Welcome This year’s Love Christmas in Cornwall magazine is all about putting on the glitz and the glam. From an interview with Cornwall’s biggest chef, Nathan Outlaw, (who recently received his third Michelin star) to five of our favourite luxurious Cornish getaways, we think this year should be all about a spot of indulgence. We’ve asked expert chef and busy mother, Emily Scott of The Harbour Kitchen in Port Isaac, how she makes Christmas work for her, as well as getting top tips on choosing wine for Christmas lunch from binTwo Padstow and Sam’s in the City reveal the secret of whipping up a seasonal cocktail to wow your guests. he start of the festive season in Truro kicks off with the annual City of Lights procession. Over one thousand people and school children from across the county process through the city’s streets carrying giant withy and paper lanterns. Truro also hosts Cornwall’s only open-air ice rink at Christmas. Tucked just behind the cathedral, the rink is in one of the city’s most historic corners and is open every day between 20 November 2013 and 5 January 2014.

Late night shopping in Truro Wed 27 November and Wed 4, 11 and 18 December until 9pm. Truro’s shops, markets, bars and restaurants will be opening later than usual to cater for the annual dash to tick everything off those Christmas lists. Nathan Outlaw

N

athan Outlaw is a name synonymous with seafood, Cornwall and excellence, not to mention Michelin stars. He has two restaurants in Rock, one in Port Isaac and one in London, all offering modern British cookery with a focus on outstanding British seafood.

Nathan has been awarded two Michelin stars for the past four consecutive years at Restaurant Nathan Outlaw, Rock, been placed third in the UK in the Good Food Guide 2014, has just opened a new venture in Port Isaac, Outlaw’s Fish Kitchen, and has just gained a Michelin star for his London restaurant: Outlaw’s at The Capital. What does Christmas mean to you? To me, Christmas means that we’ve come to the end of another busy year. My Cornwall restaurants close from Christmas and through January so it’s time to recharge the batteries and spend some time with my family. None of my staff get time off during the summer so it’s the same for all of us. Where do you normally spend Christmas? At home. I have two young children and they want to be at home to enjoy their presents! My wife’s family all live locally so we usually have some sort of get -together over the Christmas period too. We also travel up to Kent to visit my family there at some point. What makes Christmas in Cornwall so special? It doesn’t matter what the weather is like, it’s still beautiful! A walk along the beach on Boxing Day is fantastic. And it’s warmer than other places in the UK. I also think that there is still a real spirit of Christmas in Cornwall that you don’t get in other places. Now, of course, the Padstow Christmas Festival adds to that, it’s great.

Describe a typical Christmas day with your family? Usually an early start because the children wake up excited and raring to go. A leisurely breakfast then lunch at about 3pm. We try to stretch presents out over the day; stockings on the beds and bigger things as the day goes on. The evening is more relaxed. Sometimes friends might come over otherwise we just crash with a good film and some nibbles! What do you eat / drink for Christmas lunch / breakfast? Breakfast is usually cooked. Scrambled eggs and smoked salmon is a favourite. We usually have a fish Christmas lunch too. All the usual trimmings but fish, turbot if I can get it, instead of turkey. I love Christmas pudding too but it has to be homemade. We aren’t big drinkers but we might open a bottle of Camel Valley or I’m partial to a glass of Sharps’ Doom Bar! Do you have any family traditions you keep up? The stockings, the spread of presents….and the tin of Quality Street being tossed up in the air. There was an advert on TV which did that when I was kid and it’s been done both when I was young and in our house ever since! Do you make time for the Queen’s speech?! Not really. We don’t watch much TV and Christmas Day is no exception. If it came on, I’d probably listen. My workload means that I don’t get much time with my wife and children so I’d really rather spend it with them. I think she’d understand! Are there any Cornish products you particularly value during the festive period? The fantastic fish and veg we have. I realise what an effort the fishermen and the farmers have to put in to get it to me, especially during the winter. That’s why I treat it with respect and value it so much. I’m also very partial to good local cheeses – Davidstow Crackler will definitely be on my cheeseboard along with others that are lesser known such as White Nancy.

Iced Gingerbread Parfait INGREDIENTS 1x 200g Jamaica Ginger Cake 500 ml Milk 6 Egg whites 300g Caster sugar 175 ml Water 500 ml Double Cream 12 Ready to eat Dates 500 ml Orange juice 50g Butter 1 Vanilla pod

FOR THE PARFAIT 1. Crumble 50g of the Ginger cake onto a baking tray and dry until crisp in a oven at Gas mark ½ 1000 2. Crumble the remaining ginger cake into the milk and gently heat stirring until smooth. 3. Set aside and allow to cool. FOR THE ITALIAN MERINGUE BASE 1. Heat the sugar and water together and cook to a temperature of 2300F using a sugar thermometer. 2. When the sugar reaches 2300F whisk the egg whites on a machine to a soft peak stage. 3. When the sugar is at 2480F remove from the heat and slowly pour onto the whisked egg whites (avoiding the whisks), keep the whisks moving at a medium speed whilst adding the sugar syrup. 4. Once the syrup has all been added continue to beat on a slow speed until cool. 5. Whisk the cream to the stiff peak stage and then fold in half the cooled gingerbread mix. 6. Carefully fold the cooled meringue into the cream mix then finally fold in the remaining gingerbread mix. 7. Pour into a loaf tin lined with clingfilm and freeze overnight. FOR THE ORANGE SYRUP Split and scrape the vanilla pod into the orange juice with the butter and boil the orange juice vigorously until reduced by ž .

To serve Slice the gingerbread parfait with a hot knife, serve with the fresh dates and a drizzle of the orange syrup. Sprinkle with a little of the dried Ginger cake to add a crispy texture to the dish.

A home-cooked ham, infused with the flavours of mustard, orange, cloves and bay leaves is another fridge staple at this time of year. With some freshly baked focaccia or sourdough bread you will have everything you need when family and friends stop by at late notice. Tip 3: Enjoy yourself! While we cannot curl up till spring, we can put pears in jars, boil oranges into sticky jam and jellify the hedgerow harvest. Why? From damson pickle to pears in port, caramelised shallots to Drambuie curd, preserving is no longer driven by economics and seasons. And there is no better way of duping the senses on a rainy Sunday afternoon than by simmering a few chopped and skinned apples in an inch or so of water with some cinnamon and citrus peel to bring Christmas into the kitchen. Game Terrine INGREDIENTS 1kg Mixed Game Meat (Any mix of Venison, Pigeon, Duck, Rabbit, Pheasant) Oil or fat, for frying FOR THE FORCEMEAT 500g sausage meat 2 handfuls fresh white breadcrumbs 1 egg 3 tbsp parsley, finely chopped Few sprigs of thyme, leaves removed and chopped 5-6 juniper berries, crushed in pestle and mortar 2 cloves garlic, finely chopped 100g pistachio nuts, crushed Splash of brandy Splash of red wine Salt and pepper

TO LINE THE DISH 300g streaky bacon, flattened with the back of a knife METHOD 1. In a large mixing bowl combine the sausage meat and the breadcrumbs, egg, parsley, thyme, juniper berries and garlic. Then the wine and brandy, season with the salt and pepper and mix everything together thoroughly. 2. Cut the game meat into roughly same-size pieces. 3. In a heavy-based frying pan heat the fat or oil and fry the game pieces for 2 minutes until nicely browned. 4. Line a loaf tin or ceramic terrine dish with the stretched rashers of streaky bacon. Add a layer of forcemeat followed by a layer of game meat, then a layer of forcemeat followed by another layer of game meat, be sure to finish with a layer of the forcemeat. 5. Fold the exposed strips of bacon over the top of the terrine and cover well with kitchen foil or terrine lid. 6. Place the terrine dish in a roasting tin half-filled with hot water. Cook in the oven at 160°C for approximately 1½-2 hours. Test with a skewer to see if it is cooked, if the skewer does not come out of the terrine piping hot then it is not ready. 7. For the best possible texture and easy slicing, your terrine should be pressed as it cools. Find a piece of wood or plastic that fits snugly inside the terrine dish and weigh it down with some tins. Leave the terrine until completely cold for several hours or overnight. 8. To serve the terrine, slice it thickly with a very sharp knife, put on a plate with a small salad of lightly dressed green leaves and fruit chutney. Serve with hot toast.

antomine has become a particularly British form of entertainment throughout Christmas and New Year. Loved (and hated!) for its participatory nature: “He’s behind you!” it was strongly influenced by the continental commedia dell’arte, a form of popular theatre that came from Italy in the 16th century, as well as the tradition of 17th century masques. In Italy, a group of professional artists would travel from region to region, improvising and telling comic stories with a moral, for the public and each story would use the same comic characters. Sound familiar? By the early 1800s, pantomimes were often stories adapted from European fairy tales, classic English literature or nursery rhymes. Nowadays, pantomines have adapted to include topical references, song, dance and cross-dressing but remain essentially the same as they did hundreds of years ago.

The Wonderful Bear Factory

here is a new Santa’s Grotto this year at The Wonderful Bear Factory in St Ives, opening on Saturday 30th November, and every Saturday until Christmas from 12 to 4pm. There is no charge to go and see Santa, “we wanted to make Santa accessible to everyone” said proprietor Roger Clough “so that all children can experience the magic”. Courtesy of The Wonderful Bear Factory, Santa will be giving out small gifts to children; there will be the optional opportunity to make a charitable donation to the Little Harbour Children’s Hospice. Santa will also be at The Wonderful Bear Factory on Christmas Eve from 10am to 2pm, and their dancing Mascot Bear ‘Chuckles’ will be making some special appearances to keep Santa and the people of St Ives amused – Chuckles has recently learnt to dance ‘Gangnam Style’, and is working on some further dances, so keep an eye out for the latest moves!

ue Hendricks, Jennie Ansell and Hannah Pascoe are the Cornish contingent of The Fishwives Choir, the equivalent of The Military Wives for fishermen. Their double-sided single, ‘When The Boat Comes In’ / ‘Eternal Father’, recently hit the iTunes vocal chart number one spot twice, as well as featuring on BBC Radio 2. All profits from sales go to The Fisherman’s Mission, a charity providing emergency care and support to fishermen and their families. The choir was created by Jane Dolby following the tragic loss of her fisherman husband Colin (aged 47) at sea in 2008. Colin died six weeks before Christmas and for the weeks, months and years after his death, The Fishermen’s Mission helped to support the family. With a background in music, Jane established the choir to raise funds in order to repay the charity’s kindness. Through Facebook and Twitter, she got in touch with women all over the country, including Sue and Jennie from Perranporth and Hannah from Newlyn. All the women are in some way linked to the industry and many have lost husbands, brothers, fathers and sons at sea. With training from vocal coach Carrie Grant (known for Fame Academy and Pop Idol), the choir spent five intense days rehearsing and recording with members of the Military Wives’ production team. Sue Hendricks describes the experience: “Carrie got us singing so emotionally together that we all burst into tears; all the emotion came out through the music. We’d love to get together and do it again.”

adstow has been a point of reference on the Cornish food map ever since Rick Stein’s first business venture failed. What was originally a nightclub became The Seafood Restaurant in the mid-70s and was the first step towards making the town synonymous with top-quality food, particularly seafood and fish. Where better then to mark the beginning of the most indulgent time of year than the Padstow Christmas Festival? From the 5 – 8 December the town attracts the crème – de-lacrème of the restaurant and cheffing world, featuring the likes of local heavyweights Paul Ainsworth, Nathan Outlaw, Rick Stein and son Jack Stein. The festival’s prestige also attracts some of the best chefs in the country and this year features Angela Hartnett from Murano in London, Michael Caines from Gidleigh Park in Devon, Tom Kerridge from The Hand & Flowers in Marlow and Sat Bains from Restaurant Sat Bains in Nottingham.

With a record 30,000 visitors attending the event last year, the festival organisers have added an extra day and an extra chef demo tent to this year’s line-up. Expect to hear top culinary tips from the professionals, meaty debates about some serious food issues, a spot of shopping at the Christmas market and get into the festive spirit with events such as the lantern parade or Santa’s grotto. The specialist shellfish tent also offers visitors the opportunity to tuck into what Cornwall does best: superfresh fish, lobster and crab, all sourced in local waters.

inter is a great time of year for an abundance of gorgeous berries, rosehips, twigs and seed heads to choose from and it is surprising how much you can find in the garden suitable for using in a wreath. Using reel wire, attach a generous ring of moss to the frame; add branches of larch on top, all going in the same direction. After tying the wire off firmly with pliers, add the other ingredients, layering them up and securing stems into the moss or under the wires, again following a similar direction. Attach the ribbon to the frame and mist the wreath with a water spray to keep it as fresh as possible. Mist the wreath regularly for longevity. Having a variety of lovely ingredients to choose from is the best start to making a Christmas wreath, even if you just select a few of them to use in the end. I think the looser and softer the style, the less need to worry exactly where you place things, just go for it! harity is as much a part of Christmas as mince pies and mulled wine. Just as Dickens’ Ghost of Christmas Present would have approved of the new charitable concept of donating a ‘suspended coffee’ (drinking one coffee and paying for two as a donation to someone less fortunate), so the spirits that visit Scrooge would have endorsed StreetSmart. StreetSmart is a national campaign established in1998 which has raised over £6.3 million for the homeless across the UK. Selected restaurants around Cornwall add a voluntary £1 donation to customer bills during November and December and this goes directly to three local charities. In 2013 every pound donated will go to St Petroc’s Society, the Cornwall Women’s Refuge Trust and the Cornish branches of Foodbank. Love Christmas in Cornwall 2013 | 79
