1 Have a Taste of Korean Culture: Kimchi
R
ecently, traces of Korean culture can be found everywhere. From Korean cuisine and TV drama to contemporary pop music, people in Taiwan are experiencing a rather different East Asian culture. While we enjoy the tasty Korean food, however, we do not really know about the origins of kimchi–a traditional Korean side dish. The main ingredients of kimchi are vegetables and seasonings. In fact, there are hundreds of varieties of kimchi. Each family uses a different recipe, as kimchi is a dish passed down for generations from mother to daughter. It can be made in all seasons, but the best time to make it is in the autumn. The most common kind of kimchi that can be found in Taiwan is made from the Napa cabbage. The process of making kimchi is not complex, but it is time-consuming. In fall, kimchi is made by stuffing spices between layers of salted, uncut Napa cabbages. The way traditional kimchi is made depends on the different vegetables in season. Modernday kimchi, however, can be made at any time of the year because now people have refrigerators. We may at first be fooled by the fiery taste of kimchi. But this side dish is actually very healthy because the vegetables used to make it contain a high percentage of fiber, which of course is good for our digestion. At the same time, kimchi is low in calories and fat. It is even ranked among the top five “World’s Healthiest Foods” because, in addition to aiding digestion, it is rich in vitamins and may reduce the growth of cancer cells. Although we can buy any variety of kimchi at any time of the year, when it comes to eating it, Korean families tend to have traditional seasonal preferences. To us, kimchi may be a side dish to enjoy with Korean BBQ, but for Koreans it is a dish that brings the family close together, a tradition which will continue for years to come.

The Statue of Liberty

hat first comes to your mind when you hear the words “New York”? Perhaps you may see an image of an enormous woman holding a torch high up in the air. This figure, the Statue of Liberty, can be seen in almost everything that has to do with New York. It has appeared on television and in movies, posters, paintings, and even video games. Where did this statue come from and why was it built? The Statue of Liberty is located on Liberty Island at the entrance to New York Harbor. It was a gift from the people of France to the people of the United States, presented as a sign of friendship between the two countries. It is also one of the largest statues ever built. Upon completion, it was taken apart and packed into 214 wooden crates. The crates arrived by ship in the United States on June 17th, 1885, and the statue then had to be reassembled. On October 28th, 1886, the Statue of Liberty was dedicated with an official ceremony to commemorate the alliance between France and America. All those who visit New York Harbor can easily see this magnificent statue of a tall woman in a long gown holding a torch over her head and a book in her hand. The woman is Libertas, the Roman goddess of freedom. The book in her hand is a tablet of laws, on which is inscribed the American Declaration of Independence. With a broken chain at her feet, this lady is truly a sight to behold. Ever since the statue was placed on Liberty Island, over twelve million immigrants from countries such as Ireland, Germany, and Italy have been greeted by this symbol of freedom. After a long trip across the Atlantic Ocean, immigrants would stand along the railings of their ships to admire “Lady Liberty.” Today, people who visit New York can take a ferry ride to Liberty Island and tour the Statue of Liberty.

Elephants Can Tell

They can use their sense of vision and smell to tell the difference between people who pose a threat and those who do not. In Kenya, researchers found that elephants react differently to clothing worn by men of the Maasai and Kamba ethnic groups. Young Maasai men spear animals and thus pose a threat to elephants; Kamba men are mainly farmers and are not a danger to elephants. In an experiment conducted by animal scientists, elephants were first presented with clean clothing or clothing that had been worn for five days by either a Maasai or a Kamba man. When the elephants detected the smell of clothing worn by a Maasai man, they moved away from the smell faster and took longer to relax than when they detected the smells of either clothing worn by Kamba men or clothing that had not been worn at all. Garment color also plays a role, though in a different way. In the same study, when the elephants saw red clothing not worn before, they reacted angrily, as red is typically worn by Maasai men. Rather than running away as they did with the smell, the elephants acted aggressively toward the red clothing. The researchers believe that the elephants’ emotional reactions are due to their different interpretations of the smells and the sights. Smelling a potential danger means that a threat is nearby and the best thing to do is run away and hide. Seeing a potential threat without its smell means that risk is low. Therefore, instead of showing fear and running away, the elephants express their anger and become aggressive.

The Scottish Kilt

It is a tailored garment that is wrapped around the wearer’s body at the waist starting from one side, around the front and back and across the front again to the opposite side. The overlapping layers in front are called “aprons.” Usually, the kilt covers the body from the waist down to just above the knees. A properly made kilt should not be so loose that the wearer can easily twist the kilt around the body, nor should it be so tight that it causes bulging of the fabric where it is buckled. Underwear may be worn as one prefers. One of the most distinctive features of the kilt is the pattern of squares, or sett, it exhibits. The association of particular patterns with individual families can be traced back hundreds of years. Then in the Victorian era (19th century), weaving companies began to systematically record and formalize the system of setts for commercial purposes. Today there are also setts for States and Provinces, schools and universities, and general patterns that anybody can wear. The kilt can be worn with accessories. On the front apron, there is often a kilt pin, topped with a small decorative family symbol. A small knife can be worn with the kilt too. It typically comes in a very wide variety, from fairly plain to quite elaborate silverand jewel-ornamented designs. The kilt can also be worn with a sporran, which is the Gaelic word for pouch or purse.
