As our population ages there has been a dramatic increase in the number of “Granny Snatching” cases. Medicine has made great strides in the past few decades that has increased the life span of the general population. However, the increased life span has not been matched by an increase in the ability of medicine to help the increased number of the elderly suffering from dementia or Alzheimer’s disease. Furthermore, with the dispersal of families around the country there has been an increase in the number of children living in a separate state from an aging parent. Too frequently a loving family member may cross a state line, load up the aging person, taking them to a separate state, and then seeking guardianship in the family member’s state in order to assist them. Another scenario also occurs where a family member may cross a state line, load up the aging person, take them to a separate state, and seek guardianship in the family member’s state to gain control of the aging person’s assets (money). This second scenario is frequently referred to as “Granny Snatching.” The problem that arises is “Which state has jurisdiction?” Jurisdiction is the ability to exercise judicial authority, over the aging person and the guardianship. In 2008 Colorado became one of what is now 45 states to adopt the Uniform Adult Guardianship and Protective Proceedings Jurisdiction Act (UAGPPJA). The UAGPPJA clearly defines which state’s courts has the ability to resolve the issues involved. One of the main criteria is what is known as the aging adult’s “home state.” The home state, in general, is the state in which the aging person was physically present, including any period of temporary absence, for at least six consecutive months for the period immediately prior to the guardianship matter is sought. Using fresh and versatile ingredients, parents can be at ease that everyone is eating right with a nutritious dinner and kids are eating something delicious each evening. Pesto can be used as an ingredient in many recipes and brings a punch of flavor to each dish on the table. It can be served hot or cold, so it is easy to cook with or add to dishes featuring fresh vegetables, like this recipe for Chicken Caprese Stuffed Spaghetti Squash. 2 tablespoons extra virgin olive oil, divided

3/4 teaspoons salt, divided

1. Heat oven to 400 F. Halve spaghetti squash lengthwise and scrape out seeds; drizzle cut sides with 1 tablespoon olive oil and season with 1/4 teaspoon each salt and pepper. Dr. Jennifer Helgeson was seven years old when she knew she wanted to become a dentist. A
utumn is upon us, and with all due respect to the popular summer months, there’s no better time on the Colorado calendar to take the family for a hike. The afternoon thunderstorms that can send families scattering for cover from hail and lightning are pretty much gone. The heat is less oppressive. The summer tourist crowds have thinned considerably. The fall colors have turned the mountains into a brilliant gold landscape, with maybe even a little snow on the higher peaks to make for better photos. With so many great hiking options within a short drive of the Front Range, it can be tough to decide where to go. So we’ve put together this list of kid-friendly hikes that offer great scenery yet are still close enough for you to be home in time for the Broncos game.

St. Mary’s Glacier
Dream Lake, Rocky Mountain National Park
Introducing the Kids to Hiking in the Mountains
Dream Lake, Rocky Mountain National Park It’s hard to imagine any Front Range hike that delivers as much scenery for such little effort. This is one of Colorado’s most iconic spots, a lake of clear blue water, towered over by dramatic Hallett Peak. From Estes Park follow U.S. Highway 36 to the Beaver Meadows entrance and pay the $25 per-vehicle entry fee. Follow signs for the Bear Lake trailhead (you may have to park in a satellite lot and take a shuttle during busy times.) The hike follows a gentle, paved trail for a half-mile to the first lake, Nymph Lake, which itself is a worthy destination. Follow the trail around that lake and you’ll reach Dream Lake in another half-mile. Return the way you came or, if the kids still have the energy, continue up the trail to Emerald Lake or return to Nymph Lake and follow the loop trail counterclockwise to the Glacier Gorge Trailhead.
Staunton State Park This park, which opened to the public in 2013, offers a varied landscape and miles of mostly gentle hiking trails through aspen groves and pine forests and past cliffs, jagged peaks and waterfalls. And it’s only 40 miles down U.S. Highway 285 from downtown Denver. About six miles west of the town of Conifer take the Shaffers Crossing exit. Turn north on Elk Creek Road and follow the signs 1.5 miles to the park entrance. There’s a $7 per-vehicle entry fee. If you brought fishing poles take the 2.3-mile loop around Davis Ponds, which are stocked with rainbow trout. Or take the mellow 3.1-mile Staunton Ranch Trail to visit some of the more remote areas of the park. Tack on 2 more miles each way for views of stunning Elk Falls. It’s a gorgeous park that will have you feeling a lot farther from the city than you are.
St. Mary’s Glacier Colorado doesn’t have many glaciers left, but this one west of Denver will have them eager to learn more about the once-mighty ice formations that shaped our mountains. Take Interstate 70 to exit 238, Fall River Road, and follow signs for St. Mary’s Glacier. The trail is short but steep, 420 feet of elevation gain over .75 miles to the glacier-fed lake. Stop there for your lunch or explore the glacier itself, which thanks to our changing climate will probably be gone by the time the kids reach adulthood. You might even see obsessive skiers getting their summer downhill fix on the last remaining snow in the area.
When the kids are old enough to start hiking instead of just walking, start with a good pair of boots (though don’t spend a fortune as they’ll probably be ready for a new size next summer!) Have them wear the boots around the house or to school for a few days to break them in. Good hiking clothes are essential, including hiking pants that convert to shorts and a quick-drying (also known as wicking) shirt to be ready for Colorado’s rapidly-changing weather. Wool hiking socks and polypropylene liners will keep away blisters. And no matter the weather, never go into the mountains without a rain jacket/windbreaker. Food and hydration will keep the kids from getting grumpy, so bring plenty of water, snacks for along the trail and a light lunch to enjoy at your hiking destination. Bring a map and directions and let the kids be part of the map-reading. This essential hiking skill will serve them well later. On the trail, remember this is supposed to be fun. So don’t force it or ask the kids to hike too fast or too long without a break. And if things are going bad, call it a day. The lake or waterfall will still be there later.

Devil’s Head Lookout This popular trail southwest of Denver leads to a historic fire lookout tower with long views of the Front Range. It’s no walk in the park - it gains 950 feet over 1.4 miles, followed by a steep staircase through the rocks - but the kids will be talking about it for days. Drive 10 miles west of Sedalia on Colorado Highway 67 to Rampart Range Road and head south on that for 8.5 miles to the trailhead. This road usually closes for the season around Dec. 1.
Sapphire Point Overlook The mountains of Summit County tower over scenic Lake Dillon, and there’s no easier way to soak in the view than this short trail. Take Interstate 70 through the Eisenhower Tunnel and take the Silverthorne exit south to Swan Mountain Road. From the trailhead it’s a .6-mile loop with little elevation gain and a scenic overlook that gets crowded in summer but sees less use in fall. Don’t forget the camera!

This trail is slightly tougher than the others on this list, but with a there-and-back length of just over 3 miles and a few steep stretches it’s a great introduction to longer family hikes. The reward is all around you as you pass through golden aspens and arrive at a stunning alpine lake. From Nederland, head south on Colorado Highway 119 for .6 miles. Turn west onto County Road 130 and follow the paved road through the town of Eldora and look for the trailhead another .75 miles after the pavement ends. Hike the Devil’s Thumb Trail for 1.1 miles, then turn at the sign for Lost Lake, which you’ll reach in another half-mile. This is also a great spot to introduce the kids to backpacking, as there are nine fine campsites at the lake.

Crisp, Refreshing, and Often Gluten-Free, Cider is Making Waves in Colorado By Kristen Kuchar
There is no doubt Colorado is a state known for our incredible, thriving craft beer scene. More than 10 percent of our entire country’s craft beer can be found right here in this great state with more than 230 breweries calling it home. But there is a beverage that’s also gaining some steam in Colorado, and it’s time you found out why.
ider is simply the fermented juice from fruit, mostly apples. The biggest misconceptions about cider tend to be that it’s craft beer and that all cider is super sweet, says Xandy Bustamante, National Sales Director at Colorado Cider Company in Denver. The process for making cider is actually more similar to wine than beer, Bustamante explains. “Traditionally cider isn’t sweet either,” Bustamante adds. “While there can be some residual sweetness and apple character in cider, it shouldn’t be cloyingly sweet like some of the larger industrial producers make.” Unlike the majority of beer, most ciders are gluten-free, which is appealing to those struggling with celiac disease or anyone with a gluten sensitivity. (But you should always confirm whether or not a cider is confirmed free of gluten before enjoying it.) Another misconception with cider has less alcohol than craft beer and wine. While that may be true in some cases, like beer, ciders have a wide range of alcohol, depending on how they are produced. Ciders can range from 4% ABV to 15% ABV and beyond. More and more cider makers are opening across the Denver area, throughout 28

Colorado, as well as across the country, which is leading to people rediscovering how good cider can be, says Bustamante. The Colorado Cider Company has been creating award-winning ciders since 2011. The Glider Cider is their flagship, traditional cider with a light sweetness and the taste of fresh apples. There’s also a dryer version of The Glider Cider and another enhanced by distinctive cherries. But there are also unexpected varieties, like a their Decuido, aged for 12 months in rum and whiskey barrels and comes in at a hefty 14.5% ABV. Ol’ Stumpy is made with bittersweet apples, and is
their modern take on an early American cider. The twist here is the cider is aged an entire year, including four of those months in oak Chardonnay barrels. You can find them on tap and in local liquor stores, as well as at their tap room (2650 W. 2nd Avenue, Denver, coloradocider.com) Stem Ciders has a wide variety of ciders to try. Ciders range from a light and more classic variety, such as the hibiscus session apple cider infused with hibiscus tea, to a salted cucumber cider dry hopped with cascade and citra hops. You can try them at the RiNo taproom (2811 Walnut Street, #150, Denver, stemciders.com).
Stem Ciders also has a ciderhouse and eatery in nearby Lafayette called Acreage Ciderhouse (1380 Horizon Avenue, Unit A, Lafayette, acreageco.com). They offer a full brunch and dinner menu with options that pair perfectly with the ciders. Mixed Spanish olives, soft pretzels with stone ground mustard, and cast iron cornbread with pimento cheese are just a few snacks. They’re cooking a variety of meats, as well as a vegetarian options, with a wood fire. And not to be missed, cider donuts for dessert. You can visit C Squared Ciders (2875 Blake Street, Denver, csquaredciders.com) in RiNo’s art district. Classic ciders are jazzed up with flavors of ginger, peaches, and cranberries, amongst other ingredients. If you’re curious to learn more about how cider is made, you can ask if a tour is available when you visit or contact in advance for an appointment. C Squared Ciders shares a space with The Rackhouse, which serves craft beer and wine, in addition to the cider on tap. The food menu includes various street tacos, fried mac and cheese balls, salads, sandwiches, and twists on mac and cheese, from adding in lobster and chopped bacon to a veggie with portobellos and broccolini. Haykin Family Cider (12001 East 33rd Avenue, Unit D, Aurora, haykinfamilycider. com) is a cozy, welcoming spot located in Aurora, and they have won numerous awards with their small-batch ciders. The cidery produces champagne-like ciders with a clean and crisp finish. They boast utilizing unique and interesting apples in production to produce delicious tasting cider. You can order a flight of the ciders to sample what you like. In Historic Downtown Erie, you’ll find The Old Mine (500 Briggs Street, Erie, theoldmine.com). They’re serving in-house ciders as well as craft beer on tap. An eclectic food menu is available with smoked meats, artisan pizzas, and classic pub snacks, like pretzels, wings, and sliders. The Old Mine also uses their tasty cider to create innovative cocktails. The Old Manhattan is made with their Handlebar hard cider, Kentucky Bourbon, smoked bacon simple syrup, Luxardo maraschino syrup, and fresh orange juice. Their version of a cider margarita is the original ciderita – their Handlebar hard cider, freshly squeezed orange juice, fresh squeezed lime juice, and 100% blue agave tequila, all served over ice. Bustamante attributes some of the popularity to cider makers developing varieties that spice up the traditional drink by adding hops, botanicals, and other exciting ingredients. For example, Colorado Cider Company’s Mel has notes of lavender and rosemary. C-squared Ciders’ Ruby is fermented in French Oak Cabernet barrels, and Stem Ciders teamed up with Method Roasters to create a smoky cider made with coffee beans from Guatemala, Brazil, and Sumatra. The Old Mine, in addition to creating ciders with key lime, mint, and mango, also serves up cider and beer fusions. “We think consumers are starting to discover cider much like they did craft beer,” Bustamante says.

2 teaspoons baking soda
1. Heat oven to 350 F. Grease two 8-by-4-inch loaf pans. In large bowl, combine oat flour, baking soda, cinnamon, nutmeg and salt.

1 teaspoon ground nutmeg

Pinch of salt
•
1 cup (2 sticks) butter, softened
•
2 cups granulated sugar
•
4 large eggs
•
2 teaspoons vanilla extract

1 can (15 ounces) pumpkin
•
2 cups chopped walnuts
•
1 cup bittersweet chocolate chips
•
1/2 cup confectioners’ sugar
•
1 tablespoon milk

2. In large bowl using mixer, beat butter and sugar until light and fluffy. Beat in eggs one at a time. Add vanilla, oat flour mixture and pumpkin; beat until just blended. Stir in walnuts and chocolate chips. Spoon mixture into prepared pans. 3. Bake 50-55 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan. Cool completely. 4. In small bowl, stir confectioners’ sugar and milk until smooth. Drizzle mixture over pumpkin bread.

SOAK UP THE VITALITY OF ONE OF THE WORLD’S MOST FASCINATING ISLAND COUNTRIES IN “¡CUBA!” New Exhibition Opens at the Denver Museum of Nature & Science on Oct. 26
T
he Denver Museum of Nature & Science is bringing Cuba, a place of stunning contrasts, dynamic culture and abundant biodiversity, to Denver in the new temporary exhibition “¡CUBA!,” opening Oct. 26. The exhibition is presented in English and Spanish, and is free with general Museum admission. The experience revolves around a “plaza” evoking city life and lined with displays. Tabletops along the streetscape encourage guests to try activities related to Cuban dominoes, Cuban foods and coffee, music you might find on a local radio station and the nation’s obsession with baseball. A 1955 Chevrolet Bel Air on display reveals the story behind the vintage cars that famously rumble down Cuban streets. There are also beautiful re-creations of the island’s habitats, with lifelike models representing its distinctive wildlife, both modern and extinct, and live lizards called anoles. Highlights include the Zapata wetlands, home to the endangered Cuban crocodile, and a reconstructed cave environment. 34

This open coral reef diorama in ¡Cuba! represents a string of jewel-like keys to the south of the main island of Cuba called the Gardens of the Queen (Jardines de la Reina). Here, silvery fish zip past banks of coral studded with colorful starfish, sea fans, and sponges. To protect this vital diversity, Cuba has created the largest marine reserve in the Caribbean. Coral reefs are some of the richest ecosystems on Earth, and on many Caribbean coastlines, they are in danger of disappearing. But in this protected area in Cuba, the reef is wonderfully alive. Cuba’s extinct giant owl, Ornimegalonyx, was the largest owl that ever lived. Experts debate whether the bird could fly; powerful long legs suggest to some that it hunted by running down its prey, which might have been quite large. An interactive art “gallery,” where guests can project on the walls paintings, sculptures or performance art created by Cuban artists.

An exploration station with artifacts exploring a day in the life of some of Cuba’s indigenous people.
The Museum worked with the Cuban community in Denver to enhance the experience, by adding live musical and dance performances at times during the exhibition’s run and contributing to exhibits featuring personal mementos from local Cuban Americans.
Cuba IMAX Film with Director Peter Chang Experience a land of spectacular beauty that’s home to people renowned for their passion in the film “Cuba.” The island nation is preserved in time yet poised on the cusp of dramatic change. You will be transported across breathtaking island landscapes, below the ocean surface to dazzling reefs and into streets invigorated by music and dance in the heart of Havana. After the film, director Peter Chang will discuss the making of the film and reflect on his time in Cuba.
