Since welcoming daughter Drew Hazel in October, Olympic gymnast Shawn Johnson East has learned motherhood can be a rough-and-tumble sport too. While her baby easily breastfed her first week in the hospital, when they got home, “it was a wrestling match every time,” says the gold medalist and first-time mom, 28. “She was bawling and screaming because she was hungry, but she wouldn’t latch.” After meetings with lactation consultants ended poorly, Johnson East and husband Andrew East, 28, chose to bottle-feed baby Drew. “I used formula, and it was just this baffling experience of a desperate mom trying to take the best care of

her child and getting shamed for it,” Johnson East says of an interaction with a consultant who “basically said that I had ruined my child’s life because I gave her a bottle and formula.” Today Johnson East—who is now the first spokeswoman for formula brand Enfamil—bottlefeeds with both pumped milk and formula and is tuning out mom-shamers. “You have to trust your gut that as a mom you’re doing the right thing for your kid,” she says.

As a couple, Dan Heydebrand, 31, and Diana Catherall, 29, have a lot in common: They love dogs. Dan owns a moving business like Diana’s dad, and they both grew up on 4th St. in New York City—Dan on the West Side, Diana on the East. Which is why Dan’s proposal on Feb. 2 included their canine brood and a moving truck with the words “Diana, Will You Marry Me?’’ painted on the side—in the intersection at 4th St. and Broadway, exactly halfway between their childhood neighborhoods. “We had 20 to 30 seconds [before the light changed],” says Dan. “I said to her, ‘Look at the truck!’ ” Says Diana: “I went blank. But thanks to a Florida brewery’s campaign for the Manatee County Animal Services shelter in Palmetto, Fla.—featuring Hazel and three other shelter dogs on four-packs of its ‘Adoptable Lager’—the Minnesota-based Mathis and Hazel were reunited on Feb. 7. “Everybody was crying,” says the shelter’s Hans Wohlgefahrt, 44, who drove Hazel the 1,600 miles to Mathis’s home in St. Paul. “She jumped right into her owner’s arms.” Says Mathis: “I don’t know how she ended up down there . . . but I’m just happy I have her back.” 32

Last month 8-year-old Keoni Ching decided he wanted to pay down his classmates’ school lunch debt as part of “Kindness Week” at his Benjamin Franklin Elementary School. Inspired by a friend, he started selling customized, beaded key chains for $5 each. “I thought he’d sell enough to give the school $20,” says his mom, April Ching, 38, who posted her son’s campaign to Facebook. But on Jan. 31 Keoni presented his principal with a check for $4,015—which wiped out the lunch debt at his school and paid off debts at six nearby elementary schools. Says April: “We’re seriously so proud of him.”

It’s violent, joltingly exciting entertainment. Al Pacino heads the Hunters, a team dedicated to avenging Nazi crimes against the Jews and, it seems, preventing the rise of a Fourth Reich in 1970s America. This small league of crusaders, which for some reason includes a blonde British nun, means business: They lock one unrepentant Nazi in his music studio and blare Little Richard’s “Long Tall Sally” at such volume that his ears leak blood. Yet the show, which creator David Weil says was inspired by his grandmother’s recollections of the Holo-

caust, also flashes back—at times jarringly—to a slow, serious story set in the death camps. We’re in a strange moment culturally: The Holocaust remains a nightmare historical moment, and anti-Semitism has seen a resurgence. Yet the enormous sponge of pop culture can’t resist trying to absorb even this stain—consider Jojo Rabbit, the Oscar-winning comedy-fantasy about a little Nazi whose imaginary pal is Hitler. Hunters is more successful, if only because it’s more up-front about acknowledging the gap between fantasy and reality. And Logan Lerman, as the newest, youngest recruit to the Hunters, is terrific in the earnestness of his confusion and anger. (Amazon, launches Feb. 21) March 2, 2020

THIS IS WHAT I WANT MY KIDS TO REMEMBER Speaking with Fletcher, Kate revealed that a photo she took of Charlotte smelling a bluebell at the family’s country home in Norfolk captures the types of moments “that mean so much to me as a parent.” Her campaign to encourage children to explore nature has its roots in her own childhood. “I had an amazing granny who devoted a lot of time to us, playing with us, doing arts and crafts and going to the greenhouse to do gardening and cooking with us,” she said. Rather than “sitting down trying to do their maths and spelling homework over the weekend,” she hopes her children will recall “that we’ve gone out and lit a bonfire and sat around trying to cook sausages.”

The experience was “slightly terrifying; I’m not going to lie,” she said. “Both William and I were really conscious that this was something that everyone was excited about ...[and] for us to be able to share that joy and appreciation with the public, I felt was really important. But equally it was coupled with a newborn baby and inexperienced parents and the uncertainty of what that held, so there were all sorts of mixed emotions.” Upon returning home, she admitted, “it wasn’t that quiet in our household! William was like, ‘Oh, my gosh, is this what parenting is going to be like?’”

with the school drop-off and pickup, but on the morning of the podcast recording, Kate wasn’t able to do so because she was helping with the kindergarten class. “George and Charlotte were like, ‘Mummy, how could you possibly not be dropping us off at school in the morning?’ ” Kate told Fletcher, admitting that she experiences mom guilt “all the time....And anyone who doesn’t as a mother is actually lying!” Easing that stress for other mothers is one of Kate’s main objectives. After learning in her earlier work with the mental-health campaign Heads Together that “there was such a taboo, such a secrecy around actually speaking about emotions and feeling,” she said her current initiative aims to shatter those taboos so people can feel comfortable seeking help. Her goal “is for parents to feel more open than they did before,” says the palace source. “She is learning it’s not about the drop-offs, but it’s about the time you spend with your children.” That’s a lesson she learned from her own parents, entrepreneurs Carole, 65, and Michael, 70. “My parents were hugely dedicated to us,” she says of her childhood alongside siblings Pippa, 36, and James, 32. “Life now is so busy, so distracting, and actually sometimes the simple things like watching a fire on a really rainy day provides such enjoyment.” After spending a week off with William and their kids for spring break, the couple will head

to Ireland for three days of royal engagements on March 3, with the children remaining at home. As always, it’s a juggling act—and the royal mom hopes others who are doing the same will be gentle with themselves. There’s a “feeling that either those who are doing it publicly ‘very well’ have no challenges at all . . . versus those who are really finding it hard,” she told Fletcher. “I’ve found that no matter what walk of life you’ve come from, there’s so many things that really unify parents and families in their struggles but also in their aspirations too. That’s really powerful, I think, to find ways in which we can unify people to work together to try and face some of today’s hardest problems.”

Kate’s research into the early years is a “fantastic opportunity” to reach new people, says Catherine Roche, head of the mental-health charity Place2Be. “She has a genuine passion and warmth for this work. umping on a trampoline outside his home in Rexburg, Idaho, last year, Joshua “J.J.” Vallow displayed the typical fearlessness of a 7-year-old. As his stunts grew more and more daring, his 17-year-old sister Tylee Ryan stood nervously by, warning him to be careful and flinching with every flip. “She has always been worried about his safety and well-being,” says J.J.’s grandmother Kay Woodcock. “In some ways she was like another mother to J.J. She’s very protective of him.” Now relatives hope that Tylee is somehow still protecting her younger brother—even though neither of them has been seen since Sept. 23, when their mother, Lori Vallow, withdrew them from school. The children’s disappearance went unnoticed for two months until their grandparents asked police to conduct a welfare check at the home of Lori, 46, and her husband, Chad Daybell, 51. Finding no sign of J.J. and Tylee, police opened an investigation; the next day Lori and Chad went missing too. Authorities finally located the couple on Kauai, Hawaii, on Jan. 25, but the kids weren’t

Growing up, Tylee and J.J. had more than their

share of difficulties. When Tylee was a toddler, her parents divorced, and her father, Joseph Ryan, later died of a heart attack. Lori, who was also mom to son Colby from a previous marriage, tied the knot with her fourth husband, Charles Vallow, in 2006. They moved to Chandler, Ariz., and adopted J.J., the biological son of one of Charles’s relatives, who had been diagnosed on the autism spectrum as a tod-

and Tylee and J.J. quickly bonded, both delighting in the addition of J.J.’s service dog Bailey to the family. “The first night that Bailey stayed with him, that was one of the first nights that J.J. stayed in bed all night,” says the dog’s trainer Neal Mestas. “As far as I knew, they were a healthy, happy family.” But the happiness was short-lived. In early 2019 Charles filed for divorce, stating that Lori had become “infatuated and obsessed with near-death experiences and spiritual visions.” The divorce was contentious, and on July 11 Lori and Charles got into an argument at the family’s home. During the altercation, Lori’s brother Alex Cox fatally shot Charles in front of the children. Cox claimed it was in self-defense and wasn’t charged. Soon Lori was moving on. Just weeks after her husband’s death, she packed up the family and headed to Idaho to be near Chad Daybell, the author of multiple books focusing on doomsday

Before they left, Lori called dog trainer Mestas to return J.J.’s service dog Bailey. “She called out of the blue and said, ‘Charles has passed away, I need to re-home Bailey,’ which was really puzzling because now you think, ‘Doesn’t J.J. need the dog more than ever?’” recalls Mestas. Those who knew Lori expressed concern over her fascination with Chad Daybell, whose ideas were becoming increasingly extreme. “He believed a lot of strange things,” says his friend Brian Scheider. “He was obsessed with the end of the world. He said he understood prophecy more than most people.” — KAY But no one predicted that Chad’s WOODCOCK, wife, Tammy, 49, with whom he had GRANDMOTHER five children, would be found dead in the couple’s bed on Oct. 19 or that Chad would marry Lori just weeks later. Though Tammy’s death was originally ruled to be of natural causes, the Fremont County sheriff’s office has now opened an investigation. “I didn’t think he was capable of killing her,” says Tammy’s friend Danielle Janes, “but now I’m not so sure.” Also being investigated: the death of Lori’s brother Alex, 51, who was found unresponsive in his girlfriend’s home on Dec. 12, five months after killing Charles Vallow. Rich Robertson, a private investigator working with Charles’s family, points out a chilling fact: “Everybody involved in [the day Charles was killed] is either dead or missing. Charles is dead, Alex is dead, and Tylee and J.J., who were there, are missing.” While multiple investigations continue in four states, an attorney for Lori and Chad issued a statement that did not address the children’s whereabouts but said simply, “Chad Daybell was a Lori Vallow has chosen instead to leave the state loving husband and has the support of his children with her new husband,” the Rexburg police departin this matter. birthday, on Jan. 19, with the rarest of luxuries for a presidential candidate: a night off and a quiet steak dinner at home, just, in his words, “being with the dogs by the fireplace, chilling out.” The next morning, as he headed back to the campaign trail, his husband, Chasten, kissed him goodbye. “Just think,” Chasten said from their South Bend, Ind., house, “the next time you 52

and I step foot in this home, you’ll have won Iowa or New Hampshire—or we’ll be reconsidering where things are going.” Wherever things are going next, it won’t be back to a quiet life. Buttigieg— unknown a year ago to almost everyone outside South Bend, where he was mayor until Jan. 1—emerged from the Feb. 3 Iowa caucuses as the first openly gay candidate ever to win a presidential

nominating contest. The following week he missed first place in New Hampshire (behind Sen. Bernie Sanders) by a few thousand votes. In the race for delegates who will decide the Democratic presidential nominee, those finishes together make Buttigieg, at least for now, the front-runner. It can all seem unimaginable in a country that two decades ago widely criminalized homosexuality and until 2015 widely banned gay marriage.

But then, here is Buttigieg— the gay millennial competing with veteran senators and a former Vice President. “I certainly sense how improbable this all is,” Buttigieg tells People. “I think, in an odd way, that’s part of why we’re succeeding.” The only child of University of Notre Dame English professors, Mayor Pete, as he’s now known to those unsure of pronouncing BOOT-edge-edge, rocketed from Harvard to Oxford (on a Rhodes scholarship) to the Navy Reserves. At 29, he was elected South Bend mayor with 74 percent of the vote and two years later deployed to Afghanistan—an experience that now shapes his thoughts on war. “I wasn’t kicking down doors, but just the

frequency of rocket attacks—the way I feel to this day when I hear that sound,” he says. “The effects follow you. We’ve got to be more aware of those costs.” He came out as gay in a June 2015 newspaper op-ed and, five months later, was reelected mayor by an 80 percent majority. By 2016 he was on then-President Barack Obama’s list of next-gen Democratic leaders to watch. It’s now been a year since the start of Buttigieg’s improbable campaign— “exhilarating,” he calls it, and also “exhausting.” Days are fueled by coffee and beef jerky; at night he falls asleep in his hotel room to the cartoons Family Guy or Rick and Morty. He misses his two

dogs (they FaceTime) and being able to “spend the greater portion of my day in sweatpants.” But the rewards are big, if quiet. Sometimes someone will stop him in a crowd and not say a thing. “Often it’s someone who I think is LGBT and just could not have pictured this campaign being possible,” Buttigieg says. For Chasten, the middle school teacher who took the name Buttigieg when they wed in 2018, the race is both personal and profound. The morning after New Hampshire voted, just before Buttigieg was pulled away to Nevada and South Carolina, the next states to vote, Chasten hugged him and said, “Stop and pinch yourself.”

In 1968 Feliciano had no idea his Latin-styled national anthem would hurt his career. He had practiced a version “more radical than the one I did,” he says.

ward, he recalls, a broadcaster rushed over and told him he had “really ticked off a lot of veterans. They’re throwing their shoes at the TV. They feel you should be deported.” In an America torn apart by the Vietnam War and racial discord, his nontraditional rendition sparked both applause and outrage. But his meteoric rise stalled. Many deejays stopped playing his records. “My career was dead,” he says. But the 74-year-old music icon refused to give up—and resuscitated his career for the first of many times over half a century. “I don’t want to sound like sour grapes, but there are some grapes in my life that are sour,” he says from his cozy home in Connecticut. “I feel that because of what happened to me, I’ve been underrated.” He took up touring internationally, and two years after that fateful performance he rebounded with his Christmastime classic “Feliz Navidad.” And now he’s in the midst of a new resurgence. His version of the Mamas and the Papas’ “California Dreamin’ ” appeared in the Oscar-nominated film Once upon a Time . . . in Hollywood, one of the most-streamed songs on the film’s soundtrack. Last month he released his 56th studio album, Behind This Guitar, and he continues to tour the world. His contributions to music will be showcased in José Feliciano: Behind This Guitar, a documentary making its world premiere on March 18 at the SXSW Festival in Austin. “I say to myself, ‘José, that’s the business,’ ” he says. “Let’s hope they don’t underrate me anymore, and they realize the musician that I am and that I didn’t take any shortcuts.”

A Home Run

Fifty years later he was invited back to perform his original version. “It was surreal,” says his son Jonathan José. “They were all happy to see Pop.”

On Oct. 7, 1968, José Feliciano was living a musician’s dream. His Latin-flavored versions of “California Dreamin’ ” and “Light My Fire” were flooding the airwaves, and his new single “Hi-Heel Sneakers” was climbing the charts. Who would’ve thought a blind Puerto Rican guitarist from New York City’s Spanish Harlem would be invited to sing “The Star Spangled Banner” at the World Series? In front of more than 53,000 baseball fans gathered in Detroit to watch the Tigers play the St. Louis Cardinals in Game 5, the 23-year-old performed a soulful, Latinjazz-influenced version of the national anthem. But things quickly took a disturbing turn. After56

Feliciano has been facing down challenges since

the day he was born blind from glaucoma, a disease that damages the optic nerve. When he was 5, his family moved from Puerto Rico to Spanish Harlem, where his aunt’s friend bought him his first guitar for $10 from a pawn shop. He listened to the radio and practiced relentlessly. “When I saw the other jobs that were available to blind kids, I said, ‘I don’t want those jobs. Those are menial jobs. I can do better than that if I push myself in music,’ ” he says. Influenced by Ray Charles and Spanish guitarist Andrés Segovia, he was determined to be successful. “The only obstacle I’ve had are sighted people,” he says. In 1963, at age 18, he was discovered while performing at the Manhattan counterculture hot spot Gerde’s Folk City. Despite his anthem controversy, he won his first two of seven Grammys for Best New Artist and Best Male Pop Vocal Performance on March 12,

1969, which he calls the highlight of his career. Though some of the country turned on him, there was one girl in Detroit who thought his version of the anthem was “cool.” Susan Omillia was 14 years old and wanted to show support. “I started a fan club,” she says. When she was 17, Feliciano met her in Detroit. After divorcing his first wife, Janna, in 1978, Feliciano married Susan, and they have three children (Melissa, 31, Jonathan José, 28, and Mikey, 24). Today they’re a tight-knit family who live within minutes of one another and meet up every Sunday. When Susan learned Feliciano’s music was used in Once upon a Time . . . in Hollywood—Feliciano didn’t know yet—the family decided to take him to the movie to surprise him. After the first notes of his song began, she says he whispered, “Wow. I don’t believe it.” Another moment he’s still savoring: In 2018, 50 years after his divisive performance, the St. Louis Cardinals were once again playing in Detroit, and Feliciano was asked to return to sing the anthem. This time he was met with cheers, not jeers. “It felt good,” he says. “It touches me that my songs bring joy to people. I am a man who tried to bring peace and happiness with my music.”

release, director Garry Marshall, who loved making romantic comedies, took a dark script about prostitution and overhauled it into what would become one of the most memorable romances in movie history. C Carol Kane loves that she he makes people laugh—just don’t call her a comedian. “I could never do stand-up,” the actress, 67, says over tea in the Manhattan neighborhood where she’s lived since she was 13. “I consider myself dramatic aand n comedic, therefore I guess sss a character actor.” After w wrapping r up four hilari hilarious io years playing a street-savvy landlady on Tina Fey’s Netflix sitcom Unbreakable Kimmy Schmidt (there’s now a Kimmy TV movie in the works), Kane is back on the small screen in a darker role alongside Al Pacino in the Amazon series Hunters, about operatives chasing clandestine Nazis in 1977 New York. Despite her signature bouncy curls and girlish voice, Kane swears she’s rarely recognized on the subway, which she takes almost every day. “I wear a strange-looking hat,” she says with a laugh. “I feel very safe in that.” She talked about what she’s learned over five decades on stage and screen.

An act of kindness—especially from Jack Nicholson—goes a long way.

For Kane, being nominated for a Best Actress Oscar for 1975’s Hester Street at just 23 years old—“I was still collecting unemployment,” she says—was “very overwhelming.” She says she was unprepared: “When you get nominated you become extremely popular.” Kane lost the award to One Flew over the Cuckoo’s Nest’s Louise Fletcher, and the next morning, she recalls being alone in her hotel room, “picking up the phone to make sure there’s a dial tone, because it was so quiet.” When her friend and former costar Jack Nicholson, who had won Best Actor for Cuckoo’s Nest, called, she was deeply moved. “Jack knows what it’s like to win—and not to win,” she says. “He knows what the next day’s like.” Nicholson invited Kane to lunch and drove to pick her up. “It makes me want to cry because it was so kind,” Kane remembers, tearing up.

“I was in love with acting,” says Kane (above at 17, attending the Professional Children’s School in New York City). She landed her first theater role in The Prime of Miss Jean Brodie at age 14. “It was a lucky way to start,” she says.

I look back and I think, ‘Boy, I wasted those 15 years.’ ” But she’s still on the fence about her distinctive voice, saying she feels “shame” about it: “It’s just an odd voice.” (She lowered it to play villain Madam Morrible in the musical Wicked when she starred in various productions from 2005 to 2014.) Kane says it especially embarrasses her when phone operators—“American Airlines!”—can discern who she is just by hearing her speak: “I wish my voice was deep and beautiful and sexy.”

Kane once lived in an apartment next to Bette Davis. Despite her fiery reputation, the Golden Age legend “was very kind to me, very supportive,” Kane remembers. Davis even invited her over for a drink before Kane attended the Emmys, where she was nominated for Taxi. “She watched the show, and she was rooting for me, and it was unbelievable,” says Kane. “Jack [Nicholson] was my idol, and she was my idol. So far meeting my idols has not disappointed me. I lucked out.” Put the work in for your friendships.

Kane, who dated Woody Harrelson in the ’80s but has never been married, keeps the best friendships in her life close to her heart. She met one of her closest confidants, Diane Keaton, on the 1976 set of Harry and Walter Go to New York. They later costarred in Annie Hall and 1989’s The Lemon Sisters. “We always have managed to take care of our friendship and make sure that nothing harms it,” says Kane, who is also close with Bette Midler and Anjelica Huston. “I have made some new friends accidentally as I’ve gotten older—but I don’t feel I need any more.” Take a chance. As an early “worshipper” of Woody Allen’s films, Kane was excited to be cast in Annie Hall. Still, she had no idea it would be so successful, winning four Oscars in 1978, including Best Picture. “You never know,” she muses. “I’ve been in a bunch of them now, classics like The Princess Bride. But you don’t know that going in, and you can’t think about that at all, because you can’t work like, ‘Wait until you see this! I’m going to do a classic thing here.’ You’d be an idiot!”

t was an unexpectedly emotional moment for math and science teacher Finn Lanning—who still remembers when Damien, then one of his seventh-grade students, told him why he wouldn’t be returning to AXL Academy in Aurora, Colo., following the school’s Thanksgiving break in November 2018. “He was one of the few new students,” recalls Lanning. “He was studious and smart and funny, and he was in a couple of my elective classes as well, so we’d gotten to know each other a little bit.” But that afternoon the then-12-year-old revealed that he had focal segmental glomerulosclerosis, an autoimmune disease that had seriously damaged his kidneys. To make matters more complicated, Damien had also been in foster care for the past four years. “It was hard for him to find placement because he was sick,” says Lanning, 37. “He told me he had to leave the foster home he was living in and was moving into the hospital because they didn’t have another place for him. I remember kind of sitting there with him and not really knowing what to say.” But deep down Lanning, who is single, already knew what he wanted to do. In the weeks that followed, he began regularly visiting Damien at Denver’s Presbyterian/St. Luke’s Medical Center—

where, because his disease had shut down his kidneys, Damien was on dialysis 12 hours a day. Lanning also learned that the teen desperately needed a kidney transplant but had been taken off the waiting list because he lacked a stable home environment where his health and recovery could be effectively monitored. “I had no experience being a parent, but I couldn’t look away,” says Lanning, who qualified to foster Damien in March 2019—making way for the teen’s successful kidney transplant in June that same year. “Just seeing him living in a really full way makes some of this crazy mess feel really worth it—for both of us,” says Lanning. Adds Damien: “It changed my perspective on the world. Now I can do anything.” That wasn’t the case for much of Damien’s early childhood. He began showing FGSG symptoms, such as swelling and difficulty walking, when he

was around 7 or 8 and wound up in foster care after his mother lost her parental rights because she was unable to manage his medical needs. (They still see each other every few months.) Bounced from home to home, Damien also spent months at a time living in hospitals because of his illness. “He was getting passed around to different people who offered different levels of care,” says Lanning, “with long periods in-between of literally living alone in a hospital because there was no place else for him to go. He’d have a nurse who took care of his health, and that was his life. I’m surprised he managed as well as he did.” Still, Lanning admits that fostering Damien came with challenges—including intensive training on how to administer the boy’s daily 12-hour dialysis. “I was shocked when I discovered what I was actually going to have to be doing. It’s a lot scarier and riskier than I thought,” says Lanning, who made sure to provide for the rest of Damien’s needs as well—from buying the right kind of toothpaste and socks to scheduling his doctors’ appointments. “I’d really thought a lot about this decision,” he adds. “I didn’t want to be another person in a long line who’d made a commitment to him and then couldn’t keep it. I wanted him to trust me and feel comfortable.”

Within two months, following a battery of medical tests and interviews with doctors to confirm his eligibility, Damien was placed back on the transplant list— and on June 14, 2019, he underwent the fourhour procedure. Unfortunately the transplant exacerbated his FSGS (which has now been in remission since September), leading to more than two months of invasive treatments, including chemotherapy and plasmapheresis, a process that removes plasma from the blood. Damien, now 13, has made a full recovery, but due to the FSGS he’ll likely have to face another kidney transplant later in life. “If he’s extremely lucky, his kidney might last 25 years, so he’ll be back in this situation at some point,” says Lanning. “But his recovery has been good, and he has no major medical restrictions.” In August, Damien went back to school, where

And things are great at home: Lanning is in the process of adopting Damien. “I never thought I would end up being a father,” he says. “I feel very lucky.” After homework and chores, the two like cooking together (crab and shrimp boil is a favorite), and on the weekends they go to the movies or the arcade. They spent this past Christmas with Lanning’s family in Wichita, Kans., where Damien

sang karaoke for the first time. “You kind of lose hope after a while when you’re living in the hospital,” admits Damien. “But now I can settle in, go to school, make friends and live a good life.” Adds Lanning: “It’s supercool to reflect on how different things are and to see him be able to just enjoy things that regular kids get to enjoy. I never expected this to be my life, but I’m so happy it is. We’re in it together.”

Corn Waffles with Fried Eggs & Sweet Chili Sauce

11⁄ 2 cups all-purpose flour 1⁄ 2 cup yellow stone-ground cornmeal 2 Tbsp. granulated sugar 11⁄ 2 tsp. baking soda 1 tsp. kosher salt 2 large eggs 11⁄ 2 cups whole buttermilk 3 Tbsp. unsalted butter, melted 1⁄ 2 cup frozen sweet corn kernels, thawed Cooking spray 1⁄ 2 cup hot pepper jelly 2 Tbsp. apple cider vinegar 2 tsp. Worcestershire sauce 4 eggs, fried to desired doneness 1. Preheat a waffle iron. Meanwhile, sift together flour, cornmeal, sugar, baking soda and salt into a medium bowl.

2. Process 2 large eggs, buttermilk and melted butter in a blender until combined, about 30 seconds. Add half of the flour mixture, and process on high for 30 seconds. Add corn kernels to remaining flour mixture, and toss until coated. Add batter from blender to flour-corn mixture; stir until combined. 3. Spray waffle iron with cooking spray. Add 1⁄ 2 cup batter to each waffle grid. Bake until golden brown, 3 to 4 minutes. Repeat with remaining batter. 4. Whisk together hot pepper jelly, vinegar and Worcestershire in a small bowl. Set aside. 5. Separate waffles into squares, and place 2 on each plate. Top each serving with a fried egg, and drizzle with sweet chili sauce. Save a Burnt Soup If you scorch a soup or sauce, transfer it into a new pot without scraping the burnt bottom. Wrap an English cucumber in cheese cloth, crush it with the back of a knife, and drop it in the new pot. Let it sit for 15 minutes; the cucumber will act like a sponge and suck up the burnt flavor. 3 Tbsp. extra-virgin olive oil 4 garlic cloves, crushed and peeled 8 oz. asparagus, peeled and cut into 1-in. lengths 4 oz. haricots verts (French green beans), trimmed and cut into 1-in. lengths 1 tsp. kosher salt, divided 1 cup boiling water 1 cup halved grape tomatoes 1 bunch scallions, chopped (about 1 cup) 1 cup frozen English peas, thawed 3⁄ 4 cup heavy whipping cream 1 lb. uncooked dried fusilli pasta 1⁄ 2 cup loosely packed fresh basil leaves, thinly sliced 2 oz. Grana Padano or Parmesan cheese, grated (about 1⁄ 2 cup)

1. Bring a large pot of salted water to a boil over high heat. Meanwhile, heat a large skillet over medium high, and add olive oil. When oil is hot, add garlic; cook until sizzling, about 1 minute. Add asparagus and green beans. Season with 1⁄ 2 teaspoon salt. Add 1 cup boiling water, cover skillet, and cook until vegetables are tender-crisp, 2 to 3 minutes. 2. Uncover skillet, add grape tomatoes, and cook, uncovered, until tomatoes begin to wrinkle, 3 to 4 minutes. Add scallions, peas and cream. Simmer,

Give Any Recipe a Boost Put grated ginger and chopped garlic and scallions into a large bowl and cover with water. Let it sit overnight to let the liquid soak up the flavors. Strain out the solids, and use that flavored stock as a base for noodles, soup, dumpling filling or anything you like.

Add Oil at the Best Time It’s better to heat your pan first and then add oil. The longer oil sits on a hot surface, the more time it has to break down. Following this method, you’ll use less oil, food will be less soggy, sear.

Make Cleanup a Breeze Kosher salt should be used to season vegetables, protein, pasta water, etc. Flaky-textured salt, like Maldon sea salt, is more expensive and is best used for finishing. When you’re making a crust, the butter needs to stay very cold so it won’t melt until it gets into the oven. Here’s a trick: Freeze your butter, and grate it on a box grater. It’ll keep the butter cold, and the pea-size pieces are easier to combine with the flour.

The hard Parmesan rind is a quick and cheap way to add lots of flavor with minimum effort. Drop it in a soup, risotto or stew, and the rind melts and permeates the dish with its cheesy, umami characteristic. The rinds freeze incredibly well, so you’ll have them whenever needed.

Have a chocolate or cream sauce that has separated or become grainy? My mom always added more cream or butter, but it didn’t work. The easiest fix is to balance the excess of fatty ingredients: Just stir in a few spoonfuls of warm water.
