The first restaurant in the Western world

A

restaurant is a social institution which offers a choice of foods and drinks, thus we adore to treat ourselves at restaurants which suits our taste or sometimes it enables us to taste different cuisines that we never even knew about. Can you imagine what it would be like if restaurants never existed? We’ve gathered some historical information in relation to the history of restaurants, where and how did this amazing social institution originate? The first public dining institution eventually became notable as a restaurant in France, the initial restaurant possessor is known to be A. Boulanger, a soup seller who established his restaurant in Paris, 1765. According to historical researchers, Boulanger apparently had a sign over his door and the sign displayed “restoratives”, or “restaurants”, which cited to the soups and porridges provided in the institution. In virtue of this, Boulanger’s institution took its name from that sign, thus the term “restaurants” designates a public eating location in French, Dutch, Danish, Norwegian, Romanian and alternative languages, with some alternations. Even though during that time inns and hostelries frequently distribu-

www.londragazete.com

ted food to paying guests and beverages were purchased from cafes. But the accomplishment of Boulanger introduced something different and his restaurant was the first public location whereby people were able to order dishes from a menu offering various choices of food. Boulanger handled a humble restaurant and in fact had included a dish which was called “sheep’s feet in a white sauce”. Boulanger claimed that his soup, sheep’s feet in white sauce, wasn’t merely food, it was a health restorative. Prior to the French Revolution, the upper-class households presented fancy culinary institutions, but when the revolution decreased the number of private households providing employment, numerous chefs and cooks began to work in restaurant kitchens or initiated their own food establishment. As a result, during 1804, Paris possessed more than 500 restaurants, composing of the marvellous chefs of history and forming countless dishes that are still popular contemporarily. The pros of treating yourself at a restaurant? AN EASY WAY TO GET A MEAL Most probably the major advantage stated by many is the convenience of eating at a restaurant. Instead of going home after a long tiring

day at work, cooking at home might not seem so appealing sometimes. Thanks to the existences of restaurants you can pop in immediately and a few minutes later you will be served. NOT NECESSARY TO KNOW HOW TO COOK Unfortunately, not everyone can cook. Nothing to be ashamed of but some of us just lack the skills of cooking. But when ordering out, all you need to be capable of is to read the menu and others will take care of fulfilling your stomach. SPECIAL OCCASIONS Majority of us tend to visit restaurants on special occasions such as birthdays, anniversaries and parties. It’s a great opportunity for family and friends to merge together and have fun and most importantly to ex-

perience great food. TASTING DIFFERENT CUISINES One of the fundamental advantages of restaurants is that it offers to use an opportunity to experience a wide range of cuisines from different cultural backgrounds. Instead of having to fly out to countries to taste their traditional dishes we can just walk down the road to taste delicious dishes.

Is the Turkish pide or the new Italian pizza?

T

here is growing argument on whether we are we shifting away from the classic pizza option and to towards the Turkish pide? Turkish pides are bread which has a center of filling, with a choice of beef, cheese or vegetarian. Pide is normally formed in an oval or round shape and is regularly conveyed as a Turkish pide. However, the crucial question here is that, are Turkish pides taking over Italian pizzas?

www.londragazete.com

Pide is pizza accompanied by Turkish sparkle. Abandoning the tomato sauce, mozzarella and basil, pide is relevant to the fascinating vivid flavours of the Middle Eastern cuisine. Consistency of fragrant lamb, pungent black peppers, tender spinach and Turkey’s familiar peynir cheese, formed from sheep’s milk to an antique recipe. And the most delightful thing about pide is that it is available in many restaurants in London.

Moreover, lahmacun is a sort of pizza, essentially topped along ground meat, onion, chili, and parsley. Alternatively feasible toppings comprise meat pieces and cheese. The typical lahmacun is oval and almost a foot long, however, restaurants may shape them palm-sized portions. For instance, every region possesses its individual method of making lahmacun. Such as, in Samsun, they’re created in boat shops with filling hugging edges whilst, in Antep they’re made with garlic and no onions. Though, the foremost and delicious pides appear from wood fire ovens and are pulled in and out on wooden oars. In historical context, some claim that the Ottomans ate pide like a bread named tokalak, although others claim that pides where essentially created during the twenties as a method of getting by ingredients in a Turkey damaged by the outcome of a war. Though, majority consent that pide was invented in the region of Samsun in Turkey. Despite all the delicious toppings and ingredients used for the making of pizza-like pide, the essential touching which provides a sensational taste and unifies all is butter. Before serving, pide is brushed luxuriously with more melted butter, presenting it with a glossy sheen. Withal, there is a debate on whet-

her there is move from pizza to pide. Pizza is known to be a traditional Italian dish of the Italian cuisine, including of a yeasted flatbread commonly topped with tomato sauce and cheese and baked in an oven. Additionally, it can be covered with vegetables, meats, and condiments. Pizza is one of the most popular foods in the world and a typical fast food option in Europe and America also, pizza delivery is very common in most parts of the world. Pizza is served as portion size slices or pieces, it can either be prepared fresh or frozen, in restaurants, pizza is baked in an oven with stone bricks and frozen pizzas are available in various stores. When it comes to the making of pizza, the dough and ingredients can be merged into a type of table. Nonetheless, as the Turkish restaurants are expanding all around the world and in particular in London, there is an increasing demand for pide from not only the Turkish population but those from diverse ethnic backgrounds. Hence, there is growing argument that it’s all about the Turkish pide now, but we must admit both dishes are incredibly delicious and irreplaceable. Therefore, both Italian and Turkish cuisines are exceptionally appreciated for their contributions to the world with these great inventions.

Delicious Turkish soups that you must taste

I

t can be commonly agreed that inclusive of the Turkish cuisine, soups are a crucial notion of Turkish culture, heritage and tradition. As expected, Turkish cuisine holds a variety of vegetarian, meat also sweet dishes. One popular kind of the Turkish cuisine appears to be soup, served as a starter before lunch or dinner and even consumed for breakfast. Soups are also claimed to be the best hangover cure. Here are a few national soups that are highly recommended to taste: TURKISH BRIDAL SOUP: EZOGELIN Widely known as the soup of Ezo the bride, this taste has a preferably miserable love story devoted to its modest roots. The tale states that Ezo was an extremely pretty woman which lived in the south-eastern Gaziantep region during the early 20th century. Regardless of her beautiful appearance, love was on no occasion simple for her and her first marriage was a disappointment after her husband having an affair and her second marriage resulted her to live in Syria. Ezo

was homesick for several years, she lost her life during the 1950s however her tale and recipe still exists until today. Traditionally produced from lentils, bulgur and cayenne pepper and paprika. HIGHLAND MEADOWS SOUP: YAYLA This soup that might not be to everyone’s liking is a strange regional cuisine from the Black Sea region of Turkey, an area that is highly green in landscapes and mountainous, hence giving it the nickname as the highland meadows of Turkey. In this area, traditional farming methods are still used and dairy products are fresh which is ideal since a staple ingredient of this dish is yogurt. Also including rice and one egg yolk, melted butter and chilli flakes are sprinkled

over the top as a garnish but also to add diversity to the range of tastes. CABBAGE SOUP: LAHANA Another favourite of the Black sea regional cuisine, Cabbage soup may seem like a boring alternative, but for vegetarians especially, it is one of the tastiest soups thanks to the addition of beans to diversify the taste. Again, traditionally garnished, with paprika and melted butter, you may not see this option on the menu of most local soup kitchens, but it is worth looking on Google for the recipe if you want warming, hearty meals in winter. SHEEP’S HEAD SOUP: KELLE PAÇA Travellers from the western world, who long ago, discarded any traditions of making use of every bit of meat, may originally bulk at the idea of eating sheep’s head in a steaming

broth, yet it is not as disturbing as it sounds. Originally stemming from the Middle East, this soup is a hot favourite especially for the late night revellers after a drinking session. In the southeastern district of Gaziantep, soup kitchens displaying the head skeleton of a sheep in a window also make a roaring trade from this flavour. The tongue or meat from the shinbones can also be used but is incredibly tender because of the extended boiling time and when combined with the other ingredients of hot chilli flakes, garlic puree, and oregano, this soup provides quite a kick. TRIPE SOUP: ISKEMBE Iskembe is a traditional Turkish hangover cure, this soup is also perfect for any day of the weeks, even if you’re not reviving from a night of too much booze. The soup consists of butter, red pepper, garlic, vinegar and flour.

with net or rod, but with raki.” Raki is a well-known Turkish alcoholic drink which has its unique culture of eating, table manners and conversation style. As for sure, you must have heard about the perfect combination of raki

and fish, and without a doubt in the Turkish culture, raki has been the dominant comrade of fish and meze. Raki is an essential alcoholic beverage, not only because it contains alcohol but since the circumstances in which one consumes it. Commonly consumed at a meyhane, a kind of bistro designed particularly for raki drinking. The meyhane is a temple of Turkish cuisine, hence it is additionally a place whereby people meet, talk, debate, embrace and lament. An experience at the meyhane is centred on raki, but raki never stands alone. Alongside raki without exception comes meze, small plates of food that appear covertly, every now and then. In a sense, meze is appetisers leading to the main course, and the main course is generally consistent with a variety of seafood, such as seabass, seabream, anchovy, or red mullet. Meze usually comes in sequences. The first will comprise salad, thick slices of white cheese, eggplant puree and honeydew melon. Next in line arises from the choices of the chef, each dispensed in its own small platter, small dolma, cooled vegetables in olive oil and then mussels on the half shell, mashed beans with lemon sauce, pureed fish roe, yogurt seasoned along garlic, raw tuna fillets and red lentil balls might be served. Raki enhances the flavour of all food, however, the enchantment goes best with fish. Raki sharpens the taste of all food, but its magic works best with fish. The wide range of fish in Turkey seems endless. It differs in relation to the season. Without a doubt, the fish is always fresh, and made with simplicity, alongside served with lemon wedge and possibly some onion or sprig of parsley. Every meze has its own unique and mouth-watering taste, aroma, texture, and character.

Consuming raki alongside the mezes constructs the experience to a genuine transcendent level. “All the senses are involved,” states Aydin Boysan, a famous architect and bon vivant which had been drinking raki for more than sixty years and passed away recently. Aydin Boysan had given utterance to the manner of drinking raki, he suggested, “First you watch the water being poured into the glass and mixing with the raki. Then you pick up the glass and inhale the aroma. When you drink it, you take a small sip, feel the pleasure of it flowing down your throat, take another small sip, then put the glass down.” The meyhane culture demonstrates a substantial understanding Turkey. Just like the country itself, it provides nearly boundless prospects since it combines the heritages of a great diverse population. However, the combination of raki and fish holds a crucial part in the meyhane culture, it encourages discourse and deepens friendship and provides a magnificent pleasure of a perfect match, raki and fish.
