Recent studies of the U.S. Department of Agriculture’s nutritional data from 1950 to 1999 found significant declines in the nutritional values of fruits and vegetables in just four decades. Scientists studying this phenomenon believe the decrease is due to modern agricultural practices emphasizing bigger and faster yields grown in nutrientdepleted soil.

Chef Jake White, owner and executive chef of Charleston Chef Service, believes the solution is returning to locally sourced foods grown in traditional ways. Through Chef White’s Farmentation Series, diners can experience private farm-to-table dishes made from local ingredients paired with his expertly crafted ferments. We caught up with Chef White to learn more about his background and his passion for good food and nutrition.

Q: When did you know you loved to cook?

A: I’m from a big New Jersey Italian family. Food was part of every family gathering and everything we did. It’s always been part of my life.

Q: What are your culinary influences?

A: My family roots and chefs like David Chang and René Redzepi who harness the natural probiotics and prebiotics from ingredients.

Q: What’s the Farmentation Series?

A: The Farmentation Series are private dinners that pair locally sourced ingredients with hand-crafted ferments. It’s a movement toward more sustainable and healthconscious eating.

Q: Why are fermented foods important?

A: Our guts are very much like a garden. If you’re planting flowers, they need nutrients to grow and be healthy. Prebiotics feed the flowers, probiotics are the flowers, and postbiotics are like the seeds you harvest when the flower wilts. They stick around and benefit your body. In other words, you need prebiotics to feed probiotics, which feed postbiotics. In the long term, you’ll see increased energy and focus, better moods, and more patience. A holistic lifestyle is easier to achieve than most people think. In Charleston, we have all these amazing farms right in our backyard. When we buy their produce, we feed the farmers, and the farmers feed us.

Q: What does Charleston Chef Service do?

A: We’re a private home chef service. We travel from Kiawah to North Berkeley County. We create unique, nutritious dinners and experiences for people in their homes. We use local ingredients that are in season, either from local producers or sometimes from my garden.

Q: What are the benefits of hiring a private chef?

A: The classic restaurant experience is kind of played out. People want something new, different, and more relaxed where they don’t have to rush. And, if you have more than six people in your party, a lot of restaurants don’t even want to deal with that. When you hire a private chef, you’re getting an education, connecting with your community, and an experience. Whether we’re serving local honey or beef, you’ll learn about the farmer who lives down the road. We tailor the experience to your tastes; we can provide as much or as little information as you want.
