Let us take care of you this Ramadan Supplement your home cooking with a selection of freshly prepared foods from our deli and bakery sections Spicy Lamb Koftas Serves 6 Prepare 10 minutes, plus soaking the skewers Cook 8 minutes Makes 5-6 koftas
• 1 tsp ground chilli • 1 tsp ground cumin • 2 tbsp olive oil • Hummus, tabbouleh and flatbreads, to serve
• 500g minced lamb • 1 tbsp thyme leaves • Zest of 1 lemon • 1 garlic clove, minced
1 Place 6 wooden skewers in a bowl of water to soak for 30 minutes. 2 Put the minced lamb, thyme, lemon zest,
garlic, chilli and cumin in a large bowl. Using your hands, bring the mixture together until everything is combined. 3 Take 1 tablespoon of mixture and shape around a skewer (they should be about 10cm) in length, repeating until all 6 skewers are filled. 4 Heat a griddle plan until
almost smoking, rub the koftas with olive oil and cook for 3-4 minutes on each side, or until griddle marks appear and the koftas are cooked through. 5 Remove from the pan and pull out the skewers. 6 Serve with hummus, tabbouleh and flatbreads.

Easy to make Energy Balls Serves 4 Prepare 10 minutes • 1/2 cup whole unsalted cashew nuts • 20 pitted Medjool dates • 1 1/2 table spoons of coconut oil • 1 table spoon of cacao powder • Pinch of sea salt (optional) Using a food processor, blitz the cashew nuts and then add the dates, cacao powder, coconut oil and pulse for another 30 seconds. Roll the paste into bite size balls (kids will love helping do this!) and place on a tray. Pop into the fridge for 1 hour to set and enjoy!

handful fresh basil vleaves 1 tsp chili flakes 1 Put the lobster in the freezer for at least 20 minutes to put it to sleep 2 Bring a large pan of water (big enough to fit the lobster) to a rolling boil. Place the lobster in the water, cover with a lid and cook for 15-20 minutes, until the lobster is bright red. Transfer the lobster to
a large bowl of iced water until cool enough to handle. 3 Meanwhile, place a large frying pan over a medium heat and add the olive oil. Add the onion and fry for about 5 minutes, until soft and translucent. Stir through the garlic and tip in the chopped tomatoes. Simmer gently for 5 minutes, then keep warm while you prepare the lobster. 4 Using crab crackers or a wooden spoon,
remove the shell from the lobster. Pick through the meat and discard any pieces of shell. Keep the lobster tail whole if possible. 5 Add the tagliatelle to the tomato sauce and stir in the picked lobster meat. Divide between the serving plates. Slice the lobster tail and place on top of the pasta, then finish with the feta, basil leaves and chilli flakes.

A FRESH APPROACH
Tender ready-cooked prawns are matched with crunchy fresh vegetables, fragrant papaya and a zingy chilli and lime dressing in this healthy, easy-to-prepare salad
Serves 2 Prepare 10 minutes
Prawn and Papaya Salad with Chilli-Soy Dressing
For the dressing: • 1 red chilli, deseeded and finely chopped juice of 1 lime • 1 tbsp honey • 2 tbsp olive oil • 1 tbsp soy sauce
For the salad: • 2 spring onions • 1 local cucumber • ½ papaya, peeled • 200g vermicelli noodles, cooked according to pack 200g cooked prawns, peeled • 2 tbsp sesame seeds, • toasted • 1 In a small bowl whisk together the dressing.
1 Season and set aside. 2 Cook the noodles according to pack instructions, then leave to cool to room temperature. 3 Rinse the spring onions thoroughly, peel away the outer layer and cut into 15cm batons. 4 Use a peeler to slice the cucumber and papaya into thin ribbons. Put the cucumber in a bowl of iced water to crisp up.
5 Put the spring onion, cucumber and papaya into a large bowl, add the vermicelli noodles, prawns and half the dressing and mix well. 6 Divide between serving bowls, spoon over the remaining dressing and finish with the sesame seeds.
