They’re diving deep into the world of mixology, exploring flavour profiles, and experimenting with versatile ingredients.

We can thank social media platforms like Instagram and TikTok for pushing the need to explore more with flavours.

Take Ryan, for example, the Assistant Manager at Birmingham’s Hare and Hounds pub. His story embodies the drive and innovation defining this new wave of cocktail creators.

THE RISE OF THE YOUNG BARTENDER

Q: The Allure of the Mix: What initially ignited your passion for a career behind the bar at the hare and hounds?

A: After the pandemic, I was casting a wide net for job opportunities. But the moment I walked into Hare and Hounds for the interview and met the team, something clicked.

The idea of crafting cocktails, being part of a dynamic hospitality environment, and soaking up the energy of live music – that was something I couldn’t resist!

Q: The industry evolves faster than cocktail trends these days! How do young people view bartending as a career path compared to older generations?

A: There’s a definite change in perspective compared to older generations. Traditionally, bartending might have been seen as a temporary gig. But young people today are recognising the potential it offers. They’re not just punching a clock; they’re hungry for growth and see bartending as a springboard for their careers, whether it’s a summer job or a long-term path.

Q: If you could conjure a cocktail that perfectly embodies the millennial and Gen Z experience, what would you name it and what sensory feelings would it evoke?

A: This cocktail would be a play on the sense of change and evolution from older to younger generations in the industry. Imagine a drink that transforms as you sip it starting with a bitter and slightly stale taste, mimicking the sometimes rigid traditions of the past.

But then, a twist! As you continue, the flavour evolves into something sweet and refreshing, reflecting the innovative spirit of young bartenders. Visually, it would be a head-turner, a science experiment happening right in the glass.

To achieve this, I’d use a base of sweet rum instead of the classic Old Fashioned whiskey, for a smoother initial taste. A dash of angostura bitters would still be present, a subtle reminder of the original. And for that final flourish, a sprinkle of lustre dust would add a touch of whimsy and fun.

Q: What were some of the most significant challenges you faced as a young professional in the bar industry?

A: Some of the biggest challenges I faced arose in the early stages of my managerial roles. Starting as bar staff at the Hare and Hounds, I developed close friendships with many colleagues, which later became one of the most difficult aspects of managing.

Striking a balance between managing friends, keeping everyone happy, and managing expectations proved extremely challenging, especially during the holiday periods when I had to rely heavily on them.

Putting people you care about in positions that they struggle with wasn’t easy, especially when they were friends.

However, I always tried my best to remind them that I am always there to support them in whatever ways I can, and I learned to tailor my management style to individual needs as well as company requirements.

By showing respect, I earned it in return, rather than expecting it like some managers do.

Q: What do you think is driving the trend of more young people choosing bartending as a career path instead of pursuing traditional office jobs?

A: I think Young adults today prioritise happiness and fulfilment in their careers, and bartending offers both of that.

For those looking for a quick summer job, it provides the freedom to enjoy their days while earning a good living. Students, a significant portion of the younger demographic, find the hospitality industry a perfect fit with the flexibility to study during the week and work weekends. Compared to traditional office jobs, bartending offers a breath of freedom, flexibility, and the chance to interact with others.

Q: Shaken, not stirred, but definitely lifechanging! We all know young adults are #blessed with wanderlust and a thirst for adventure. What impact does pursuing a career in bartending have on the personal and professional development of young people?

A: Bartending throws you into a whirlwind of characters! You meet everyone from the regular Joe swinging by for a quick one and grumbling about the weather, to the up-and-coming musician fresh off a gig, bursting with stories from the road. It’s crazy how many people you get to chat with that you’d never bump into otherwise. Talk about expanding your horizons!

Plus, you build a ton of confidence and real-world smarts along the way. It’s not just pouring drinks, you know? You pick up a ton of new skills – mixing cocktails, reading people, handling pressure – as easy as learning your ABCs all over again! And the best part? You learn from the old pros who know the bar business inside out.

They spill all their secrets, and then you get to pass them on to the next batch of summer newbies, which is pretty cool and helps you develop some leadership skills in the process. The list of perks just keeps growing!

Q: Is Bartending just a pitstop, or a potential launchpad to bigger things?

A: For many young people, bartending initially is a temporary gig, a way to earn a quick income while dealing with studies.

However, for a wide number of our staff here at Hare and Hounds, the experience usually evolves into something much more lasting.

Picking up skills that they didn’t even think about and realise the potential of hospitality is far bigger than what we all think. The nature of the industry means that a lot of staff come and go over time, but the good thing is, that means amazing opportunities for those who stick around.

Just like me! I went from barely knowing how to pour a pint to teaching the whole management team the ropes of running the place.

For those that do move on to something new, their CV can be filled with so many transferable skills; leadership, money handling, communication, team building and so many more and I think that’s why over the years more and more younger people are changing from 9-5 and opting for bar life !

“EXCUSE ME I ASKED FOR NO ICE”

Of course, the path of a bartender isn’t all glitter and garnishes. Long hours, demanding schedules, demanding customers and the ever-present temptation of free cocktails.

However, the rewards are undeniable. For young individuals seeking a career that’s fast-paced, stimulating, and allows them to express their creativity, bartending offers a unique opportunity.

The rise of young bartenders signifies a vibrant shift in the industry. Their passion, knowledge, and dedication are shaking up the status quo, leaving patrons with a more personalised and exciting experience.

RAISING A GLASS TO THE FUTURE

The UK wine industry is experiencing a surge, and the government is stepping up to support its expansion. A new £1.5 million scheme, the Future Winemakers’ Scheme (FWS), was launched by Environment Secretary Steve Barclay at the WineGB Conference for Growth.

This investment aims to develop the skills and workforce needed to meet the industry’s projected growth.

FOCUS ON EDUCATION AND TRAINING

The FWS will prioritise education and training initiatives, with a significant portion of the funding allocated to Plumpton College, a leader in UK wine education.

These new courses will equip aspiring winemakers and viticulturists (grape growers) with the knowledge and expertise to thrive in this growing field.

REASONS FOR OPTIMISM

The UK government highlighted the country’s long tradition of wine production and trading, emphasising the industry’s significant potential for growth.

With a substantial number of people currently employed and projections indicating a significant increase in the coming years, the British wine industry is experiencing a positive outlook. This growth coincides with a recordbreaking grape harvest.

BUILDING A SKILLED WORKFORCE

Many professionals in the wine industry recognise the importance in training future generations of winemakers.

Highlighting the industry’s rapid growth – the fastest in UK agriculture – they emphasise the need for support to ensure sustainable development.

With vineyard area expected to increase significantly in the coming years, a skilled workforce is crucial.

LOOKING AHEAD: INNOVATION AND SUSTAINABILITY

The FWS is not just an investment in individuals, but a strategic move towards driving innovation and sustainable growth. By prioritising training and skills development, the industry can nurture talent, elevate quality standards, and solidify the UK’s position as a major player in the global wine market.

Beyond the FWS: Regulatory Reforms In addition to the FWS, the government is consulting on additional measures to boost the UK wine industry.

NEW RULES FOR LOW AND NO-ALCOHOL WINE:

In response to consumer demand, the government is exploring ways to allow the production and marketing of beverages with lower or no alcohol content as “wine.”

TRANSFORMING IMPORTED WINE:

This consultation considers permitting the modification of imported wine within the UK, such as carbonation or sweetening.

ENHANCED WINE LABELLING TRANSPARENCY:

Proposed reforms aim to provide consumers with clearer information on wine origin and production methods. For example, the term “British wine” would be reserved for products made with domestically grown grapes.

The public consultation on these proposed reforms concludes on May 10, 2024. With the government’s investment in training and these potential regulatory changes, the UK wine industry appears well-positioned for continued growth and success.

The beauty of the Spring Gin Rickey lies in its simplicity. With just four key ingredients – gin, grapefruit juice, tonic water, and club soda – it’s a breeze to whip up for yourself or a group of friends. The key is to choose a gin

that complements the spring theme. Opt for a gin that boasts strong floral or citrus notes, which will perfectly balance the tartness of the lime juice and the gentle bitterness of the tonic water.

Lights, sound, drinks – it’s all a carefully curated mix designed to ignite emotions and get bodies moving. Who better to understand this intricate dance between science and euphoria than the individuals whose main goal is to get the crowd going.

Q: The Initial Draw: What initially drew you to the art of DJing?

I had no skill in dancing whatsoever but I wanted to engage in parties. My brother’s friend had a spare DJ mixer gathering dust – never saw them touch it so I cheekily relieved them of the burden.

Didn’t know the first thing about it, mind you. But Christmas rolls around, and there’s a controller nestled under the tree, I started fiddling about, seeing what this bit of kit could do.

Then this charity event came up at school and my form group suggested I DJ the party. My form tutor gave me a bit of a nudge, and to be honest, I surprised myself.

Q: Setting the Atmosphere: How does this connect to the psychology of crowds and the science of sound?

The vibe of a crowd hinges on understanding how music and your presence can positively influence them. First impressions are key! I always dress professionally, you see, sharp yet approachable.

It sets the scene for a well-organised event, somewhere to relax and have a good time. Subconsciously, it creates a positive mood.

Music is magic! I don’t just chuck on any playlist. I strategically pick songs, starting with familiar numbers everyone can sing along to. It gets people comfortable as well as the drink, loosens them up.

Then, as the night progresses, I crank up the energy a bit. It’s all about crowd psychology, ensuring everyone feels welcome from the getgo. Reading the room is crucial! I keep an eye on the energy level throughout the evening and adjust the music on the fly. No awkward silences here! My goal is to keep the good vibes flowing all night long.

Q: Illuminating Insights: How do you reckon lighting effects amplify your set and the overall clubbing experience?

Lighting and décor are the secret sauce of any good club. Bright lights? No thanks! They kill the mood faster than a spilt martini. Dimmer settings, that’s where it’s at, especially for those slow jams where you want folks to get all close and cosy.

VELVET CURTAIN CLOSING IN – PURE INTIMACY GUARANTEED.

But when the dancers hit the stage, it’s time to switch things up. Forget the moody darkness, bring on the spotlight! It’s all about creating the perfect moment, and a good lighting technician knows how to use the light to make the dancers and the music come alive.

Because let’s face it, music might get you in the door, but once those dancers hypnotise the crowd with their rhythm, the music becomes just the soundtrack to an unforgettable night.

Q: Crowd Dynamics: Have you observed any intriguing crowd dynamics linked to tempo, shifts in genre, or even particular tunes you spin?

Pop tunes are my go-to for kicking off the night. They’re crowd-pleasers, like making a perfect first impression on the dance floor. Sure, I might receive a few early requests for hip-hop, but reading the room is crucial.

Most people are there to unwind and sing along to some classics, aren’t they?

But as the night progresses, there’s a noticeable shift in energy. You can practically see it –people head towards the bar, conversations rise above the beat.

That’s my signal to mix things up. It’s dancehall time! Even if not every word is instantly recognizable, that high-energy rhythm gets everyone moving. It’s like infusing the room with an extra dose of excitement – you can feel it in the air! Then it’s Phil Collins’ moment.

Q: Beyond the Setlist: Do you integrate any techniques of sound manipulation or live mixing to craft a more immersive atmosphere?

STEMs have become a game-changer in DJing. It’s like having a sonic scalpel in your hands, allowing you to dissect a track live, stripping it bare to its A cappella or instrumental core. This opens doors for some truly unexpected vocal mashups.

Sound effects are like my pocket aces – perfect for injecting energy into a set. And depending on the genre, a touch of echo or low-pass filter (LPF) can really add that extra bit of vibes.

Q: Venue Dynamics: Based on your experience, how does the layout and design of a Birmingham nightclub affect the way people move and engage with the music?

The layout? It’s massive! Dim, harsh lights and random furniture everywhere just kill the whole mood. A good space for music needs to be thought-out, you know?

The flow needs to be smooth, everything should encourage people to move and feel the music, not get stuck navigating awkward furniture. It’s about creating a space where the music isn’t just heard, it hits you.

Q: Navigating the Scene: What are some of the major hurdles you encounter as a DJ in Birmingham, and how do you surmount them?

Yeah, Birmingham’s scene can be a bit wild. Everyone thinks they and their dad could be the next big thing behind the decks.

Makes you wonder if it’s all just who you know sometimes. But that’s the good thing about a scene that’s buzzing, right? It keeps you on your toes; makes you work harder to stand out from the crowd. Talent always finds a way to shine through, eventually.

Q: Future Outlook: Where do you envision yourself within the Birmingham clubbing scene in the years to come?

Honestly, if I stick around Birmingham, it’ll probably be weddings and event bookings. It’s a good way to build a reputation and a steady income.

But who knows, maybe I can break through the noise and carve out my own space in the club

Erika Haigh, who opened the London sake bar Moto in 2019, witnessed this firsthand. ‘’When I moved to London’’ she recalls,‘’ I realised that although it’s such a metropolitan city, with so many opportunities for wining and dining, there was no place you could casually go to have a glass of sake.’’

Fast forward to 2024, and the UK sake scene is brimming with activity. Specialist sake importers are experiencing a surge in demand, with high-end restaurants featuring sake pairings alongside their menus. This shift is driven by passionate sake sommeliers who are educating drinkers about the nuanced world of sake and dispelling myths left and right.

For starters, not all sake is served warm! The vast array of sake ranges from dry and refreshingly light to rich and full-bodied, offering a spectrum of taste experiences depending on the serving temperature.
