Talk OF THE Town Thank you for participating in the Talk of the Town, The Broomfielder magazine’s annual readers’ choice guide to the best businesses in Broomfield. We had the highest voting participation ever this year and appreciate everyone who took the time to complete the survey and recognize their favorite establishments.

you did not vote this year and your favorite Broomfield business did not make the list, make sure and keep an eye out for next year’s survey beginning in July. Each year we accept votes and promote the online survey for at least two months, in the magazine and through social media. Our local businesses are the lifeblood of the community. It’s simple economics. Money spent in your community benefits your community, both by supporting the business owners and employees who work in town and through an increased tax base. Recently my two daughters and I enjoyed lunch at a local establishment that we had not tried before. We had a fabulous meal but were quick to notice that we were the only customers during our entire visit. On a Sunday. At noon. They were worried that the business might not make it. We talked about how important local traffic is for a small business like that. Our mission at The Broomfielder is to connect the community with the local businesses and organizations that keep our city healthy and strong. HOME FIRE ESCAPE
Planning and Practice Drills Can Save Lives By Sara Farris
Recently, there was a house fire in Denver where two children were found hiding near firefighters during a second search of the home. While many adults would assume that children would try to escape a fire, the reality is that fire, smoke, and a sounding alarm can be very frightening to children and can paralyze them in place.
N
orth Metro Fire Rescue District just celebrated Fire Prevention Week and focused on teaching kids the importance of getting out of the house when the smoke alarm beeps. According to the National Fire Protection Association, roughly half of home fire deaths result from fires reported between 11:00 p.m. and 7:00 a.m. when most people are asleep. Families only have a matter of minutes, and sometimes seconds, to get out of the house before fire and smoke take over. Although North Metro Fire provides education through school programs and community events, parents can play an even larger role in teaching their children how to get to safety during a fire. Here are some tips to help prepare your family to be ready in case of an emergency:
DEVELOP A FIRE ESCAPE PLAN •
Draw a map of your home showing all the doors and windows.
•
Visit each room and have your children find two ways out.
•
Ensure that all windows and doors can be opened easily.
•
Make sure there are smoke alarms installed in and immediately outside of each sleeping room and on every level of your home.
•
Make sure your smoke alarms are properly working. Smoke alarms should be tested each month, and batteries should be replaced every six months.
•
Pick a meeting place outside in front of your home for everyone to meet at after evacuating the home. If a child is home alone, stress the importance of him/her getting out of the house first and calling 911 from a neighbor’s house.
•
Practice your home fire escape plan at least twice a year.
While it may be unsettling at first, you should try testing your smoke alarm during the middle of the night to see how your children respond. Did they wake up to the beeping sound? Did they run out the door? When you do your fire escape drills, try timing them to see how quickly everyone can get out of the house. Practice putting up barricades that require your family members to find alternate routes out of the house. For younger children, have a play phone outside and have them pretend to call 911 and recite your address. This is important if there is any type of emergency at home, and your child needs to alert the police or fire district. The more planning and practicing you do as a family, the better able you will be able to respond in case of an emergency.

ovember is National Diabetes Awareness Month. In the United States, about 30 million people have diabetes, which is approximately 10% of the population. In addition, another 86 million adults have prediabetes, putting them at increased risk of developing type 2 diabetes, heart disease, and stroke. While it is an ever-growing problem, people with diabetes can take steps to control the disease and prevent complications, and those with prediabetes can prevent or delay the onset of type 2 diabetes by making healthy lifestyle choices. The theme for Diabetes Awareness Month this year is “Eat Well, America.” The idea for this theme reflects a timeless message — that eating well is one of life’s greatest pleasures and enjoying delicious, healthy food plays an important part in helping people with diabetes manage their disease. However, eating well means more than eating healthy. Eating well also means savoring foods that are delicious, nutritious, and simple to prepare. Diabetes is a complex and serious disease and managing it every day can be challenging. To help those with diabetes manage the disease, diabetes educators have developed seven key areas of focus. If you have diabetes and are interested in learning more or you’d like to learn more about preventing its onset, a diabetes educator can help you set priorities and coach you on each of these seven areas: 1. 2. 3. 4.

Thanksgiving Side Dishes

When it comes to a big holiday meal like Thanksgiving, any professional chef will tell you that the key to success is preparing as much in advance as possible. Even in the finest restaurants, many of the meal’s components are prepared before the dinner service begins – chefs call this mise-en-place, from the French “to put in place” – and at meal time the items are simply combined, heated, and finished to order. Utilize this concept when planning and prepping your own big meals and you’ll be amazed at how much easier the entire event will be.
Make-Ahead Turkey Gravy (Adapted from Mark Bittman) Gravy is traditionally made at the last minute, while the turkey is resting, but it can absolutely be made in advance and refrigerated or frozen. Just bring it up to serving temperature gradually and whisk in all the delicious browned bits from the roasting pan. • • • • • • •
1 stick butter ½ cup chopped onion ½ cup flour Salt and pepper 4 to 5 cups rich chicken or turkey stock, warmed Turkey drippings and giblets (optional) Kosher salt and freshly ground pepper
1. Melt butter in a medium saucepan over medium heat; add onions. Cook, stirring occasionally, until onions are translucent, about 5 minutes. Sprinkle flour on onions, stirring constantly, and cook until flour is golden-brown. Adjust heat so mixture does not burn. 2. Gradually whisk in 4 cups stock until mixture thickens and is smooth. If too thick, add additional stock. Cool, cover, and chill. 3. When ready to serve, gently reheat mixture over low heat, stirring frequently. Scrape bottom of turkey pan and add drippings or giblets to gravy. Taste and adjust seasoning, then serve.

Two-Potato Casserole with Sage Butter (Adapted from Martha Stewart) Make the seasoned potato puree in advance, but make the breadcrumbs at the last minute. If oven space is at a premium, this can even be reheated gently in the microwave – but you won’t get that beautifully browned top. • • • • • • •
2 lbs. sweet potatoes, peeled and cut into 1-inch chunks 1 lb. Yukon gold potatoes, peeled and cut into 1-inch chunks 4 oz. (1 stick) plus 1 oz. (2 tbsp.) unsalted butter, melted 2 1/2 tbsp. fresh sage, chopped 1 1/2 cups whole milk, warmed Kosher salt and freshly ground pepper 1 cup fresh breadcrumbs (from 3 slices white bread, crusts removed)
1. Place sweet potatoes and potatoes in large saucepan; cover with water and season generously with salt. Bring to boil; reduce heat and simmer until potatoes are tender, about 10-12 minutes. Drain; pass through ricer or food mill into large bowl. 2. Preheat oven to 375°. Melt 1 stick butter in small saucepan over medium heat, swirling occasionally, until golden brown, 5 to 7 minutes. Remove from heat; add 2 tbsp. sage. Stir butter mixture and warm milk into potatoes. Season with salt and pepper. Transfer to a 2-quart casserole dish. Mixture can be refrigerated, covered, for up to 3 days. 3. Combine breadcrumbs with 2 tbsp. melted butter and 1/2 tbsp. sage. Season with salt and pepper and toss to combine. 4. Top potato mixture with breadcrumbs. Bake, uncovered, until bubbling around edges and breadcrumbs are golden brown, 35 to 45 minutes. If browning too quickly, tent with foil. Before serving, let stand, uncovered, for 10 minutes. If casserole goes directly from refrigerator to oven, baking time may need to be increased by 10-15 minutes.
Cranberry, Orange, and Ginger Relish (Adapted from Joanne Chang) This delicious, fresh-tasting relish can easily be made ahead and will keep refrigerated for at least one week. • • • • • • • •
2 large navel oranges 2 lbs. fresh cranberries 1/2 cup water 2 tbsp. balsamic vinegar 3/4 cup granulated sugar 3/4 cup light brown sugar 1/4 cup minced fresh ginger (or to taste) Kosher salt and freshly ground pepper
1. Using a sharp knife, peel oranges, removing all bitter white pith. Working over a bowl, cut between membranes to release sections. Squeeze juice from membranes into the bowl. Cut orange sections into 1-inch pieces. 1. In large saucepan, combine cranberries and water with 1/4 cup orange juice and bring to a simmer over moderate heat. Cover and cook over moderately low heat, stirring occasionally, until cranberries have popped, about 10 minutes. Add vinegar, both sugars, ginger, and orange pieces and cook over moderate heat, stirring occasionally, until thick, about 5 minutes. Let cool slightly, and then season with salt and pepper. Serve warm or at room temperature.

Broomfield Author Releases Second Novel,
DEVOTION, in Time for Veterans Day
Following the success of his novel A Higher Call, Broomfield resident and author Adam Makos is back with Devotion, an inspirational story of the Navy’s most famous aviator duo, Tom Hudner and Jesse Brown. The two were unlikely friends for the 1950s. Tom was a white New Englander from the country-club scene and Jesse was an African American sharecropper’s son from Mississippi.

On December 4, 1950, during a combat mission in the Korean War, Jesse was shot down in North Korea and pinned in the burning wreckage of his fighter. What Tom did next will be told in this excerpt from Devotion.
The smoke began pouring thicker and the wind carried it back into the cockpit. Jesse looked to be struggling. Tom’s eyes tightened. He watched the nose of Jesse’s plane and dreaded the thought of flames. Lord, don’t let him burn! Tom prayed. The smoke rose from the pasture like a thin arrow pointing to Jesse’s location. Tom’s face sunk. If he could see it, then the Chinese could, too. They were probably already on their way. Tom took a deep breath. There was one last option. The Tom Hudner who’d reported to Fighting 32 in December 1949 would have kept orbiting. From above, he’d have watched Jesse burn and told himself there was nothing he could do. A downed pilot was to be left alone—the skipper had said so. It was his rule and he’d court martial any man who broke it. It was probably the Navy’s rule too, written in some manual. But this was not 1949. Tom lowered his black-rimmed goggles. “I’m going in,” he radioed. Above, the other pilots remained silent. They either didn’t understand what Tom meant or didn’t want to encourage what he was thinking. So they watched. Tom dipped his left wing and swooped down toward the pasture. It was time to break the rules. *** Jesse must have known that a Corsair had come to earth. He must have felt the blast of wind at his back and heard the metallic crunch and the engine’s whine as its propeller blades bent backward. In his rearview mirror, he must have seen the plane, rushing toward him like an angry blue wave in a sea of white—sliding, metal screeching against rock—and he must have seen it stop in a violent lurch and toss a whiteout of powdered snow. When the whiteout had settled, Jesse must have seen the plane sitting in the snow behind his right wing, a dark bird so out of place that it might
have made him cry. Jesse didn’t need to see the number 205 on the nose or the face of the pilot behind the shattered windscreen. He must have known who had come to try and save him. High above, Koenig muttered in admiration: “Of all the guys, it would be Tom.” *** Tom lifted his head from the seatback and released a deep breath. His brow lifted with relief. “My, God, it worked,” he muttered. The windscreen had shattered, the props had folded backwards, but Corsair 205 had held together. He had survived a carrier landing on a mountaintop. Fifty yards ahead and to the left lay Jesse’s plane, still smoking. Tom came to his senses and clawed at the latch on his chest. His shoulder straps released. He tugged his helmet’s radio chords from a panel. Tom cranked open the canopy and frigid air flooded the cockpit. Dang, it’s cold! he thought. The pasture sat so high he could see the Chosin in the distance, through the opening in the valley. Tom lifted his arms to the canopy rails and pushed himself from his seat. A wave of pain shot up his back and he grimaced. Tom sank back down with a groan. He figured he had possibly fractured a vertebrae. Eyes tight with pain, he stood again. This time he swung his leg over the rail, inserted a boot in a toe hold, and lowered himself down to the right wing. Tom slowly slid from the wing and his boots sunk in the snow. It was nearly a foot deep, but the powder was deceptive—the snow was thick beneath. The sun was gone and dark clouds now rose around the peaks as if hungry to swallow the two men and their wrecked planes. Tom took a step and winced, then managed another. Gritting his teeth, he stumbled around the steaming engine and kept going. Frigid wind whipped his tan flight suit and snow stuck to his goggles. Doubled over, Tom hobbled uphill toward Jesse in a race against time.

Museum Brings Veterans’ Stories to Life By Kristen Beckman
A museum, by definition, is a building in which objects of historical or cultural interest are stored and exhibited. The Broomfield Veterans Memorial Museum, however, strives to be more than a collection of objects.
“This is not just a museum of stuff,” said Bob Moulder, a four-year museum volunteer who served as a Navy radioman during the Korean War.
“It’s a museum of people that we are honoring through items we are lucky enough to have.”

hose items, many of which have a connection to Broomfield residents, are a vehicle to tell stories not just about war but about the military’s role in maintaining peace. The museum owns more than 5,000 artifacts, including field and dress uniforms, flight suits, helmets, and weapons. Other items tell more personal stories, including flags retrieved from captured enemy soldiers, photographs, letters written home, and telegraphs with news of missing soldiers. “One of our big challenges with so many elderly veterans is it seems like every weekend someone comes in with a nice collection hoping we can use it,” said Mike Fellows, a retired Army colonel who has volunteered at the museum for more than eight years. “But we don’t have the space or storage to take everything that people bring to us.”

The museum has a substantial collection of World War II memorabilia, contributed in part by the six Broomfield World War II veterans who founded the museum in 2001, and more recent wars also are well represented. The museum would like to fill in gaps, especially in displays covering the country’s earlier wars. “The problem with early items is that most of it is now very valuable and in private collections,” said Moulder. “It’s not likely a veteran of the Spanish-American war is going to walk in. What items the museum is able to display depends on who walks in the door.” When someone would like to donate items, the museum’s part-time curator first views the collection by appointment. Then a committee reviews the items and
Annual Veterans Day Celebration The museum’s annual Veterans Day Celebration will take place at 10:00 a.m., Nov. 11, at the Broomfield High School auditorium. The two-hour program features patriotic music and tributes, as well as a planned speaker from the Air Force Academy. Representatives from the Boy Scouts and the Daughters of the American Revolution will provide additional activities.

determines if they are useful for the museum. Once a collection is accepted, the curator catalogs, photographs, inventories, and preserves each item according to Standards and Excellence Program (StEP) guidelines for museums, said Lew Moir, president of the museum’s executive committee and a retired Air Force colonel. The museum has been working toward transitioning from a veteran’s organization with a collection of memorabilia, to an official museum, a designation it earned last year. As part of the transition, volunteers make a concerted effort to learn the story behind each item and include those stories in its displays. Most exhibits include written accounts or videos of veterans talking about their service and the significance of the displayed artifacts. “If someone comes in with a collection, we try to record the story,” said Fellows. “It’s a way to make a connection between the items and the people they are associated with.” Most of the exhibits are permanent displays, but two exhibits rotate to give visitors different artifacts and themes to view. The newest display is a tribute to women in service. In line with its mission of telling stories, the museum is recording veterans’ stories. More than 100 completed recordings are housed in the museum’s extensive library, and the museum continues to collect new recordings. A Veterans Honor Board near the entrance allows family and friends to honor veterans with their name on a plaque and a picture and biography in a book that visitors can view. The museum is staffed and managed by volunteers and operates on donations and grants. The volunteers hope younger veterans, women, and people with experience in education will join their ranks to help broaden the museum’s appeal.
The museum sponsors and participates in a variety of outreach programs and events throughout the year. Twice a month the museum hosts a speaker during its Coffee and Conversation program. The museum also sponsors Broomfield’s Memorial Day Picnic in May and a flag retirement ceremony on Flag Day in June. In addition, the museum loans artifacts for military exhibits throughout the community, including recent displays at the Molly Brown House in Denver and at the Broomfield Public Library. The museum also is providing exhibits for Veterans Speak, a two-week event in November held at the Dairy Center in Boulder, that incorporates art, exhibits, poetry, and plays.
