It’s the question through the ages: What came first, the chicken or the egg? Meet me in a later paragraph, and we’ll solve that mystery. It’s also a similar query with camping. Do you take the hike first or set up your tent and then hike? Which ever style you chose, let’s consider some ideal north central Colorado campgrounds and hiking options. After all, it is summer in Colorful Colorado and we are loving the outdoors. 16

A trip to PAWNEE BUTTES in the northeast corner of Weld County offers visitors up-close views of the Buttes – a predominant geologic feature rising 300 feet above the eastern plains prairie. A 1.5-mile trail leads hikers to the first spectacular Butte, and it’s another .5-miles to the second. Climbing is not recommended anywhere on the Buttes because of the crumbling sandstone. Remember to be mindful to not disturb hawks and falcons nesting in the rocks and be aware of season closures from March 1 to June 30 to protect the nesting raptors. Dispersed camping is allowed on the Pawnee National Grassland year-round. There are about 10 dispersed camping, free of charge spots along CR 685. The area can get windy, so come prepared. Another campsite option is the Crow Valley Recreation Area and campground located 22 miles east of Ault, at Highway 14 and CR 77, adjacent to Briggsdale, CO and is open from April to November. Some sites are first-come, first-served and others can be had via reservation. All sites are wheelchair accessible. Be aware of fire restrictions when in effect. GUANELLA PASS in Clear Creek at 10,900-feet above sea level, offers 18 reservable campsites. The area has bare amenities that only includes trash pick-up and drinking water. The Mt. Bierstadt hike is popular, not just because it’s so close to Denver, but it’s also one of the easier and more accessible of Colorado’s 58 fourteeners (mountains higher than 14,000-feet) to climb. Access the Mt. Bierstadt trail, beginning at an elevation of 11,600-feet, on the south side near the top of Guanella Pass from the Mt. Bierstadt trailhead. The 7-mile out and back route is well marked; you’ll follow signs down to a boardwalk, then to Scott Gomer Creek. After crossing the creek, the rocky footpath will become steep, and the steepness will increase as you make your way to its 14,065-foot summit. Ah, but the views! The trail curves gently through the tundra until you are about three miles in when the green and brown gives way to stones and boulders. Follow the west ridge up to the summit before resting and returning the way you came. Just like other above-treeline routes, be sure to get off the summit before noon or 1 p.m. to avoid Colorado’s predictable summer thunderstorms. To get to Guanella Pass, take I-70 west out of Denver and exit at Georgetown. Follow the signs to Guanella Pass, driving 12-miles to a large trailhead parking area at the top of the Pass. Finally, the SULPHUR RANGER DISTRICT on the west side of the Continental Divide offers some 17 different campgrounds, with a total of about 200 campsites ranging in amenities from horse corrals, picnic areas, showers and electricity and an abundance of appealing and rugged, forested hiking opportunities. One appealing route is a 3.6-mile trek with an elevation gain of some 900-vertical feet accessing the Horseshoe Trail to Frazer Meadow. Pick up a park map before heading into the forest. he popularity of food trucks has accelerated during the past decade as options have evolved beyond the taco trucks and hot dog stands of yesteryear, to gourmet mobile restaurants on wheels today.

Want to hire a food truck for your event this summer? â&#x20AC;˘

Start by sampling food served by trucks operating near you to help you determine what kind of food you want to serve and find potential trucks to hire. This will give you an idea of the quality of food and service you can expect and allow you to meet the truckâ&#x20AC;&#x2122;s owner to learn more about their event options. Many trucks will customize their menu to fit your event. Be aware that custom food options can affect pricing.

â&#x20AC;&#x153;Back when I first started cooking professionally, food trucks were usually little lunch trucks that parked at construction sites,â&#x20AC;? said Chris Rubeck, owner of Ruby Ruâ&#x20AC;&#x2122;s Street Eatery, which serves dishes like Bourbon Chicken, CurryWurst, and Cajun Potatoes. â&#x20AC;&#x153;Since about 2010, there has been an uprising of new food trucks doing really cool and cutting-edge food. I think itâ&#x20AC;&#x2122;s a trend thatâ&#x20AC;&#x2122;s here to stay.â&#x20AC;? The publicâ&#x20AC;&#x2122;s appetite for food trucks is healthy. The industry is in a rapid growth phase across the country and food trucks can often be found at festivals and dedicated food truck â&#x20AC;&#x2DC;rallies.â&#x20AC;&#x2122; Food trucks are also now becoming a popular catering option at events, including weddings, graduation parties, neighborhood social gatherings, corporate events, and even birthday parties. Food trucks may be cheaper than traditional catering, depending on the menu, and offer variety and choice for guests while eliminating the long lines you might find at a banquet-style event.Â

Speaking of costs, there are two basic ways to pay for a food truck at an event. For an event like a wedding or graduation party, the host typically pays the entire cost based either on total food consumed or a set price agreed upon in advance based on the number of guests to be served. Some events, such as neighborhood social functions or school events, lend themselves to a customer-pay model where guests buy their own food. For these types of events, trucks may require a minimum to ensure they donâ&#x20AC;&#x2122;t lose money on their trip if the event doesnâ&#x20AC;&#x2122;t draw the expected attendance or guests donâ&#x20AC;&#x2122;t buy as much food as anticipated.

â&#x20AC;˘

The number of guests you plan to serve at your event can have a big impact on which food truck you eventually hire. Some trucks are large and have several people working in them, which means they can handle a large crowd. Other trucks are smaller and have a limit on how many guests they can serve. Rubeck said his truck can usually serve about 100 people per hour, so for events with more than 250 people, he advises potential clients to consider a larger-capacity truck or to hire a second truck.Â

Typically, food truck owners take care of permitting and licensing in the areas they serve. However, if you plan to have a food truck on private property, ensure that you have permission from the venue or property owner in advance. You will also want to ensure compliance with local statutes if you plan on using a public street, and should also check to see if any kind of temporary permit is required.

Ensure there is a space large enough for the food truck to park and for guests to queue. Food trucks also need power to cool and cook food. In many cases, it is ideal if the truck can plug in to a power supply. If thatâ&#x20AC;&#x2122;s not possible, many trucks have a generator they can use, but they can be noisy and increase costs.
