CATSKILL CUISINE GETS CREATIVE Woodnotes Grille at the Emerson Resort & Spa Driving up to Mount Tremper from Kingston along the scenic byway of Route 28, you notice subtle changes the deeper you get into Catskill Park: meandering creeks, stretches of farmland, majestic peaks and the scent of the pines. These influences are captured in the cooking and hospitality at Woodnotes Grille, the restaurant of the Emerson Resort & Spa, a hidden treasure just two hours north of Manhattan. Woodnotes Grille’s dining room is a blend of classic and contemporary, with a large fireplace as its centerpiece, an inviting bar and comfortable seating with a view of the Esopus Creek. The lodge-like feel of the dining area and expansive windows showcase the natural splendor of the magical surroundings. And there’s plenty of room on the creekside deck for meals and drinks in the warmer months. Breakfast is served from 7:30 a.m.-11:30 a.m. every day, featuring a bevy of locally sourced ingredients. Want a classic? Try the Eggs Benedict with Country Ham ($11) served with Catskills favorite RSK Farm potatoes. Feeling serious hunger pangs in the morning? Chicken and Waffles ($14)—sweet potato waffles with organic buttermilk-fried boneless chicken thighs and maplebourbon butter—could be your ticket. If you tend toward the sweet side, Cinnamon Challah French Toast Sticks ($9), served with Catskill Mountain Maple Syrup, is dessert for breakfast with a side of local bounty. Lunch, served daily from 11:30 a.m.-2 p.m., is a collection of gastropub classics like Caesar Salad ($10), 4

Reuben Sandwich ($10) and a Fried Chicken Sandwich ($12). A contemporary treat is the Avocado Toast topped with cucumbers, radishes and sunflower seeds. Dinner, the star of chef Greg Gagne’s show at Woodnote’s Grille, is served nightly from 5-9 p.m. (5-8 p.m. on Sundays, with a two-course family meal for $22). A good beginning is a cocktail—Woodnotes’ drinks program puts innovative spins on the classics like a Rum Old Fashioned ($12) made with Ron Zacapa 23 rum, Demerara sugar, Angostura bitters and orange. Once you’re settled in, try the Smoked Gouda Fondue ($14), a molten skillet of cheese served with grilled baguette slices and baby carrots. Other inspired starters include Blistered Green Beans ($12), Fried Calamari ($12) and Roasted Baby Beets with Ricotta Salata ($10). For entrees, it doesn’t get more local than Beaverkill Trout ($30)—served with white bean stew—from the stream just a few miles up the road. For vegetarians, Spring Pea Risotto Croquettes ($18), served with grilled vegetables and carrot marinara, are a savory option. Taste the flavors of the Catskills at Woodnotes Grille. This street fest celebrates that history with blueberry goodies, crafts and fun. SOCIALLY CONSCIOUS CUISINE Aroma Thyme Bistro When Marcus and Jamie Giuliano opened their farm-to-table restaurant in Ellenville in 2003, it was on a wing and a prayer. They were both raised in the village and chose it as the home for Aroma Thyme due to what Marcus affectionately refers to as “naive local pride.” With a population just over 4,000 and a struggling economy, it was certainly not the most intuitive locale for their “socially conscious cuisine,” with its refined approach and premium price tag. But the fact that Aroma Thyme has endured for 15 years, becoming a destination for clean, ethical cuisine, is a testament to the integrity of the Giulianos’ project. After working in kitchens across the country and training under experts such as Michelin-starred Pierre Koffman, Marcus struggled with the disconnect between fine dining and not-so-fine sourcing. “When my wife and I would go out, we’d eat vegetarian because we didn’t trust where the food came from, especially the meat.”

They decided to open a restaurant at the foot of the Shawangunk Ridge with the mission of “uniting carnivores and vegetarians with one green, globally inspired menu.” Marcus sources the vast majority of his ingredients from 45 regional farms, and takes great care in finding non-local products from sustainable sources. Dishes like the organic sweet potato and yellow curry soup and the nitrate-free humane-raised bacon cheeseburger showcase local bounty, while mains like the wild Alaskan coho salmon offer a far-away delicacy. “This is a passion of ours personally,” Marcus says. “We didn’t want to make money off of something we had a problem with.” Behind the bar, Aroma Thyme prioritizes independent producers, from local brewers to small Spanish wineries.
