend of Victorian opulence, fine food and contemporary luxury all set amidst 38 acres of South Leicestershire parkland. This grade II listed former family home has two unique features – the stunning award winning theatre set in a wooded glade beside the lake and the hotel’s ornate Victorian Orangery overlooking the parkland. Kilworth Theatre seats 550 eager theatre goers in the outdoor theatre. A magnificent sail-like canopy protects the whole audience and stage against adverse weather and blankets are available to stave off the chill of a cooler evening. These are no am dram performances but top notch West End Shows

overseen by co-owner Celia Mackay who has a long and established theatre background and once the Kilworth Theatre shows are announced, tickets fly out. Take heed – book early to avoid disappointment – 2016 sees Thoroughly Modern Millie and West Side Story coming to the Kilworth stage. I always opt for a bedroom in the main house – they are all unique in design and exceptionally spacious …… and that goes for the bathrooms too. The beds are uber comfy and I have never had a bad night’s sleep here – possibly helped by a long soak in the sumptuous bath with Clarins Eau

Dynamisante products that are provided in all bathrooms. Breakfast is a quagmire for any diet fiends ….. who can resist Eggs Benedict? Not me that’s for sure! And Kilworth House certainly serves up a mighty fine version and served in the most elegant of settings in the ornate Victorian Orangery. That said, there are plenty of healthier options available for those with more will power than I. 01858 880058 info@kilworthhouse.co.uk www.kilworthhouse.co.uk

“ We want to give the ultimate experience in everything you do here,” he explains. “We’re really, really good at weddings and parties. All you need is your imagination and your chequebook.” Every room is decadently designed and features include private roof terraces and gardens, four-poster beds, free-standing baths and 21 fabulous rooms. There is more accommodation at the Joiners Arms down the road which is owned by the Hotel. It has five beautiful rooms, fantastic food and is a great place in its own right to stay and visit. They also have an array of beautiful beach side cosy country cottages. Champagne and barbecue on the beach anyone? Any hotel that quotes Willy Wonka on their website is okay by us. And Newton Hall is Willy Wonka embodied. Imaginative, surprising, fun, quirky and very cool.

Chef to Chef T

he sun streamed through the window and Edinburgh looked amazing from my seat in the Juniper bar, waiting excitedly to chat to Tony Sarton. Tony is head chef of Twenty Princes street and is in charge of the menu development and the day to day kitchen for both the restaurant and the juniper bar. Both of these and the kitchen have just been refurbished and look fabulous. The restaurant is lavish but retains a welcome feel, the ceiling has been lovingly restored and the wall of art is worth a visit and the wine wall (a glass room wine lovers can visit to select and taste their wine ready for their meal) is something else. The Juniper bar has a more cosmopolitan feel with high backed easy chairs in jewel like colours and a cosy fire place area, perfect place to relax and escape the bustle of the city. Tony arrives straight from the kitchen sits down as a team member delivers his cuppa. Immediately we chat as if we’ve known each other for ages, let the questions begin…. Tell me about the team and the kitchen at Twenty? We have a great team, chefs who have followed me from place to place so we know how to think for each other and work well together, the kitchen has just been extended so it work for us and the Josper oven is fantastic, sealed oven/wood burner gives perfect results every time, but I had to get used to it to begin with it was a learning curve, but it’s second nature now. How did the journey to Twenty begin? “Well early memories of cooking at home

My twin brother didn’t get involved with this and still can’t cook. I took a job in a restaurant as I was too young to work in the kitchen, Jack on the Green in Devon, it’s still there. I remember watching the chefs and wanting to be there so badly. From Exeter College, and the chance to meet great chefs there, I set out to Buckingham Palace. I can’t talk about this too much but the night on the pass when the chef let me plate up the food and hinted who would be served that plate will always be a high point. Chefs who have inspired you, high on my list is Anton Morriman..what about you ? Totally the same, what I guy! I cooked for him when he was a guest at the Old Bailey. Others I admire are Rick Stein and Michael Caines, they have the same food ethos as I do and both loved getting involved with the students at college. This is something I can’t wait to do with our Edinburgh colleges, and see the raw talent for myself. Let’s talk about the produce and ingredients you use… “Locality is paramount, we live in the most wonderful part of the world, a natural larder, and this is where my ideas come from, meat raised only miles away from the city. I always love to see the farms and have often followed the progress of the animals from land to slaughter to butchery and finally to plate. Everything we use is the best Scotland has to offer and working closely with suppliers is key to a good menu. How do you encourage your team to think the same way and appreciate these values? “Easy, I take them fishing! We take staff from

kitchen and restaurant and we fish. They learn about the catch and fillet the fish, prepare it and it becomes a 6 course menu the next day, a day out they will never forget. What about one meal anywhere in the world? “That’s easy .. Wasslehoff in Cloisters 3* . Perfection. The restaurant is filling up and my daughter arrives for our lunch date, Tony gives us a guided tour of the kitchen and suggests meat from the josper, with a starter and dessert to match. The starters arrive and we just have to share each. The fillet steak and my rib eye are cooked to perfection in the Josper, the sauce and fantastic chips with a fab side of mac and cheese are all delicious. The desserts were fab, the Jaffa Cake, was a dark choc, orange jelly and tiny sponge delight but the star of the show was my baked Alaska, sitting over a glass of dry ice to add to the theatre, sublime and the topping of Italian Meringue! Meeting Tony and finding out his food journey was an absolute pleasure and I can see why his restaurant has been winning awards and accolades ever since it opened. Tony is true foodie, very passionate and most certainly putting Twenty and Edinburgh on the map.

ne of my favourite destinations is the ‘Seychelles’, famous for its legendary beauty, with verdant peaks, primeval forests and powder-soft beaches where the only footprints you’ll find will probably be your own. This unique archipelago’s 115 islands, set in an azure ocean, are located between 4 and 10 degrees south of the equator. Their location means that the islands are blessed with a warm tropical climate all year long, earning them the reputation of being ‘the land of perpetual summer’. The brisker south-easterly trades blow from May to September, bringing cooler and windier conditions that are ideal for sailing. If you love swimming, snorkelling and diving,

plan your break for April/May and October/ November. Only 16 of Seychelles' islands currently have hotels, many offer luxurious amenities and all possess their own natural charm. They offer everything from the opulence of worldfamous 5-star resorts to the picturesque charms of affordable smaller hotels, Creole guest houses and self-catering. International hotel chains such as Berjaya, Savoy, Hilton, Smart Choice, Avani, Maia, Four Seasons, Kempinski, Beachcomber, Constance and Banyan Tree already operate hotels on the islands with most recent arrivals such as the Eden Bleu and H Resort just joining the stellar line-up. The remoter islands of Bird and Denis located to the north of Mahé, Frégate to the east and Desroches to the south each offer diverse, winter

world-class island experiences. Meanwhile, North Island, Ste Anne and Silhouette which lie closer to Mahé are bywords for excellence in island-style accommodation. The islands have something for everyone. You can enjoy delicious Seychellois Creole cuisine with its fusion of eastern and western culinary arts in restaurants with your feet in the sand and sip exotic, tropical cocktails against the backdrop of a beautiful sunset.Visit the island of La Digue where time stands still and bicycles and the ox-cart hold sway. Savour the beauty of the dream beaches of Anse Lazio, Intendance, Grand Anse and Source D’Argent or experience world-class diving, snorkelling, fishing, sailing, spa and wellness, walks and trails and, of course, island hopping so you can really get to see the diversity of landscapes within these magical islands.

elly Louise Thackray and Mark Whitecross chose to get married in Malcesine, Lake Garda, in Italy, one of their favourite places because they adored the scenery and the way of life. Mark had proposed to Kelly on a family holiday in Italian underneath a blanket of shooting stars. They got married at Castello Scaligero, followed by a trip to Cafe al Porto a bar in the harbour with its panoramic views of limonene. The wedding party then enjoyed a boat trip on the lake and finally the evening venue was La Voglia, a lakeside restaurant in Cassone. They were surrounded by friends and family who had flown out for the wedding. The bride wore a Watters dress with the groom and best men in black tuxedos with skinny ties and braces. The bridesmaids wore champagne dresses. The themes for both weddings were different so the colours were classic so that they would fit with the Italian theme and the Ethereal woodland dream for the return to England. Every element of the wedding was personalised and all handmade by the bride and her family. All button holes and bridesmaid bouquets were handcrafted by the bride on the morning of the wedding. Stationary and table decorations were created by the bride and her mum along with some last minute help from the bride’s family. The confetti was dried petals from treasured places that the couple and family had visited since their engagement that Kelly had dried and packaged up for gifts. IMAGES BY CARRO STUDIO. ictoria Kelley and Mark Whyman got married at Emmanuel Church, Saltburn with their reception at Hunley Hotel and Golf course, Brotton. They chose Emmanuel church in Saltburn because Victoria’s family had been married there and she wanted to keep with the family tradition. Victoria worked as a wedding planner, formerly at Wynyard Hall and then Raithwaite Hall and had helped to plan over 750 weddings. She used the best ideas from all the weddings she had seen whilst also making it personal to her and Mark and their families. They used the colour scheme of orange and blue as they love strong colours and Victoria had always wanted to use fish as her centrepieces after seeing a bride do this and had fallen in love with the idea. The goldfish theme was reflected in the colour scheme of orange and navy blue. Victoria wore a tea length dress adapted into a 50’s design for her by Tara at Exclusively Yours from an original dress by Hillary Morgan to reflect the 50’s style influences of their Saltburn location. She and her mum made broach bouquets which incorporated pieces of her nanna’s jewellery so she could have her with her while she walked down the aisle. The day was centred on family, with all of the bridal party immediate siblings, nieces and nephews. Mark’s dad was his best man and Victoria’s sister maid of honour. The bridesmaids’ dresses were from Eliza J at House of Fraser and Coast Bridal. CREDIT: IMAGES BY CARRO WWW.CARROSTUDIO.COM

“The main thing we’re seeing at the moment are the couple wanting to make the wedding day personal to them,” she notes. “A lot of the decoration and themes are based on how they met, things and places they love. Little touches really but it makes it lovely and personal. “ And dogs,” she adds, laughing, “we’re getting a lot of people wanting their dogs included which isn’t a problem for us as we’re very dog friendly. We make sure they’re as well looked after as the other guests, they even have their own doggie four poster beds.” IMAGE BY WWW.CARROSTUDIO.COM

Northern and Fabulous

I

'm still buzzing! Hundreds of the North’s leading designers, architects and retailers assembled to have their achievements marked at the thirteenth annual Northern Design Awards at Liverpool’s Titanic Hotel at the end of October. The evening’s hosts, Red or Dead founder Wayne Hemingway, Event Director, Shelley Bond, and Channel 4 presenter, George Clarke, all spoke rousingly about the importance of promoting exciting design and architectural projects north of the Watford Gap. Being head judge I was personally blown away by the standard of entries this year. We’re very fortunate to

Monastery and Buxton’s stunning Devonshire Dome. The VIP after party was rather fun....that's all I'm saying! With an impressive judging panel, featuring Linda Barker, George Clarke (of BBC’s ‘Restoration Man’ and ‘Amazing Spaces’), Wayne Hemingway, Nick Munro, Jan Constantine, HRH Princess Katarina and yours truly, plus my co-director Raymond Watkin, the influential Alison Vance and Noel Farrer, the 2015 Northern Design Awards attracted a huge number of spectacular entries. This year, George Clarke joined the other judges on stage to present the

Be ing he ad j u dge I wa s pers on al ly blow n away by t he s t and ard of e nt r ie s t h i s ye ar attract such a high level of entries and to be able to enlist the expertise of my enormously talented fellow judges. This year, we’re celebrating record attendance figures at the Northern Design Awards. This reflects not just the growth of the awards themselves, which have been a key date in the design diary for more than a decade. It also marks an exciting period for northern property developers.” Guests at the Northern Design Awards enjoyed the glitz and glamour of the evening, with a three-course dinner and entertainment before the names of the winners were announced. Wayne Hemingway spoke of his excitement at celebrating the awards, which have always been held at striking Northern venues – from the Chester Grosvenor Hotel to Manchester’s Lowry Hotel and

lucky winners with some of the most prestigious awards in the design industry, including Sunderland City Council. Being an avid Sunderland FC fan and with Sunderland being his childhood home town, George was ecstatic! The Titanic Hotel at Liverpool’s Stanley Dock, which is itself a multi-award winning restoration project, made a fitting setting for the awards. However, I am thrilled to announce that the Northern Design Awards are heading to my home city, Newcastle, in 2016. On a final note, I have some very exciting news on my new programme coming to your screens early next year. Watch this space! Wishing all Ladida readers a very merry Christmas and a happy, healthy & wealthy 2016

OME of the finest and fastest vehicles from almost 100 years of motoring pulled into the grounds of the fabulous Wynyard Hall Hotel for a classic car extravaganza last month. Around 75 vehicles, some dating back almost a century, were on show including a 1930s Rolls Royce, which featured in the TV show Heartbeat, a Lotus from the 1990s, a 1967 Morris 1000 and a 1954 Ferguson tractor. The event attracted classic car enthusiasts from all over the region and was organised by the Newton Aycliffe-based Northern Bygones Society. The Society stages up to 15 car shows a year.

Maddy’s World

A

ugust involved a glamorous girlie ‘posh Pimms & Picnic’ day at the races in Sedgefield. The wonderful Vernon Kay was the headline DJ and what a fun night it was, dancing away outdoors with fizz in hand it was easy to forget we were just in Sedgefield! I was shortlisted for the best dressed category. My style inspiration was Carrie Bradshaw and I had a sassy fascinator made by Fabulously Fascinating in Washington, it was a real stand out accessory I love it! The weekend started with a trip to the Cotswolds with one of my best friends to Jamie Oliver and Alex James ‘Big Feastival’. I went as a guest of their headline sponsor AEG and arriving on the day we discovered that AEG guests had their own private chill out area and free champagne all day!! The festival was a fun filled foodie weekend with fantastic live music from the likes of Paloma Faith, Sophie Ellis Bexter and Example. Madness came at the end of the month and it was great to meet the ‘boys’. The hubby loves Madness and has seen them numerous times over the years so was chuffed to meet Suggs and the rest of the band who were all lovely. I have been a senior volunteer for The Prince’s Trust for a few years now and I love my involvement with this amazing charity. The North East team arranges various events across the region and I am hugely involved in gaining sponsorship and auction prizes as well as helping at the events and fundraising. The

Prince’s Trust support vulnerable and disadvantaged young people in the UK to help change their lives. It’s a privilege to be associated with such a brilliant organisation. I am a strong believer in paying it forward so I invest as much of my time into the events as I can. October has been a busy month with events for the Trust. Three of the biggest events in the calendar happen in the same month ‘Benfield / Lookers PLC Golf Day & Dinner’, ‘Fashion Dinner’ and ‘Ladies Who Rock’. The golf day and dinner is a fantastic event and this year was no exception raising over £50,000. The day involved a golf day at Close House with the likes of Alan Shearer, Jonathan Edwards, John Beresford and Steve Harmison taking part. The day finished with a big gala dinner at the Hilton in Newcastle attended by 400 people hosted by Jonathan Edwards and with entertainment by ‘Go West’. Drinking in the bar went on until the early hours but what a superb day it was! The week after it was the annual Prince’s Trust ‘Fashion Dinner’ at the York National Railway Museum. ‘La Di Da’ magazine were the media sponsor so I was joined by the lovely Linda and Liz from the magazine and some of my fabulous fashionista friends. I wore a long Coast blush pink skirt, a backless black top, Coast bag and my favourite Butler and Wilson jewelled necklace. I have had this for 10 years now and it never fails to make me feel glam whatever I am wearing! The evening started with a Laurent Perrier drinks reception then La Di Da of course had winter

‘front row’ seats at the Fashion show headlined by ‘Goat Fashion’. Goat has to be my new favourite designer and I came away from the event excited to order one of their dresses (using my show 30% discount). Admittedly the dresses are pricier than my normal wardrobe items but the quality speaks for itself and the designs are timeless. October ended with the super glamorous ‘Ladies Who Rock’ event at the Biscuit Rooms in Newcastle. I wore my new 60’s inspired ‘Ava’ Goat dress and new Carvela black heels (bargain from the McArthur Glen York outlet). I loved my outfit choice and I had so many compliments from ladies throughout the day, including all the ladies on Dame Margaret Barbour’s table who said they thought I was the best dressed and classiest lady at the event…in a room full of 300 women that was a lovely thing to be told! The day involved lots of fizz, fashions shows from Barbour and Fenwick, great entertainment and lots of fundraising, again raising in excess of £50,000 which was amazing! Lots more glamorous events coming up so I will report back but in the meantime wishing you all a fabulous Christmas and a Happy New Year

Polite and down to earth, we chatted about his collaboration; his must see women’s collection, his worldwide travels and his love for fitness.

GLASG OW C HI C I love spending a lot of time in Glasgow with my other half Pete. This time we stayed in The Village Hotel Glasgow and I had a fabulous full body massage in the Viva Urban Spa. The hotel is new and has everything you could want, even the Starbucks I needed the next morning after all the designer shopping and partying! We love going out in Merchant City and eating in Metropolitan restaurant on the balcony which overlooks the whole square, it’s great for people watching and after dinner you can party the night away downstairs.

We love Puerto Portals to eat at night and like to spend our days at the beach or pool sharing the odd bottle of fizz! This time we took a boat trip and went around the south coast of the island pulling into private coves and going snorkeling in the crystal clear waters. Palma is our favourite place to shop, we can spend all day there and we still haven’t shopped enough! Massimo Dutti is always a must visit, it has classic luxury pieces that we love. We love to go to Cappucino San Miguel, an old mallorcan building, candlelit and with an internal courtyard. It has a lovely atmosphere and relaxing ambience, where you can get a cold glass of wine after a long day shopping. With palm trees lining the streets, the cathedral lit up, the marina full of yachts, Palma really is the place to be!
