ACCORDING TO “Best Places,” 62% of Roswell residents claim they have a religious affiliation, compared to just 52% in the state of Georgia. The holidays are a special time for our Faith community to collaborate and celebrate. Many who normally wouldn’t attend Mass or worship services regularly often do so in December. Hunukkah 2018 begins at nightfall on Sunday, Dec. 2 and ends at nightfall on Monday, Dec. 10th

SINCE THE CHANUKAH MIRACLE involved oil, it is customary to eat foods fried in oil, like the Eastern-European potato latke (pancake). While the recipe works with any type of potato, using Yukon Gold will be more aesthetically pleasing because they discolor more slowly than other potatoes. TIP: Add a small piece of carrot to the oil you're frying in.

When the carrot starts to looks shriveled and brown, replace it with a fresh piece. The carrot helps absorb the burnt taste from the oil, and you can keep frying for longer without changing the oil. Latkes taste best fresh, but if you need to make them in advance, I recommend reheating them in a frying pan with a tiny bit of oil to help them crisp up again.

INGREDIENTS DIRECTIONS ½ an onion 2 tbsp. oil 3 tsp. kosher salt, divided 1.5 lbs. Dice the onion and sauté it in 2 tbsp. oil and 1 tsp. salt until golden. Grate the potatoes (by hand or in a food processor). Immediately transfer the grated potato to a bowl of cold water. Place the eggs, flour, fried onion and 2 tsp. salt in a separate bowl. Drain the grated potato well, add it to the rest of the ingredients and mix immediately. Heat 2-4 tbsp. of oil in a frying pan, over medium heat. Test the oil by dropping a tiny bit of the mixture

into the pan. When the oil sizzles upon contact, it is ready. For uniform latkes, use a 1/4 or 1/8 cup measuring cup. Scoop the batter and gently drop it into the oil. Press down gently with the back of the measuring cup to flatten. Fry 2-3 minutes until golden, then flip the latkes and fry 1-2 minutes on the second side. Repeat until all the mixture has been fried. (You will need to add more oil to the pan every couple of batches.) Yields: 16 latkes

She’s a dyed-in-the-wool restaurateur with stunning blonde hair and a wicked smile doing what real restaurant people do... making sure everyone is cared for. Life is good at her little restaurant. Gracious Plenty is a Canton Street newcomer that hit a sweet spot. Serving a southern inspired style of home cooking that puts down a breakfast unlike any other. such a simple menu, but it gets me everytime. I’m still plowing through everything but so far each bite is wow, just wow. The biscuits are baked fresh all day. They are better than your “Nanna” ever thought of and you can’t miss them because they make them next to the order station. I love that move! A baker, a real live person, with flour on their nose standing right there making biscuits. I’ve died and gone to heaven. These guys always start simple. The eggs scrambled are perfect, like a mini omelette,

with a dusting of scallions. It's just crazy the attention to detail here. Add some bacon done perfectly, sizzling, all smoky delicious, a biscuit dripping with alternating spoons of a jam and honey with each bite better than the last. It’s slap your momma good. Their menu is constantly rotating but count on the basics like eggs, biscuits and Stumptown coffee or La Marzocco espresso. Everything else rotates on seasonal availability and they are as local as can be. From the grits to the kale, the menu is simple and pure. The service is perfect. They line you up for an order then cover you in coffee. Within a few minutes your breakfast finds you. That energy of Jasmine’s is in the whole team and it's wonderful. Take for example the Hash brown bowl, with two eggs and chicken sausage. Simple right? But you have to see the crisp, taste the velvety, enjoy the sharp bite of the perfect sausage, farm raised and all local. It’s all in the ingredients folks, they matter. And to bring this in at $10, get outta here! Or just a simple biscuit and honey. Just out of the oven they are to die for. The layers of dough are perfectly browned and the honey is a local clover. It’s so rich and sweet your tongue goes, “Mmmmmm.” Ohh, Speaking of layers of dough the other items in the bakery such as muffins and biscones are stand on their own good. Gracious Plenty has a coffee house vibe with sophisticated fresh food soul that’ll wrap you in a hug. I love it and you need to go find it. It's a half block south of Woodstock Road at ​1164 Canton Street​across from Adele's and Jere Woods’ office, right next to the new Vickers building. With its own parking lot in the back you can actually get into the place. The best things in Roswell are small. You’ll pass them right by if you aren’t careful. Check back. The cast includes world-class professionals who have danced nationally and internationally, as well as aspiring young professionals from our own Roswell Dance Theatre, the performing company of the Tolbert Yilmaz School of Dance. Roswell Dance Theatre begins rehearsal in August for the November opening, but planning and production work occur year round. As we celebrate the 30th year, the Nutcracker first family, including Clara, Fritz, Clara’s little sister and Mr. and Mrs. Von Stahlbaum, will have a new wardrobe. The Sugar Plum Fairy will also have a beautiful new costume that took over four months to construct and which is embellished with thousands of Swarovski crystals! This will only add to the sparkle the dancers already gracefully bring to the stage. The 12-performance run opens its production on Friday, November 23 and continues through the following Sunday, December 2. Several special performance opportunities feature two character ‘meet & greets’ with autographs and photos, Girl Scout troop events and two sepcial daytime shows for schools, seniors and local community groups. To commemorate the shows, there is an extensive Nutcracker-themed gift boutique to find the perfect souvenir to take home and enjoy. At the conclusion of the festivities, the dancers wave goodbye to Clara– a happy farewell for the fantasies that must fade away with her dream. They will await Clara’s return next Christmas – and she will always have her Nutcracker!

Chattahoochee Nature Center puts on four seasonal “Family Fun Days” throughout the year; but none is as much anticipated as at this year’s Enchanted Woodland Wonders day on December 9, 2018.

Enchanted Woodland Wonders This “Family Fun Day” is opening day for CNC’s annual fairy season, which runs Dec. 9 through Feb. 28 By Jon Copsey WINTER IS THE PERFECT TIME to explore the world around you – everything is changing and preparing for the colder days. Leaves falling, animals are getting ready for hibernation, days are getting shorter and everything is just slowing down. But there’s also magic out there, if you know where to look. Fairy houses and gnome homes will pop up like mushrooms throughout the wooded trails of the Chattahoochee Nature Center. This Enchanted Woodland Trail is only from Dec. 9-Feb. 28, so be sure the catch those fairies while you can. These truly tiny houses are spotted around the trails at CNC, hiding in the leaves or around trees. Children and families are encouraged to explore along the wooded trails and hunt for the houses when they visit – who can find them all? Tracy Kane, a local children’s book author, was one of the members of the community who made a fairy house last year. She says the fairy houses and gnome homes can play an important part in helping children get into nature. “Children first need to enjoy nature before they can appreciate it as adults,” said Kane. “Fairy house building offers a fun, creative way for kids to get to know about nature.

Unplug and get outside to explore. Fairy houses encourage kids to use their imaginations and enjoy the wonders of nature, all while creating their own fairy habitats.” The trail is kicked off Dec. 9 with Enchanted Woodland Wonders, a family fun day at CNC. Along with announcing the arrival of the fairies, guests can see live reindeer, relax and hear a story, get their face painted and create some winter crafts. Of course, no winter afternoon is complete without a campfire and some hot chocolate. If you need a little food to keep you going, there will be food trucks too. Now, if you are wondering what about the reindeer, where are they? They will be able to make a quick visit to CNC, but only briefly at the beginning; after all, they have a busy holiday season ahead of them. Enchanted Woodland Wonders is Dec. 9 from 2-6 p.m. and is included with general admission and is free for CNC members. At Gypsy Rose, it’s all about the music. I had heard the exciting news that a live music venue was slated to open in downtown Roswell by what seemed to me like a group of smart, young, community and music-loving friends with infectious enthusiasm and joie d’vie. So, I was really looking forward to sitting down with Founder/Owner Brittany Crooms and her Director of Marketing Jeris Hollander to learn more. We met for coffee at Crazy Love Coffee House, just a few blocks down from the building previously occupied by Classy Clutter, where Gypsy Rose Music will be located. My first impression - authentic, humble, charming and super smart. Brittany has the quick and optimistic mind of an entrepreneur, and Jeris an intuitive understanding of how to communicate Brittany’s vision for Gypsy Rose to the wider community. Having moved to downtown Roswell in early 2018 as a single mom with two young children, Brittany often

She experienced a strong sense of acceptance among gracious locals who love where they live, and she began striking up conversations with these people. It didn’t take long for Brittany to feel like she was part of the Roswell community, as much as the guy who has lived here all his life. As a passionate music lover, Brittany thought it would be great to have a place to hang out and listen to live, original music in Roswell. Her thoughts developed into ideas and the more she talked to people around town, she learned many others wanted the same thing. It wasn’t long before her vision of the Gypsy Rose Music venue became clear, merging her love for music and her love for her new home - the community of Roswell.

Just eight months later, the team behind Roswell’s first live original music venue seems to have everything in place for a January 2019 grand opening, which has many in town scratching our heads thinking, “Why didn’t we think of that?” Sometimes it ‘simply’ takes an entrepreneurial spirit coupled with a passion for making something happen to, well, make something

happen. It helps the leading lady is likable. Having previously owned and operated an interior design business as well as an art gallery in Decatur, Brittany had the experience and business sense to know that she doesn’t know everything. She has serendipitously connected with influential members of the local community who have the knowledge and experience to help her make her vision a reality. These advisors and investors have been instrumental in driving momentum for her project organically. She has remained clear about the vision to offer live, original music for music enthusiasts, a superior sound system and acoustics, and a lively, creative, community-centered vibe. Her best friend and college roommate Jeris Hollander was Brittany’s obvious choice for Director of Marketing and has become a partner in the Gypsy Rose endeavor. A Roswell resident, experienced in marketing and educated in neuropsychology, Jeris possesses an intuitive understanding of Brittany’s vision with Gypsy Rose and is ‘all-in.’ To watch them together, talking about the new venue one can sense they’re solidly on the same page heading in the same direction.

offering “Roswell hospitality,” the type of hospitality that Brittany experienced from the community when she first moved here as a single mom almost one year ago. Gypsy Rose will offer curated, original, live music from a variety of genres, ensuring a diverse selection of independent talent six nights a week. Expect to find an impressive line-up of gifted musicians from day one and to be introduced to new levels of appreciation for the art of making music, because according to Brittany and her team, it truly is all about the music. The rest of it - the collaboration with city officials and the local artists community, the eclectic menus from their own food truck, the fully-stocked bar with local, craft beer selections, the perfect 2,800 square foot building located within walking distance to Canton Street, the community wide contest to choose a muralist… all of this is just gravy (Thanksgiving pun intended).

Brittany’s original vision remains primary, however, and that is to bring the community closer together through music. Gypsy Rose is currently in build out and located at 964 Alpharetta Street backing up to the popular East Alley. Plans are pushing for an opening in late January. A GOOD FRIEND OF MINE SAID several years ago that if a brand figured out how to communicate Clair Underwood's style on House of Cards, it would be an overnight success. There is a plethora of credible, delivery straight to your door, exceptional fashion brands. While some subscription services like Rent the Runway and Stitch Fix include a variety of brands, I am going to focus on one amazing deliver direct service with sizing from 0-22 - MM. LaFleur. What is most unique about this brand is they appeal to all ages. I first met MM. LaFleur over the summer, when I was seeking a dress appropriate for any business occasion in which I didn’t need a blazer. The Atlanta heat tends to never end. I had online stalked MM. LaFleur and was about to order a dress when I noticed they had a new store location in the shops of Buckhead. I was met by an agreeable yet knowledgeable stylist, Lee Ramsey. He is the Atlanta store manager. He could tell I was busy and managed to offer me a drink and pull several appropriate dresses under $200 to have me leave as a very satisfied customer in less than 15 minutes. He is that good. And the brand echoes his competence with professional and polished styles in forgiving fabrics.

I mentioned that I was launching a blog focused on professional attire for busy women without time to shop. He offered to host a party for the launch of my blog, TheOProtocol, so I came back with some of my friends a few weeks later. I’m lucky enough to have friends across all age ranges so I brought a group of ladies from 24 – 68 to the MM, LaFleur showroom. I was astounded at the age versatility of the brand and this is perhaps it’s most unique feature. What was tempting to my 24-year-old friend was also a piece that was bought by her mother in the same fitting. The next day, I saw the daughter wearing the piece. My friend in her 30’s and my friend in her 60’s both feel in love with the same outfit but in different prints. Both pictured here in a pencil skirt and a top. MM. LaFleur does a great job of balancing color as well. A few key fall colors that pop, including plum, rust and a bright yellow paired very nicely with the versatile black, whites and neutrals of the line. I anticipate that this brand has the Claire Underwood seal of approval and has major staying power. An added perk is the deliver direct to door with the online styling option. Being in a hurry is no longer an excuse to looking sloppy thanks to MM. LaFleur.

VOLUNTEERS FROM THE ROSWELL HISTORICAL SOCIETY as well as a coordinated effort of volunteers led by the Roswell Presbyterian Church, will lay commemorative wreaths representing each branch of service on 260+ veterans’ graves in six Roswell cemeteries: Lebanon Baptist, Pleasant Hill, Mount Oliver, Old Roswell, Roswell Presbyterian and Founders’ Cemeteries. Loving Life at 95 PROFILE: Dot Heuslein

Dot Heuslein - a resident at St. George Village retirement community in Roswell, displays the secret to living a full life: optimism and generosity of spirit.

A

AT AGE 95, ST. GEORGE VILLAGE RESIDENT DOT HEUSLEIN proves every day that age really IS just a number. Born on Long Island, N.Y., Dot was the second oldest of 12 children. She fondly recalls her grandmother — who was from Switzerland and known as “Grandmere” — as one of the biggest influences on her life. Grandmere was an avid gardener who lived just down the street from her family. Inspired by Grandmere’s gardening talents, Dot helped with the care of the dahlias that won first prize at the county fair almost every year. Today, Dot is devoted to her garden at St. George Village, where she plants marigolds, zinnias, mums, iris and six-foot-tall sunflowers. A wife and mother of three, Dot has always lived a life of service to others. For many years, she taught Sunday school, was a Girl Scout leader for her daughters’ troop and tutored second grade students in reading. Additionally, she volunteered with the local Red Cross, working in their Thrift Shop and on the Red Cross Blood Mobile. For 13 years, Dot worked a split shift at the U.S. Post Office in the small town of Cold Harbor, N.Y. to help put her two daughters through college. Whenever one of the two mailmen on the staff was out sick, Dot helped de-

liver the mail. She was an indispensable employee. When Dot’s husband, Bill, retired from his career with Grumman Aero Space, the couple built a home in California, DOT HEUSLEIN where they resided for 22 years before relocating to Roswell to be near their daughter. Retirement hobbies included golf and extensive travel. Now, as always, Dot continues to lead an active life. She stays busy not only with tending her garden plot, but also playing bridge, attending water aerobics class and walking around St. George Village’s quarter-mile scenic trail several times daily. Other hobbies include making all kinds of homemade soups (creamed broccoli, minestrone, chicken noodle and potato are favorites), and knitting. Dot occasionally sells her items at SGV, donating the proceeds to the Alzheimer’s Association, or gives beautiful handmade items to her friends. An inspiration to everyone she meets, Dot’s “secrets” to positive aging are her can-do attitude, sunny disposition and generosity of spirit. www.30075life.com | 57

IT’S NO MISCONCEPTION THE HOLIDAYS present a wonderful opportunity to propose. Encompassed by the ebullient atmosphere of Christmas, people that opt to get engaged during this time do so because they are surrounded by family members and loved ones. But what should they know before starting the process of finding the perfect ring? Purchasing an engagement ring is an incredibly individualistic process that looks different for everyone. Although it is strenuous to pinpoint any single most popular design right now, one that has failed to lose relevance throughout time is the round brilliant shape, which resembles a prism-like cone. However, some current trends deviate from this classic cut.

Others like something a little softer, like a cushion cut or an oval.” In terms of how the main diamond is showcased on the ring, people’s preference varies. “A lot of people like the stone by itself in the center, which is more of a solitaire design, and sometimes they like the sides embellished a little bit with some stones. Other people like it with something called halo, which is diamonds that actually surround the center stone.” Above all else, Jaffe remarked that Brilliant strives to find a ring unique to every buyer no matter the style, a quality paramount for sustaining lifelong satisfaction.

When starting the search, you not only want to be aware of the styles of a ring, but also of how to judge its quality. “[People] are looking for getting the most they can for the best value,” said Christina Kanthak, an experienced jeweler at Meridian Diamond. Price is determined by what’s called the four Cs: clarity, color, cut, and carat weight. Clarity is the measure of a diamond’s transparency, where you want as few inclusions (marks) as possible, if any. Color is, paradoxically, how color-less the stone is and one of the most subjective ways to evaluate its quality. “You don’t want it to be a pale yellow color unless you are trying to buy a yellow diamond,” elucidated Kanthak. “You want it to be a clear diamond, not grey.” Cut refers to its shape and proportions, and carat weight to its mass. Evaluating these components holistically is crucial in deciding the overall price of a diamond. A stone that is two carats but not as colorless as another that is one carat may be much less valuable. If you plan on purchasing a ring for the holidays, be cognizant that business gets much busier at jewelry stores around Christmas. Not only are people similarly looking to get engaged, but gift-giving is at an all time high and diamond accessories are no exception. The time it takes someone to decide on a ring varies tremendously, so be prepared to devote the effort necessary for finding one that meets your requirements. “It could take a matter of minutes to many, many months until somebody makes a decision that’s right for them,” noted Jaffe. Connecticut, the youngest in a big family who all flew in for the occasion. Each of the out of town guests were presented with Roswell-style swag bags that included gift certificates to Gate City Brewing Co. (www.gatecitybrewingcompany.com), Variant Brewing Co. (www.variantbrewing.com) and Deep Roots Wine Market (www.deeprootswine.com). Other swag included beer glasses from Variant Brewing and ‘Canton Street’ beverage coasters designed by Michelle Weyant of MWDesignStudios (www.mwdesignstudios.com) and purchased through Roswell Provisions. All the extended family were able to rent homes through Airbnb and VRBO which were within walking distance to Canton Street, so no one had to rent a car. They walked everywhere, which is just how we do it here in Roswell, right? Amy was so excited to finally be able to share all of the things she and Steve love about our community with her siblings and family from Connecticut. Most had never even been to Georgia, let alone a modern Southern town like we have here. They got the royal Roswell treatment as Amy and Steve introduced them to all of the places they love. The first group of family flew in Thursday night, so wedding weekend festivities began on Friday morning at Gracious Plenty Bakery & Breakfast (www.graciousplentybb.com) on Canton Street. Later in the day, the ladies were treated to mani-pedis at Plush Wax & Nail Bar (www.plushwaxandnailbar.com). The group enjoyed lunch with the good folks at Local on North (www.localonnorth. com) and wrapped things up with drinks and appetizers at Osteria Mattone (www.osteriamattone.com) Friday night. Our terrific open container/to-go cup allowance on Canton Street was a big hit with the northerners, as well as meeting all of Amy and Steve’s favorite restauranteurs, bartenders and other locals who have made a positive impact on their lives. Saturday was more of the same good times, starting with breakfast at Crazy Love Coffee House (www.crazylove.coffee), followed later in the afternoon by casual gatherings of family and friends hanging out together at Gate City Brewing. Saturday night Amy and Steve hosted family at their home in Park at Historic Roswell (www.montehewetthomes.com), for an intimate cocktail party, after which they walked over to Deep Roots Wine Market where

the owner Dana Gurela had a charcuterie board for all of the guests. Amy laughs saying her family was so impressed they are hoping someone will open a Deep Roots Wine Market in CT! Sunday, October 14, 2018 was Amy and Steve’s wedding day, which Amy described saying, “It was magical, truly.” The girls headed to Salon Arcaro (www.salonarcaro.com) to get ready, while the guys gathered at the townhome. Both groups had delicious monkey bread from Gracious Plenty to snack on that morning, which was unanimously “delicious!” The guys walked down Canton Street with Amy and Steve’s two dogs, and Steve got his “first look” of his beautiful bride. Ryan Pernice officiated the ceremony, along with help from Amy’s Uncle who is a deacon at St. Thomas Aquinas Catholic Church. Steve’s youngest daughter held the wedding rings, his middle daughter read a reading and his oldest daughter toasted the couple after the ceremony. Amy’s oldest brother Steve also gave a heart-warming toast to the newlyweds. Once the knot was tied, they enjoyed lunch with their guests at Table & Main - shrimp & grits, she crab soup and banana pudding. After posing for some photos along Canton Street the crew headed over to Variant Brewing (www.variantbrewing.com) to enjoy more family, more love and more drinks. Michael Consoli of Cruise Planners Int’l (www.planmycruise. com) put together a fantastic Celebrity Cruise to the Southern Caribbean for the newlyweds - where they turned off their phones and computers - and even enjoyed a good book or two! It’s one thing when a wedding brings together family and friends, but the unique thing about Amy and Steve’s occasion was it also brought together the community. Congratulations Amy and Steve! We are so excited for you two and have enjoyed watching y’all fall in love, Roswell-style.

History and Romance Come Alive at Bulloch and Barrington Hall this holiday season By Beth Ward

THREE DAYS BEFORE CHRISTMAS IN THE YEAR 1853, Martha “Mittie” Bulloch, the daughter of Major James Stephens Bulloch and his wife Martha Stewart Elliot Bulloch, stood before friends and family in the formal dining room of Roswell’s Bulloch Hall and married Theodore Roosevelt, Sr. In the months after the wedding, Mittie and Theodore would relocate to New York City, where Mittie would have four children: Anna, Theodore, Jr., Elliott and Corinne. Her son, Theodore “Teddy” Roosevelt, Jr., would go on to become the twenty-sixth president of the United States. Mittie was charming, beautiful, graceful. She was a true Southern belle that many believed served as partial inspiration for Margaret Mitchell’s seminal character, Scarlett O’Hara, in Gone with the Wind.

And on December 19, 2018, some 165 years later, visitors will be able to step back into Mittie’s world, back in time to antebellum Georgia, for an enchanting night of history and romance as Roswell’s Bulloch Hall hosts its annual reenactment event, “Mittie’s Wedding.” Guests begin their evening with the wedding, and are then guided through the house and property by lantern light. The evening concludes with some historical

storytelling and a special wedding dessert. Less than half a mile away sits Barrington Hall, a mansion built by Barrington and Roswell King, co-founders of the colony that would later become Roswell, Georgia. In 1923, then-reporter for The Atlanta Journal, Margaret Mitchell, sat down with Eva King Baker, considered the matriarch of Barrington Hall and a long-time friend of Mittie Bulloch, about what it was like to be a bridesmaid at Mittie and Thee’s wedding back in 1853. That chat became an important historical record of the time. And on December 1, 2018, Barrington Hall will invite guests back into the parlor where Margaret Mitchell and Eva Baker’s famous interview took place for “The Bridesmaid of Barrington Hall,” a historical reenactment of the conversation. Barrington Hall will be decked out in its Christmas finery as Atlanta actress, Holly Stevenson, brings to life the characters of Mitchell, Baker, and even President Theodore Roosevelt, himself. Guests will also be treated to a formal tea in the barn activity room. Ring in your holiday season with history, romance and a little magic at either of these captivating events. Water Therapy Provides a New Lease on Life PROFILE: Laureen Johnson Resident of Saint George Village

WHEN LAUREEN JOHNSON MOVED TO St. George Village from her East Cobb home last year, she had been suffering from the debilitating nerve pain caused by sciatica for quite a while. “There were times when the pain was so bad, I almost couldn’t get out of bed in the morning. And I was having a lot of trouble taking care of my house and yard after my husband died,” she said. “Even after moving to St. George, I needed my meals delivered to my apartment at first.” Laureen kept thinking about her doctor’s continued suggestion that water exercise might help improve her mobility. It took a little time to move forward, but a few months later, she decided to try out the community’s indoor pool and hot tub. It didn’t take very long for Laureen to see the benefits of water therapy. “When I started using the pool…that’s when my sciatica went away!” she said. Now, Laureen makes good use of the pool five to six days a week. She does water walking, works out with water weights and participates in water aerobics classes. She also says that the hot tub with its water

jets has been great therapy for sore muscles. Most notably, just two months after she began exercising in the water, Laureen was able to discontinue the pain medication she’d been prescribed for sciatica. “Getting into the pool was the answer for me,” she said. “I haven’t had any problems with sciatica since.” With her mobility restored, Laureen feels she has a new lease on life. She enjoys spending time with her best friend and all of the new friends she has made at St. George, as well as her daughter and grandchildren, who live nearby in East Cobb and are frequent visitors. She particularly relishes working in her raised garden bed, where she grows vegetables that she shares with her neighbors. Last summer, she pickled 22 pints of cucumbers. “I had a garden at my home before I moved here, and I missed it. There’s nothing like a tomato fresh from the garden,” she said. “This is only one of the things I can do now that I can be active again.” www.30075life.com | 71

Butternut Squash Bruschetta with Fig Balsamic Glaze & Goat Cheese Thanksgiving is coming right up! If you’re hosting this year, then consider serving the “Best Thanksgiving Appetizer Ever,” which is guaranteed to make your loved ones feel warm inside. Crusty bread loaded with oven roasted butternut squash, creamy goat cheese, tangy fig balsamic onion glaze, and crunchy pistachios. Prep Time: 10 minutes | Cook Time: 20 minutes | Author: Mandy Landefeld | Yield: 24 servings INGREDIENTS 1 Butternut Squash, peeled and cut into small bite-size cubes (microwave whole squash for 4 minutes to make it easier to cut) ¼ cup Extra-Virgin Olive Oil, divided 2 TBS Chicken Stock Kosher Salt Fresh Ground Pepper

1 cup Chopped Onion 1 jar Fig Preserves ¼ cup Balsamic Vinegar 24 slices Ciabatta Bread 16 oz log Goat Cheese ½ cup chopped Roasted Pistachios 1 TBS Fresh Thyme Leaves

INSTRUCTIONS Preheat oven to 400 degrees and line a sheet pan with heavy duty foil. Place cut butternut squash on pan and drizzle with 2 tablespoons olive oil and season with kosher salt and pepper and toss together. Bake for 15-20 minutes or until tender. Allow to cool. While butternut cooks, sauté onions in 2 tablespoons olive oil in a skillet over medium high heat, season with salt and pepper and cook for 5-7 minutes ( or until onions are golden). Pulse cooked onions in a food processor with a jar of fig preserves and balsamic vinegar and allow to cool. Brush bread slices with olive oil and place on a sheet pan and toast lightly in oven. Smear goat cheese on bread and top with pieces of roasted butternut, a drizzle of fig onion sauce, chopped pistachios and fresh thyme. 78 | November/December 2018

Ellijay apples, grown in Georgia's Apple Capital, are the first new crop available in the country every year, with the season beginning in late August. Pumpkins are in season in the South from September through December. With an increased focus on 'farm-to-table' cuisine, how much attention is given to 'farm-to-glass' drinks? Moderm mixologists and bar managers know how to work fresh ingredients into their creations, too.
