Mughal Heritage Walk/ Kachhpura Village The Mughal Heritage Walk is a community-based tourism initiative of CURE (Center for Urban and Regional Excellence) and the Uttar Pradesh government to help villagers make an income from tourism. A km-long walk takes place on the riverside opposite the Taj Mahal and goes through Kachhpura village. Agra is synonymous with Mughlai and Frontier cuisines, a legacy of the Muslim dynasties that once ruled here. This cuisine is quite spicy, with a unique aroma and often milk or cream-based. Delicacies include biryanis, pasandas, kormas, pulao, kebabs, tikkas and hot and spicy shorba (soup). Mughlai cuisine – derived from the rich, aromatic and delectable food prepared in the royal kitchens of rulers during the Mughal period takes one back to another era when preparing food was a treasured art and each meal was meant for royalty. A judicious addition of spices, gentle cooking and various nuts helps in creating the mostdelicious kebabs, curries and biryanis in Mughlai Cuisine. Paatra serves impressive and authentic Indian cuisine.

The flavours used here and the experience of dining at Paatra is truly wonderful. The restaurant can accommodate 65 persons and easily play host to large group too. It is open from 7:30pm to 11pm on all days, making it the perfect place for dining like royals. While everything on the menu is lip-smacking, some dishes just can’t be missed. You must savour their Zafrani Jhinga, Amritsari Kulcha, Murg Mussalam and Chapali Kebab. The dals also score handsomely. Tempered with cumin and chilli, they can even win the favour over meat. Then there comes the Phirni, in a sakora with a nice warq topping. Live ghazals in the evening add to the dining experience at Paatra, making a pure indulgence of richness, burst of flavours and lavish treatment.
Why do you think Indian food has become such a universallypopular cuisine? There is such unity in the diversity of Indian food that it has won the hearts of all. Flavours, textures, presentation, variety, taste – all are vibrant and unmatched. I would say Ayurveda plays a role in this – an Indian meal has the power to satisfy all six senses of taste and the palate is the same the world over. So when some foreigner enjoys Indian food it is due to the fact that all senses of taste have been satisfied. He might just not be aware of this power in Indian food but it is there. Some people feel Indian cuisine is misunderstood... Actually, Indians themselves remain confused about Indian food! We have so many regional cuisines and somebody from the North of the country will find only rice and dal-oriented dishes down South. Well, the North Indians survive on wheat. Similarly, people of East love fish but the central regions have no access to so much fish. The world has been thinking that Punjabi and Mughlai food is Indian food that is why the popularity of the tandoori chicken and the chicken tikka masala is unmatched. But today, thanks to the information glut, Indian food is being written and read about in most parts of the world and cooks are venturing out in search of Indian recipe books, ingredients and specialty cookware. What are the key factors in making Indian food ‘authentic’? The description of ‘authentic’ is subjective. For me, arriving at the mostacceptable taste for the masses is authentic. Then that is documented and becomes an authentic recipe.

Marinate the chicken with this mixture and keep aside for 3-4 hours. eat oil in a pan. Fry the onions H until golden brown. Add the marinated chicken and cook for 10 minutes. Add 4 cups of water to the rice. Mix saffron in milk and add to it. Add cardamom powder and the chicken pieces. Pressure cook the rice. Mix gently. Garnish with green coriander leaves and serve hot.

Having won over 85 international titles and spent 331 weeks as world No. 1, what remains your favourite moment? Probably shooting 30 on the front nine during The Open Championship. Everybody said the front nine was the hardest nine at Augusta and the back nine was the moving nine. I can’t remember what year it was, but I remember at one point going down 7 and 8, I thought about the fact that I could shoot 29 on the front nine.

rom championship tee, the Jaypee Greens course is one of the longest in the world with a length of 7,347 yards. Its Australian designer, Norman, calls it one of his favourites.

And your worst? Probably hitting the four-iron to the 18th in 1986 instead of a five-iron (Norman missed the green and failed to get up and down, which would have forced a playoff with Jack Nicklaus). The other bad loss was in ’96 (to Nick Faldo), when I had the six-shot lead.

Do you follow Indian golf and golfers? I am familiar with Jeev Milkha Singh who has had some success outside of India. As far as the future of golf in India is concerned, I think the game of golf and junior golfers are only going to continue to improve in this country as the game continues to grow. Golf courses such as the one we built at Jaypee will continue to expose more juniors to the game of golf and this will help create the next generation of golfers for India. How do you find the Indian golfers in terms of fitness and skill? How can they improve in these two areas and match up to their international counterparts? Indian golfers will continue to evolve as the game grows at the junior level. Increasing exposure to the game and a higher level of instruction and fitness will all play a part in creating the next generation of golfers from India. It’s only a matter of time before an Indian golfer steps onto the scene and wins a Major. I’m confident we will see this happen in my lifetime. You visited India a lot of times while designing the Jaypee golf course. How was your experience? I had been planning to see this beautiful country for so many years.
I got a chance to see some part of it while designing my first golf course in the country. I hope to come here more often and design several more golf courses in the country. Based upon the number of leads that we are getting, it’s obvious golf is growing in this country and I am excited about the future trips to this country which surpasses anyone in the world when it comes to welcoming people and making them feel at home. What sets this course apart from the rest? The course is an 18-hole championship layout, designed with the firm belief of setting new standards for championship golf in India. Built on what was previously a flat featureless site, the design of the course involved the creation of several lakes. The earth from these lakes has been used to generate a dynamic, soft and undulating landform suitable for the laying out of 18 very exciting and challenging holes. Its gently rolling fairways are grassed using an imported Bermuda grass called Evergreen. The bunkering style at Jaypee Green sets it apart from other courses in India. The bunkers are reminiscent of classic Melbourne sand belt courses including the world famous Royal Melbourne and Kingston Heath layouts.
