1. Heat oven to 325 F. Line muffin tin with paper baking cups. Place 1 cookie in each cup.

1 teaspoon Spice Islands Pumpkin Pie Spice

1 cup canned pumpkin

2. With electric mixer, beat cream cheese, sugar, corn starch and pumpkin pie spice. Add eggs and mix well. Add pumpkin and corn syrup; beat 1 minute. 3. Pour filling into liners, dividing evenly. Bake 30-35 minutes until just set. 4. Chill 1 hour.

Brined Herb Roasted Turkey (Serves 8)

Brining turkey keeps it moist, and the addition of apple cider and herbs adds a punch of interesting sweet and savory notes. The drippings from a brined turkey are much saltier, so you won’t need to add any salt to gravy made from the drippings. •

1 brining bag

•

1/2 gallon apple cider

•

1 15-pound turkey, neck and organs removed

•

1/2 cup fresh sage leaves

•

1/2 cup rosemary sprigs

•

3 quarts water, divided

•

1/4 cup black peppercorns

•

1 cup kosher salt

•

Olive oil

Two days before the holiday, set the brining bag in a roasting pan that will fit in your refrigerator and place the whole turkey into the bag. Bring 1 quart of water to a boil in a stockpot and add salt, stirring to dissolve. Remove from heat and add 1 cup of ice cubes to cool.

Add the salt water, remaining 2 quarts water, apple cider, sage, rosemary, and peppercorns to the turkey. Press the air out of the bag, seal, and refrigerate until the morning of your feast.

When you are ready to cook the turkey, preheat the oven to 400 degrees. Remove the turkey from the bag and rinse under cold running water; pat dry.

4. Rub the turkey with olive oil, and place the turkey, breast side down, on a roasting rack in the pan. Roast for one hour, and then carefully turn the turkey to breast side up. Reduce the temperature to 325 degrees and continue to roast until turkey is fully cooked – the thigh temperature reads 180 degrees and the breast reads 165 degrees – basting occasionally. If the skin is fully browned but the meat is not yet at temperature, tent with foil for the remaining cooking time. 5.

Let turkey rest for 20-30 minutes before carving.

Notes: The turkey should be fully covered in the brining liquid; add additional water if you have a larger turkey. Alternatively, brine in a covered cooler, adding ice cubes as needed to keep the liquid cold. If you aren’t comfortable turning the turkey, roast it breast side up the entire time, making sure to baste frequently.

Mushroom, Apple & Sage Dressing (Serves 8)

To cook dressing to a safe temperature without overcooking the turkey, bake the dressing outside of the bird. With plenty of butter and cream, and drizzled with drippings at the end, your family will never know the difference! • • • • • • •

2 tablespoons oil 1 tablespoon butter 4 ounces crimini mushrooms, quartered 1 cup diced celery 1 cup diced carrots 1 cup diced onions 1 large egg

1/4 cup heavy cream 1/2 cup chicken stock 1 stick butter, melted 5 cups cubed Italian bread 1 tbls minced fresh sage 1 tablespoon minced fresh rosemary 1 apple, diced

Preheat oven to 375 degrees. Heat 1 tablespoon oil and butter in a large skillet over medium high heat. Add mushrooms, and cook until browned, stirring occasionally, about 10 minutes. Remove mushrooms; set aside.

Add remaining oil to the pan; add celery, carrots, and onions; cook until softened, about 5-10 minutes.

3. Combine eggs, cream, and stock and whisk together. Place bread in a large bowl and add the vegetables, liquid ingredients, melted butter, sage, rosemary, and apples. Roasted Cranberry Sauce (Serves 12)

Buttermilk Mashed Sweet Potatoes (Serves 8)

Take a detour from marshmallow-laden sweet potatoes this year with a rich, savory mashed version of the classic. •

2 pounds sweet potatoes, peeled and cubed

1 cup buttermilk, or more to taste

•

2 sticks butter, or more to taste

•

Salt and pepper

•

Chopped chives, thyme or parsley, optional

Place potatoes in a large stockpot and cover with cold water; bring to a low boil and cook until potatoes are tender, about 15-20 minutes. Drain well and return potatoes to the hot pot.

Roughly mash potatoes with a potato masher, and then add small amounts of buttermilk and butter, a little at a time. Continue mashing potatoes until you achieve the desired consistency and taste, and then season with salt and pepper to taste. Add chopped herbs of your choice for extra flavor.

2 oranges 2 pounds fresh cranberries 2 cups sugar 1/4 cup extra virgin olive oil 2 teaspoons salt 1 teaspoon ground cloves 4 whole cinnamon sticks 2 jalapeños, thinly sliced (remove seeds to reduce heat) 2 tablespoons port wine

Preheat oven to 450 degrees and line a baking sheet with parchment paper. Use a vegetable peeler to remove orange zest and cut into thin, long strips, and then juice oranges. Combine the sugar, cranberries, oil, salt, cloves, cinnamon, and jalapeños in a large bowl; add the orange juice, reserving 3 tablespoons, and zest. Toss together and then spread in a single layer on the two baking sheets.

Roast until cranberries begin to burst, about 20-20 minutes, then transfer to a bowl and add the reserved orange juice and port; let sit for at least one hour and remove cinnamon sticks before serving.
