Key Lime Bars MAKES 12 SERVINGS

Lively Leos know how to party. Keep the crowd roaring with a late-night sweet treat like these Key Lime Bars. Leo cannot pass up the distinctive taste of key lime—exquisitely fluffy and irresistibly tangy, especially in dessert form. The graham cracker crust takes this treat to the next level, adding necessary elements of texture and salt. It’s basically a bite-sized Margarita, Leo, so put on your favorite Hawaiian shirt (or dress) and serve up these tasty squares with gusto! Another thing you’ll appreciate? These beautiful green bites will be as eye-catching as you are, fashionable Leo!

2 cups graham cracker crumbs 1⁄4 cup unsalted butter, melted and cooled slightly 4 large eggs, at room temperature 13⁄4 cups granulated sugar 3⁄4 cup freshly squeezed key lime juice 3⁄4 cup all-purpose flour 2 tablespoons key lime zest, divided 5 key limes, sliced into thin slices

1. Preheat oven to 350°F. 2. In a small bowl, mix together graham cracker crumbs and butter with a fork. Press into the bottom of an 8×8-inch baking pan. Bake 5 minutes. Set aside. 3. Meanwhile, in a medium bowl, whisk together eggs, sugar, key lime juice, flour and 11⁄2 tablespoons zest. Pour over the graham cracker crust. 4. Return pan to oven and bake 35 minutes or until the bars are fully set. Cool completely before slicing. Sprinkle with remaining lime zest and top each with a lime slice and serve. 

Marinades are the best way to flavor grilled meats and fish, and they do much more, serving as sauces and salad dressings. But did you know they can also buffer against the harsh and dry heat of the grill, serve as a garnish, and even work as a preservative? Here are some guidelines for using marinades as well as a couple of my favorite marinade recipes to try.
