Using a meat thermometer, always make sure that the thickest part of the breast and inner thigh reaches 165°F/ 70-75°C. Once you’ve roasted the turkey, tent the bird with silver foil and allow it to rest for up to 20 minutes – this will help lock in all those delicious juices.

A Cut Above

Carrefour’s prime meat is perfect for creating a beautiful lunch or dinner centerpiece during the festive season.

HOW TO: 1 W arm a drizzle of olive oil in a large pan on high heat, then sear the fillet on all sides until well browned and season generously with salt and pepper.

2 R emove the meat from the pan and allow to cool, then brush all sides of the fillet with mustard and set aside.

3 P urée the mushrooms in a food processor. Transfer the purée to a pan on medium heat and cook to release moisture, then remove from the pan and let cool.

4 Arrange the thin beef bacon slices on a large piece of plastic wrap so that they overlap and spread the mushroom mixture over the slices. Next, place the beef fillet in the middle and roll the mushroom and beef bacon slices over it, using the plastic wrap to ensure it’s tight. Wrap the beef fillet into a firm barrel shape, then twist the ends of the plastic wrap to ensure it’s secure.

Refrigerate for 20 minutes and preheat your oven to 200°C. 5 On a lightly floured surface, roll out the puff pastry to a size big enough to coat the fillet. Unwrap the fillet from the plastic wrap and place in the middle of the pastry, then brush the edges of the pastry with the egg yolk.

6 C arefully wrap the pastry around the fillet and cut off any extra at the ends.

Transfer to a plate (folded seam side down) and brush the egg yolk over the top and sides, then refrigerate for 10 minutes.

7 P ut the pastry-covered fillet in a baking pan and brush with more egg yolk before lightly slicing the top with a sharp knife and sprinkling with a pinch of coarse salt.

8 Bake in the oven at 200°C for 30 to 35 minutes until the pastry is a rich golden colour. Remove from the oven and let your Beef Wellington rest for 10 minutes before cutting into 1-inch thick slices.

Originally created to celebrate Britain’s Duke of Wellington in the 1800s, Beef Wellington is now a very popular dish throughout the west and beyond.

INGREDIENTS (Serves 4) • ½kg New Zealand Beef Tenderloin Fillet • 8 thin slices of Beef Bacon • 200gm Carrefour Pâte Feuilletée Puff Pastry (remember to defrost) • 2 Carrefour Bio Medium Eggs, yolks only, beaten • 2 tablespoons Maille L’Originale Fine Dijon Mustard • ½kg Organic Shiitaki Mushrooms, chopped • Esti Greek Organic Extra Virgin Olive Oil • Salt and pepper

LAMB GHOUZI Popular among Arab families at the New Year, Lamb Ghouzi can also be served at celebrations and holidays throughout the year.

INGREDIENTS (Serves 5 – 7) For the Ghouzi: • 2kg Boneless Australian Lamb Shoulder • Rind of 2 lemons cut in pieces • 7 baby potatoes • 3 – 4 pods of garlic • 6 – 7 small onions • 5 cinnamon sticks (1 inch) • 5 cloves • 6 small carrots • 1.5 ltr hot water For the rice: • 1kg Basmati rice • 50ml oil • Water • Pinch of salt • Pinch of saffron

For the garnish: • 3 clementines sliced • Handful of Rocca leaves • Handful of roasted almonds •Pinch of saffron For lamb marinade: • 3 tablespoons Carrefour Natural Yogurt • 3 tablespoons Bayara Cumin Powder • 3 tablespoons Bayara Ginger Powder • 3 tablespoons Bayara Turmeric Powder • 3 tablespoons Bayara Coriander Powder • 1 tablespoon black pepper • 1 tablespoon salt • 1½ tablespoons Soya Sauce • 1 teaspoon cardamom • Pinch of saffron • 1 garlic clove, grated • 1 medium onion, grated • Pulp of 1 lemon, finely chopped • Olive oil as required • 3 tablespoons water

HOW TO: 1 Wash the lamb and make small incisions on it. Marinade with yogurt and keep in the fridge for 1 hour.

2 Mix all the marinade ingredients in a bowl and apply evenly to the lamb. Keep overnight in the fridge.

3 On a deep baking tray, add all the Ghouzy ingredients (except the water) and place the marinated lamb on top of it. Pour in the water and cover the lamb with wax paper and silver foil.

4 Cook for 5 – 6 hours at 140°C. 5 Meanwhile, prepare the rice. In a vessel stir the rice with the oil and add hot water, salt and saffron. Cook at 140°C until the rice is ready (15 – 20 minutes).

6 Once the Ghouzy is ready, remove the wax paper and foil and grill the meat using the top oven flame to give it a brownish look.

7 Place the rice on a serving dish, add the lamb on the top, garnish and serve.

Meat-Free Dishes Made For Sharing Two veggie-friendly recipes to try over the festive season.

FRUIT AND NUT FALAFELS

DID YOU KNOW?

You can make these falafel nibbles ahead of time and chill for up to three days before frying and serving.

INGREDIENTS (Makes 20, serves 6) • 1 fresh sweet potato, peeled and cut into large chunks • 1 can of Carrefour Chickpeas (400gm), drained • 200gm Castanea Organic Peeled Roasted Chestnuts • 1 Carrefour Bio Medium Egg • ½ teaspoon Carrefour Crushed Chilli • 2 teaspoons Bayara Whole Cumin Seeds • 1 fresh garlic clove • 85gm fresh cranberries, roughly halved • Small handful of fresh coriander, chopped • 4 tablespoons Carrefour Sunflower Oil

HOW TO: 1 P lace the sweet potato in a microwave-safe bowl with 1 teaspoon of water and cook on high for 2 minutes, then mash together.

2 P lace the chickpeas and chestnuts into a food processor or blender and pulse until chopped. Pour on top of the sweet potato and add the egg, spices, garlic and coriander.

3 N ext, season with salt and pepper, mix well by hand and then add in the cranberries before shaping into bite-sized patties – there should be around 20.

4 Cook in two batches. Heat 2 tablespoons of oil in a large pan and fry the falafel patties for 2 to 3 minutes on each side until golden brown, then place onto kitchen paper. Allow to cool for a few minutes before serving with a pot of creamy Harissa Sauce.

Serve with:

HOMEMADE HARISSA YOGHURT SAUCE INGREDIENTS: • 200gm Kolios Authentic Greek Yogurt • 3 to 4 tablespoons Le Phare Du Cap Bon Harissa Paste • Small handful of fresh mint, finely chopped • Small handful of fresh coriander, finely chopped • Fresh lemon wedge

HOW TO: Simply swirl the yogurt with the mint and coriander and season to taste. Mix in the harissa paste and a squeeze of fresh lemon juice.

NUTTY ROAST LOAF INGREDIENTS (Serves 6) • 300gm assorted fresh nuts – we love almonds, hazelnuts, walnuts and pecans • 1 Kallo Organic Vegetable Stock Cube • 2 teaspoons Organic Larder Extra Virgin Olive Oil • 1 fresh onion, finely chopped • 2 fresh celery sticks, finely chopped • 1 fresh organic leek, trimmed and finely sliced • 2 carrots, grated • 2 fresh garlic cloves, crushed

• 4 tablespoons Biona Organic Cashew Nut Butter • 180gm cooked chestnuts, chopped into small pieces • 75gm Bayara Cranberries Dried • 20gm fresh parsley, finely chopped • 1 fresh lemon, finely grated zest only • 4 tablespoons Carrefour Bio Organic Soy Drink • 1 tablespoon Carrefour Fine Table Salt • Bayara Whole Black Pepper, freshly grounded

You can serve this nutty roast loaf hot or add cold slices to a festive buffet.

* You’ll need a 900g/2lb loaf tin for this recipe.

HOW TO: 1 P ut the assorted nuts and stock cube into a food processor or blender and pulse until chopped into small pieces.

2 Preheat the oven to 200C/180C Fan/Gas 6. Lightly grease your loaf tin with oil and line the base with baking paper.

3 Heat the olive oil in a large pan and fry the onion, celery, leek and carrots for around 5 minutes, or until soft, stirring regularly. Next, add the garlic and cook for just a few further seconds.

4 Pour the fried veggies into a mixing bowl and stir in the cashew nut butter, before adding in the chopped nuts mix, cooked chestnuts, cranberries, parsley, lemon zest, soy milk and salt. Season with plenty of ground black pepper and stir until completely mixed.

5 Spoon the filling into the prepared loaf tin and press down firmly to flatten the top. Cover with silver foil and bake for 30 minutes, then remove the foil and bake for a further 20 minutes, or until the loaf is hot throughout and lightly browned.

6 Remove from the oven and allow to cool for 5 minutes.

Next, loosen the edges of the loaf all the way around with a table knife, then sit a serving plate or board on top to carefully turn out of the tin. Cut into thick slices and serve with homemade sauce or vegan gravy.

Sevruga Caviar Sevruga caviar eggs are a pearlescent grey, and smaller in size than other sturgeon. The flavor is more pronounced than other varieties, often described as saltier, but it can vary depending on the origin of the fish. The caviar is packaged and sold in red tins.

INGREDIENTS (serves 1) • Generous helping of leftover roasted turkey • 2 slices of country bread • Chopped iceberg lettuce , red cabbage and grated carrot • 1 tablespoon of Meridian Organic Cranberry sauce • 1 tablespoon of Carrefour Full Fat Mayonnaise

2 Spread mayonnaise on one slice of bread 3 Place the turkey, lettuce, cabbage and carrot on top.

4 Top with cranberry sauce.

NUTTY CRANBERRY CHEESE BALLS

USE UP: LEFTOVER CHEESE, BERRIES AND NUTS

INGREDIENTS (Makes 12 balls) • 450gm Carrefour Double Cream Cheese (you can also use goat or feta cheese) • 1 teaspoon Carrefour Cinnamon Powder • 3 tablespoons Organic Larder Honey • 190gm Bayara Premium Pecans, chopped • 130gm Bayara Dried Cranberries, chopped • 60gm fresh parsley, chopped

HOW TO: 1 In a big bowl, beat the cheese, cinnamon and honey together into a fluffy consistency, then mix in 60gm of pecan nuts and set aside.

2 Line a plate with parchment paper and toss together the remaining pecans, dried cranberries and chopped parsley.

3 Using a cookie scoop, scoop out one ball of cheese filling and roll into the nut mixture. Continue until all the cheese balls are coated.

4 Refrigerate the cheese balls until ready to serve.

5 Serve with crackers or leftover toasted bread.
