Choc Chip S’more Cookie Sandwich Ingredients

For the Cookies  140g butter (room temperature)  1 cup brown sugar  2 tbsp caster sugar  1 egg (room temperature)  1 tsp vanilla extract  1½ cups plain flour  ½ tsp baking powder

SNUGGLE UP WITH YOUR  ½ tsp baking soda  250g chocolate chips  Sea salt To assemble  1 bag of marshmallows  100g dark chocolate

Instructions For the cookies 1

Preheat oven to 170°C. Cream the butter and sugars for at least 5 minutes until the mixture becomes light and fluffy.

Add the egg and vanilla extract and beat well.

Add choc chips, flour, baking soda and baking powder. Beat on low speed until just combined (don’t overwork the mixture or it can become tough).

VALENTINE AND SNACK ON THESE DEVILISH DELICIOUS COOKIE SANDWICHES...

Prep time 10 mins Cook time 18 mins Total time 28 mins

4 Dollop

tablespoon sized balls of cookie dough onto lined baking trays. I usually put 5 cookies on each of my 4 trays as these babies spread.

Bake until cookies are golden around the edges, around 12-14 minutes.

To assemble 1

Melt the chocolate in a small bowl in the microwave on medium high in 30 second bursts. Once completely melted, set aside.

Place half of the cookies on a baking tray, flat-side up. Place several marshmallows on top of each cookie.

Use either a kitchen blowtorch to melt the marshmallows, or place the baking tray on the highest rack of your grill and toast until blistered and brown (watch them like a hawk though, they burn easily!)

4 Drizzle

the chocolate over the toasted marshmallows, then place the remaining cookies on top

Valentine’s Day photo shoot! Valentine’s Day, the sweetest time of the year is just around the corner. I heart this adorable idea, inspired from Pinterest and just perfect for someone you love this year. You certainly do not have to be a crafty extraordinaire to undertake this project. This is one of these simple craft ideas, where you just let your creative flair take over. There are no templates to print, no rules or restrictions, just your imagination, some paper, scissors and tape (although secretly I prefer some good old fashioned blu tack.) It always helps, of course, to have a nice clean wall or backdrop for your photography. What you’ll need:  Red cover paper  Scissors  Blue Tack / Tape  Camera or phone to take that precious snapshot 1

First things first, get snipping and create a range of love hearts. Depending on your desired outcome, they can be uniform in shape and size if you wish to, or mix them up for some artistic design.

2 Then

find yourself a suitable backdrop, this could be a wall in your home, a whiteboard in the classroom or a photographic backdrop in a studio. Arrange your love hearts, thinking about your little model having cupped hands, raised slightly in the air, to blow kisses out to the one they love.

3 Get

that camera ready, one, two, three, Happy Valentine’s Day.
