For this project, I wanted to be as realistic as possible and got the opportunity to exchange with my “client”. Naoto Hirose is a Japanese baker that has settled in Alsace, France, to share his love for French bakery and his own cultural heritage. Maison Hirose was founded in 2015 and is now well known accross the region - Hirose even makes bread and bakeries for the most prestigious Alsatian hotel and restaurant L’Auberge de l’Ill. By implementing traditional Japanese architecture into Western brickwork, I will make sure my client can feel at home whilst being at work. My scheme thus focuses on the dichotomy between work and life, but also on the way they can belong together. The chimney on the East elevation from the bakery lab oven mirrors the chimney on the West elevation from the living room fireplace, linking professional and personal life in a subtle way. The angled roof also means one has to go around the house to notice there is another chimney on the other side. The double-heigt living room gives the residence part of the scheme a sense of calm and space compared to the single-height bakery lab and shop on the other side of a courtyard. The courtyard is a medium to bring clients, employees and the family together; each specific area as a view on the sakura (cherry blossom) tree proudly growing there. Brickwork is also used as sitting areas in the groung floor corridor, in the living room and in the courtyard external walls. The essence of the scheme really is to bring French and Japanese cultures together and to bring the people closer together as well in the process.

THE BRIEF

Naoto Hirose has three children aged 9 years, 7 years and 10 months old and his wife Maki does not work traditional in Japanese families.
THE CLIENT
The ethical bakery focuses on local, organic and seasonal ingredients and embraces the precious links between the French and the Japanese cultures.
The current lab is 860m2 but only 16 out of 35 members of the Hirose team work there. Their growing popularity means the Maison Hirose now has numbers of bakeries across Alsace. Due to the area limitations from the brief, however, we will focus on a smaller “maison” and with a smaller team.

WALLS AND CHIMNEYS PETERSEN TEGL D38 BRICKS
White mortar will be used for the main external walls while darker mortar will help emphasise the chimneys of both the bakery oven and the residential fireplace, making them stand out both inside and outside the house.

FLOORING
ROOF
Tiles flooring will be necessary for the workspace; it makes cleaning and circulation of bread trolley easier. This will also allow a discreet separation from residential areas where tatami will cover the floor for maximum comfort and cultural habits.
Black clay pentiles can be used with the 9°angled roof in the scheme. Although it will not be visible due to the use of a parapet, it will make waterflow smoother whilst attracting sunlight in a climate like the one in Bath, UK.

SIERRA FRIA HOUSE, 2019 ESRAWE
The courtyard in my scheme was widely inspired by this scheme, which presents a courtyard at the heart of it. It can be seen from all rooms in the ground floor and some upper floor windows also offer a view on it. It is what links the different spaces in the house - exploring this medium, I have linked bakers, customers and the Hirose family together.
HOUSE V, 2010 RE-ST ARCHITECTEN
The angled roof draws our eyes towards a specific room, giving it importance in the scheme. I have explored such features to give the residential part of my scheme more space and presence, especially by offering the living room a double-height volume. The chimney sticking out of the roof will also provide information about the plans, even when looking at the scheme from outside.
PRECEDENTS
MARSH VIEW NORFOLK, 2007 LYNCH ARCHITECTS
An interesting scheme pushing forward the qualities of brick chimneys. The fireplace in the corner extends up through the roof, making it visible both inside and outside the house. I explored the idea in my scheme so that one could similarily know where the bakery (oven) is.

Genkans are very important rooms in Japanese traditional houses as they are the first impression one gets while visiting someone. The floor is elevated, so to show the transition between the outside and the inside world, and people take off their shoes there before getting inside. They are usually fairly wide and empty, with simple designs, to create a serene atmosphere and the feeling of being warmly welcomed. As the Hiroses have a strong Japanese heritage, I thought this room could not be missed.
THE JAPANESE GENKAN

Fireplaces are just ideal to embrace our material - brick. Its thermal mass makes it perfect to store heat and release it for longer than other materials once the air has cooled down. Besides, bakers also traditionally used ovens with similar systems so expressing this background history through a chimney could be interesting. I would like the chimneys to stand out and be visible from the first floor as well, sticking out of the roof. That way, even from the outside, one would know where the chimneys are.
