1 large yellow onion, diced

1/2 large green bell pepper, diced

1/2 large yellow bell pepper, diced

•

1/2 large red bell pepper, diced

3 stalks celery, sliced or diced

•

2 garlic cloves, minced

•

1-2 jalapeños, seeded and diced

1 pint cherry tomatoes

•

3 tablespoons olive oil, divided

•

1/2 teaspoon salt

•

1/2 teaspoon black pepper

1 link (13.5 ounces) Andouille sausage, sliced

•

1 pound large shrimp, peeled and deveined

•

1 tablespoon Cajun seasoning blend

•

Linguine noodles, cooked according to package directions

1-2 lemons, sliced in thin wedges

2 green onions, sliced

Fresh chopped parsley

DIRECTIONS: 1. Heat oven to 400 F. 2. Line 13-by-18-inch sheet pan with parchment paper. 3. In large bowl, combine onion, bell peppers, celery, garlic, jalapeños, tomatoes, 2 tablespoons olive oil, salt and pepper until evenly combined. Spread out evenly on pan in single layer. Add slices of Andouille sausage. Roast 15-20 minutes, or until vegetables are tender and start to brown. 4. Toss shrimp with Cajun seasoning and prepare linguine noodles. 5. When ready, remove baking sheet from oven. Place shrimp on top of vegetable and sausage mixture in single layer. Top with half the lemon wedges. Return to oven and cook about 5-8 minutes, or until shrimp is no longer pink. 6. Serve over linguine garnished with green onions and parsley with remaining fresh lemon wedges on side.

HOT or NOT: Home Improvement Trends By Kristen Kuchar

For many, a new year represents a fresh and an opportunity for a makeover to different parts of one’s life. So many of us pledge to shed some pounds and get in better shape, update our wardrobe, and make improvements in our lives. Our homes can definitely be a part of this transformation. But where do we even begin? A home remodel can be overwhelming, expensive, and stressful, especially when you’re not sure where to begin. We did some exploring to find out both what are the hottest trends in Colorado right now, and also what is fading fast. We also asked experts to weigh in how to go about finding a contractor and how to navigate through the many options available.

BATHROOMS Overall, bathrooms are getting simplified and streamlined. For bathroom cabinets, Jerry Chadwick, owner of Advantage Services which is a firm that specializes in basement, kitchen, and bathroom remodeling, said he has been seeing customers want an updated white, gray, or neutral wood color. Quartz counters and stone sinks are getting popular, too, he added. “Some designers are going back to brass fixtures, but I am just not on board with that trend yet,” Chadwick said. “Normally we stick to brushed nickel or chrome finishes.” As for the showers, Chadwick likes to install in-wall niches with oversize tiles, bench seats, and then finish up with frameless shower doors or a euro-style frameless door. Randy Shelton, owner of GRC Builders, also noted that curbless showers are back in style. “We did barrier free showers for people with physical restrictions, but now it’s changed quite a bit to where they look really cool, and it’s more of a statement,” Shelton said. With this trend, the glass shower door goes all the way to the floor with the same tiling as on the floor, making the shower almost look invisible. Besides looking modern and aesthetically pleasing, Shelton pointed out this is a nice feature to have in a home as the owner ages, as well. Ultimately, Shelton said

that in most bathrooms, customers want to do away with the tub entirely for a larger shower. He says the trend of a stand-alone tub is fading out, partially due to the high maintenance that goes along with them. Chadwick says they have been doing tiles that look like wood on bathroom floors in various patterns. For Shelton, they are installing an increasing number of heated floors to help keep feet all warm during those chilly Colorado mornings.

KITCHENS Kitchens are the hub of the home for many. Many want an open area that ties in the living room so everyone is connected and can converse, even while cooking. While granite countertops are still popular in kitchens, quartz is quickly gaining steam. “We stay away from concrete countertops,” Chadwick noted. “I just think that trend will not last in the long run, and we are all about resale value.” Shelton agreed with the quartz trend. He attributed this to consumers simply wanting something different than the ever-sopopular granite. Plus, it has a perception of less maintenance. As far as size, Shelton says kitchen islands are getting bigger since more people are eating there instead of at a formal dining room table. White and gray cabinets are very popular now. “All white is not popular. You need to mix it up, or you will date your kitchen,” Chadwick pointed out. Shelton also sees the gray trend, but he noted that it is one with which you need to be careful. Gray can be quite cold and sterile, and Shelton recommended keeping in mind a color scheme that goes well with it. For flooring, Chadwick likes to do a gray wood style tile or 12 by 25 tiles that match the look whatever look the consumer desires. He also said that

sometimes he likes to recommend changing the island cabinets to a contrasting cabinet color and possibly a different counter top style or color just to add visual variety. Chadwick said that a tile backsplash is a hot trend right now, with new patterns and colors, but added that subway tiles are out.

BASEMENTS Extensive lighting with dimmers are a common feature people want to see in their basement, Chadwick said. As far as paint colors, he is seeing bold accent wall colors that also match the customer’s upstairs feel. “We like to install stacked stone accent walls with barn style doors whenever possible with our basement finishes,” Chadwick said. For bars, quartz tops, nice cabinets, and a wet bar sink are the most common upgrades. When dealing with walkout basements, Shelton said he likes to tie in features from the backyard to the basement. To do so, he looks at what types of plants and stones are prevalent in the yard. Also, if there’s certain arching on the deck overhead, he may suggest incorporating that into the basement design.

WHERE TO START Chadwick recommended having a budget in mind. He pointed out that remodeling with highend finishes can really get expensive, but it is worth it in the end. To find inspiration for your remodel, he recommended that homeowners look around the internet, discover what styles are most appealing, and be prepared with photos or ideas when ready to talk to a local contractor. This will help them get you an accurate estimate and also

give them an opportunity to help with specific design ideas. “Designers are also helpful, but we find the costs always go up when a designer is involved,” Chadwick added. Next, find a contractor you trust. Check out reviews online, and check their rating on the Better Business Bureau or other reputable agency. Chadwick recommended that homeowners not be afraid to ask for references, and to consider a local company that specializes in your area of town. Shelton recommended to opt for a builder that does it all. “That way they can help you put all the pieces together, including design, engineering, and product selection,” he said, adding, “Your home is the most expensive thing you’ll ever own, and it’s so complex. It’s important that you choose a contractor that knows how your home is built.”

1/3 cup unsweetened cocoa powder

1-1/2 teaspoons baking powder

•

1/4 teaspoon salt

1/2 cup (1 stick) butter, softened

1. In medium bowl, mix flour, cocoa powder, baking powder and salt; set aside. In large bowl, beat butter and granulated sugar with electric mixer on medium speed until light and fluffy. Add eggs, food color and vanilla extract; mix well. Gradually beat in flour mixture on low speed until well mixed. Refrigerate 4 hours.
