Garlic Chipotle Marinade:

8 garlic cloves, peeled 1 red bell pepper, de-seeded and stemmed 1 small white onion 1 teaspoon ground cinnamon 1 teaspoon smoked paprika 8 tablespoons olive oil 8 tablespoons agave syrup 4 tablespoons fresh lime juice 1 1/4 cups orange juice 1 1/4 cups cold water 4 tablespoons Tabasco Chipotle Pepper Sauce Salt, to taste 2 pounds extra-large shrimp, peeled, deveined and tails on 4-6 boneless, skinless chicken breasts

To make Sweet Chipotle Marinade:

In blender, puree garlic, bell pepper, onion, cinnamon, paprika, olive oil, agave, lime juice, orange juice, water and chipotle pepper sauce.

In separate re-sealable plastic bags, divide marinade over chicken and shrimp. Allow shrimp to marinate 8 hours and chicken 24 hours.

olorado’s mountains are so daunting that the state was settled much later than surrounding territories – the harsh winters and steep inclines dissuaded potential homesteaders. However, today these same peaks draw thousands of visitors each year. Tourists seek out these slopes to ski, hike, recreate and enjoy our vast vistas stretching in all directions. If you’re looking for a hiking and sight-seeing destination a bit off the beaten path, look no further. Following are some unique and memoryworthy experiences to put on your to-do list.

Boulder’s Eldorado Canyon Early in the 20th century, tightrope walker and all-around daredevil Ivy Baldwin made 86 trips on a tightrope suspended some 580-feet above Eldorado Canyon in the southern part of Boulder›s Eldorado Canyon. He made his last walk (and survived!) at the age of 82-years old in 1948. While parking at Eldorado Canyon bustles with activity each weekend, on weekdays the canyon tends to see far less traffic. For rock climbers and sightseers, this is the preferred way to experience Eldorado appeal. Most of the rock climbing done in Eldorado Canyon falls under the definition of traditional climbing, meaning that climbers place and remove much of the protection equipment they use on any given climb. More recently, “sport climbing” has taken off in a variety of locations including in and around Boulder. In sport climbing, outdoor enthusiasts hook devices called quick draws into preplaced expansion bolts that are fairly permanent fixtures to the rock face, meaning that the bolts remain in the stone for use of future climbers. Picnic tables, a large Visitor’s Center, and rushing, icy creek are just some of the amenities at Eldorado Canyon State Park. Located at 9 Kneale Rd., the fee is $8/day per car. Highway of the Fourteeners Accessed via US 24 out of Buena Vista, this lovely 19-mile stretch along the Collegiate Peaks Scenic Byway showcases dramatic, close-up views of ten of Colorado’s 14,000+ foot mountains. (A fourteener is defined as a mountain taller than 14,000-feet above sea level.) Nowhere else in the United States will you see so many high peaks in one location. Allow about thirty minutes to drive, of course more time if you stop for photos. Lookout Mountain and Buffalo Bill’s Grave William F. “Buffalo Bill” Cody died in 1917. Even today, some 100 years later, the name Buffalo Bill is still synonymous with our perception of the Old West. As a young man, Cody trapped beaver in the Rocky Mountains, searched for gold in Colorado, delivered for the Pony Express, scouted with the US Army and earned his nom de guerre by hunting thousands of buffalo for crews building the Kansas Pacific Railroad to Denver. Following Cody’s death, a Denver Post eulogy noted the “passing of the great West.” A day trip to Lookout Mountain Nature Center and Preserve, including Cody’s grave site, near Golden is worthwhile. Mark Twain called one Colorado community he visited “the wickedest city in the west.” In 1889, Butch Cassidy robbed his first bank in Telluride. Billy the Kid is another well-known resident. The state remains steeped in memories of a wild frontier heritage. From the dilapidated mines scattered through state forests to long abandoned ghost towns, Colorado’s sense of adventure still lingers.

Hiking Castlewood Canyon State Park

St. Elmo in Chaffee County Far up a dirt road, deep in the mountain of Chaffee County, lies the ghost of St. Elmo. This weathered ghost town, founded in 1880, lies in the heart of the Sawatch Range, 20 miles southwest of Buena Vista. With creaking wooden sidewalks meandering past splintered false-fronted wooden buildings, St. Elmo is among Colorado’s best-preserved mining towns. At an elevation of 9,961-feet above sea level, the ghost town sits in a quiet wooded valley, now home to hummingbirds and chipmunks. From Buena Vista take US 24 south for eight miles to Nathrop, then CR 162 west for 16 miles.

An ideal all-season hike, enjoy this State Park for its history (the Castlewood Canyon Dam) and other rugged landmark features. The routes offered here are suitable for most hikers who enjoy being out in nature and are good with distance (3.6+ miles) and elevation gain (500 feet). An added bonus: The amphitheater and the Bridge Canyon Overlook gazebo nestled along the edge of the canyon is a much soughtafter spot for weddings and other outdoor events. The area is open from sunrise to sunset and dogs are welcome on leash. Daily fee is $8. Getting there: Take I-25 south to exit 182, following the signs for Hwy. 86 and Franktown. Turn right toward Castle Rock and take a left on Fifth Ave. onto Hwy. 86, following the signs to Franktown. After 6.5 miles turn right on Castlewood Canyon Rd. and go about 2.5 miles to park at the Westside Trailhead.

As our population ages there has been a dramatic increase in the number of “Granny Snatching” cases. Medicine has made great strides in the past few decades that has increased the life span of the general population. However, the increased life span has not been matched by an increase in the ability of medicine to help the increased number of the elderly suffering from dementia or Alzheimer’s disease. Furthermore, with the dispersal of families around the country there has been an increase in the number of children living in a separate state from an aging parent. Too frequently a loving family member may cross a state line, load up the aging person, taking them to a separate state, and then seeking guardianship in the family member’s state in order to assist them. Another scenario also occurs where a family member may cross a state line, load up the aging person, take them to a separate state, and seek guardianship in the family member’s state to gain control of the aging person’s assets (money). This second scenario is frequently referred to as “Granny Snatching.” The problem that arises is “Which state has jurisdiction?” Jurisdiction is the ability to exercise judicial authority, over the aging person and the guardianship. In 2008 Colorado became one of what is now 45 states to adopt the Uniform Adult Guardianship and Protective Proceedings Jurisdiction Act (UAGPPJA). The UAGPPJA clearly defines which state’s courts has the ability to resolve the issues involved. One of the main criteria is what is known as the aging adult’s “home state.” The home state, in general, is the state in which the aging person was physically present, including any period of temporary absence, for at least six consecutive months for the period immediately prior to the guardianship matter is sought. Peach Festival More than 30,000 pounds of peaches are waiting for you at Lafayette’s popular festival.

If you’re a fan of peaches, you can’t miss Lafayette’s famous summer festival completely devoted to the sweet, juicy fruit. The festival is all about peaches brought in from the Western Slope, an area where the fruit thrives. More than 20,000 people from around Colorado and beyond will head to Lafayette this August for the annual Lafayette Peach Festival. Taking place in quaint Old Town Lafayette on the city’s main road (Public Road), the fest is held Saturday, August 18th all day (from 9 a.m. to 4 p.m.). Public road will be closed off as hundreds of booths line the streets for people to browse art, shop for local treasures, and of course, eat peaches.

Tips for Attending the

Leave your furry friends at home. Only service dogs are permitted to any public festival at Lafayette with the city’s new ordinance.

There really isn’t designated parking for the festival or any lots, and parking can be hectic. Parking is only available around the side streets in the Lafayette community, so be sure not to block private drives or park in areas that are designated no parking. There are also 20,000 people walking to get to the fest and lots of kids, so drive carefully around the festival. If you can walk, bike, or use public transportation to get here, do that instead.

•

The fest is completely outdoors so bring plenty of sunscreen and water, and appropriate shoes and clothing should be worn.

•

With 20,000 people, as you can imagine, space could get a little tight. Maneuvering with a stroller could be a little tricky, so if you can do without it, it might be in your favor.

•

Come hungry, and ready to enjoy some tasty peaches!

ore than 30,000 pounds of fresh Palisade peaches are for sale along with plenty of tasty peach treats. This year, the Lafayette Chamber of Commerce estimates that they’ll be serving about 4,500 peach smoothies, 500 peach cobblers, 500 peach pies, and even peach pizza topped with a light cream cheese frosting. Pie, cobbler, and smoothies are all available for sale at Festival Plaza and in front of the Main Stage near Lafayette Florist. The peaches themselves are all certified organic and all natural from Colorado growers – Morton’s Orchard’s, Red Fox Run Orchards, and Tate Orchards all located in Palisade. The peach truck stops are at three locations on Public Road: at Cleveland Street, East Chester, and Kimbark. And if you want in on all that peachy goodness, Pat Vero, Lafayette Chamber’s Director of Events and Marketing says to get there early. “Pies, cobbler, smoothies, and even the peaches can go quickly,” Vero says. All sold while supplies last. Lines could get long, and peach treats can be gone before you know it. In addition to delicious, creative peach-laden items, vendors and food trucks will also sell a variety of other options, including turkey legs, burgers, gyros, pizza (the regular style, in addition to peach), brats, and cheese steaks. Plus, many restaurants along Public street are still open for business. The festival also showcases talented artists from the Front Range and Western States. After you get your fill of snacks, walk it off by browsing the eclectic list of local vendors. Hundreds of booths will be selling jewelry, antiques, bird houses, soaps, candles, clothing, paintings, photography, purses, wood working, pottery, knitting, yard art, and much more. New this year, the children’s activity area (near Lafayette Florist) will be expanded. There will be two areas for children’s activities. There’s free face painting by Face Fiesta and balloon sculpting all day. A bungee jumper, bounce house, and giant slide will also be ready to keep the little ones busy and bouncing with a fee. While there is a cost for peaches, food, and certain children’s activities, the fest is free to attend. This unique festival is truly a local favorite as is evident by the sea of people you’ll find crowding the streets. The famous peach festival, now put on by the Lafayette Chamber of Commerce, actually started out as the Lafayette Arts and Antiques Festival hosted by the local downtown merchants, Vero explains. “Timed to coincide with the peak of the Western Slope peach crop, the event turned into the Lafayette Peach Festival,” Vero adds. Bonfils Bloodmobile will hold a blood drive from 9:30 a.m. to 3:30 p.m. on South Public Road near Kimbark Street. Look for the Bonfils Bus. Caregivers How to Prevent Caregiver Burnout By Family Features

While caring for an older family member – whether it be a spouse, parent or grandparent – can be a rewarding experience, it can also be a difficult and overwhelming task. Whether it’s out of love or obligation, caring for a chronically ill or disabled family member (and potentially his or her financial and legal interests) can come at the expense of the caregiver’s quality of life. In addition to maintaining a healthy, active lifestyle outside of caregiving responsibilities, it is important for those caring for a loved one to learn ways to avoid health hazards and stay wellinformed of any changes in their loved one’s condition. Add work and children to care for to the equation and it’s a formula that can lead to stress, exhaustion and even potential health issues. The additional duties often required to provide care for a loved one can lead to physical or emotional fatigue, often referred to as “caregiver burnout.” If you’re caring for an older adult, the Alzheimer’s Foundation of America recommends these tips to help manage stress before caregiving leads to burnout.

Know the signs of burnout. By the time many caregivers suspect signs of burnout, they’re likely already suffering symptoms related to their responsibilities. Being aware of some of the warning signs can help caregivers properly manage stress and protect themselves. Warning signs include:

Overwhelming fatigue or lack of energy Experiencing sleep issues Significant changes in eating habits or weight Losing interest in activities you once enjoyed Neglecting personal physical and emotional needs Becoming unusually impatient, irritable or argumentative Having anxiety about the future or a feeling of hopelessness Suffering from headaches, stomachaches or other physical ailments Experiencing depression or mood swings Having difficulty coping with everyday tasks Lower resistance to illnesses

Tips for Managing Caregiver Stress Stress can affect anyone and caregivers may find themselves faced with additional stressors. To help manage stress and avoid caregiver burnout, keep these tips from the Alzheimer’s Foundation of America in mind: • • • • • •

Educate yourself about the disease. It’s likely the loved one you care for has several health problems, takes multiple medications and sees multiple health care providers to manage his or her conditions. As a first step in learning more about Alzheimer’s disease and other dementia-related illnesses, visit alzfdn.org or nia.nih.gov/alzheimers for information. Support groups, educational workshops, community resources and professionals can also help increase your understanding of the disease and what to expect so you can be a better-informed and prepared caregiver. Be prepared for important decisions. Take care of financial, legal and long-term care planning issues early on to help reduce stress later. Try to involve the individual in decision-making if he or she is capable, and consider personal wishes regarding future care and end-of-life issues. Build your care skills. Key skills for any caregiver include communication, understanding safety considerations and behaviors, and managing activities of daily living such as bathing, toileting and dressing. Some organizations and local hospitals may even offer classes specific to your loved one’s disease that can aid you in the process. Develop empathy. Try to understand what it is like to be a person living with Alzheimer’s or dementia. Put yourself in the affected person’s shoes while also recognizing your own losses. Manage your expectations of your loved one and remain patient. Ask for help when you need it. Reach out to medical and mental health professionals as well as family and friends. They can assist you when things get tough. In addition, there are typically programs, agencies and organizations in your community that can help manage the challenges of caring for older parents, grandparents, spouses and other older adults. Advocate for and connect with your loved one. Take an active role in the individual’s medical care. Get to know the care team, ask questions, express concerns and discuss treatment options. Also remember to connect on a personal level through kindness, humor and creativity, which are essential parts of caregiving and can help reduce stress. Think positive. Focus on the capabilities and strengths that are still intact and enjoy your relationship with your loved one while you are still together. Getting Help with Caregiving Everyone needs a break from time to time, even caregivers. Look into respite programs for a chance to care for yourself. Types of respite include: Home Care •

Home care is often initiated by a doctor’s order or hospital stay and administered by medical professionals who come into the home and help with personal care and housekeeping functions. Medicare covers some home health services.

Adult Day Programs •

Social-model programs offer stimulation, socialization and therapeutic activities in a community-based group setting and often include meals. Medical-model programs (adult day health care programs), offer health-based services as well as social activities in a group setting. Some programs include assistance with activities of daily living and transportation. Adult day services charge per hour and may be covered under some long-term care insurance policies. Medicaid covers some adult day health programs.

Facility-Based Respite • • •

Provide a short stay for your loved one in a nursing home or another facility. Facilities typically charge for each day your loved one is in their care. Medicare or Medicaid may cover some costs of an inpatient facility.

Family and Friends •

Identify responsible family members and friends who can lend a hand in providing supervision for your loved one and create a rotating care schedule, if possible. Extra light olive oil offers a delicate aroma and subtle flavor that can complement your favorite baked goods. Its high smoke point helps keep those goodies moist, and with strong flavors like chocolate, it also lets the sweetness come through. Additionally, it provides high levels of mono-unsaturated fat (“good” fat) and low levels of saturated fat (“bad” fat), making it a more nutritional choice when compared to butter or margarine. 1/2 cup, plus 2 tablespoons, extra light olive oil, divided, plus additional for coating pan

•

1 cup all-purpose flour

•

1 cup granulated sugar

•

1/4 cup unsweetened cocoa

•

1/2 teaspoon baking powder

•

1/4 teaspoon baking soda

•

1/4 teaspoon table salt

•

1/2 cup half-and-half

•

1 teaspoon pure vanilla extract

•

1 large egg, lightly beaten

•

1/4 cup, plus 1/3 cup, mini dark chocolate chips, divided

•

1 cup canned dulce de leche

•

flaky sea salt (optional)

Position rack in center of oven and heat to 350 F. Lightly coat 9-inch round cake pan with olive oil and line bottom with parchment paper. Lightly coat parchment with olive oil.

2. In large mixing bowl, combine flour, sugar, cocoa, baking powder, baking soda and salt. Stir in half-and-half, 1/2 cup olive oil and vanilla. With electric mixer, beat in egg until well blended. Scrape batter into prepared cake pan and sprinkle top with 1/4 cup mini chips. 3. Bake cake 25-30 minutes, or until toothpick inserted into center comes out clean. Place cake on cooling rack 10 minutes then turn cake out onto rack and let cool completely. 4. In medium saucepan, heat dulce de leche over medium heat, stirring occasionally, until softened. Add remaining olive oil and chocolate chips and stir until chocolate has melted and mixture is smooth. Remove pan from heat. 5. Transfer cake to serving plate. Pour icing over cooled cake, sprinkle with flaky salt, if desired, and serve.
