Loving Our Pets

T

hank you, Broomfield, for once again sharing precious photos of your beloved pets for our annual Pet Issue. The Broomfielder™ staff looks forward to receiving your treasured pictures each year and debating amongst ourselves which furry friend should win the coveted cover spot! Congratulations to Rocco and his owners Chelsea & Cory Prager. We are proud to have you as our 2018 front page star! Pets bring us comfort, companionship, purpose, and joy, among dozens of other gifts and emotions. But I ask that you indulge me a less desirable set of pet ownership emotions in one of our articles in this year’s pet issue, as we take a look at pets and end of life issues. Unfortunately, the topic was inspired by my family’s own experience saying goodbye to our beloved dog Eli just before Christmas. In Eli’s case, we knew it was coming. He was diagnosed with cancer in September and the progression was quick. His cancer was in his nasal passages and extremely complicated to treat. We decided to keep him as comfortable as we could for as long as we could, and did so until his breathing became so labored that he could not rest his head to sleep. We may have waited too long, but, as described in our article on page 26, these are weighty decisions made on behalf of another creature, and very difficult. In our case, we opted for euthanasia at home, which I would highly recommend. A very sweet, young veterinarian came to our home and handled the situation with great care and compassion, explaining the process and gently treating our pet as if he was her own. While profoundly sad, the experience was peaceful, and Eli did not endure any unnecessary trauma. We have not yet welcomed a new furry friend and Eli’s bowl still sits in its place. I think the right pup will tell us when it is time. Our other pet feature offers some lesser known tips for keeping your pet safe and happy at home. Read more on page 24. We love our pets and there is little that we would not do for them – at all stages of life! What they give in return is priceless.

National Night Out is an annual community-building campaign that promotes police-community partnerships and neighborhood camaraderie to make neighborhoods safer, more caring places to live. Millions of neighbors take part in National Night Out across thousands of communities from all fifty states, U.S. territories and military bases worldwide, on the first Tuesday in August. Neighborhoods host block parties, festivals, parades, cookouts and various other community events with safety demonstrations, seminars, youth events, visits from emergency personnel, exhibits, and more. Broomfield’s National Night Out Picnic is sponsored by the Broomfield Police Department Neighborhood Watch program. The all-hazard awareness safety event will be held at the Broomfield County Commons Park from 5:30 p.m. to 8:30 p.m. There will be interactive learning stations, all-hazard preparedness education centers, a demonstration by North Metro Fire Rescue showing extrication from a crashed car, a police K-9 demonstration, and an interactive SWAT display. In addition to the traditional police and fire vehicles, touch-a-truck includes big city trucks that take care of Broomfield’s streets and kids can climb inside to see what they are all about! Snacks, drawings, and prizes are also part of the festivities. In the spirit of community support and helping neighbors, please help stock our local food pantry by donating non-perishable food items to FISH, Inc. of Broomfield during this event. Bring a picnic supper for your family and join the fun! The Broomfield Council on the Arts and Humanities (BCAH) continues its annual Summer Sundays at the Brunner House on August 12 from 4:00 p.m. to 8:00 p.m. The 100-year-old farm house on the hill at 640 Main Street will again come alive with a Carnival for kids, and family friendly entertainment for all ages. Bring the kids to the Carnival at 4:00 p.m. or come for the evening concert at 6:00 and listen from the back porch. Bring a lawn chair and enjoy activities that are reminiscent of a casual summer of yesteryear, with a modern twist. Showing You Care: Contribute to School Supply Drives for Kids in Need By Bette Erickson

W

hen youngsters feel a sense of belonging, good things happen. This month many of us are contributing to Broomfield’s A Precious Child Fill A Backpack program by donating either or both, money and school supplies. By doing this, students in need start the school year with similar essentials as their peers. Nothing feels better than being the recipient of the kindness of strangers and likewise, there is little that is more rewarding than giving of ourselves. A Precious Child has established the admirable goal of providing some 15,000 backpacks filled with grade-appropriate school supplies to Colorado children in need. A donation to A Precious Child of $50 provides a new backpack and necessary school supplies to give a child a great start and ultimately support teachers and the school as well. The organization collects new backpacks and school supplies for community children in need and distributes them through its Resource Center and agency partners including schools, human services providers, at-risk youth centers, homeless shelters, and foster care facilities. Community donations received for Fill A Backpack up to $20,000 will be generously matched dollar-for-dollar this year by the Markham Family. Individuals, organizations, and corporations are encouraged to participate in the Fill A Backpack program. Crayons-to-Calculators If you’re a supporter of the Boulder Valley School District and the St. Vrain Valley School District, you may consider contributing to the annual Crayons-to-Calculators school supply backpack drive sponsored by BVSD’s Impact on Education nonprofit program. In 2017 as a result of hundreds of generous donors, Impact on Education and BVSD distributed more than 10,000 backpacks full of supplies to economically-challenged students and families. Buying school supplies presents a critical financial burden for many families, leaving thousands of students unprepared for school. Providing youngsters pre-school through high school with the supplies they need for school is one way of addressing achievement and opportunity gaps. Service organizations (Scout Troops, Civic groups, corporate offices, and others) may volunteer or team to fill backpacks or collect school supplies. Monetary donations are accepted as well. Impact on Education expects to provide more than 11,000 backpacks this year.

ARTS+CULTURE AUGUST 01, 15 & 29 Broomfield’s Nature Walks are designed especially for preschoolers and their guardians. Take a walk with naturalists through Broomfield’s open space areas. Learn about the animal life and plant life in your own backyard. Explore the area and learn about nature while having fun. There is NO CHARGE for these programs! Each walk begins at 9:00 a.m. On August 1 meet at Ellie’s Pond, on August 15 meet at Plaster Reservoir, and on August 29 meet at Tom Frost Reservoir.

AUGUST 08 For the fifth consecutive year, the Broomfield Depot Museum Friends presents the “History Comes Alive!” speaker series with a diverse and dynamic line-up and the theme, “We are Broomfield.” The one-hour talks are scheduled on the second Wednesday of each month at 7:00 p.m. Most are at the historic Broomfield Crescent Grange Hall, at 7901 W. 120th Ave. in Broomfield. On August 8, Broomfield resident Tom Martinez will present, “We Followed the Coal and Migrant Work for a Better Life: Reflecting on One Family’s Journey.” In his presentation, Martinez will discuss his mother’s family history. His maternal grandmother was born in Mora County, New Mexico, and he can trace her family back to the 1740s. His maternal grandfather was a coal miner and brought his family along as he followed work in coal to the northern fields in the Boulder County area. There is no admission charge for the presentations, but donations are welcomed. an OB/GYN, I regularly talk with women about cervical cancer. This type of cancer begins in the cellular lining of the cervix, which is the lower part of the uterus. When it is detected and treated early, the five-year survival rate for those with invasive cervical cancer is 91%. We now have two tests to help us find more cervical cancers earlier: the Pap smear that collects cells from the cervix during a pelvic exam for a microscopic evaluation, and the human papillomavirus (HPV) test, which can be done at the same time. That’s very good news for women and their families. There’s even better news. Because cervical cancer is directly linked to HPV infections (as are many cancers of the throat, penis, anus, vagina, and vulva), we now can prevent most cases with the HPV vaccine. The vaccine is safe and effective, protecting against as many as nine different strains of the HPV virus. Both the American Cancer Society and the American Academy of Pediatrics strongly recommend this vaccination series for boys and girls to protect them in later life. It’s recommended that most adolescents receive two doses of the HPV vaccine starting at age 11, but each young person’s needs should be addressed with her or his primary care provider. The Center for Disease Control advises that the vaccine only be given to young men up to age 21 and to young women up to age 26. While prevention is certainly our goal, interventions are available if cervical cancer or pre-cancer (dysplasia) develops. Cervical dysplasia and early-stage cancer do not cause obvious symptoms, so women typically receive the diagnosis after they have an abnormal Pap test, collected at the time of pelvic exam. If a Pap is abnormal, or if a high-risk strain of HPV is detected, then the next step is colposcopy. Colposcopy allows us to see a highly magnified view of the cervix and look for abnormalities. At the time of colposcopy, cervical biopsies are collected to yield a diagnosis. Depending on the stage of the dysplasia or cancer, treatment is individualized and may include cryotherapy, minor surgery, major surgery, chemotherapy, or radiation. I encourage every young woman to talk with her provider about the HPV-cervical cancer connection. And I encourage every parent to make HPV vaccination part of their child’s preventive health plan.

From Common Dangers Lurking in Your Home By Kristen Beckman

A

year ago, my family and I returned home after an evening of school-supply shopping to find our seven-year-old beagle, Copper, in the middle of a major seizure. When we left the house two hours before, he was completely healthy and normal. We rushed Copper to the emergency vet with no idea what could have caused him to become so sick so quickly. The vets at the emergency clinic were guarded about his prognosis, especially when initial medications failed to stop his seizure. We were told he might not survive. Thankfully, after several different drugs, two nights in intensive care, and a hefty bill, Copper made a full recovery and came home. After ruling out a variety of potential causes, the vets eventually determined that Copper’s seizure was caused by mycotoxin poisoning,

likely caused by eating something moldy. When ingested, mycotoxins can cause a range of symptoms from vomiting to tremors to fullblown seizures that can be fatal in severe cases. This type of poisoning is common in dogs, who often love nosing through trash cans and compost heaps for a tasty morsel. I had no idea that something like moldy food casually tossed in the garbage could cause my dog to become so sick. Even the most responsible pet owners are probably unaware of dangers like moldy food lurking in plain sight in our homes and yards. Emergency vets report common reasons for visits include ingestion of human medications, shock from chewing on electrical cords, and ingestion of poisons and toxins from food or household cleaners.


The following are a few other common items that could harm your pet. 1. Food. Many pet owners are aware that certain foods are toxic to pets, most notably chocolate. But while many human foods seem innocent, they could make your pet sick. Grapes, avocados, macadamia nuts, onions, and yeast dough are all toxic to pets and can cause symptoms from minor stomach upset to organ failure. Pet owners should also be careful about feeding their pet fatty food scraps, which can cause digestive upset and pancreatitis. 2. Gum. An industrious pup exploring a purse or backpack left on the floor may happen upon an enticing pack of gum, mints or candy. These items often contain the sweetener Xylitol, which is extremely toxic to dogs. Even small amounts can cause low blood sugar, seizures, liver failure, and even death. Xylitol also can be found in a canine-favorite treat: peanut butter.

6. Dog treats. It may seem counterintuitive, but some products marketed for pets may not actually be safe. Rawhides and jerky treats have been implicated in illness outbreaks during recent years that sickened and killed hundreds of pets. Any type of toy marketed for chewing, including antlers, hooves, rawhides and synthetic bones, can cause dental problems and lead to intestinal damage and blockages if pieces are ingested. And just because your dog’s ancestors probably gnawed on bones doesn’t mean they are safe. Bones can splinter and cause damage to your dog’s digestive system and can break your dog’s teeth. 7. Birds and small pets are especially susceptible to strong odors, inhaled particles, and fumes from candles, aerosol products, tobacco products, certain glues, paints, and air fresheners. Birds should not be kept in the kitchen because cooking fumes, smoke, and odors can present a potentially fatal hazard.

3. Garbage. In addition to housing moldy foods that can cause mycotoxin poisoning, trash cans also might contain things like empty potato chip and cereal bags that can suffocate your dog if he manages to get his head inside one. 4. Plants. Cats and dogs frequently nibble on grass and plants, but several common plants can be dangerous for pets when ingested, leading to kidney failure, liver damage, heart problems, and seizures. Dangerous plants include lilies, foxglove, azaleas, tulip bulbs, chrysanthemums, hydrangeas, and shamrocks. Pet owners should also keep an eye on any mushrooms growing in their yard as some varieties can cause liver damage or other illnesses. 5. Decorations. Holiday decorations make your home fun and festive but also provide a potentially dangerous situation for pets. String-like items, such as Christmas tree tinsel, New Year’s confetti or Easter basket grass, can damage pets’ intestines when ingested. Poinsettia plants are much maligned as a holiday plant that could make your pet sick, but while it can cause gastrointestinal distress, it’s not as toxic as two other holiday favorites: holly and mistletoe. Stagnant Christmas tree water also can entice thirsty pets and lead to nausea, vomiting, and diarrhea.

Saying Goodbye:

Dealing with End-of-Life Decisions and Grief When a Pet Dies By Kristen Beckman

Comedian George Carlin once quipped that buying a pet is investing in a small tragedy. Sadly, it’s the truth. Every pet owner must face the heartbreaking reality that one day their beloved pet will die. For many, this reality is difficult to accept. Pets bring us companionship, laughter, joy, and love during their time on earth, which often feels much too short. And when the end of that time draws near, pet owners are faced with hard decisions made more difficult by deep emotional attachments.

Difficult Decisions Most pet owners wish for a peaceful death at home for their pet, surrounded by their favorite people and things. But that’s frequently not possible, and euthanasia is often a heartbreaking but necessary decision a pet owner must make to prevent suffering. Knowing when it’s time to make this choice is not always clear, but pet owners can take steps to ease the process. American Humane recommends asking your veterinarian to help guide you through the decision-making process around end-of-life treatment and euthanasia. If you are too emotionally invested to make the decision on your own, ask your veterinarian to be honest with you about when it is time to euthanize your pet. In cases where it is not clear, pet owners should consider some primary factors about their pet’s quality of life, including whether they are in chronic pain, have a diminished appetite, have lost interest in favorite activities, or have difficulty walking or standing. In some cases, pet owners can choose hospice or palliative care options that allow their pet to enjoy their remaining time and give families an alternative to extreme treatments and a chance to prepare for their passing. In-home euthanasia is another option pet owners might want to consider to make the transition easier for both pets and family members.


Grief The emotional consequences of losing a pet are often swept under the rug in well-meaning attempts by family and friends to encourage bereaved pet owners to move on as quickly as possible. However, grief over pet loss can be overwhelming for some people. “It’s important for pet owners to realize that deep emotions and grief surrounding the loss of a pet are normal,” said Kay Gilchrist, a licensed clinical social worker and co-director of the bereavement program at the Wheat Ridge-based Human Animal Bond Trust. HABT, which focuses solely on working with people dealing with pet loss, was formed three decades ago by a group of therapists and veterinarians who were concerned that many people had no support after the death of a pet. HABT started a free weekly pet-loss support group in 1988 that has been meeting ever since. “You need to realize that this is a tremendous loss, and just like any loss in your life, it’s going to take you a while to get over it,” said Gilchrist. “Be patient with yourself and give yourself time and space to feel things, to allow yourself to cry when you feel like it.” Gilchrist said anger is a normal reaction to loss and a main component of grief. People dealing with the loss of a pet also almost universally experience guilt, especially because our pets are totally dependent on us for shelter, food, water, and everything they need. “When we’re making the decision to end their lives, we are naturally going to feel guilty,” said Gilchrist. “They can’t make that decision for themselves, so we have to make it for them. That always causes guilt.” The rule of thumb about processing these emotions, she said, is to allow yourself to feel despondent or unsocial or angry for two to three weeks. If you aren’t starting to feel better by then, you should push yourself to participate in a social activity, talk to other people, write down your feelings, attend a pet loss support group or do something else that will help you move beyond the grief, anger, and guilt.

Helping Kids “For many children this will be their first experience with death, especially if they are really young,” said Gilchrist. She encourages parents to be honest with their children about what’s happening and if appropriate, involve the child in the decision-making process and saying goodbye. It’s OK to tell a child their pet has gone to heaven if that’s what the family believes, but telling them their dog ran away or another falsehood to avoid a difficult conversation is destructive. “It’s very important not to lie to the child,” she said. Talk to your child and be there for them like you would for a grieving spouse or partner. Encourage them to talk about the pet or draw pictures and write poems to help them express their feelings. “When a Pet Dies” by Fred Rogers is a book recommended by many organizations to help children cope with the loss of a pet.

Moving On A common refrain from heartbroken and grieving pet owners is that they will never get another pet. “I think everybody feels that way at first, and actually we really encourage people not to go out and get another pet right away,” said Gilchrist. “But don’t rule it out.” Getting a new pet means accepting again the reality of eventual heartbreak and loss, she said. But in the meantime, another pet will bring a lot of joy. “The kind of people who love their pets like this are wonderful pet owners,” said Gilchrist. “There are tons of dogs and cats who need new homes, and these very people who are feeling this loss will make wonderful parents to a new pet someday.”

Achievable Exercise Solutions for Busy Families By Sara Baker, MS, CSCS

We seem to be busier than ever. Jobs, sports, extracurricular activities, and social commitments fill our schedules. We all know how good exercise is for our bodies and minds but with our schedules jammed packed, how are we supposed to fit it in? Lack of time is often the number one reason people give for not exercising, yet it is so crucial to our overall health to make time for regular exercise or movement. The American College of Sports Medicine recommends 150 minutes of exercise a week to maintain good health. Here are some simple tips to help add extra movement and exercise into your regular routine.

1. Change Your Definition of Exercise. Exercise does not have to be in a big indoor gym for an hour. Though formal structured exercise has great benefits, all movement counts. Don’t have time for 30 minutes? Get in what you can when you can. Even 5-10 minute walking breaks throughout the day and a few sets of body weight exercises can improve health. Shannon Fable, a Longmont resident, mom, VP of Fitness at FIT4MOM, and Chairman of the Board for the American Council on Exercise said, “Some days you may not get an hour workout, but you might walk the dog and power walk through Target. It counts!” 2. Make It a Family Affair. In Colorado we are fortunate to have fairly mild weather most of the year making exercising outdoors very accessible. Exercising with the entire family not only teaches children about the importance of movement but also is a great way to spend time together. Go on a walk together after dinner. Take a bike ride around the neighborhood. Play Frisbee or soccer. Let your inner kid out and actually play at the park. Swing on the monkey bars, go down slides. Run races. Bad weather? Have a dance party in your living room. There are also exercise classes that include children. Stroller Strides is a great exercise class that encourages you to bring your baby. Family yoga classes are popular as well. 3. Use Your Time Wisely. Do you sit at your kids’ sports practice a few times a week or take your kids to play at a park? What an ideal time to exercise! Walk or jog around the fields. Complete body weight exercises such as push-ups, squats, lunges. Find a bench for dips and step-ups. If your kids’ activities take place at a recreation center that has exercise facilities, inquire about a punch card or a membership that lets you exercise while they are at practice.

4. Buy A Few Pieces of Home Exercise Equipment. Having a few small pieces of equipment at home can make fitting in exercise easier. Dumbbells, a resistance band and a bench or stability ball can literally provide hundreds of exercises. You can gain strength and benefit from weight training with sessions as little as 15 minutes. Get up just a bit earlier to squeeze in a quick workout before heading out the door. Or as soon as you get home from work, grab your weights and commit to just 15 minutes. Need to get dinner started? Get dinner cooking and complete a few exercises. There are countless exercise apps for workout guidance and ideas.


5. Figure Out What You Enjoy Doing and What is Convenient. There are numerous ways to move. If you hate running, why make yourself run? You are more likely to stick with something that you look forward to doing. Yet, it also has to be convenient. If your gym or studio is more than 10 minutes away, you are less likely to go. If you like group workouts, find a fitness boutique studio close to your home or work and commit to going a few times a week. Find a trail or path that you enjoy that is close to your house. Make it work for you. 6. Constantly Renegotiate. Shannon suggested, “Each age and stage of your kiddos’ lives requires renegotiating when and how you work out. You will struggle if you try to keep the same routine throughout their childhood. It may be early morning for 3 months, and then it might move to afternoons and back to mornings or extra long on the weekends when you’ve got the time and short workouts during the week. Give yourself permission to renegotiate every 3-4 months.”

A new school year means it’s time to think about packed lunches – for both yourself and the kiddos. Packing your own lunches, drinks, and snacks for work or school is a healthier and thriftier option than eating out; you can eat better, save money, and reduce waste all at the same time.

T

here are two keys to making great packed lunches for the entire family: assembly lines and preparation. Commit to packing lunches in the evening after dinner, and then tidy the kitchen all at once when the meal prep is finished. Mornings are hectic and hassled in most households, and adding one more task to that busy time means it’s more likely that it won’t get done. If the lunches are assembled and ready to go in the fridge, everyone can just grab theirs on their way out the door. And don’t forget the reusable coffee mugs for grown-ups, too! Healthy packed lunches don’t need to be boring or tasteless, and they don’t need to be the same turkey sandwich every day. Prepare delicious, healthy foods – hummus, whole grains, cut raw vegetables, hard-boiled eggs – in batches on the weekend and package them in individual serving containers for lunches throughout the week. Plan the week’s dinners with an eye toward packed lunches, and always make extra. With a little creativity and forethought, last night’s leftovers become delicious lunches: pasta turns into chilled pasta salad with fresh vegetables and a tangy vinaigrette, cooked whole grains provide a flavorful, healthy base for greens, rotisserie chicken tucked into a spinach tortilla becomes delicious wraps, and tacos transform into taco salad. Get the family involved; even the pickiest kids are more likely to eat healthy when they’ve had a say in their meal options. Make “assembly line lunches” into an evening chore, just like tidying up toys or brushing teeth, and make sure kids understand that your household is eating nutritious lunches both for healthy bodies and for healthy finances, too. Avoid individual serving packages; they’re substantially more expensive and if you buy in bulk, you can control the portions yourself. Many children take two or three bites of something and throw the rest out, which not only costs money but creates even more waste. You know your children best, so pack portions they’ll actually eat. Make sure your kids know to bring home their lunch containers and the excess food, too. Not only could the shelf-stable food be safely eaten later on, but it’s important to know what your kids aren’t eating. There is no point in packing lunches if the food is simply thrown out; 40% of all edible food in the U.S. is thrown away, and that means wasted money, too. If you’re seeing a ton of leftover food, cut down portions or incorporate new items – or both. Forget the juice boxes, sodas, and artificial “energy” drinks, and pack reusable water bottles instead. Kids and adults should stay hydrated with plain water rather

than sugary drinks and empty calories; add sprigs of mint or a slice of lemon or cucumber to keep the drink interesting. Enlist the kids to make flavored ice cubes with fresh berries: buy ice-cube trays at the thrift store and place a few berries in each space. Top with tap water, freeze and add to water bottles as needed. This is also a great way to use up berries that might be past their peak. A huge amount of waste originates from single-use plastic, such as bottled water and plastic bags. Skip the disposable plastic baggies and either pack items in reusable plastic containers or washable fabric bags. If you’re crafty, these washable lined bags are easy to whip up on a sewing machine, but they can also be purchased for a few dollars each. Buy durable, reusable plastic cutlery, or browse the thrift store for mismatched forks and spoons to send along. Once you’ve gotten your packing system in place, keep track of how much money your household saves by brown-bagging it. Get the whole household involved; set a specific dollar goal and a family reward, like a fun day out to the zoo, the planetarium or the lake. And of course, pack your lunches for that excursion, too!

KABOBS Great Food on Sticks! By Chef Elizabeth Buckingham

Humans have cooked over open flames since the beginning of history, and a good deal of that food was cooked and served on skewers. Lots of delicious food is still served this way, especially at street carts around the world. While we think nothing of throwing a few burgers or brats on the barbecue, consider upping your grill game this summer with succulent meats, smoky, flavorful vegetables or sweet, ripe fruit – all skewered and presented beautifully. Pro Tips: if you’re using wooden skewers, make certain they’ve been thoroughly soaked in water for at least thirty minutes before grilling, or they’ll turn into a pile of ash. If you’re using metal, remember that they’ll retain their heat for quite some time, so handle carefully. Foods that have similar cooking times, such as peppers and zucchini, should be skewered together, and harder vegetables, like potatoes or carrots, need to be par-cooked until just tender before grilling. Fruit should be nicely ripe but not falling apart, and remember that high-sugar marinades will burn over high heat, so adjust accordingly. Most skewer recipes can easily be prepared under a hot broiler, too, in case you don’t have a grill handy. Now, get skewering!

Soy-Marinated Chicken Skewers with Citrus and Sesame (Adapted from Bon Appétit)

For Garnish: • 2 tbsp. white and/or black sesame seeds • 1 tbsp. sliced chives • 1 tsp. red pepper flakes • ½ tsp. finely grated lemon zest • Kosher salt For Chicken: • 1/3 cup brown sugar • 1/3 cup mirin • 1/3 cup soy sauce • ¼ cup unseasoned rice vinegar • 1¼ lbs. skinless, boneless chicken thighs • Vegetable oil for grill • Kosher salt and freshly ground pepper • Eight 12-inch-long metal skewers

Directions: 1. Combine sesame seeds, chives, pepper flakes, and lemon zest in small bowl; season with salt. 2. Combine brown sugar, mirin, soy sauce, and vinegar in small saucepan. Transfer ¼ cup marinade to a large resealable plastic bag. Slice chicken thighs in half lengthwise. Add to bag with marinade and toss to coat. Chill at least 2 hours and up to 12 hours. 3. Bring remaining marinade to a simmer over medium-high heat; cook until reduced by half and thickened, 8–10 minutes. Remove glaze from heat.
 4. Prepare grill for medium-high heat; oil grates. Thread chicken onto 6–8 skewers, folding and piling onto itself to form a compact shape. Season lightly with salt and grill over direct heat, turning every minute or so, until browned and beginning to char in spots, about 4 minutes. Move to cooler side of grill and continue to grill, basting lightly with glaze and turning every 30 seconds or so, until cooked through, about 5 minutes longer. Serve with sesame-citrus sprinkle.


Mustard and Rosemary Potato Skewers Ingredients: •

1 1/2 lbs. small potatoes, scrubbed, halved

1 1/2 tbsp. finely chopped fresh rosemary

3 tbsp. olive oil

1/2 tsp. coarse kosher salt

3 tbsp. Dijon mustard

1/2 tsp. coarsely ground black pepper

3 garlic cloves, minced

6 metal or wooden skewers

Directions: 1. Line baking sheet with heavy-duty foil. Cook potatoes in large pot of boiling salted water until just tender when pierced with sharp knife, about 10 minutes. Drain; cool 10 minutes. 2. Whisk oil, mustard, garlic, rosemary, salt and pepper in large bowl to blend. Add potatoes to dressing and toss to coat. 3. Thread potatoes onto skewers, cut side up. Place on prepared baking sheet. 4. Preheat broiler, positioning rack 6 inches from heat. Broil potato skewers until browned and bubbly, turning halfway through cooking time, about 10 minutes total. Serve hot or at room temperature.
