Opt for burgers with a brazen rub that creates a caramelized outer layer. Make the meal an epic backyard feast with a side of grilled watermelon steaks, marinated in white balsamic vinegar, lemon juice and rosemary, and topped with walnuts, lemon zest and fresh parsley.

1/4 cup mayonnaise

2 tablespoons Stubbs Original Bar-B-Q Sauce

1/2 cup flour

1/4 teaspoon salt

1/8 teaspoon McCormick Ground Black Pepper

1 medium onion, very thinly sliced and separated into rings vegetable oil, for frying

1 tablespoon McCormick Chili Powder

1 tablespoon packed brown sugar

1 1/4 pounds ground beef

4 slices mild Cheddar cheese

1 dill pickle, sliced lengthwise 1/4-inch thick

4 Kaiser rolls

4 lettuce leaves

1. For the BBQ Mayonnaise, mix mayonnaise and Bar-B-Q Sauce in small bowl until well blended. Cover. Refrigerate until ready to serve. 2. For the Onions, mix flour, salt and pepper in large resealable plastic bag. Add onion; toss to coat well. Pour oil into deep fryer, large heavy skillet or saucepan, filling no more than 1/3 full. Heat oil on medium-high heat. Carefully add onion rings to hot oil. Fry 4 to 5 minutes, turning once to brown evenly, until onions rings are golden brown. Drain on paper towels. Set aside. 3. For the Burgers, mix Seasoning, chili powder and brown sugar in small bowl. Shape ground beef into 4 patties. Coat surface of each patty evenly with the rub mixture. Grill over medium heat 4 to 6 minutes per side or until burgers are cooked through (internal temperature of 160ºF). Add cheese slices to burgers 1 minute before cooking is completed. Grill pickle slices 2 to 3 minutes per side or until grill marks appear. Toast rolls on the grill, open-side down, about 30 seconds, if desired. 4. Serve burgers on rolls topped with grilled pickles, Crispy Onion Straws and lettuce. Serve with BBQ Mayonnaise.

1/2 small seedless watermelon 1/2 cup white balsamic vinegar 2 tablespoons olive oil 1 tablespoon lemon juice 1 teaspoon McCormick Gourmet Crushed Rosemary 1/2 teaspoon Sea Salt from McCormick Sea Salt Grinder 1/2 teaspoon McCormick Coarse Ground Black Pepper 1/4 cup finely chopped toasted walnuts 1/4 cup finely chopped parsley 1 teaspoon grated lemon peel

1. Cut 4 (1-inch thick) half-moon slices of watermelon. Reserve any remaining watermelon for another use. 2.

Mix vinegar, oil, lemon juice, rosemary, salt and pepper in small bowl. Reserve 2 tablespoons for drizzling grilled watermelon.

3. Place watermelon steaks in glass dish. Add remaining marinade. Refrigerate 20 minutes, turning watermelon halfway through marinating time. 4. Meanwhile, for the Walnut Gremolata, mix walnuts, parsley and lemon peel in small bowl. Set aside. Remove watermelon steaks from marinade. Reserve leftover marinade for brushing watermelon during grilling. 5. Grill watermelon steaks over high heat 2 to 4 minutes per side or until grill marks appear, brushing with leftover marinade. 6. Helen Hunt Falls Bridal Veil Falls Dropping 365-feet from the Bridal Veil Basin in a box canyon in Telluride is Colorado’s tallest free-falling waterfall. Making it an even more impressive spectacle is the power plant atop the falls. The second oldest AC generation facility in the country, the power plant was built in 1907 to supply the Smuggler’s Union Mine. To the trailhead: Drive east through Telluride on Colorado Ave. for a little over two miles past the Pandora Mill to a large unmarked parking area. No hiking – just drive to the end of the box canyon and look up. Dogs: Yes, on leash

Near Colorado Springs along Cheyenne Canyon Rd., Helen Hunt Falls offers a truly sublime experience. Visitors can view the falls by taking just a short jaunt from the parking area and may opt to go above the waterfall via a short trek along a trail. An added bonus: Continuing about a quarter of a mile you will be treated to a second nearby waterfall called Silver Falls. Helen Hunt Jackson was a 19th-century poet and author who focused on the plight of the American Indians. To the trailhead: From I-25 take the Nevada Rd. exit on the south side of Colorado Springs. Take this to Cheyenne Blvd. in a few blocks. When you reach a fork in the road follow the sign to Helen Hunt Falls. Dogs: Yes, on leash

Calypso Cascades Calypso Cascades, at just 1.8-miles from the trailhead along Rocky Mountain National Park’s eastern border, gushes enthusiastically. While these falls are a winter snowshoe destination treat, there’s nowhere else in Colorado that offers such a visual feast during the spring and summer.

Acquired by the U.S. Forest Service in the early 1980s, the Fish Creek Falls area offers hiking, a picnic area and informational signs. Cyclists of all abilities will take to the hills Sunday, August 28, for an event benefiting the Good Samaritan Medical Center in Lafayette.

T

his year marks the 10th anniversary of the Good Sam Bike Jam. The theme for this year’s race is “Love. Sweat. Gears. Use your pedal power to change someone’s life.” The event is organized by the Good Samaritan Medical Center Foundation and is one of its largest fundraisers to support Good Samaritan Medical Center (GSMC), which provides a range of services including trauma care, oncology, maternity and orthopedics, as well as cardiac and stroke programs. Each year, proceeds of the event are earmarked for specific programs. This year, funds will support the emergency services and trauma programs, said Tiffany Anderson, marketing manager at Good Samaritan Medical Center. Specifically, the funds will provide scholarships for three EMTs to attend the Rocky Mountain Trauma conference to support their professional development; contribute to sponsoring both a camp for stroke survivors and their caregivers and a camp for those who have had brain injuries; and allow the medical center to purchase new wheelchairs. The ride incorporates six categories to accommodate all levels of cyclists. All races start and finish in Lafayette at Good Samaritan Medical Center, 200 Exempla Circle. The starting times will be staggered.

The Century Course is a challenging 100-mile route to Allenspark and back and is designed for expert riders. The course includes 8,300 feet of climbing and a timed King & Queen of the Mountain competition.

Advanced riders can choose the 62-mile metric-century tour of Boulder County’s most scenic mountain and prairie roads. The King & Queen of the Mountain competition is also included in this ride.

Intermediate cyclists can take on a 45-mile ride on a gently rolling course in Boulder County, with views of Longs Peak and the Rocky Mountains.

Beginners have two choices. A 32-mile course takes cyclists on an easy-tonavigate route with mountain views, and a 16-mile course provides a short, flat ride perfect for first-timers.

Other Beginners and Families can choose to participate in the family ride. This is a 3-mile flat route that the entire family can enjoy. The ride is organized in partnership with the Butterfly Pavilion to support the Wings of Wellness community initiative.

All riders are invited to join their fellow cyclists for festivities following the rides at Good Samaritan Medical Center. Bands, including Runaway Train and Face, will play between 11 a.m. and 3 p.m., said Anderson. The festivities will include food, adult and other beverages, and sponsor booths. Vendors will hand out healthy snacks and drinks at the finish line. Riders can form teams of 10 or more to receive discounted registration. Each rider will receive a t-shirt for participating, said Anderson. Organizers hope 1,000 riders will sign up for the ride’s 10th anniversary. More than 800 riders participated last year. “This event is important because it supports the programs and services of the medical center and aligns with our priorities of promoting a healthy lifestyle while being an active member of the community,” said Anderson.

CDOT Launches Campaign to Address Seat Belt Crisis in Colorado In 2015, Colorado saw an alarming spike in traffic fatalities, totaling 545 fatalities, compared with 488 in 2014—an 11.7 percent increase. Even more telling: the 15 percent of Coloradans who don’t buckle up represent 52 percent, or 181, of all 2015 passenger vehicle fatalities.

n response, the Colorado Department of Transportation (CDOT) has launched a new statewide campaign to address the seat belt crisis: Beware of the Beltless. CDOT launched the widespread initiative with a press conference in June. At the event, CDOT Executive Director Shailen Bhatt spoke alongside Dr. Fredric Pieracci from Denver Health Medical Center, as well as John Bowman, whose granddaughter survived a crash in a car seat. The girl’s father, however, died because he wasn’t buckled up. “Motor vehicle traffic crashes are one of the leading causes of death for young adults in Colorado,” Bhatt said. “Many people incorrectly assume that not buckling up only puts you at risk—or has consequences that only affect you. That is simply not the case. An unbuckled passenger in your vehicle increases your risk of being hurt or killed by 40 percent. You should never be afraid to ask others to buckle up; it’s for the safety of yourself and those around you.” “Injuries from not wearing a seat belt can include extensive internal damage to the heart, lungs and aorta, all of which can potentially be life threatening injuries,” said Pieracci, trauma medical director at Denver Health. “If the force of the impact causes the person to be ejected from the car, there is also a great risk for head injuries and possibly traumatic brain injury, which in the most severe cases can lead to death or a persistent vegetative state.

“If there is one piece of advice I can offer, it’s to take the time to buckle your seatbelt.” A total of 32 confirmed campaign partners come from a variety of sectors, including health care, transportation, law enforcement, military, community organizations, and large Colorado employers. “The commitments of support are huge,” Bhatt said. “With the help of our partners, this campaign will have lasting effects on seat belt usage rates across Colorado—and ultimately save hundreds of lives in the years to come.” The National Highway Traffic Safety Administration estimates that Colorado could save 63 lives and countless injuries annually by increasing seat belt use to 100 percent. The campaign’s overarching message is a new approach to seat belt safety. CDOT and campaign partners want the public to realize not wearing a seat belt doesn’t affect just you; you can become a direct threat to the people around you. In the event of a crash, an unbelted driver or passenger can act as a projectile and cause serious or even fatal damage to others in the vehicle. The goal of the campaign is to create a sense of urgency around seat belt use. Motor vehicle traffic crashes are one of the leading causes of death for young adults in Colorado. The campaign will run through Sept. 15.
