They call it Spring Fever and as you can tell by this issue, The Broomfielder™ has it! Time to shake off the dark and dreary days of winter and trade them in for warmth and sun and lots of summer fun. So what are you going to do with those long days and warm nights?

One event that we are particularly excited about here at the magazine is the June 11 Taste It Broomfield event which we are proud to present this year in partnership with the Broomfield Chamber of Commerce. Taste It Broomfield is Broomfield’s own food and drink tasting event showcasing local restaurants, wineries, breweries, and caterers. Glory Community Fundraiser

Glory Community will host its ninth annual Fundraising Gala from 5:00 p.m. to 9:00 p.m. at the Arvada Center for the Arts. Glory Community is a private nonprofit that is building residential communities for adults with intellectual disabilities in Broomfield. The first residence is already built and in use. enerous acts within our community by often humble, dedicated, and remarkable people are sometimes overlooked or underappreciated – yet the ways in which selfless acts shape our city cannot be over-exaggerated. Broomfield is an amazing place to live in no small part because of the people who will be deservedly recognized at this month’s Heart of Broomfield Awards Ceremony. Karen Smith, Director of the Broomfield Community Foundation, which hosts the annual event, emphasizes the profound effect the awards have on the community. “By placing a grateful spotlight of recognition on the positive actions of our winners, we inspire others to pursue and achieve goals that also benefit our community,” she says. There are nine award categories including the Gene Frank award which is given to a businessperson who has also been a major community donor, and the Walter P. Spader Leadership Award, which honors the memory of the former mayor and is given to a proven leader whose energy, passion, sense of humor, and wisdom has made Broomfield a better place. Other categories include focus areas on art, youth, community volunteerism, and more. Awardees will be highlighted through stories from their nominators and videos; they will be prompted to give brief comments as well. We’ve heard dozens of stories describing these inspiring community leaders; here are a few examples: •

Tabitha Brown nominated Beth Murphy for the Education award. Beth single handedly designed and implemented a summer Jump Start program for primary students who struggle in early literacy and volunteered at no pay to get the program running until funding was available. “Beth is a tireless supporter of Early Childhood Education and the developmental needs of young minds,” says Tabitha. The Heart and Soul award winner is Karen Nelson. The award is given to a person who gives quietly and epitomizes a community with a heart. For the last 13 years Karen has dedicated herself to helping the homeless. Every week she gathers clothing, food, and other items and with the help of other volunteers makes weekly deliveries. Karen Yudnich nominated her, and describes a very, very cold and snowy Saturday that raised the possibility

of canceling a delivery for the night. She told me “Oh no, we’re going, this is when they need us!” says Karen. •
The Senior award is going to Ilene &Robert Niehoff who have volunteered in Broomfield for more than 40 years including children’s groups, school events, band boosters, city council, Broomfield Days floats, church boards, and senior events. Favorite activities include leading the Healthy Heart walkers, casino trips, and Meals on Wheels. They also have driven seniors to appointments, shoveled walks, delivered care packages, and provided parties and friendship to the residents at Silver Crest. Their nominator was their daughter, Michelle Szydlowski. “From the time I was in elementary school, my parents have been volunteering, from PTA and civic groups all the way through the high school band parents group. Now that they are retired, they actually spend nearly every single day on volunteer projects!” she says.

Kim Ngan Tat “Lina” is receiving the Youth award, nominated by Gina Malecha. “She is the kindest, most completely selfless person I know. There’s never a time when she does not notice what people do for her – a visit, a thank you card, a little treat – she is simply an amazing kid,” says Gina. Lina moved to the United States from Viet Nam in 2008; she volunteers at the senior center, on the library teen advisory board, at the Broomfield Auditorium, and at Good Samaritan Hospital. At Broomfield High School Lina created the Crochet for a Cause club, providing support for Special Education by crocheting ornaments.

Broomfield’s own cornucopia of food and drink – Taste It Broomfield – returns to the 1STBANK Center on June 11, from 5:00 p.m. to 8:00 p.m. The Broomfield Chamber of Commerce and The Broomfielder Magazine are proud to partner for the first time on this annual sampling of the amazing food and drink of Broomfield’s local breweries, wineries, restaurants, and caterers.

aste It Broomfield is designed to promote Broomfield’s ever-growing food, wine, and beer culture, and give residents a chance to try out offerings from across the community. “We are excited to partner with The Broomfielder Magazine on this community event,” said Broomfield Chamber of Commerce president and chief executive officer Jennifer Kerr. “The partnership will allow more exposure for the participating restaurants by increasing our message to more than 100,000 homes and businesses.” Indeed, a main goal of this year’s event is to grow attendance and create a summer kickoff event for the entire community. “At only $20 per ticket, this year’s event is an extremely affordable way for those 21 years and older to have a fun night out at the 1STBANK Center trying a variety of food, wine, and beer selections,” added Kerr. “We’re excited to work with the Broomfield Chamber this year to help promote Taste It Broomfield. It’s a great way for local restaurants to connect with the community, while at the same time providing a fun evening for everyone who attends,” said Mike Garrison, owner and publisher of The Broomfielder Magazine. The Broomfelder’s annual “Restaurant Guide,” published in May, will serve as a roadmap to many of the 2015 Taste It Broomfield participants.

ne of the advantages of recent changes in health care is that an annual exam— also known as a physical or well check—is a fully covered benefit for anyone who has health insurance. In other words, you shouldn’t have to pay a co-pay or through your deductible for this important visit. Here are eight ways to ensure you get the most out of your annual exam. 1
Bring in a list with your medication names and dosages. Remember to include overthe-counter medications, vitamins, and herbal supplements, and medications prescribed to you by a specialist. The reason? If I need to prescribe a new medication, I want to make sure it doesn’t interact with the medications you currently take.

Track down your immunization record and bring it with you. There is a large push to get patients updated on their tetanus shot with a Tdap, a shot that also includes protection against pertussis (whooping cough). Pertussis has resurfaced in recent years and this immunization is relevant to all age groups, especially those in contact with infants. I also like to make sure people have had a flu shot. Finally, I consider pneumonia and shingles immunizations in certain risk groups.

If you are a new patient, try to get your records released ahead of time. This allows us to determine when your last colonoscopy, pap smear, bone density test or mammogram was, and if a new test is needed.

If you have had recent blood work ordered by a specialist or your previous primary care physician, bring a copy with you. We can use old results as a comparison when we order blood work again.

If you have a form from your work, school or sports program that needs to be completed, bring it with you. Fill out the patient section ahead of time.

Write down your medication allergies and keep a copy for yourself. It is even better if you know what type of reaction you had, for example hives, vomiting or trouble breathing.

If you have specific concerns besides preventive care—such as a painful knee or new rash—prioritize your top two issues. For complex issues, you may even need to make a follow-up appointment.

Find out what medical issues run in your family, such as heart disease or cancers. This can be highly relevant information and helps steer my preventive screening plans.

The Colorado mountains are host to many festivals throughout the summer but Denver and its surrounding areas also hold some great events. Whether you are into music, food, beer, art or rodeos, Colorado has something for you and your family this summer. Choose a Destination Start your summer vacation planning by figuring out what you want from your vacation. Will it be a family adventure that will require travel arrangements and activities that will work for children? Or will it be a romantic getaway without kids? Are you hoping for luxury and pampering? Or do you prefer to explore the great outdoors while camping? If you aren’t sure what you want to do or are looking for a unique adventure, start by asking friends, family, and co-workers about their favorite or most interesting vacation destinations. Travel agents are a wealth of information about travel destinations, and many websites also provide inspiration for vacation planning. A handy website that offers a variety of destination information is Roadtrippers (www.roadtrippers.com). Geared toward road travel, the site provides information that may be helpful in planning your summer trip. The site allows you to search by destination to find attractions, food, and lodging. You can even click through on certain attractions to find pictures, descriptions, and reviews. If you don’t have a destination in mind and are looking for inspiration, check out the site’s Best of the USA, which lists the most popular attractions by state. Nancy Wee, owner of Broomfield travel agency Wee Travel, said Colorado offers a variety of great destinations, including Estes Park, Colorado Springs, Glenwood Springs, and the Royal Gorge. Educational trips within close traveling distance include Yellowstone National Park as well as the Black Hills of South Dakota, she said. Also popular, though further away, are historical tours, such as Savannah, Charleston, and Jekyll Island. Riverboat cruises are also a unique vacation option. Popular riverboat cruises operate on the Mississippi River as well as the Columbia and Snake Rivers in the Pacific Northwest.

Pleasant Plane Rides Flexibility is key to get the best prices when shopping for airline tickets. The best days to book flights in order to save money are Tuesday, Wednesday, and Thursday, said Wee. Monday and Friday flights tend to be more expensive, she said. If you can be flexible about the time of day you travel, you can also save money. Flying early or late in the day can open up less-expensive fares. Understand the airline’s rules about baggage and how many bags you can bring for free or if there are fees. Be realistic about how much you need to pack. Most people overpack, said Wee, and this can translate into more baggage fees and slow you down at the airport. Make sure you know what identification and travel documents you’ll need. If you need a passport, it will take time to receive it so allow plenty of time to get the documents you need before you travel. Finally, don’t put off making your plans and reservations. Airplanes, hotels, and even campgrounds book up far in advance. Waiting too long can shut you out. “Things book up quickly,” said Wee. “There is still time to book for the summer, but you can’t wait until a month before you plan to travel and expect to get exactly what you want.”

Before you know it, the days will be longer and the nights warmer and that means it will be time to head outside to enjoy FREE cultural activities happening throughout Broomfield. Here are a few cultural activities taking place in the coming months in Broomfield County Commons Park: Enjoy Broomfield’s amazing public art collection with a Walk in the Art on May 13 at 11:30 a.m. Meet at the east entrance to the Sculpture Trail just south of the dog park and be sure to bring a hat and water. The guided walk will take approximately 45 minutes and you are invited to bring a picnic lunch to enjoy before or afterwards.

The Broomfield Veterans Memorial Museum and Broomfield Rotary hosts the City and County of Broomfield Memorial Day Ceremony and Picnic on May 25. This annual event will be held from 11:00 a.m. to 1:00 p.m. on Memorial Day and features displays from the museum, local music, and food for sale from the Broomfield Lions Club.

And of course, Broomfield will once again host the Great American Picnic on July 4th which will include fun activities for kids, live music, and fireworks.
Summer kicks off when the Boulder Ballet returns on Sunday, June 14 at 7:00 p.m. for the 11th annual outdoor concert series Ballet in the Park which is free to the public! This family-friendly repertoire concert features excerpts from the season, along with new works in classical and contemporary styles. Come early with a picnic, enjoy a beautiful summer evening with the ballet, and then marvel at the spontaneous dancing by children from the audience after the show.

the very word conjures decadence, reward, and pleasure, and it’s a daily treat in some form for many of us. While chocolate is now most often eaten as candy, it was consumed exclusively as a hot beverage for thousands of years, up until the late 1800s. Chocolate is now so commonplace that we give no thought to its exotic origins, thus most people are entirely unfamiliar with how it grows and ultimately becomes what we know of today as chocolate.

has been placed on higher cacao percentages, typically advertised on the package. This percentage is a ratio that refers to the amount of cacao and sugar in the final mix. 80% cacao, for example, means that for every one hundred pounds of finished chocolate, eighty pounds of cacao and twenty pounds of sugar was incorporated. This ratio demonstrates that the higher the percentage, the less sugar – and therefore, the less sweet the chocolate. True dark chocolate – which is doesn’t incorporate any milk solids – will also have the fewest ingredients and is most often a handmade, artisanal product.
Holiday Chocolate Traditions Chocolate Grows on Trees All chocolate originates from Theobroma cacao, a tree that grows between the Tropics of Cancer and Capricorn roughly twenty-three degrees north and south of the equator; theobroma translates as “food of the gods.” Coffee is the other most important agricultural product from this area, and there are many similarities between coffee and chocolate production. Cacao is technically a fruit; the cacao tree is cauliflorous, meaning that the large pods grow directly from the tree’s main trunk and stems. Cacao is the primary ingredient in chocolate, and the source of chocolate liquor (cocoa beans ground into a paste), cocoa butter (the naturally occurring fat in cocoa beans), and cocoa powder (chocolate liquor with cocoa butter pressed out). It’s important to differentiate between cacao and cocoa, since the words are often used interchangeably – and incorrectly. Cacao refers to the tree and pods, but once the pods have been opened and fermented, the terminology changes to cocoa, as in cocoa beans, cocoa butter, and cocoa powder.
Like Fine Wine, Chocolate Takes Time
Once the pods are harvested, they are fermented for five to seven days. Like wine, both where the cacao was grown – the “terroir” – and the fermentation are incredibly important in creating the final flavor profile. After fermentation, the beans are dried and bagged for transport. At the factory, the beans are roasted, then the nibs are separated from the shell and ground into a paste. At this point, sugar, cocoa butter, milk solids, flavorings, and more can be added to the chocolate liquor; the combination of these various ingredients results in the huge array of chocolate products available on store shelves.
Milk Chocolate is Not the Standard
Thanks to Hershey and Mars, the bland, mild flavor of milk chocolate became so popular in America that many Americans didn’t even realize there were other options. In recent years, however, dark chocolate has been touted as a beneficial addition to a healthy diet, primarily because of the discovery of flavonoids, polyphenolic compounds that may offer antioxidant benefits. Emphasis
From heart-shaped chocolate boxes to chocolate bunnies and eggs, chocolate has long played a role in holiday celebrations. Chocolate is thought to be an aphrodisiac and is therefore an appropriate Valentine’s gift. Rabbits breed prolifically, especially in spring, making them a perfect Easter symbol. The solid chocolate Easter bunny originated in the late 1800s as molds became more commonly available, but the hollow chocolate bunny is thought to have been a direct response to chocolate shortages during and after World War II – and the tradition remains. Eggs, a symbol of springtime and fertility, now appear in baskets in both in their dyed, hard-boiled state as well as in chocolate, candy or sugar versions. Easter candy sales are the second-highest after Halloween, and for most Americans, nothing says Easter quite like chocolate bunnies and eggs.
Greater Purity Equals Finer Quality Chocolate offers a phenomenal range in quality – from lowend, mass-market choices to artisanal, bean-to-bar products. In addition to the ingredients listed above, many other components are often added to chocolate, typically to stretch yields or provide specific textural or taste characteristics. Cocoa butter is the most expensive ingredient in chocolate, so lower-end chocolate might be stretched with emulsifiers like milk fat or soy lecithin, and synthetic flavorings are often used. Unfortunately, this means that Americans raised on a steady diet of Hershey’s and similar products rarely appreciate well-made chocolate, preferring instead typical American chocolate. The good news is that while Americans long had to look to Europe for quality chocolate, more artisanal chocolate is now manufactured in the U.S. than ever before. While the vast majority of chocolate companies buy pre-made chocolate and just fill their own molds, certain companies are offering “bean-to-bar” chocolate – meaning that they roast, grind, refine, and temper their own beans. These products are certainly higher-priced, but the difference in quality between these and mass-market chocolate is literally night and day. For fun, host a chocolate tasting – look for bean-to-bar brands like Taza, Askinosie, Theo and Ritual – and learn what “the food of the gods” should actually taste like.

A GREAT REASON TO LACE UP AND HIT THE PAVEMENT! Admit it: you have spring fever. You want to get outdoors and move!
T
his month we found a perfect reason to get out your running shoes and answer that urge to shrug off the winter: the 6th Annual Frank Shorter RACE4Kids’ Health 5K on April 12 at the 1STBANK Center in Broomfield. Way more than just a race, kids and adults alike can learn about innovative exercise and wellness plus numerous activities geared toward healthy living. Dr. Chris Marchioni is the Executive Director of Healthy Learning Paths, a children’s health advocacy non-profit and founder of the race. “There is no other event like this in our state,” she says. “We don’t just talk about health, this event allows everyone to experience a journey that is fun, invigorating, and outrageous!” Frank Shorter, Olympic marathon gold medalist and co-founder of the Bolder Boulder 10K race, is the namesake of the event. His support has helped attract hundreds of runners with proceeds benefiting Healthy Learning Paths’ Be Well, Learn Well school program prompting kids to make choices that are healthy and have lifelong benefits. The “outrageous” reference Chris makes has to do with her organization’s goals to eliminate type 2 diabetes in kids. “Outrageous? Yes,” she says. “Within our reach? Absolutely! Healthy Learning Paths empowers children and families to lead healthy lives,” she says. Last year more than 40 schools had kids compete in the race – Broomfield’s Emerald Elementary is the defending 2014 school winner. This year the school with the highest number of students

to complete the 5K will win $250 and a trophy. Teachers, coaches, and parents have been encouraged to rally together students and team leaders bringing in groups of six or more are given a free entry for their school mascot to join in the race. The addition of dozens of mascots running adds some additional fun energy to this competitive event. The race is much more than some neighborhood fun run: all participants will get exact electronic chip timing results and this is a Bolder Boulder endorsed qualifier. A new addition this year is Mazzola’s Miracle Mile Relay. This race honors Joseph R. Mazzola, a local visionary and volunteer who worked passionately to empower children to lead healthy and happy lives. Many Broomfield residents remember Mr. Mazzola through his work with the Rotarians, Healthy Learning Paths, and several other local non-profits and he was a Heart of Broomfield award winner in 2010. For the littlest participants and their families there’s the Diaper Dash! Strollers are welcome in the 5K at the back of the last wave. However for the safety of participants, no dogs are allowed. Healthy Learning Path’s theme is “Connecting Wellness and Learning for Kids” – so in addition to the race there is the familyfriendly Health Odyssey Expo presented by Whole Foods where “Science, Engineering, and Health Collide for Kids.” Additional games, demonstrations, and hands-on activities from more than 75 vendors with themes of health, wellness, fitness, and physical activity are also included. PROTEIN What’s All the Fuss About?
D
oes is seem like everyone you know is following some sort of special diet? Whether gluten-free, Paleo, vegan or something more esoteric, food consciousness has never been higher. Amidst all these special diets, however, there is usually a consensus that “high protein” is better, and every single processed item in the supermarket, from granola to yogurt, seems to tout its high protein content. But what exactly is protein, and should we really eat more of it? In its simplest form, protein is one of six essential macronutrients and a fundamental building block essential to human life. It breaks down to amino acids in the body and promotes cell growth and repair. It takes longer for the body to digest than carbohydrates, so it offers a sense of satiety, or fullness, hence it is often recommended as part of weight-loss plans. Americans consume the vast majority of their protein in the form of meat, dairy, and eggs, and most of this is decidedly lowquality, heavily processed protein. It is important to remember

that not all protein is created equal – there are dramatic differences between protein found in a cheap, processed feedlot hamburger compared with a fresh salmon fillet or organic chicken breast. The processed-food industry wants you to believe that you need lots of extra protein, but most experts agree that healthy men and women should consume between 46 and 56 grams per day. An elite athlete might need more, but be wary of processed foods such as energy bars or juices advertising added protein; many believe that excess protein places extreme strain on the liver. To add high-quality protein to your diet, look for wholefood sources like lean meat, quinoa (the only seed containing nine amino acids), peas, nuts and nut butters, beans, lentils, soy (such as edamame, tempeh, and tofu), and seeds like sunflower, hemp, chia, and flax. Dark leafy greens also have a small amount of protein, and are a great source of vitamins, minerals, and fiber. Above all, stay active and eat a balanced and colorful whole-food diet and your protein intake should be more than adequate!
Quinoa Salad with Greens & Beans • • • • • • • • • • • •
1 cup quinoa 1 tbsp. canola oil 1 small yellow onion, diced 2 cloves garlic, minced (or to taste) 1 red or yellow bell pepper, chopped 1 bunch kale or chard, ribs removed, sliced Any combination of fresh or leftover veggies: squash, zucchini, corn, peas, broccoli 1 can cannellini beans or garbanzo beans, rinsed and drained 1 tbsp. red wine vinegar 2 tsp. oregano Kosher salt and freshly-ground pepper 4 scallions, chopped
DIRECTIONS: Cook quinoa according to package directions. When cooked, fluff gently with a fork; cover and set aside. Meanwhile, pour 1 tbsp. canola oil into a shallow pan and gently sauté onion and garlic over medium heat. Add bell pepper, greens and any other vegetables, if using, and cook over medium heat for about 5 minutes to allow flavors to combine. Add beans; taste this mixture and season with salt and pepper. In a shallow bowl, gently fold the cooked vegetables into the cooked quinoa. Stir in vinegar, oregano and additional olive oil if desired. Season to taste and serve garnished with fresh scallions. This dish can easily be varied according to taste – use any combination of whole grains including bulgur, barley, farro, amaranth, or whole-wheat couscous. Add cooked beans or lentils for additional color, flavor and nutrition. It can also be served over additional fresh steamed greens for a phenomenally nutritious and satisfying vegetarian meal, or serve topped with broiled salmon or chicken.
Raw Kale Salad with Citrus • • • • •
2 bunches kale, torn into bite-size pieces, washed and dried About 2 tbsp. olive oil About 1 tbsp. fresh lemon juice Segmented oranges or grapefruit Toasted pumpkin or sunflower seeds Kosher salt and freshly-ground pepper

2 cans garbanzo beans, rinsed and drained About ½ cup olive oil About 2 tbsp. lemon juice About 2 cloves fresh garlic, minced About 2 tbsp. tahini Fresh parsley Kosher salt and black pepper Hot sauce Additional flavorings, such as roasted red peppers, sun-dried tomatoes or spinach (optional)
Place kale in large bowl and sprinkle with olive oil and a pinch of salt. Massage well with your hands – seriously, don’t be shy here. Allow kale to sit for about ten minutes; massage again and taste for tenderness. Add a little lemon juice and top with citrus segments and seeds. Taste for seasoning and serve.
DIRECTIONS: Pour beans into bowl of food processor. Add garlic and tahini. Pulse mixture for a few seconds just to chop everything up, and then with the machine running, drizzle in oil and lemon juice to make a smooth puree. Parsley and other flavorings (peppers, tomatoes, spinach, etc.) should be added near the end of processing time so that their structure isn’t too broken down by the processor. Taste for seasoning and adjust as necessary with salt, pepper, hot sauce and lemon. Serve with fresh raw vegetables or crackers; store refrigerated in a covered container for up to one week. Code Blue Computing has been in business since 2010 and is celebrating its 5th anniversary this year. Code Blue offers its customers more than 20 years of industry experience and provides I.T. support services to both home users and small businesses. “We are proud to be included among the other award winners and are so excited to be chosen; what an honor,” stated Code Blue President Jeri Morgan at the dinner. CELEBRATE WORDS DURING POETRY MONTH By Jennifer Kerr, President and CEO, Broomfield Chamber of Commerce
D
id you know that April is National Poetry Month? The fact that there is no word that rhymes perfectly with April isn’t lost on me as I write this column. Of course, poetry isn’t just about rhyming, but isn’t that how we first learned poetry? As children we had fun reading rhymes and poems. It helped us develop a love for language and helped us understand others and ourselves. Poems also helped us put many of our crazy emotions into words as we struggled with our teen years. We learned that lyrics to our favorite songs were like poems. Greeting cards were poems. Then we were asked to write Haiku poems which gave us the freedom to express ourselves without rhyming but we had to do so in seventeen syllables. We started to build our own personal lists of favorite poets. Mine now include Robert Frost, Emily Dickinson, Shel Silverstein, Theodor Seuss Geisel (Dr. Seuss), Maya Angelou, Rainer Maria Rilke, Khalil Gibran, and more. According to the website, Poets.org, National Poetry Month, “is the largest literary celebration in the world” which shows how important poetry is embedded in our lives and in our culture. So, if your reading material has been focused on blogs, close captioning on the television, Facebook posts, and Tweets, maybe it’s time to discover poetry again during the month of April and beyond. Put a pen to paper to write your own thoughts and feelings into a poem. Or use your laptop or tablet to rediscover poetry. Teach your young children poetry through reading poems to them and helping them communicate through poems if they are already writing. Discover classic poets and new poets. Let’s continue to cherish this form of literature. What poem will motivate you or bring you comfort? For me, it is, “The Road Not Taken” by Robert Frost: “I shall be telling this with a sigh, somewhere ages and ages hence: Two roads diverged in a wood, and I – I took the one less traveled by, and that has made all the difference.”
